With International Women’s Day this week, the Tide office is celebrating all the women in our community who shape it. From politics, to health, education, resources and finance—there are so many women playing pivotal roles in Esperance’s future.

And if you are one them, acknowledge it. Be proud of your contribution, own it. May there be no more unsung heroes, but rather local history books ripe with the names of our grandmothers, mothers and daughters.

Big Bob’s Kitchen

Born and raised in the Netherlands, Rob van Beek attributes his rich multicultural Dutch upbringing to his passion for food, and more particularly, spice. A country with colonial history and immigration ties to places like Egypt, Turkey and Indonesia, van Beek has immersed himself in the flavours of the world since childhood.

Of course, all of this isn’t immediately apparent when you walk into Big Bob’s Kitchen.

The takeaway restaurant has an American diner vibe, with a vintage logo and red and white painted brick walls. It’s light and clean and frequented by people chasing Rosie’s fried chicken and chips to go. But when the food arrives, it’s pretty clear that there’s more to this menu than your run-of-the-mill grease factory.

We’ve order ‘fish bites’, which are actually a popular Dutch dish called Kibbeling, traditionally made with the cheek-part of a cod.

In an Australian context, van Beek uses any firm, flaky white fish but still sprinkles over a special seasoning, and the result is very tasty. It’s fish and chips with an effective twist.

The loaded fries come out topped with shoarma chicken, a North African rotisserie style of cooking. We’ve asked for heat and receive a dish topped with plenty of jalapenos, homemade garlic sauce and chilli. The chips are extremely flavourful and quite rich—certainly not for the fainthearted or barelyhungry. Van Beek tells us he is keen to change up the loaded fries regularly, from pulled pork and lime to chilli and cheese variations.

There are five burgers on the menu, including the French Connection, which is served with deep fried Camembert. But if a takeaway joint can only be measured by its ‘Classic’ burger, this place makes the cut. The beef is juicy but not heart attack-inducing and the burger bun is made fresh up the road at Redz Bakery and topped with semolina flour. Cheese does not come included, but we were too busy savouring the side serve of chips to notice. The closest thing Esperance has to Nandos chips—and arguably better—they’re seasoned with smoked paprika and are cut well, not too chunky or too thin.

Van Beek has settled in Esperance after years in Perth operating Nicely Spiced, a food truck that circuited the city’s university campuses. He recognised a gap in the local market for a style of cuisine he calls the “takeaway-ish”—an apt term for Big Bob’s Kitchen. Because while van Beek is more than capable of the standard takeaway, if you’re after something a little more tasty and little more different, this is the place to go. And with luck, the more sophisticated elements of the menu will continue to evolve to match its growing demand.

Leave No Woman Behind

As a young woman, I’m lucky enough to feel like I live in a community where my rights are equal to those of my male friends. However, not every woman across the country and world has this and I want to make sure women who have no rights around the global community have a voice.

We want every woman and girl to realise the rights enshrined to them in the Universal Declaration of Human Rights and the other rights that are vital for women’s equality. We stand for a woman’s right to decide if and when she has children, and to have access to healthcare so she won’t die in pregnancy or during childbirth.

We know female genital mutilation is a violation of girls’ rights, and must be eliminated. And we stand for the right of every woman to live equally and free from discrimination, no matter her sexuality or identity. With this in mind, it is so important that we continue to raise awareness of International Women’s Day and the great work that has been done, but also, what we still need to do.

The World Economic Forum's 2017 Global Gender Gap Report findings tell us gender parity is over 200 years away, so there has never been a more important time to keep motivated. With global activism for women's equality fuelled by movements like #MeToo, #TimesUp and more, there is a strong global momentum striving for gender parity. While it won't happen overnight, across the world women are making positive gains day by day. There's a very strong and growing movement of advocacy, activism and support.

We can't be complacent. Now, more than ever, there's a call-to-action to press forward and progress gender parity. A strong call to #PressforProgress. A strong call to motivate and unite friends, colleagues and whole communities to think, act and be gender inclusive. International Women's Day is not country, group or organization specific. The day belongs to all groups collectively everywhere. So together, let's all be tenacious in accelerating gender parity. Collectively, let's all Press for Progress.

With International Women’s Day this week, I began thinking about all the things women do. Being the sensitive bloke I am, I’ve noticed just how busy the female species is. They’re always on the go with kids, elderly parents, work, shopping, household chores, committees, exercise and entertaining, just to name a few. But caring for others and always putting yourself last, I reckon, is a bit old school. After all, if you don’t look after yourself, you will simply conk out and end up miserable.

• Delegate. Imagine if aliens arrived and took you away. Someone else would have to hang out the washing.

• Do something you really enjoy at least weekly. It doesn’t matter what or with whom, as long as you love it.

• Express your needs to your loved ones.

Resentment is not good for you or those who are on the receiving end.

Finally, remember the flight safety instruction: put the oxygen mask on yourself before putting it on the child!

Go Your Own Way TRICKS FOR BETTER COFFEE AT HOME With help from Upward Spiral Roasting chief Glen Rollond Rise And Grind It doesn’t matter what kind of coffee machine you’re pushing, this is 101. Incorporate fresh, roasted coffee beans into your regular grocery shop and invest in a decent grinder. Downtown Espresso Bar sells the handheld Porlex coffee grinder for about $70, and it’s one of the best investments you could make. Ground coffee should be the consistency of sea salt, so if your coffee is over-extracted or muddy, your current grinder situation is probably to blame. As Rollond says, “A hand grinder is a good place to start, and an electric grinder like a Baratza will be an investment in future happiness”.

French Pressure When it comes to French press, the humble kitchen scales go a long way. The golden ratio is about 15:1 water to coffee, or 65g per litre. Warm the pot before you pour your 96˚—not quite boiling—water.

If you’re feeling fancy, pre-wet the beans and allow the coffee to ‘bloom’ for 30 seconds before you top it right up. You should aim to serve it immediately so it doesn’t continue to extract. Brew time is usually around four minutes, but play around with it—finer grinds require short brew times, coarser grinds need longer.

Stovetop Dog Stovetop espresso makers are portable, easy to use and easy to clean, but they can be fickle. The secret is to play around with your at-home heat settings until you nail it. In the meantime, there are a few tricks. First of all, don’t pack the coffee in as this causes slow percolation and makes your coffee bitter. Keep heat to a medium setting and don’t let the flame exceed the circumference of the pot. Once you hear that sweet sound of percolation, wait about ten seconds and remove from heat.

Bean Expert It helps to be a little knowledgeable about where your beans are from or how they’re blended.

“Coffee is a seasonal product and subject to change from crop to crop,” Rollond says. “Blends were created so that roasters could supply a single, consistent product year round. Single origin beans are the best way to explore the flavours of different countries and processing methods.” As a general rule of thumb, aficionado black coffee drinkers have the greatest advantage when it comes to appreciating the nuances of flavours between single origin beans. But if you’re a milky coffee drinker chasing a smooth, tasty and well balanced beverage, blended beans are the go. When heating your milk, start with fresh, cold milk and take care not to boil and burn it.

Keep It Tidy We’re all guilty of knocking up a coffee on our way on the door and neglecting to tidy up. Ditto with the travel mug. But percolation can be hindered by heat getting trapped or escaping in the wrong spots when there’s a blockage, and likewise, buildup of old ground coffee makes your cup muddy. Take care to keep your equipment clean and soak it once a week. Speaking of water, use the purest available to you—our local tap water should probably be a last resort.

V-Good V60 Don’t let the hipsters trick you, the V60 is really just a funnel, some scales and a well timed pour. It’s weight timed, so you’re pouring 360mL of hot water into a paper filter containing 22g of coffee, over the span of 3.5 minutes. Hot tips: Wet the filter first. Stir the coffee while it’s blooming, with a spiral-motioned pour or even a spoon to ensure there are no dry pockets. It’s critical to pour the water evenly—that’s why those goosenecked kettles are popular right now. Give the jug a spin when you’re done, et voilà!

CanJam Volume 2 was successful beyond our wildest imaginings. The Cannery Arts Centre is a sublime space for live music, and all in attendance experienced a thoroughly intimate vibe. After a hectic weekend and a solid amount of work in the lead up to the event, I was finally able to relax.

Everything ran so damn well and to be honest, CanJam has become quite possibly my favourite event I’ve ever been involved in.

Following the finale of Swamp Thing’s set, and with a few beers under the belt, Rowan Donovan, Joe Franzone, Cooper and myself embarked on a raucous drum section jam. Congas played a starring role as I converted things into sticks and manned the high hat. Super fun. I love my work, I truly do, and it’s these moments when all the hard work is done that give me such enjoyment.

For myself personally, two golden moments stand out. Before the actual event started, Matt Cooper and myself were working our way through soundchecks when Michael Barker of Swamp Thing rocked up to set up his drum kit.

Soundcheck came around and Cooper and I had the absolute pleasure of having a solid 15-minute jam with the man, who is a truly amazing drummer.

So one event wraps up and the next is just around the corner. Balmy Nights will take place at the Cannery this Saturday, March 10. Check out Culture Pops for more information.

It’s like there is this unattainable standard that dangles over our heads pertaining to what it means to fit in, and some people are in closer proximity of it than others.

We can be merciless towards those who fall short of this standard.

We invite you to send yours to hello@esperancetide.com I’ve been thinking a lot about ‘fitting in’ of late, an oversimplified term that has many connotations. To fit into our families, our communities, our workplaces, our schools, our societies, etc.

We strive to fit in, because to belong is such an integral part of the landscape of one’s life. Not to mention the pursuit of validation from those around us. And we do naturally fit into some places more seamlessly than others. But what about if you never quite fit in? What happens when you feel like you are more ‘out’ than ‘in’?

Some tend to look down on those who have done away with the desire to fit into society as we know it. But why?

None of us actually, really fit all the way in. We all have our quirks, our flaws, our interests, our secrets that surpass the standard of what we narrowly perceive as normality. To fit all the way in is illusory.

Probably created by someone who didn’t value variance or was, at large, kidding themselves. Variance is such a natural yet undervalued component of society. Which is sad, because it’s what makes things interesting, in my opinion.

So the next time you feel like you don’t fit in, try to remember that it’s all good—no one actually does anyway.

In Esperance’s extremely windy conditions, windbreaks can be an essential part of property management. A windbreak using native shrubs and trees can not only be effective protection from the wind, but also provide wildlife habitat, reduce soil erosion, provide privacy and screening, and could be cheaper than building a fence.

Planning a windbreak is essential. If you are in town and prohibited by space, consider one row of a single species, and one you can hedge. Plants suitable for this type of windbreak would be Melaleuca nesophila, Melaleuca pentagonia, Melaleuca lanceolata or Grevillia olivacea. All of these species are suitable for a coastal site.

If you have a bit more space, then multi-rowed, staggered planting in a variety of species would be very effective. This would give you a bush-like effect.

With careful placing of species, with small plants on the outside and larger planted in the middle rows, this windbreak would give greater protection. Some suitable species for this kind are - Calothamnus quadrifidus, Callistemon phonecius and Acacia saligna.

Try some bushy Hakeas and Melaleuca’s for the smaller and medium shrubs and Eucalyptus or Corymbia’s for the larger plants.

A Futile And Stupid Gesture Directed by David Wain Critics have described ‘A Futile And Stupid Gesture’ as exactly what its title implies.

The film tells the story of the rise and fall of National Lampoon. From its genesis as a Harvard University satirical magazine, co-founders Doug Kenney (Will Forte) and Henry Beard (Domhnall Gleeson) transformed the magazine into a comedic empire. The plot centres around Kenney, who suffered from depression and used both substance abuse and humour to cope with his malaise.

The real Doug Kenney died after falling off a Hawaiian cliff in 1980, aged 30.

But the creators have used poetic license to steer the storyline elsewhere.

It’s narrated by 74-year-old Martin Mull as a ‘modern-day’ Doug Kenney— Kenney as he might look if he were still alive in 2018. This is an act of love, to pay tribute to his wasted talents, and to the ‘futility and stupidity’ of the gesture that took his life.

Often eyerollingly predictable, you’re happily distracted by casting. There are cameo appearances of dozens of famous modern comedians playing their heroes, one era of talent saluting another. The semblances are hilariously poor but you can feel the love and respect pouring out of the likes of Joel McHale as Chevy Chase and Jon Daly as Bill Murray.

At the very least, many viewers will get guilty pleasure watching the debauchery of the hedonistic, cocaine-fuelled circus that was Hollywood in the 70s.

The premise of the film is very ambitious in the sense it somehow combines biopic, docudrama and total farce— and it can be clunky at times. It’s not the perfect movie, but it’s one of Netflix’s best yet. It’s undeniably funny, strangely charming and enlightening of a particularly underexposed part of Hollywood history.

INGREDIENTS 1 large broccoli 1 leek 1 fennel 3 spring onions 2 garlic cloves 1/2 cup fresh basil 1/4 cup fresh parsley 4 cups veggie stock 2 cups water Olive oil Salt & pepper Cream (optional) Parmesan (optional) 18 • ES P ERA N C E T I DE

METHOD 1. Chop all vegetables and herbs separately.

2. Fry the garlic and spring onion in a pot with olive oil.

3. Add the rest of the vegetables to the pot and season with salt and pepper to taste.

4. Cook and stir for 2-3 minutes on a medium heat.

5. Add the stock and water, allow to boil.

6. Turn to a low heat, allowing the vegetables to cook through.

7. Once cooked, blend with a hand blender. Add a little bit of cream to the mix if you’re feeling a bit cheeky. Perhaps a little parmesan too.

In a small place like Esperance, it can be hard to be true yourself at the risk of creating drama.
