THANKSGIVING TABLESCAPE Randall Felkel of The RSVP Shoppe and Mitchell Crosby of JMC Charleston have been entertaining together in sophisticated style for over 20 years and make it look easy. In fact, this Thanksgiving tablescape was pulled together in 15 minutes. The Style 1. Your setting should evoke the feeling of the season. For this Thanksgiving setting, we selected a “hunt theme” with Pheasant plates as the grounding pieces. We layered each setting with pheasant feather placemats from The RSVP Shoppe and a burnt umber napkin placed over them with the plate on top. This gives visual interest and is also a great way to present a utility item like a napkin in an interesting, decorative way. 2. Use small accent pieces like these silver pine cones on the table, as you will have plates, flatware and glasses taking up real estate. "Thank you to The RSVP Shoppe for the "wheat" taper candles, which are my favorite for this autumn season of 2014. I really love the tiny terra cotta pots which Rose OHara hand-carried back from her last trip to Sienna, used for salt and pepper,” says Crosby. 3. Flowers add the pop of color and this beautiful arrangement (including hydrangea, roses, Hypericum berry) by Mary Silsby and Kit Bennett at Lotus Flower was created using our own vases for the flowers to be arranged in. The Place Setting 1. Determine how many people can sit comfortably at your table. We set this table for 6, but our table can comfortably seat 8. We can also add a piece of wood we had cut to fit the table on the top, secured using fasteners, to accommodate 10. 2. When setting the table, start outside and work your way inside. It obviously depends on the menu as to what flatware you will use. We set a salad fork, fish fork, a place fork and a cocktail or oyster fork, which goes on the righthand side of the plate, the only fork that is placed there. 3. If you don’t have enough silver for every setting, mix and match patterns. 4. Set the glasses in the order that you enjoy them. In this case, from closest to the plate outwards, we set the champagne glass, red wine, white wine and water glass. Our glassware is a collection of things we have found over the years in different places and reflects different styles.


1. We have a completely separate area set up for cocktails and hors d’oeuvres prior to the meal using different glassware and flatware. 2. How we serve the meal depends on the number of guests, but typically, we seat guests, then plate the food ourselves then bring it to the table. For larger gatherings, a buffet style service is more efficient. 3. When clearing plates, we always wait to make sure everyone is finished. “Mitchell and I will both get up and clear guests’ plates first and then take our own plates,” explains Felkel. 4. After dinner, we always serve a Madeira and really like the Rare Wine Company Historic Series Madeira Charleston Sercial. We preset it on a tray near the dining table so that guests may enjoy their desert wine in another room or on the terrace.

RECIPE: HERB-ROASTED TURKEY Michelle Weaver, Executive Chef, Charleston Grill Ingredients: 2 sticks (1/2 pound) unsalted butter, softened

2 Tbsp chopped fresh rosemary

2 Tbsp chopped fresh thyme

1/4 cup chopped fresh sage

2 Tbsp kosher salt

2 Tsp black pepper

1 (14 pound) fresh turkey

2 lemons, quartered

2 small onions, peeled and quartered Method (for the turkey): • Preheat oven to 400°F. Mix butter, herbs, salt and pepper into a paste and set aside. • Clean the turkey and pat dry. Smear butter paste over the outside and inside of the turkey. Stuff the lemons and onions inside. Tuck the wing tips under and tie the legs together with kitchen twine. • Place a roasting rack inside a large roasting pan. Set turkey on roasting rack, breast-side up and uncovered. Place it in the oven and roast for one hour. • Using a turkey baster, collect some of the drippings from the roasting pan and baste the turkey with the drippings. Rotate the pan 180 degrees and reduce the heat to 325°F. Continue to roast the turkey until the internal temperature reaches 165°F when testing in the thigh, about two more hours, basting it every half hour and occasionally turning the pan for even browning. • Remove turkey from the oven and let it rest for at least 30 minutes before carving. The Gravy Ingredients: 5 Tbsp unsalted butter

1/2 cup all-purpose flour

1 quart turkey stock or low-sodium chicken stock

1 Tsp chopped fresh thyme

1½ turkey-pan drippings, fat skimmed off

1 Tsp chopped fresh sage

1 Tsp chopped fresh rosemary

1 Tsp Kosher salt

1½ Tsp cracked black pepper Method (for the gravy): • Heat the butter in a medium saucepan over medium-high heat. When the butter begins to foam, whisk in the flour. Continue to whisk until the flour is incorporated. Cook for two minutes, whisking as needed to prevent clumping. • Slowly whisk in the stock and drippings. Continue to whisk until the gravy comes to a simmer. Whisk in the herbs. Cook to desired thickness, about 15 minutes. Whisk in the salt and pepper. • Pour into a gravy boat and serve.

1 (1-ounce package) fresh rosemary

1 (1-ounce package) fresh mint

1 (1-ounce package) fresh basil

3 cloves garlic, coarsely chopped

1/2 teaspoon kosher salt

6 lamb rib chops

1/2 cup crumbled feta cheese

1/4 teaspoon freshly ground black pepper

1/4 to 1/2 cup olive oil

1/2 cup chopped green onions (about 4 onions, white and green parts) Method: • Toast the pine nuts in a 325°F degree oven or in a skillet on the stovetop shaking pan every two minutes until the nuts are golden brown. Let cool. • Rinse and dry the rosemary, mint and basil and pull the leaves off the stems. Discard the stems. • Place the nuts, herbs, garlic, green onions, salt and pepper in a food processor or blender. Pulse until finely chopped, then slowly add the olive oil until a chancy paste forms. Reserve half of the paste for another use. • Place the chops in a resealable plastic bag and pour in the paste. Massage the paste into the chops. Seal the bag and refrigerate two hours or overnight. • Preheat the oven to 400°F. Heat a cast-iron skillet until hot. • Sear the chops two to three minutes per side. Place the skillet in the oven four to six minutes for medium rare, six to eight minutes for medium. • Turn on the broiler. Top the chops with the feta and broil about two minutes to melt the cheese.

CHRISTMAS TABLESCAPE Lois Daughtridge brings her experience in advertising/public relations, retail and interior design to her new role as owner of The Boutique, a local business that has been helping customers set tables for nearly 60 years. The Style 1. Choose understated colors. Green and gold can definitely be Christmas colors, but these colors we used can be used other times of year as well. 2. Choose a cohesive palate but a mixture of patterns and even flatware to add interest to the table. 3. Don’t be afraid to mix it up. “If you have a lot of familial pieces, it can be fun to pull them all together. Most of us probably have lost or broken pieces in our collections. Rather than tracking down and filling in with matching pieces, you can just combine patterns for a more eclectic look and feel,” says Daughtridge. 4. Add local flair with your floral arrangement. Mary Silsby and Kit Bennett at Lotus Flower created this beautiful arrangement for the Christmas affair. They localized it with magnolias, lilies and eucalypti. "I used Camellias, cedar and holly out of my own garden and used a variety of drinking glasses instead of vases,” says Daughtridge. The Place Setting 1. Our place setting is typical of what a bride would choose. You can never go wrong with a beautiful white linen tablecloth, place mats and napkins. 2. We love mirrors, and a mirror under the floral arrangement adds light, makes the table look bigger and can make candle light even more impactful. 3. Mix and match your flatware and china patterns. Choose one or two elements to bring cohesion to the table. In this case we chose the linens and the stemware. These were the only things exactly alike at this table of four that I set. Layer different colors of dried beans with decorative moss around insert.
