HOT, FLUFFY DOUGHNUTS, GOLDEN BROWN AND FRESH FROM THE FRYER, ARE EXACTLY WHAT YOU NEED ON A SUNDAY MORNING. Even better, they only cost a dollar each and are served with a cheery smile, with the proceeds going to a good cause! That’s just one of the many reasons to get up early on a Sunday morning and go wandering through the Museum Village Markets. Good food, local craft and produce, interesting stalls, coffee, buskers, and more. The markets have it all.

The Museum Village Markets, held in the historical Museum Village, is a favourite event for locals and tourists alike. ESP owner Amanda Thomas is the coordinator of the markets. She loves being part of the community spirit in the Museum Village. “It’s a fantastic community event," she says. "It’s great that people can pop in and out of the shops as well. The markets are good for the Museum Village and good for tourists. It’s great for kids, who can play on the grass, and it’s lovely to see people walking through with their dogs.” The community feel is evident at the markets, with stallholders happy to have a chat while you browse, and lots of kids enjoying the fun.

What about the market stalls? Here are a few of our favourites! Be sure to head down to the markets to check out what else is on offer. The range of stalls changes quite often, so there will always be something new to try or buy.

Etty’s Spring Rol ls These are a market mainstay, and anyone who hasn’t tried them yet should really get down there ASAP for a huge, delicious, piping hot spring roll, homemade by Etty herself and served with her signature hot or sweet chilli sauce.

Scrunchies for Breast Cancer As all fashion followers will know, scrunchies are making a comeback. These fun range of locally made, bright, retro scrunchies by Sleek Scrunchies are helping to fund Breast Cancer research, so that’s another great reason to buy.

Coffee to go The newest addition to Esperance’s coffee cart scene, Juncture Cart, serves not only hot coffee but Bread Local sweets too. Where better to get your Sunday morning coffee hit?

Bees are so important for our ecosystem, and honey is delicious, so support local beekeepers and do yourself a favour at the same time. There are usually a few different varieties on offer at different stalls, and if you’re lucky, you might even get to try before you buy.

Local ly made crafts Do you need to buy a present for someone who has everything? The markets are the best place to pick up that perfect unique gift! Here are just a few of the gift options on offer at the markets: hand knitted beanies, beaded jewellery, gorgeous handmade children’s clothing, macramé flowerpot holders, collectable antique bottles, crystals, chopping boards, metal sculptures, hair bows, crochet bags and tea cosies!

Treat yo’ self There is a huge range of delicious treats on sale at the markets. You can pick up locally made preserves, lemon butter or chutneys from a few different stalls.

There’s also local olive oil and stalls selling sauces and spice mixes. You can fill up on popcorn, fairy floss, liquorice, delish vegetable Roti and, of course, those signature doughnuts.

For many months, there’s been a lot of mysterious activity going on in the old shoe shop on Andrew Street. Tradies have been in and out, and deliveries have started to arrive. Curious pedestrians may have been tempted to peep behind the taped-up windows, and whispers have been circulating. We’re excited to announce that this month, Esperance’s newest food heaven will be opening - a gourmet deli called The Deli King.

The Deli King is the project of Nicole and John King, Esperance locals who are familiar faces to many around town. Nicole worked for 17 years at the ANZ bank, and John drives for Esperance Rural Supplies. The couple owned Esperance Delivery Service for many years, and have both worked in the hospitality industry. Nicole and John are now bringing their considerable skills and knowledge to this new project, which will allow them to share their love of gourmet food with the community.

When Nicole talks about the Deli, it is clear how passionate she is about good food. She rattles off the names of gourmet salami and cheese, and is excited about the different varieties that will be available, both new tastes and nostalgic favourites. “Every time we go to Perth,” says Nicole, “we bring back a carload of food that we can’t buy in town. We want to bring that availability to Esperance.”

Nicole and John have given the old shoe shop a major facelift. As with many renovation projects of this scale, things have not gone exactly to plan; they’ve had delays and setbacks, but the shop is finally ready to go, filled with new fridges and beautiful wooden cabinetry. There’s a counter where people can eat their lunch, enjoy a coffee and look out over the Post Office Square. Kilos and kilos of cheeses have been arriving, and the stock is on the shelves. The Kings are determined that the shop will have great customer service - the same friendly, warm customer service that Nicole was known for at the bank.

The Deli King may be the new kid on the block, but with Nicole and John’s expertise and passion, it is sure to be an Esperance foodie favourite in no time.

Nicole and John met and married in Coffs Harbour, NSW. They both spent time in Esperance when they were growing up, and decided it was the ideal location to settle down. However, it hasn’t been all smooth sailing since they arrived in town, with both Nicole and John overcoming major health issues. For Nicole, it was a double spinal fusion and two hip replacements; John’s challenge was surviving a very serious bout of cancer. These challenges made the couple more determined than ever to follow their passions, including cooking with their favourite gourmet foods. “John is the best seafood cook that I know,” Nicole says. She’s excited to share this passion with the foodies of Esperance. “We want feedback – what do people want? We’re happy to get things in if people want them.”

They will primarily be stocking produce from WA and Australia, with a few speciality imported items such as Italian pasta. The Deli King will supply selected nitrate and gluten-free gourmet meats, and will also be dryageing some meat themselves. They will stock a range of cheeses, including produce from The Grocer, Barossa Fine Foods and The Blue Cow’s artisan range. A range of vegan options sourced from The Wise Bunny, including some great vegan cheese, will also be arriving at the end of June. Entertainers’ platters of cheeses and meats, easily packable into an esky or Engel, will be available for order. To top things off, the Kings will be baking bread on the premises both for sale and to supply their in-house gourmet sandwich bar.

ethical eating CHANGING THE WAY THAT WE EAT IS POWERFUL. Every small change that we make has a ripple effect throughout the food supply system. If enough of us start to eat ethically, we can change the world; as Anna Lappe said, with every dollar that you spend, you’re casting your vote for the kind of world that you want to live in.

As most of us spend a lot of our time and money on food, the choices that we make are very important.

H E R B I VO R E OR C ARN IVORE ?

One of the biggest questions when it comes to ethical eating is whether or not to eat meat. It’s a complex question. There are issues with both eating and avoiding animal products. The main arguments against eating meat are that large-scale meat production is harmful to the environment, and that animals are treated cruelly in order to harvest meat or animal products. The livestock industry does contribute heavily to carbon emissions and has resulted in largescale deforestation to make way for grazing land.

Although, there can also be ethical issues with avoiding meat. Some of the products that feature in a vegan diet rely heavily on the exploitation of farmers who live in poverty. The production of coconuts, cashews and quinoa are three such examples, where farming conditions in third world countries leave

farmers trapped in crushing poverty. The production of large scale mono-crops such as soy, maize, and wheat also relies on chemicals that destroy soil biodiversity and kill off beneficial insects and microbes. Grazing animals are better in contrast, for the biodiversity of the soil and for the wider ecosystem.

So, what’s the answer? As Australia is the country that eats the most meat per capita in the world (around 100kg of meat per person every year), we could certainly stand to reduce our meat consumption a little. We should make sure we’re choosing ethically produced, sustainable sources of meat. Fortunately, in Australia, this is not too difficult, as most farmers care about the welfare of their animals. Pink Lake Butcher’s meat is grass fed or grass finished and is sourced from WA’s Southwest region so the meat miles are reduced as much as possible.

Eat local ly

Avoid palm oil

One of the most important ways to eat ethically is to eat as locally as possible. Bob & Jim’s General Store Buy veggies from or at the Saturday morning growers' markets, and buy WA-produced meat, dairy, and other groceries where possible.

This is good for our local economy and helps us to examine where our food comes from. More importantly, buying local reduces the distance that our food has to travel to reach us. Choosing to eat seasonal products is helpful too as products that are out of season have to be transported from far away.

Palm oil is widely used throughout the world in products ranging from snack foods to soaps.

Production of palm oil in South East Asia is causing large-scale deforestation, endangering species such as orangutans and tigers. Palm oil is often labelled as ‘vegetable oil’ in Australian foods, so if in doubt, check the label. If the nutrition panel states that the product contains saturated fat, then the ‘vegetable oil’ used is likely to be palm oil.

Reduce waste

Cut out fast food Most meat, poultry, and dairy products used in fast food are produced at factory farms. To make the fast food industry more profitable, animals in some overseas countries are fed hormones that increase growth and milk and egg production. This can lead to painful inflammation of the udder, as well as crippling and debilitating conditions for poultry.

Also, if you haven’t noticed already, fast food uses a hell of a lot of packaging materials!

Fair Trade-certified products ensure that the farmers growing products such as coffee, cocoa, and tea receive a fair price for their produce, and have safe working conditions. If you don’t want your coffee or chocolate to come at the expense of farmers living in poverty in developing nations, then buying fair trade is the way to go.

Do your research Technology can help you with some of your food dilemmas. The Shop Ethical app is a great guide to making ethical choices when it comes to your grocery shopping. The ratings in this app are based on the environmental impact of a product, as well as any issues with cruelty or unethical treatment of factory workers or farmers.

The Australian Sustainable Seafood Guide is also a free app that will help you decide which seafood to eat and which to avoid in order to make sustainable choices. This is hugely important if we want to ensure that our fish stocks are sustainable into the future.

Podcasts are the latest big thing in entertainment. Unless you’ve been living under a rock, you would have noticed their astronomical rise in popularity. And what’s not to love? There are podcasts available on a wide range of topics, giving you fascinating listening material in whatever genre is of interest to you. You can listen to podcasts while you do the housework, while you exercise, while you commute to work, or while you drift off to sleep at night…

The very first ‘podcasts’ were downloadable radio programs, shared as digital files. As internet use began to boom in the mid-1990s, bloggers began to insert audio files into their online blog posts. Software developers Adam Curry and Dave Winer developed a platform that allowed these audio files to be shared. Reporter Christopher Lyndon created what was arguably the first modern podcast in 2003, using Curry and Winer’s software to release an RSS feed of his audio interviews.

‘Audio blogging’ was mentioned at the first ever BloggerCon conference, also held in 2003, where Lyndon and Winer demonstrated the possibilities of the audio medium.

In February 2004, journalist Ben Hammersley suggested the term ‘podcasting’ to describe the downloading of audio files.

From that time, podcasts skyrocketed in popularity. By late 2004, podcasts were being made and distributed on a wide range of topics in the USA, Canada, Australia, and Europe.

In 2005, Apple added podcasts to its iTunes music software and announced they had reached over a million podcast subscriptions just days after the software was released.

Podcasts are now popular worldwide, with approximately 700,000 active podcasts available in over 100 languages.

If you are new to the world of podcasting, it’s easy to get started! Most people listen to podcasts on their smartphones or tablets. iPhones come preloaded with the Podcasts app, which is very easy to navigate. Android users are able to download the Google Podcast app. Search to find the podcast you are looking for, or browse in the ‘recommended’ section.

Other apps you can use include Castbox, Stitcher and Pocket Casts, so find the one that suits you best. Many podcasts are free to listen and subscribe to, although some do contain advertisements.

So what should you listen to? There are endless options! Stories, news, information, true crime, politics, comedy – whatever your interest, there will be a podcast to suit you. Here are some of the most popular types of podcasts, plus a few Tide picks….

These podcasts feature interviews with a range of fascinating subjects. The Australian podcast Conversations is a great example of this. Interviewers Richard Fidler and Sarah Kanowski speak to everyone from beekeepers to researchers, novelists, sportspeople, mountain climbers and everyone in between. For example, you can listen to an interview with a crime writer who corresponded with a serial killer on death row, or a chat with a pilot who had to make an emergency landing during the 9/11 attacks in the USA. There are many other interview-style podcasts, so you’ll certainly find one to suit your tastes.

A true crime podcast called Serial was one of the earliest breakout hits of podcasting. First released in 2014, season one featured journalist Sarah Koenig investigating the 1999 murder of an 18-year-old girl in Baltimore and the man who was charged with her murder. Episodes of Serial have been downloaded over 340 million times. Another good example of the genre is Teacher’s Pet, an Australian true crime podcast by Hedley Thomas that investigates the disappearance of Lynette Dawson. Following the release of Teacher’s Pet, the police investigation into Dawson’s disappearance was reopened, and her former husband Chris Dawson was arrested and charged with her murder. The podcast was credited with generating interest in the case and prompting people to come forward with new evidence.

The series will feature four open mic events, four free workshops and four intimate ticketed gigs, each with a strong local focus. We will see one of each event per month between June and September.

The program aims to encourage and develop aspiring local musicians, as well as to support the already well-established local music scene.

Earlier this year, the Cannery Arts Centre and Kyza Presents hosted the WA’s Finest series. WAM Best Regional Act nominees from 2018 performed and offered workshops to the local community to complement their live events. The integrated delivery of the series inspired me to consider the pathways taken by musicians who are trying to find their feet in the industry, and the 2019 winter program is a direct result of this consideration. It aligns with The Cannery Arts Centre’s mission to cultivate and promote artistic endeavours with equal access for each individual.

Local musicians will have the opportunity to extend their skill sets through a series of workshops covering live sound, gig bookings and promotion, web management and guitar technique, with each session delivered by a local or touring industry professional. Open mic events are key to the program, providing artists with opportunities to perform and build their confidence. Winter 2018 saw the creation of the 75 Club at The Cannery Arts Centre, a small space transformed into a cozy and intimate lounge setting. The 75 Club returns for 2019 and will host 21 local musicians and two additional touring artists over the four events.

Details for our first three events to be held in June are now live, and you can check them out at www.kyzapresents.com or www. canneryartscentre.com.au. Things kick off on Friday June 14th with a classic open mic, and tickets are also available now for our first edition of the 75 Club, featuring tunes by Mousey Stewart, Steve West, Laura Petrie, Campbell Garratt and Boden Bosworth. Grab them while you can from the Cannery website. Information for events held in July, August and September will be rolled out on a monthly basis, so stay tuned.

The Cannery Arts Centre partnership with Kyza Presents continues to go from strength to strength. Without the ongoing support of brilliant staff and committee members, as well as an untold number of volunteer hours by legendary members of the community, the winter program would fail to fly, so a big thank you is due to you all. Pull on your beanies, fire up a strong mug of ale and let’s kick the winter blues in style.

John will be discussing his work with online service provider BandZoogle. The workshop is free to attend and all ages are welcome. Esperance was officially gazetted as a municipality in 1895, and a year later, businessman E. J. McCarthy decided that the rapidly growing town needed a hall.

The result was the Bijou Theatre, which is the oldest surviving theatre in the state. McCarthy built the Bijou alongside a two-storey general store on Dempster Street, and amazingly, constructing the theatre took McCarthy only 31 days. Built from timber and iron with a pine floor, the Bijou was lit by brass oil lamps that hung from the ceiling beams. The walls were decorated with large paintings of sailing ships. McCarthy proposed that the Bijou would accommodate around 600 people.

and it was replaced with strong jarrah boards. Roller-skating was then only permitted around the outer boundary. Seating in the hall was a collection of wooden chairs and stools, said to be so uncomfortable that theatregoers brought their own cushions for comfort, while the most fortunate patrons were seated in highly sought-after deck chairs. Films were screened once a month by a travelling projectionist, and entrance cost 10 and 20 pence for children and adults respectively.

In 1947, the Royal Antediluvian Order of Buffaloes (RAOB) purchased the Theatre from the McCarthy family and used it as a meeting hall. The ‘Buffaloes’ are a males-only social and charitable club that was started in England in 1822. The Bijou continued to be used for movie screenings and social events, though a number of these events shifted to the RSL hall after its construction in 1954. The opening of two drive-in theatres in Esperance brought an end to movie screenings at the Bijou, and the run-down building virtually closed its doors. When the Esperance Theatre Guild obtained a lease on the Bijou Theatre in 1971 after three years of staging performances in the RSL hall, they almost certainly saved the building from demolition.

Weddings, school plays, socials and other events were held in the hall. When roller-skates came into vogue, the Bijou was also used for weekly roller-skating events. This quickly destroyed the pine floor, making it unsuitable for dancing,

The Guild purchased the Bijou from the RAOB in 1975, raising the funds to buy the building through ticket sales from their productions, and by having people ‘buy a seat’. The brass nameplates on the seats in the theatre show the many people in the town who

contributed to the fundraising effort. The theatre can now accommodate 160 people, a far cry from the 600 or more people who squeezed into the hall for movies in the early days of the Bijou. The Esperance Theatre Guild made many improvements, including reroofing the building, constructing tiered seating, and expanding the stage. These renovations were carried out through the hard work of Guild members, and with local builder John Crawley’s expertise.

In the 1980s, the theatre was extended to include a wardrobe room, kitchen, supper room, and new toilets. The Guild has shown many amazing productions at the Bijou, including ‘Cheap at Half the Price’, a play about Esperance’s history that was written by local Dale Johnson, and was produced for the Bicentenary in 1988.

Notable visiting producers have directed some of the Bijou’s performances, providing an opportunity for locals to learn valuable theatre skills. One of these visiting directors was Raymond Omodei, who went on to direct across Australia, including at the Sydney Opera House.

The Theatre Guild is still going strong, with many of the founding members still involved.

The French word Bijou means ‘little jewel’, and the Bijou Theatre has been a local gem for over a century. With any luck, the Bijou will still be providing entertainment to Esperance locals for many years to come.

Early in the gold rush, Esperance was a bustling town and part of a busy thoroughfare for people travelling to the goldfields. As a result, the newly built Bijou Theatre was immediately put to use. Warner’s Merry Moments Theatre Company visited Esperance in 1896, and local pianist Mr Jones accompanied the performers from England and Sydney. Advertisements from 1896 promoted an ‘Ethiopian Minstrel Show’, a Teamsters’ Ball, the Quadrille Club fancy dress ball, and ‘Venderhatta, the Great Rocky Mountain Wonder on the invisible wire’. Dances were held at the Bijou every Saturday night.

Local government meetings were held there, as were political rallies and court proceedings. The inside of the hall was also used to display produce and exhibits for the Esperance Agricultural Show, with equestrian events held on a vacant block of land opposite the theatre. The large Norfolk pine tree in front of the building was planted in 1897 by the Esperance Shire and was watered in by the McCarthy family.

Equinor: The Uninvited Concern

Concerns about a potential oil spill and the poorly understood effects of seismic activity on marine life were among the reasons why South Australian local communities began to scrutinise the intentions of new investor Equinor to drill for oil in the Great Australian Bight. Formerly known as Statoil, the Norwegian energy company is 67% owned by the Norwegian government and is managed by the Ministry of Petroleum and Energy.

Locals and specialists cited unacceptable risks to their communities and to the pristine coastal and marine environments. In addition, the $6.3 billion wilderness tourism industry and the $900 million fisheries and aquaculture industries were at risk, along with 11 000 full time jobs in these sectors.

The Great Australian Bight is an environmental hotspot. Up to 85% of its identified species exist nowhere else in the world, and 275 species have been discovered there, some as recently as 2016.

The Kangaroo Island Council have been joined in their expression of concern by twelve South Australian and three Victorian local councils. In May 2019, Ravensthorpe was the first Western Australian council to join in opposition of oil drilling in the Great Australian Bight. Albany Shire Council has also expressed their apprehension to the National Offshore Petroleum Safety and Environmental Management Authority (NOPSEMA), stating that the city does not support the venture.

Brief Background In 2011, BP was granted exploration leases in the Bight. As a NOPSEMA requirement, BP was obliged to complete an environmental assessment.

During its environmental assessment process, BP released worst-case oil spill modelling. The modelling showed that a spill from an uncontained well blow-out inside its exploration area could reach Kangaroo Island and Port Lincoln within fifteen days, and Adelaide within twenty days.

Any potential spill posed a significant risk to coastal communities as far away as Victoria, Tasmania and the eastern Recherche Archipelago island group.

BP’s oil spill response plans also demonstrated that the Australian and state governments were significantly unprepared to successfully deal with a major oil spill in the rough and treacherous waters of the Bight. BP’s own documents admit that physically containing an oil spill using booms and skimmers would be ineffective in the Bight’s typical conditions, and that spill response efforts would need to rely heavily on the use of toxic oil dispersants. These dispersants would likely have significant long-term impacts on marine life.

BP also identified an extraordinary lack of access to trained and organised response personnel in the coastal communities at risk of a spill. Consequently, in October 2016, BP ceased exploration. However, less than a year later in June 2017, Equinor took over the BP leases to become operator and 100% owner of exploration permits EPP39 and EPP40.

As part of the permit EPP39, Equinor plans to drill the Stromlo-1 exploration well. The well is located in the Ceduna sub-basin, approximately 400 km southwest of Ceduna and 476 km west of Port Lincoln, in a water depth of approximately 2240m.

Equinor, though experienced in drilling in the North Sea, have not previously operated at 2240m depths. They also lack experience with the significantly higher waves generated in the Great Australian Bight.

Local Action Local Environmental Action Forum (LEAF) have made a deputation to the Esperance Shire Council to present their grave concerns regarding Equinor’s proposed oil exploration in the Great Australian Bight. LEAF believe that the poorly understood effects of seismic testing on marine life, offshore drilling for oil and the subsequent industrialisation of the Great Australian Bight will bring detrimental consequences for our marine and coastal environments compromising the Southern Ocean, the Great Southern Reef, the Bremer Canyon and beyond.

LEAF asks the Esperance Shire Council to enact the 20172027 Strategic Community Plan that has as its mother statement, “to value and protect our natural environment and recognise the importance of protecting the Recherche Archipelago,” and in doing so, to join with other shire councils to oppose Equinor.

Hakeas Hakeas, along with Banksias and Grevilleas, are in the Proteaceae family. Most are from WA and a wide variety grow in the Esperance area.

They are super tough when established, only needing water to get them started and a little low phosphorus fertiliser. Choose an open sunny spot with good drainage.

Hakeas come in a variety of colours and some have unusual flowers that are a favourite with honeyeaters.

Most Hakeas are small- to medium-sized shrubs, some with spiky leaves; don’t let that put you off, as it can be a good thing. Birds can use Hakeas to take cover from cats and other predators, and a hedge of Hakeas would be a great barrier to any unwanted guests.

One of our all-time favourites is the Hakea laurina, in flower at the moment, with the Hakea multilineata coming a close second. Both have spectacular red flowers and a weepy habit, and are in the non-spiky group.

Hakea prostata and Hakea corymbosa have very spiky foliage, and are among the smallest Hakeas.

Both are spectacular when in flower and make good hidey holes for small animals seeking refuge.

BRRRR, IT’S COLD IN HERE Welcome to winter in Esperance. Here’s a secret we don’t tell everyone: it’s just as wonderful here at this time of year. Crisp, clear mornings, beaches without a soul to be seen, listening to the sound of rain on the roof as you sit by the fire – so much to love. Sure, occasionally you might see a polar bear float by on an iceberg in the bay, and you’ll have to wear two wetsuits if you want to go swimming. The wind feels like little spears of ice are piercing your very soul. You might start to feel like that frozen blue night king guy from Game of Thrones when the first icicles drip from your eyebrows. But otherwise, it’s great! Note: if you actually see a polar bear, it might be time to get your eyes checked.

There are fewer tourists in winter, which is a shame because here’s another secret: we actually love tourists. Sure, we might complain that driving through town takes four minutes instead of two due to the extra traffic. We’ll definitely complain that no one knows how to indicate correctly at roundabouts (spoiler alert: that’s usually the locals). But really, we absolutely adore tourists.

It’s great for the town, gives local businesses a boost, and it’s nice to see all the gorgeous young

things enjoying the waves. But we mostly love tourists because of the delightful smug glow that we feel when we see someone’s jaw drop open when they visit for the first time. “Oh yeah, it’s pretty stunning. Not my favourite beach though. We’ve got half a dozen that are even more spectacular,” we’ll say, patting ourselves on the back for choosing such a special place to live.

So what do the locals do in Esperance when the Antarctic wind is blowing, and half the town has migrated to warmer climates? Well, mostly we complain about the weather. We can’t help it: here in dreamy little Esperance, the weather is one of the big events of every day. Plus we’re a farming community, so it’s in our blood. Too much rain, not enough rain, people won’t stop talking about the rain. When someone comments on how cold it is, we’ll talk

the crowds! We’ve even got perfectly brewed coffee and our own craft beer. What’s not to be smug about, right? If solitude is more your thing, there are plenty of dreamy places around town where you can bushwalk or picnic or take dozens of selfies. Ugg boots become must-haves, and you can pull out your fab scarf collection. Who doesn’t look good in a cute beanie?!

So if you’re visiting Esperance in the winter, be sure to pat yourself on the back. You’ve chosen a perfect time of year! The locals are friendly, the beer is cold, and you’re never far away from a cosy fire and a long chat about the weather. Just be sure to pack an extra wetsuit – and watch out for polar bears.

But complaints aside, most of us love winter. There are perfect, crisp, still, days to stroll on the deserted beaches. There are marshmallows to toast around a warm campfire. We might head out to the Gibbo for a giant steak, or to the Condy Tav for a delicious burger. We’ll probably enjoy a cold beer in front of a raging fire at a range of different venues around town. And then there are shows at the Civic Centre and the Bijou, live music at the Cannery, and plenty of other art and culture experiences around town. I mean, we’re practically Melbourne, without

beefy enchiladas SOOTH YOUR SOUL Ingredients 8 tortillas 1 ½ cups grated cheese Fresh coriander, roughly chopped (optional garnish) SP ICE MI X 1 tsp onion powder 1 tsp garlic powder 1 tbsp cumin 1 tbsp paprika 1 tbsp dried oregano 1 tbsp cayenne pepper (optional)

E NCH I LA DA S A U CE 2 tbsp olive oil 3 tbsp plain flour 2 cups chicken stock 1 ½ cups passata sauce ¼ tsp each salt & pepper BEEF 1 tbsp olive oil 2 garlic cloves, minced 1 onion, finely chopped 500g ground beef mince 1x can refried beans 1x can black beans

Method 1. Mix together Spice Mix ingredients. Set aside.

3. Add 1/2 cup chicken broth, whisk straight away then it will turn into a thick smooth paste quite quickly.

4. Add remaining chicken broth, passata, salt, pepper and 2 tablespoons of the spice mix and whisk together.

5. Increase heat slightly to medium-high. Cook for 3 to 5 minutes, whisking regularly until the sauce thickens to the consistency of thick syrup.

Remove from stove.

F IL L IN G 6. Preheat oven to 180C. 7. Heat oil in a skillet over high heat. Add garlic and onion, cook for 2 minutes.

11. Place filling on the lower third of a tortilla. Roll up then place in the baking dish, seam side down. Repeat with remaining.

12. Pour sauce over the enchiladas, top with cheese, bake for 10 minutes covered, then 10 minutes uncovered. Serve hot!

Tip: Triple the spice mix and put it in the jar for your next Mexican night.
