Method

SALMON & ASPARAGUS QUICHE Ingredients

• plain flour, for dusting • 700g shop-bought or homemade pastry • 50g butter • 1 large onion, halved and cut into thin slices • 1 tsp fennel seeds • bunch asparagus (approx 400g), woody ends trimmed, then halved lengthways • 100ml milk • 300g skinless salmon fillets • 300ml double cream • 3 large eggs, beaten • ½ small bunch dill, stalks removed • zest 1 lemon • 100g cheddar • To serve: fennel and rocket salad

1. Heat oven to 200C/180C fan/gas 6. Put a baking sheet in the oven to heat up. Dust a clean work surface with flour, then roll out 600g of the pastry to line a 20 x 30cm tin. Trim the edges with scissors so that the pastry sits 2-3mm higher than the sides of the tin. Prick the surface all over with a fork, then line with baking parchment and add an even layer of baking beans. Place on the hot baking sheet and blindbake for 15 mins. 2. Meanwhile, roll out the remaining pastry and any off-cuts, cut into strips and plait together. Take the tin out of the oven, remove the baking beans and brush all over with a thin layer of beaten egg. Stick the pastry plaits onto the edges, brush with beaten egg and return to the oven

for another 15 mins until cooked through but not brown. 3. Meanwhile, heat the butter in a frying pan over a low heat and add the onion. Cook gently for 1520 mins or until soft, then stir in the fennel seeds and take off the heat. Leave to cool in the pan. 4. Remove the tart case from the oven and set aside while you cook the rest of the filling. Add the asparagus to a large sauté pan, cover with 2-3cm water, bring to a simmer and cook for 5 mins. Drain, then rinse in cold water to cool down quickly. Leave to dry on kitchen paper. Put the empty pan back on the hob, add the milk and salmon, and bring to a gentle simmer. Cook for 4 mins, turning once. 5. Carefully take the salmon out of the milk and

lay on a plate. Pour the milk into a large heatproof jug and set aside. Spoon the onion and fennel seeds in an even layer across the base of the pastry case. Add the asparagus and, when the salmon is cool enough to handle, break chunks of it over the asparagus. Add the cream to the milk along with the rest of the eggs, the dill and lemon zest, then season. Pour the mixture into the pastry case, top with the cheese, then carefully put back in the oven for 45 mins-1 hr or until the filling is set and the cheese on top is turning golden. Serve warm or cold with a fennel and rocket salad.

You can make and freeze this pretty quiche ahead of time. It serves eight so perfect for an impromptu spot of lunchtime entertaining

ITCHY DOGS In the summer, whether or not it’s a decent one, we always see a large number of dogs that just can’t stop scratching themselves, and yet no matter how much the owner battles against fleas and other external parasites, there’s no letup for their dogs. Sometimes it seems at the moment as if almost every dog in the waiting room is there because it’s itchy! So if you can rule out fleas, what’s left – and the answer is that the vast majority of these dogs will have irritated skins as they are allergic to something in their immediate environment, producing a condition known as “atopic skin disease”.

WHAT IS ‘ATOPIC SKIN DISEASE’? This is an inherited (or thought to be) predisposition to develop allergic symptoms following repeated contact and inhalation of some otherwise harmless substances such as dust mites, or pollens. The chief sign is the unrelenting need of the dog to scratch itself, whether this is with their claws, teeth, or by rubbing against objects. Atopic animals will usually rub, lick, chew, bite or scratch at their feet, muzzle, ears, armpits, or groin, causing hair loss, and severe reddening and thickening of the skin. In some cases this self-trauma causes further changes to the normal skin structure, with excessive skin drying / skin oiliness / bacterial and yeast infections. So, by the time I see a dog that’s been itching, particularly if it’s been going on for a bit, the original cause may have long since gone, and the skin itself is now the source of the continued irritation. It’s important to treat these secondary things, like yeast infections with shampoos, and deeper bacterial infections with antibiotics, so we can see if the itching resolves. But if it doesn’t then we have to accept that an allergic cause is very likely – so how do you diagnose that? How do you identify the substances – called allergens – which are causing this skin inflammation?

An itchy underneath!!

DIAGNOSIS There are two main ways: (1) intradermal testing, where the dog is injected with small quantities of the most likely irritants, looking for an acute reaction to specific pollens / mites etc; or (2) blood testing. The latter is far less traumatic to the dog, and a single sample can be tested for the dog’s reactivity to several panels of irritants, such as grass pollens, tree pollens, indoor / food mites, the constituents in various dog foods etc. The trouble is that these results are not always 100% reliable, particularly as regards food allergies – and that’s the topic for another month!

TREATMENT If a blood test or intradermal test is done, and the sorts of allergens which are irritating your dog are identified, then a vaccine can be specially made up – unique to the allergen sensitivity of your dog. Usually 60-70% of animals will improve, something like half having an excellent response, and the other half with a reasonable response but maybe still needing drug treatment. How it works is that the vaccine is used to fool the dog’s immune system into dealing with artificially large levels of antigens – in the injections, or nowadays also given under the dog’s tongue as droplets – so that when they meet natural levels of allergens their immune systems hardly register them, so the dogs don’t scratch.

Avoidance of the allergens: this is difficult but various things like washing the pet bedding weekly in the hottest water possible, wiping down your dog with moist cloths after going outside, and frequent bathing, with a non-irritant shampoo like

Antihistamines: these work in some atopic dogs, the most widely used example being Piriton, but there has recently been a new drug developed called ‘Apoquel’, which is much more potent and we have used it on numerous dogs with excellent results. It aims to reduce scratching within four hours of taking the first pill! Again, there may be a need to use shampoos and other treatments to get the best results. Fatty acid supplements: certain types of oils can reduce allergic symptoms in some patients, and they are believed to work together with antihistamines. In particular, EPO supplements, or fish oil capsules can work, often in conjunction with a low-fat diet. Topical steroids: these are gels or creams that contain a steroid, and which can be applied direct to the skin, particularly on ‘hot spots’. One problem is that if they are applied to hairy areas of the dog they can tend to dry on the fur and create a caked-on crusty layer, under which a skin infection can start up, so these must be applied with care.

Oral steroids: the mainstay is prednisolone, which works very well, but has potential side effects and is reserved for adult animals, those with short seasonal problems or where other therapy is not possible or is ineffective. Typically, treatment is started at a highish dose, and then tapered off to being given only every other day, or every three days. Its great advantage is that it’s cheap! Cyclosporins: these immunosuppressive agents – ‘Atopica’ is the veterinary preparation – can be used at low doses to treat allergies successfully in about 60% of patients, and are helpful in lowering dosages of steroids. The major short-term side effect is a gut upset, so they are not ideal, but they have a place in treating this condition. The upshot of it all is, if your dog is scratching itself to pieces, go and seek advice, but be prepared to have to deal with a condition that at best can only be controlled, and probably never cured.

abulous staff and members in the Falmouth area have waved goodbye to their weighty wardrobes, donating 800 bags filled with clothes, shoes and accessories to the Falmouth Cancer Research Shop in support of the organisations national campaign the Big Slimming World Clothes Throw. With each bag filled worth around £25 to the charity when re-sold, the bags collected by Slimming World staff and members could raisewith an estimated £20,000. The Big Slimming World Clothes Throw runs across Slimming World’s national 16,000 weekly groups over a two-week period, inviting members to donate the clothes they’ve successfully slimmed out of.

and the charity aims to increase awareness of how maintaining a healthy weight can reduce the risk of developing some types of cancer. The nursery itself offers a sensory room to stimulate their babies and as act as a calming environment for others; an under two’s area; indoor soft play room for the children to really let steam; an inspiration room for creative play; childcare room for 2-3 year olds with access to outside play areas;

This is a government that wants more opportunity for more people - and more equality of opportunity. And that means unlocking our children’s potential. I believe we are building that education system that unlocks the talents of all our people here. We’ve got the right ingredients: expert teachers, determined to unlock every young person’s potential. A society that believes in fairness and businesses that now more than ever understand how education and skills drive growth. We can unleash the wealth of latent talent that we have - and become a modern, confident and fairer economy. A country that works for everyone. Our country has been on a long journey on education - not just on improving the quality of our schools, but on giving parents real choice where before there was none. When I was growing up here there was no real choice at all. You got what you were given. I went to my local comprehensive school in Falmouth because nearly everyone did. And in this system some people got a good education. I was lucky - I had a great form teacher Mr Morris, who encouraged me and inspired me. People never forget great teachers, because the impact they have on our lives goes beyond that of other people that we will go on to meet. But some people - and some places - have been left behind. The schools they went to and are going to weren’t good enough. We can never accept the randomness of a postcode lottery in education if we are to succeed as a country. That’s why we will keep pursuing our ambitious reforms. On what children are taught, on making sure they are taught well, and on how schools provide them with the knowledge and skills they need in modern Britain. That’s why we’re pursuing a new gold standard in curriculum and assessment, together with an expectation that the vast majority of young people will study the EBacc subjects - this is an academic core of subjects - that keep options open for young people. And we are steadily strengthening the

HOPKINS JOINERY Going from strength to strength in 2017

Further investments this year, in some new machinery and paint spraying equipment enable us to continue to supply bespoke and standard joinery at competitive prices and to a high standard of work.

We have changed our paint supplier. Teknos - Paint supplier to the joinery industry are able to provide colour matching to Ral, Farrow and Ball, Dulux and British Standard Colours. As these example photo's show, many customers are now choosing a colour or a dual finish for their joinery. Greys seem to be ever so popular of late.

Timber Sales

It's been a busy time with timber sales increasing as priority customers and builders alike become more aware of the services we offer. We always keep Best Joinery Redwood and Utile hardwood and european Oak in stock. We have plenty of other woods in stock too, but smaller quantities. Matt, our wood machinist is on hand to take orders and supply softwoods & hardwoods planed to size. Special mouldings and pattern machining for window cill sections, high skirtings, architraving, Columns etc. Small orders undertaken same day or even while you wait.

Customers are extremely pleased with the results, i.e. - Triple draft seals for a quiet interior - 24mm double glazing to building reg standards - Ease of movement with our traditional pulley and weight system - Teknos micropouras paint systems for long life and low maintenance.

Doors and Door Sets

We have introduced some standard style of doors. From front doors to internal, we make ours from solid timber with real mortice and tenon joints. Made to last a life time! Clients can choose a style and colour. There are many options in hardware and locking systems from traditional to modern 3 point high security, these can also be chosen to suit. Becca, our office assistant has been learning the art of Verre ÉglomisÊ or gold leaf guilding. We can now take commissions for numbering doors or overlights to enhance an entranceway with a truly handmade touch.
