More and more consumers choose restaurants that think and act climate friendly. But that doesn’t mean that you need to remove animal meat from your menu. The chicken is far more climate friendly than cows, pigs, and lambs are. According to CONCITO, a green think tank located in Denmark, chicken emits the same amount of carbondioxide (CO2) as plant-based meats. So, if you want to ride this green wave and continue to serve meat, you should start to include a larger amount of chicken into your dishes. We have made it easy and appealing for you with our new chicken products from Chefs Club. Chefs Club – the easy usage of chicken Ranging from lean breast meat to tender inner fillets and tasty chicken legs – the chicken is a bird with a lot of great types of cuts. With Chefs Club, we have cut and trimmed the different types of chicken for you, so that you can spend your time adding your unique signature touch to the dish. Several of the products are available both fresh and frozen so that you can choose the type that suits your kitchen best. This gives you an increased flexibility and minimizes the risk of food waste, which is also a large climate sinner. The great, pure experience of chicken Chicken is not just good for the climate – it is also healthy for your body. The white meat is rich on proteins, vitamins,

and minerals. It also contains less saturated fats in comparison to red meats such as beef, lamb and pork. CHICKEN BREASTS WITH CRISPY SKIN WITH LIME AND CORIANDER SEEDS FRESH PASTA WITH APPLES, JERUSALEM ARTICHOKES, AND HERBS 10 people INGREDIENTS 10 pcs. Chicken breast fillet with skin article nr. 1005571 2 Limes 20 pcs of coriander seeds 2 dl. Rapeseed oil 1 kg. Durum wheat flour 10 whole eggs 1 kg. of Jerusalem artichoke 700 g. of apples Butter (for roasting) Cress Red basil Fresh lemon juice

PREPARATION 1. Crush the coriander seeds and grate the lime zest. Mix it together with oil and then use this to marinate the chicken breasts. 2. Mix together eggs and durum wheat flour. Use a food mixer or knead it using your hands into a firm mass. If the dough is too dry, then add some water. On the other hand, if the dough is too wet, then add some flour. 3. Feed a pasta maker with the dough, twice on each level. Alternatively, you can just buy ready-made pasta.

4. Cut the Jerusalem artichokes and apples in to dices. First, cook the Jerusalem artichokes tender in some butter, and then add apples. 5. Boil the pasta, and fold in the apples and Jerusalem artichokes. Season with salt, pepper, and lemon. 6. Roast, using a pan, the chicken breasts with the skin side facing downwards, and then let them finish baking the oven afterwards. 7. Arrange the chicken breasts and the pasta, and some cress, red basil, or other herbs.

TIP:

Roast the coriander seeds on a pan after they have been crushed. This adds more flavor.

FRESH CHICKEN BREAST FILLET IN DICES 100%

The inner fillet is called the tenderloin of chicken, and for good reasons since it is located on the inside of the chicken’s spine. This makes a tender piece of meat. Additionally, the little tendon has been removed.

With the chicken breast fillet in dices you don’t have to cut the fillets yourself, and do not need to think about defrosting the products. In fact, the chicken dices are fresh, which means that you are able to serve more guests.

The thigh is probably the tastiest bit on the chicken. But due to the thigh-bone, people often choose not to deal with the thigh because it’s difficult to eat. We think that is a pity, and that’s why we have added a chicken thigh completely without any bones to our Chefs Club assortment!

Since the cut itself has a nice layer of fat that adds extra flavour to the meat, the skin has been removed in addition to the removal of the bones. In other words, the product is very straight forward to handle whether you want to dice it, cut it into strips, or roast them whole.
