farewell 2021 What a year! We have witnessed highs and lows throughout 2021.

COVID-19 lockdowns isolated many of our Eureka families, and then the elation of borders opening and being able to once again hold our loved ones. It has certainly brought many challenges, but the one thing that has remained steadfast, has been the wonderful community spirit throughout our Eureka Villages.

In our final issue of Eureka News for 2021, we celebrate more feel good moments, and re-share our proudest community achievement for the year - RSPCA Cupcake Day.

In The Kitchen Club, Chef Dan provides some great tips for Christmas lunch, and we savor in the Best-of-the-Best dishes presented by our Kitchen Teams in 2021. The Travel Club, takes a tour of Australia's favourite holiday playground - the Gold Coast, which is home to a tightknit community of 28 Residents at Eureka Pioneer Place, and many of our Support Office team members. In 30 Seconds With... we profile our awesome Village Manager from Eureka Wynnum - Tania Dooley.

And, In Around the Villages, we showcase our newest addition to the Eureka family - Eureka Brassall.

A bumper magazine for our final issue for the year. As we bid farewell to 2021, I also say goodbye as the Editor of Eureka News. In 2022, a new Editor will take the reins and deliver more news and reviews from around our amazing communities. Thank you for your unwavering support, it has been a privilege and a joy being part of the Eureka journey.

from the ceo As 2021 draws to a close, I would like to take this opportunity to offer my best wishes and sincere thanks to our team, as we reflect on what we have achieved together over the past year.

Each day, we are gifted with the opportunity to create memorable moments for our Residents.

The commitment and empathy shown by the entire team in creating these special experiences is truly outstanding. Some of these moments are showcased through Eureka News and The Kitchen Club, and they highlight the incredible difference we make in so many people’s lives.

As we continue our exciting growth and transformation as Australia’s leading rental retirement living operator, we have welcomed many new faces to the Eureka Team. We have also welcomed several new villages into the portfolio. In July, we welcomed Eureka Brassall; in November, we announced the acquisition of the Oxford Crest portfolio: in December we announced the acquisition of a village in Bowen, and disposal of two properties at Belgian Gardens and South Townsville. Perhaps, the most exciting achievement was in October, when we were delighted in welcoming our first Residents into our brand-new apartments at Eureka Wynnum.

We have an extraordinarily dedicated team across the country - from Cairns in the North to Hobart in the South, to Broken Hill and Whyalla in the West, and the many regions in between. I would like to personally thank everyone for their commitment and drive this year. Each and every team member has played a vital role in our success, and for this I am sincerely grateful.

On behalf of the Board and our Chairman Murray Boyte, I would like to extend to our entire Eureka family, a very Merry Christmas and a sensational New Year.

This festive season, enjoy all that the Australian summer has on offer, and most importantly, embrace quality time with family, friends and loved ones.

top tips for cooking a successful christmas lunch Food galore, the drinks flowing and being surrounded by close friends and family. It really is the most wonderful time of the year.

For many of us, the thought of having to cook Christmas lunch can be a daunting task, especially when having to do it for the first time.

To help, I have put together my top tips, to make your day a success.

CHRISTMAS LUNCH

This is number one on my list, and the most important tip of all. In the days leading up to Christmas make sure that you’ve got absolutely everything you need, from the obvious like a turkey, prawns, and potatoes. Check that you’ve got enough oil to cook with and plenty of salt and pepper for seasoning. I recommend getting all your food and drink shopping done three days before, that way you can avoid a last-minute dash around to the local supermarket, cutting into your valuable cooking time.

make a plan

You can never be too prepared when it comes to a big meal like this. Make sure you have your menu planned fully and read through all the recipes you are using thoroughly, rereading any instructions that aren’t clear. Write a list of all the ingredients you are going to need, then cross off the ones you already have. Write a prep list of all the jobs you are going to need to do to make the meal. Ticking them off the list as you go will give you great satisfaction.

brine your turkey on christmas eve

Remember my column a few weeks ago. Turkey is a lean meat; it can become dry quite quickly. So, I definitely recommend brining your bird for around 12 hours before putting it in the oven. During this process, it will absorb extra moisture, which in turn helps the meat stay moist and juicy, and the brining liquor will also help season the meat.

have the right equipment

Make sure that you’ve got plenty of oven trays, pots and pans and serving dishes. A new roll of tin foil is very handy for helping to keep things warm before you serve dinner. Another thing to check are your knives - make sure that they’re nice and sharp, as this will make cooking time faster and easier.

prep your veg the night before

Peel potatoes, carrots, parsnips and any other vegetables you’re having, and leave them in pans of cold water overnight. This will save you a lot of time and additional mess on Christmas morning. If you have lots of space in your fridge, you could even pre-cook your potatoes and parsnips on Christmas Eve to save even more time.

be flexible with your mealtime

Don’t feel you have to race to get things done on time – accidents happen in the kitchen when you’re in a hurry. Think about making the main mealtime later than is traditional. Eating later in the day buys you more time to cook happily at your own pace, rather than feeling like you’re pushed for time.

Don't keep opening the oven to check how your roast is doing, this will affect the cooking times as your oven will constantly be having to get back up to the right temperature. Also, make sure to defrost anything frozen thoroughly before cooking, otherwise the cooking times won't be accurate.

Don’t feel that everything must be homemade. Running up to Christmas, the media is full of the best supermarket buys. Buy in anything you’re not confident making or anything that is going to lighten the load. Buying the classic condiments and sauces will mean you can give the main offering your undivided attention.

cook the food you like

Don’t feel pressured into cooking with new ingredients you’ve never tried, and may not like, just because it’s Christmas. The big day is not the time to have your meal ruined by finding out you hate chestnuts! Choose ingredients and flavour combinations you already like and pick recipes you like the sound of, and can visualise eating, rather than traditional recipes you feel you should be cooking... keep it simple!

If you are like me, when you cook a roast dinner you use every pot, pan and utensil in sight, so my best advice is to clean as you go (where possible). Even if this just means packing the dishwasher before carving the turkey, it’ll ensure you get time to relax and enjoy the afterlunch festivities with your family – rather than being stuck washing up for an hour after you’ve eaten……plus remember many hands make light work, get some family members to help.

I hope that these simple, yet effective tips and advice make your Christmas lunch a stress-free occasion and a great success.

RECIPE CARD

DUCK FAT POTATOES

Like having prawns and turkey on Christmas Day, there is something else that my family absolutely love and it’s just not Christmas at our house unless I cook my famous Duck Fat Potatoes - I kid you not! Roast potatoes become heaven on earth when roasted in duck fat.

Super easy to do, but 100% AMAZING! Here is the recipe. You will probably want to double the recipe as you will find they start to go missing once out of the oven.

This recipe will serve 8 people.

Ingredients 2 kg floury potatoes (such as Sebago) peeled and cut into 3cm pieces.

200 gm Duck Fat - you can find this at Coles and Woolies in the meat isle.

method

Preheat oven to 180 degrees. Place the potatoes in a saucepan of cold salted water and bring to the boil. Reduce heat to medium and cook for 5 minutes or until parboiled. Drain, then return to the pan and shake well over a medium heat to dry out and rough up the edges (this will help them crisp up when roasting).

Place the Duck fat into a roasting pan, then place into the oven for 10 minutes to heat up.

Remove from the oven, carefully add potato to duck fat and gently toss to coat. Return to the oven and roast, turning twice, for 45 minutes or until golden and crispy. Sprinkle with salt and serve.

RSPCA CUPCAKE DAY eureka villages

We were blown away by the number of Villages who put their hands up to host RSPCA Cupcake Day events in 2021. We are thrilled to share with you that across the group, we raised $3,407.35 to support animals in need through RSPCA Australia. The Eureka Board committed to matching our fundraising efforts, bringing the total raised to $6,814.70. Congratulations to our entire Eureka family, this was a truly outstanding result, and we are incredibly proud of the kindness and generosity shown by all. These selfless efforts made Team Eureka one of the Top Ten fundraisers Australia-wide for the event. A big thank you to our Chairman - Murray Boyte, CEO - Cameron Taylor and the Eureka Board for their support, and commitment to giving back to the community.

Our Village Team at Eureka Glenorchy Gardens (Lyn and Phil), never do things by halves - always going above and beyond to provide Residents with the most wonderful community feel. Christmas has been a month-long celebration with Residents treated to not one, but five Christmas events! Starting with Christmas Carols at the start of December, followed by Santa and his Elves in a Fire Truck delivering gifts to Residents, and Residents' Grandchildren. The annual Resident's Christmas Party in mid-December, Eggnog Happy Hour the week before Christmas, and the most special event of all, Christmas Day lunch, which grows in popularity each year, as Residents make friends who become family. A very special thank you to Lyn and Phil for making December a truly magical month for Eureka Glenorchy Gardens Residents.

CHRISTMAS EUREKA STYLE Across all of our Eureka Villages, our Village Teams are hosting the most fabulous Christmas events.

From Christmas Parties, to Carols by Candlelight, Eggnog Happy Hour, Santa & Elf visits, Christmas Under the Stars, Community Carols, Tree Decorating, and the list goes on. Most of our Village Teams will also forgo Christmas Day with their own families to spend the day with Residents hosting Christmas lunch in the Village. The smiles on our Residents' faces and the shear joy of watching them unwrap gifts is incredibly heartwarming. We feel very blessed that our Residents choose to share their lives with us, and we hope that these events have helped to bring the magic of the season to theirs. A very big shoutout to our amazing Village Teams for bring these events to life. Merry Christmas Everyone!

eureka group holdings - ASX ANNOUNCEMENT This week, Eureka announced to the ASX that it has entered into unconditional interdependent contracts to sell two (2) properties in Townsville, Queensland.

Belgian Gardens comprising 20 rental units and Galillee Court comprising 12 rental units. The apartment style complexes are non-core assets, and the disposal is consistent with Eureka’s strategy to recycle capital to invest the proceeds into growing its core independent rental retirement living portfolio. Settlement is scheduled for 31 March 2022.

eureka mildura, nsw - MMM SUNRAYSIA This week, our Chef and all-round Eureka Mildura super-star - Donna Schryver was interviewed on Radio Station MMM Sunraysia about the amazing Christmas Food Hamper Drive the Residents at Eureka Mildura have been organising. To date, Eureka Mildura have gifted four hampers to Feed the Hungry - Sunraysia and anticipate an additional five hampers will be donated. They have also generously gifted toys to C.H.A.I.L.I.S. to assist families with children going through life threatening conditions. Congratulations Team Mildura, we are incredibly proud of your generosity and community spirit, and well done Donna on a fabulous interview.
