We created Pour to meet client and guests' needs for a multi-functional space to connect and collaborate.
Pour is adjacent to the traditional marketplace and an onsite bar, the Tavern.

THE RESULTS


The menu at Pour offers breakfast, lunch and snacks in addition to beverage services, including coffee, tea, bottled beverage, and a selection of wines. We partner with a local bakery for our pastries and treats. The menu is offered via QR Code for ease of service with plans to add table service in the future.

Atmosphere matters and the addition of lounge style seating including couches as well as cocktail tables and stools offers guests a place to relax. Cube lights are added to the tables in the evening for softer mood lighting. Music adds to the ambiance at Pour. The client’s Welcome letter to new associates introduces them to the menus and offerings around campus including the marketplace Pour and the Tavern.

COFFEE BAR FUELS TRANSITION TO A NEW BUILDING FOR PHARMACEUTICAL COMPANY | NEW YORK, NEW YORK
Hours: Monday – Friday, 7:00 AM – 2:00 PM
THE CHALLENGE
As our pharmaceutical client’s new building was opening and as the logistics of moving associate’s offices began, we needed to provide food services to their associates during the relocation process.
THE SOLUTION
Eurest created a full-service coffee bar in a small marketplace area with an extended food menu to nourish associates during the building transition.
THE RESULTS
We offered a menu with hot and cold breakfast features in addition to lunch and snack foods. We also served Black & Bold Coffee, a minority-owned business specializing in gourmet roasted beans. When associate relocation was complete, the Coffee Bar shifted to its intended purpose – a small bistro featuring artisan coffee, teas, pastries and grab-and-go foods.
Initial sales were $300 - $500 per day, serving about 100 guests daily. This included an opening staff of four associates, plus a production person from a remote virtual kitchen.
When the business opened on December 1, 2022 the client was welcoming one floor of colleagues at a time, but returning to the office remained optional.
Offerings included hot and cold beverages and retail snacks with a menu for breakfast and lunch featuring hot and cold sandwiches, grain bowls, salads and pastries. All products were prepared from our remote kitchen across town and transported in including catering service. Signature menu items, such as a chicken and waffle sandwich, chicken pot pie and specialty items like falafel wheat gyro, chana masala naanwich appealed to a wide variety of guests. These elevated lunch menu items and a chef attended station that rotated in enhanced the experience.
After the New Year, colleagues began to come back to the office gradually. The high-end badge swipes were around 1,000.
Bistro 14 sales continued to grow, and the daily sales record was $6,700 serving as many as 800 guest per day, with 8 attendants (5 kiosk attendants; 3 food production associates).
After the New Year, sales grew to an average of $5,000+ per day; the staff grew to 6-7 associates onsite, plus 2 production associates in the remote kitchen.
Technology assisted in the speed of transaction with order/pay kiosks and a mobile ordering app enabling 24/7 service.
Mobile app adoption adds convenience for guests.
To communicate the coffee bar offerings, collaboration with the client kept associates informed about the hours, offerings, and menu at the coffee bar.

WEST DIVISION COFFEE BARS
THE GOAL
The key goal for this refresh case study is to show the impact before and after our Coffee Bar refreshes were completed in 19 locations. In total for the West Division, we have just completed 162 Coffee Bars.
WHAT CHANGED
All locations were required to implement the following for their refresh to be complete: Sourcing hyperlocal coffee, tea and retail, updated the exiting menu mix with at least 5 rotating signature drinks, a weekly featured special as well as bringing in our David Rio Chai. The look and feel of each space was enhanced with new décor and merchandise. We also updated uniforms to a hip and different look, specialty curated music playlists, storytelling and new marketing signage to represent the brands being used, changed our condiment counter to remove all PC’s, and add simple syrup options. We have leveled up our pastries and breakfast sandwiches, as well as changed up the menus on our in-house grab n go. Lastly, where possible we have updated our smallwares to give a new look.
