When pairing wine with your main course, balance is key for a flavourful experience. For lighter meat dishes like turkey, go for an acidic light-bodied wine with a hint of sweetness. While a full-bodied red with a decent amount of acidity matches a juicy roast beef to perfection, and complements its richness and enhances its flavours.

Chocolate Truffles

A fruity variety like Cabernet Sauvignon, a rich style like Amarone della Valpolicella, or a sweet wine like a Ruby Port for a decadent holiday treat!

• 7/8 cup heavy cream • 8 ounces good quality bittersweet chocolate, chopped • Unsweetened cocoa powder as needed • Sprinkles or edible decorations (optional)

Step 1: Heat cream in a pot until it steams.

Put chocolate in a bowl, pour hot cream on top, and stir until chocolate is melted and incorporated into cream.

Step 3: If truffles become too soft to handle, place them in refrigerator or freezer for a few minutes.

Roll them in cocoa powder, confectioners’ sugar or a mixture of sugar and ground cinnamon.

Step 2: Chill until solid all the way through, 1 to 2 hours. Using a chilled melon baller or latex gloves to prevent the truffles from melting or sticking to your hands, scoop out about a tablespoonful and shape into a square. Repeat, lining truffles on a plate or a baking sheet.

Serve immediately or store, wrapped in plastic, in refrigerator for up to four days.

Gingerbread Cheesecake 1 3/4 cups gingersnap cookie crumbs 1 tsp ground cinnamon 5 tbsp melted butter

1/2 tsp ground ginger

28 ounces cream cheese, softened

1/4 tsp each of ground cloves & nutmeg

1 cup powdered sugar, sifted

2 cups whipped cream or topping

2 tbsp lemon juice

Garnish: Caramel sauce, gingerbread

1/4 cup molasses

cookies, cinnamon dust or whip cream

Festive toasty flavours like a spicy Gewürztraminer, juicy Zinfandel, or even a Spiced Rum for a warm and luscious experience.

Step 1: Combine the gingersnap crumbs and butter in a bowl. Pour them into a 9-inch springform pan.

Press them onto the bottom and up the sides.

Step 3: Pour into the gingersnap crust, spreading evenly. Refrigerate for at least 4 hours or overnight before serving.

Step 2: Beat the cream cheese with an electric mixer until smooth. Add the powdered sugar, lemon juice, molasses, cinnamon, ginger, cloves and nutmeg. Beat until well combined.

Fold in the whipped cream.

Step 4: Garnish with any toppings of choice: caramel sauce, gingerbread cookies, cinnamon dust or whipped cream.
