TEX MEX STYLE BEEF TACOS You can’t go wrong with a taco, perfect for a family dinner or having your friends over! If you want to keep the calories down, go for a 5% fat beef mince.

1 onion finely chopped

1 green pepper finely chopped
I like to serve it up with sweet potato wedges and corn on the cob.

2 cloves garlic grated
•
500g beef mince
•
1 tsp cumin
•
1 tsp smoked paprika
•
1 tsp chilli powder
•
1 tsp sugar
•
1/2 tsp black pepper
•
1 can chopped tomatoes (400g)
For the marinade: •
Sour cream
•
1/2 iceberg lettuce shredded
•
4 large ripe tomatoes chopped
•
100g grated cheddar cheese
•
1 lime cut into wedges
•
1 pack of tacos (8)

Fry the onion and pepper in a large non-stick frying pan over a medium high heat with a pinch of salt for 5 minutes until golden
2. Add the beef mince and break up with a wooden spoon. Season and stir fry for a few minutes until brown 3. Stir in the spices and sugar, cook for 30 seconds then add the chopped tomatoes and 100 ml water 4. Reduce the heat to medium, simmer for 15 minutes until the sauce is thick 5. Warm the tacos in a large dry fry frying pan over a high heat for 30 seconds on each side or heat in the microwave according to packet instruction 6. Load the tacos with sour cream and salad, top with the beef mix and cheese. Squeeze over lime to serve
