Being inland this week I find I’m isolated from the ocean in a way that makes me switch off to surf desire.

Watching a show tonight on TV called ‘Ask The Doctor’, I realise that part of my love of surfing is in the health benefits associated with it. I need to find some waves... soon. This year seems warmer than last, but still, the dog days are short as we pass through mid-winter. Maybe a trip north is on the cards or even a trip sideways or just stick around to snog some uncrowded wave of home breaks. We are after all on the Aussie monopoly field. School holidays are upon us with surfing teachers busting out harder than their students to get away for a well-earned break. And surfing parents, trying to get the best of both worlds with their young ones.

Southern Australia has been pumping like it should be, but so too has the northern wave fed locations that receive swell from the roaring forties. It’s a beautiful thing. Hopefully where ever you are you have a great fortnight.

Tofu and Sweet Potato Thai Laksa

Serves 4.

Ingredients • 1 tbsp vegetable oil • 3 bok choy stems (trimmed & • Jar of thai-style quartered) laksa paste • 2x 400ml can of coconut milk

• 150g vermicelli noodles, cooked & • 2 cups veggie stock drained • 1 kaffir lime leaf • 1 cup bean sprouts • 1 tbsp Yetty’s • Bunch of fresh sambal paste coriander (purchased • 1 lime (quartered) from both local markets) • 500g firm tofu

• 500g sweet potatoes (diced) Method 1. Heat a wok or large non-stick frying pan over medium heat. Add the oil, laska paste and sambal and cook for 1 minute.

2. Add the coconut milk, veggie stock, kaffir lime leaf and chilli. Bring to the boil.

3. Add the sweet potatoes and tofu, reduce the heat to low and simmer for 15 minutes.

4. Add the bok choy and snow peas and cook for a further 2 minutes or until the sweet potato is cooked through and the bok choy is tender.

5. Divide the noodles between bowls, spoon over the laksa.

6. Top with the bean sprouts, lime quarter and coriander to serve.

Are you drinking from a disposable coffee cup at this moment? You probably are because these usually accompany a good read or the newspaper. Coffee is the most popular hit of caffeine you can get your hands on in the morning. With it being the holy pursuit of perfection, no wonder Australia is consuming 3 kilograms per capita of the bitter goodness every year. The coffee industry is on the rise with new styles, flavours and combinations coming about daily within coffee branches. Yes, we all love the coffee bit we don’t think past it.

What about the cups?

The flimsy paper cup spends only minutes in our hot hands and a life in landfill which equates to ONE MILLION disposable cups ending up in landfill every minute. The astounding truth about these cardboard criminals is the plastic to paper content. There is 90-95% of paper in the average disposable cup and around 5-10% of plastic which contaminates the recycling process steam. Bio cups are similar, using cornstarch as a liner, and they can’t be composted through households due to lack of moisture and air. The plastic used to line the cups is a common plastic called polyethylene

which happens to be the same plastic used to make plastic bags and plastic water bottles, toxic to us. The plastic releases methane gas into the atmosphere at 21x the global warming potential of carbon dioxide.

The coffee stains on our environment can be avoided with the simple switch from disposable to reusable. Reusable cups are trendy and environmentally sustainable at only a couple of dollars more than coffee. Many coffee shops around Australia have a discount on reusable coffee cups of 50 cents. If saving 50 cents every time you go to get your morning coffee isn’t a good enough incentive, the average Australian spends around fifteen hundred dollars yearly on their coffee addiction. And if everyone was to spend that money yearly, our nation would have spent 3.6 billion dollars on coffee. A large percentage of this estimation would have been carried away in disposable coffee cups.

Gandhi said ‘be the change you want to see in the world.’ We need to change our coffee lifestyle to change Australia’s future. By buying reusable coffee cups you can save money and know you’re doing the right thing by out future generations, and so by protecting our beautiful Australia. Don’t be the last one to be left holding a disposable coffee cup and looking like a fool when everyone in Australia has made the change for our growing nation. Next time you buy coffee, consider what it’s in. Have you made the right choice?

Tourism provides a valuable contribution to the economy of communities across the globe.

Sometimes a unique structure inspires our curiosity to visit a certain location. Paris has the Eifel Tower, London has Big Ben and the Sydney Harbour Bridge is known around the world. When we travelled to Auckland, the tourist draw card there is Sky Tower which we included on our itinerary.

We lived in Adelaide for many years and went to Victor Harbour for a day trip on numerous occasions, as did many other people in and around Adelaide. Victor Harbour’s economy was strengthened by in the influx of weekend visitors.

One of the main attractions was the jetty across to the island where Fairy Penguins lived. Victor Harbour is to Adelaide what Rottnest Island is to Perth for day outings.

Busselton’s main attraction is the jetty with the underwater observatory. This one attraction has contributed enormously to the town’s economy and growth, way past what it cost to rebuild it.

Most people who have visited Western Australia will know about and remember Busselton because of what, the jetty.

Esperance’s jetty is in disrepair. The option is to detonate or renovate. If we blow it up we will also blow tourist dollars out of the water with it, not to mention the leisure value for the locals. We have the opportunity to build a valuable asset and if the Council could implement an additional attraction to complement the rebuilding of the jetty we would have a winner too.

Holiday makers from Kalgoorlie see Esperance as a sea change and so many travel here for their holidays. There is potential to grow the number of visitors from that area and a rebuilt jetty and foreshore will enhance Esperance as a preferred tourist destination.

A rebuilt jetty would last for almost a century and be beneficial for the future generations, not only ours. To a degree we are caretakers. If the jetty is demolished, it will be gone forever. We can provide our community with a long term attraction that is aesthetically pleasing and provide enjoyment for so many people. Let’s rebuild.

NAIDOC Week is held in the first full week of July. It is a time to celebrate Aboriginal and Torres Strait Islander history, culture and achievements and is an opportunity to recognise the contributions that Indigenous Australians make to our country and our society. This year’s theme is ‘Our Languages Matter’, and will be celebrated through a series of 16 banners flown along Andrew Street during NAIDOC week.

The Shire of Esperance and Esperance Tjaltjraak Native Title Aboriginal Corporation have been working in partnership over the past couple of months to produce these stunning banners, with local artists, Jennell Reynolds and Wanika Close who have been designing beautiful borders and wording, to complement the images selected for these banners. The banners will also feature words in both English and Nyungar, to reflect the theme or object displayed on the banners.

Official celebrations will kick off on Monday, 3 July, commencing at the Shire Office.

Members of Esperance Tjaltjraak will commence proceedings with Welcome to Country, and will be followed by speeches from respected community members with three flags raised: Australian, Aboriginal and Torres Strait Islander.

After proceedings, the NAIDOC organisers are extending an invitation to “Walk with Us” and the Mandoornup Eagle puppet, down Andrew Street along the Esplanade to the Scout Hall.

From 10am – 2pm there will be a range of activities including traditional dancing, necklace beading, storytelling and singing, traditional tools and more.

By Kyron Smithson What an absolute cracker of an evening the Songs from the Southern Edge Cd launch was on Saturday night. Thank you so much to everyone who headed along to support the event the turnout was fantastic. On the following Sunday afternoon, we had a short workshop with David Hyams to discuss where to now for the cd and artists involved. We considered a number of different avenues including ongoing live performances (perhaps outside of Esperance), dispersion of Cds through local outlets, dispersion of tracks online also the possibility for a presence at the Sunday markets and Esperance Show in the coming months. All opportunities to come will continue the professional development of artists while also promoting the cd and therefore cd sales. Steve West has just today organized for the CDs to be available online through www.trybooking.com. CDs are also available from ECA between 10am - 2pm on weekdays. A number of local vendors will also stock the CDs, with more details to follow next week as this information is finalized.

Once again thank you to everyone who made the project a reality and thank you to everyone within the community who gave their support, is greatly appreciated.

Esperance Bay Yacht Club will play host to an outstanding lineup of local musicians on Sunday the 2nd of July, with the bar open from 2pm and live tunes from 3pm. Robin Bottrell, Estella and Mitch and Simon and Mary all return from Perth for university break, grabbing the opportunity to perform live to the Esperance audience. They will be joined by local lad Tom Clark and travelling musician Stacey Jane to round out a diverse lineup. Head along for a fantastic afternoon of tunes.

Part of a Picture

Sometimes something can be so incredible to the eye that we can’t take it all in. We feel overwhelmed with such wonder and curiosity that we need to step back. We need to take in one part of the picture at a time; the small fine details that have created the full portrait. Taking time to sit and marvel at the curves within the leaves, the vines within trees or the vibrancy of colours that paint the world around us – twirling and twisting into the creation of their own shapes and forms.

Noticing the sounds of serenity - the gentle sway of the cool breeze, the curving wonders of the ocean splash against the shore, the soft trinkle of a rain pitter-pattering into a pond, or the sweet sound of birds harmonic voices that can connect the whole environment surrounding you.

The human mind is so expansive and creative that when tuned into a whole image, it can start an overwhelming rush of emotion. So much intensity that all we can do is stop in stillness and allow ourselves to move through this wonderland; our eyes slowly illuminating this image as we scan through layers of our surroundings. Analysing, critiquing, trying to understand and find some sort of sense of what we see.

But maybe this is true peace… when we allow ourselves to let go of the need to understand or find a logical answer; when we simply let our senses be stimulated and feel the rhythm of life move within and around us.

Letting go of a need to judge or control what is happening; not trying to fast forward or rewind or replay. But be completely as we are in that point in time. Finding stillness within time, to see that we are part of that picture.

The aluminium is melted down and recycled, the grounds are composted and this service is provided free of charge by Nespresso. Another way we can fight the war on waste in Esperance.
