Method

Oven heated to 180°C / Fan 160° / 350°F / Gas 4 1. Gently melt together the butter and chocolate in a bowl over simmering water.

2. In a separate bowl mix together the flour, baking powder and sugar.

3. Beat the eggs into the dry ingredients, followed by the chocolate and butter mix.

4. Stir in nuts if used, these can be substituted with dried fruit if preferred I would suggest cranberries or sour cherries.

5. Pour into 150 x 200mm (6” x 8”) oiled and lined deep baking tray.

6. Bake in a pre-heated oven for 35 / 40 minutes 7. Dust with icing sugar & cut into 12 / 16 pieces to serve.
