SWEET POTATO WEDGES This simple and delicious side dish goes with (almost) every meal!

Serves 4

INGREDIENTS •

1kg sweet potato cut into chunky wedges

1 tbsp olive oil

Salt and pepper

Pinch smoked paprika, optional

METHOD 1.

Preheat the oven 200°C fan oven / 220°C nonfan oven

2. Put the wedges onto a large baking tray. Drizzle with olive oil then season with salt along with the smoked paprika if using. Toss together 3. Cook for around 45 minutes until golden and cooked through, giving them a turn after 25 minutes. Simple as that!
