LUKE ELLIOTT ON HIS QUEST FOR SAILING GOLD We’re a country that worships sport. Australia’s most celebrated athletes are our national icons, and often for good reason—it’s a special type of person that can attain the elusive level of excellence required to be a champion. The mindset of a high performance athlete is not like that of your everyday human, nor is the everyday person willing to make the same sacrifices necessary. Excellence comes at a cost, something Esperance-raised professional sailor Luke Elliott knows too well. The remarkable 25-year-old recently returned home from the European Championships in La Rochelle, France, seeking a chance to clear his head before he faces the World Championships, a crucial competition in the lead up to his second Olympic campaign.

La Rochelle is a place of significance for Elliott, who at 18, bailed on an architecture degree (“Dad was stoked, mum was cut”) and packed his bags bound for the French seaport, the first stop on a self-funded circuit of the European sailing tour.

Elliott sails a one-manned boat called a Laser, widely regarded as the most competitive boat in Olympic-class sailing. “I remember getting there, with no money, no fuel, no phone reception, I hadn’t showered in four days,” he says. “I remember thinking, ‘What am I doing with my life?

How did I get here?’. It was scary as shit.” Living in a van, Elliott stuck it out and completed the tour. By the end of the year, he was good enough to qualify for the Australian squad. With the gift of hindsight, it’s clear it takes a pretty unique 18-year-old to take a risk that bold. “I’m like that,” Elliott says. “When I find something I like, I want to be the best at it—I get super hooked. Like coffee, for example. A while ago, I got so hooked on coffee, now I travel with a stovetop, I even did a barista course. When I get stuck on something, I pursue it.”

Coming home to Esperance gives Elliott a chance to recalibrate. While the virtue of his focused mind has allowed him to reach levels of excellence few people come near, it’s a double-edged sword when giving everything still isn’t enough. “The last trip was really rough for me, I needed to reset,” he says. “I’m the kind of guy, where I’m so obsessed with what I’m doing, I can kind of break myself against it. And there’s a point where that becomes unproductive. I hate losing. When you win stuff, it doesn’t feel nearly as good as losing hurts. It’s not a 50:50 thing—losing hurts so bad.”

Elliott experienced a feeling more bittersweet than his coffee when he watched his teammate Tom Burton win gold in Rio in 2016. “We were in Lake Garda in northern Italy for the last training camp, and he flew to Rio and I flew home to Perth, watching on TV when he won the gold medal,” he says. “It was kinda surreal. Training with him, beating him on the water and then watching him win gold.”

And so, facing the next Olympic campaign, the sailor remains as driven as ever to outperform.

Making the Australian Olympic team for Laser sailing is no easy quest. A one-manned boat, Australia sends just one competitor to compete in the event. Jostling for a spot in Tokyo 2020, Elliott is up against his former gold medallist buddy Burton and the current European champion, Perth sailor Matt Wearn. “Even if I win the World Champs, it’s still pretty slim for me to go to the Olympics, because the other guys are that good— that’s the situation I’m in,” he says. “Australia is very strong in the Lasers. If I sailed for another country I would go.” With that considered, Elliott says his next goal is to make the international Top 10, an accolade that would open up a whole new realm of funding and “a seat at the table”. But is he lying if he says he could live without a shot in the Olympics? “That’s the thing. It’s hard. You’ve got to draw a line in the sand somewhere because you can’t keep giving everything and breaking yourself against it if you’re not getting anything out of it, if you keep getting knocked back,” he says. “But you never know, the next day could be the turning point and it clicks and you make it. It’s an addiction—I’m addicted to trying to win.” ⟶

With a mind like that, it’s easy to see the wicked emotional web high performance athletes can weave for themselves. There’s constant need to improve, to outperform themself and others.

As Elliott says, ”I don’t like the feeling of being stagnant. If I feel like I’m staying the same, that to me is the same as going backwards”. So what happens when hard work and a positive attitude still doesn’t make you the best? In the last 10 years, sports psychology has played a huge role in the world of competitive sailing, ensuring the mental clarity of athletes and to stop them burning out. “Managing expectations has become the most important part of high performance sport,” Elliott says. “The best performers manage that really well and are able to be present and mindful. I’ve been meditating for a long time. But it’s a painful thing when you don't perform as well as you’d like, especially when people you feel like aren’t putting as much work in are doing better.

Sometimes that’s just the nature of sport. Wanting it bad enough can actually make it worse.”

The complete exhaustion that comes from the mental effort of elite sport is another element of sailing Elliott grapples with. “The biggest struggle as a whole is how selfish being a top level sportsman is. It’s all-consuming,” he says. “You’ve got to suck everything out of every person around you.” In darker moments, the pursuit can seem completely trivial. “18 months ago, I burnt out fully, and the main drive behind that was just... “What am I doing?”. Because I’d seen Tom win the gold medal, and afterwards he was like, “You know, you think when you win it you’re going to be happy for the rest of your life and all your problems are solved, but it’s an illusion”. He’s got the thing everyone wants, but his world’s not perfect by far and actually nothing’s changed. He’s back on the horse grinding again—the world moves on really fast.”

Naturally, his burnout 18 months ago was treated with the same spoonful of medicine Elliott got just last week: coming home. From here, the sailor affirms the same ideas he will have to remind himself of every day in the lead up to the mental turmoil of the World Championships in Aarhus, Denmark, next month. “I came home and realised why I was doing it. Ultimately, it’s never really about winning but because I love it,” he says. “I could sail for fun every day. But it’s not just about sailing either, but everything that comes with high performance sport. I love that, clearly. I wouldn’t be here if I didn’t.” With a future bright if a little uncertain, the one thing that’s clear is Elliott is not about to give the game away just yet. “Hopefully my day in the sun will come, and that’s what I’m waiting for. And hopefully it comes at the right time,” he says. “But you never know what’s going to happen. I could get dropped from the team or I could make top 10. That’s the spice of life.”

This Is A Tribute: Pier Hotel Dinner Rolls In a bygone era of Esperance history, until about five years ago, Salad Bar at the Pier Hotel came with one crusty addition that made locals and visitors alike weak at the knees. It was the humble white dinner roll, served warm before it was broken apart and stuffed with butter.

The decline of the dinner rolls was slow and painful. What was once an ‘all you can eat’ situation slowly dwindled into a ‘one per person’ scenario, where an Irish waitress at the counter would pop a lonely bun on each plate. And then one day, it happened. The dinner roll supply dried up. And just like that, they were no longer on offer to punters at the main arterial dinner venue of Esperance.

Without the dinner roll, the limp spinach Salad Bar became less warmly regarded by the people of Esperance and less firmly guarded by Pier Hotel staff. These days, even the classic bain-marie potato bake seems to be losing its edge, and a sad day it will be when it finally loses out to over-steamed frozen broccoli.

Chef ’s Table I’ll admit it. I’m becoming less and less enthralled by streaming services.

Weeks have passed and the last time I watched something remotely highcalibre is a distant, foggy memory.

There’s everything but nothing on Netflix and Stan, it seems.

It was this severe case of ‘there’s nothing to watch’ that got me onto the next pot of gold. Now into its fourth ‘volume’, Chef ’s Table is far from new, but it was my lack of prior inclination to watch cooking shows stopped me.

The show was created for Netflix by David Gelb, who directed a highly acclaimed documentary called Jiro Dreams of Sushi, and profiles michelin star chefs from around the globe. It’s a world away from the cooking challenges of Masterchef or dinner table politics of My Kitchen Rules.

In tasty 45-minute morsels, Gelb enters the minds of obsessive chefs on their quest for culinary perfection.

He presents the story like a superhero saga. There’s the origin story—the humble beginnings and the emergence of their passion. Then comes the evolution of their style, bad critics and the hurdles they face in pursuit of that michelin-level success.

It’s completely enthralling to see these fascinating creatures embark on careers they know they’re likely to never succeed in, but still do due to their own perseverance, relationships and occasionally, luck.

Each slick episode guarantees to move you. It’s a sensory overload with Vivaldi-scored montages of culinary creation.

Visual flavour is bolstered by the robust philosophical themes presented by each chef.

Like any nonfiction, the show lives and dies by the quality of its subject. Some chefs are charming, like Massimo Bottura of Modena, Italy, who has enraged his countrymen by re-engineering Italian classics fused with modern art.

Other episodes, like Dan Barber of New York restaurant Blue Hills, known for ‘the tastiest carrot ever’ is overcome with emotion when he’s unable to visit his daughter due to work commitments. It’s a little indulgent.

The good news is, you’re not obligated to watch them all or watch them in order. You can pick and choose depending on your mood—by cuisine or location or familiar restaurant names. You’ll love some chefs and hate others, but will learn to respect all of them for theirB ocrafts. hemian home & giftware boutiq

GET TO KNOW TRIPLE M 'S Sean For Breakfast How long have you been in Esperance for, and what was your first impression?

I’ve been here since January, so pushing six months in June. My first impression was confusion, as when I was driving in I saw two routes to the town centre—one on Harbour Road and one down Norseman Road. Boy oh boy, was I confuddled.

What do you eat for breakfast?

I make a collection of different variations on scrambled eggs. Scrambled egg mixtures may include one or a number of the following; eggs, milk, mustard, curry powder, paprika, soft cheese, hard cheese, chives, spinach, sweet chilli, and other fridge items. Just about finding the right mix.

What made you want to work in radio?

It's great to put a face to the name!

If you could have anyone else’s voice, real or fiction, whose would it be?

What’s your favourite song on Triple M rotation at the moment?

Be Good Johnny by Men At Work.

What sets the average Esperance local apart from a crowd?

I’d had enough of my last job and wanted to do something involving people, which wasn’t so monotonous as traditional jobs.

All hail the Pincushion Hakea

All of us native bush-lovers are in a frenzy as Hakea Laurinas all over Esperance are flowering.

I cannot contain my excitement every time I see one in the bush, on the side of the road, or in the front garden flowering the most spectacular display of flowers.

This insanely unique plant is native to coastal south-west WA, but is popular all over the world and even used as street trees in America and Italy. It is relatively fast-growing and grows in a range of different soil types. The Hakea laurina makes for a perfect street tree, as it only grows to about 4-5 metres and can be pruned as an upright tree or left to grow in its own style, which is quite weepy.

Another impressive hakea is the Hakea multilineata. Not so common around Esperance but will grow well here and has a flower to die for! Either of these will be standouts in the garden and worth the wait for flowering time.

Pilates

Of all the health and mindfulness advice I’ve given in this column—covering ground on many different topics—none has been more personally beneficial to me than pilates. Apart from the Valentine’s Day love potion tips I shared with you in February, obviously.

I got into pilates ten years ago, after years of vinyasa yoga. Being a fair dinkum kind of guy, I’d grown tired of all the hoo-hah that comes with yoga, and decided I was getting a more strident, focused workout with pilates instead. Basically, pilates is the art of controlled movement. By focusing on alignment, breathing and developing a strong core, the ultimate aim of the workout is to improve flexibility, build strength and develop endurance.

It’s hard but it’s fun, and it will change your life. Here are two of my favourite moves for you to try at home, demonstrated by young Stephanie at Sunset Pilates.

Horse Kick 1 Works the buttock muscles 1. To start, kneel on all fours, with your hands positioned under the shoulders and knees under the hips. Keep the spine neutral, pull your shoulders down and back.

2. Bring one knee in, slightly toward your middle and press that knee into the mat. This will be your supporting leg.

3. Inhale, holding the t-zone tightly, and squeeze your buttock.

4. Exhale and extend the other leg out and up, with your toes pointed.

5. Inhale, bringing the knee back underneath the hip without touching the floor. Continue on the same side.

6. Swap legs.

Pelvic Curl 3 Works your buttock muscles and back of the thighs 1. To start, lie on your back with your knees bent, feet hip-distance apart on the mat, arms resting by your side, shoulders relaxed, neutral spine.

2. Inhale, holding your t-zone tight and squeeze the butt.

3. Exhale, tucking the pubic bone toward the belly button. Roll the pelvis and the spine up off the mat one vertebrae at a time, starting with the tailbone then lower-back and shoulders.

4. Inhale, squeezing the buttocks and pressing one heel into the mat.

5. Exhale, extending the other leg straight up toward the ceiling, toes pointed.

6. Inhale, return the foot to the floor.

7. Alternate sides.

And suddenly it’s winter! Those chilly mornings and evenings that arrive in the dark. The odd shower of rain with cloudy days can be a recipe for our mood to drop just like the temperature.

Some lucky people migrate north in the winter but for the rest of us, it’s pull on the warm socks and beanies and sit by the heater watching holiday TV shows on tropical climates. But it’s then I remember the old adage, ‘A change is as good as a holiday’.

Now is a great time to take a wander on our beautiful pathways or challenge yourself to a nature walk in Cape Le Grand National Park without flies and sunstroke. Sunrise is later, so you don’t have to get up so early to catch it.

While snakes hibernate, we can consolidate by spending some time to slow down.

Catch up with those books sitting on the bedside table, cook some comfort food and invite some friends over who you’ve not seen for a while. As a business owner, I am constantly searching for new ways to improve efficiency and have managed to find apps that have saved hours of manual labour and prevented many human errors. Like any labourintensive job, it is incredibly important to use the right tools for the right job, and providing good systems and processes within the workplace frees up time and energy to dedicate to the stuff you actually love doing instead.

The First Ships

Did you know the first Europeans to chart the Esperance area were the Dutch? Pieter Nuyts, of the Dutch East India Company, traveled along the coast of Western Australia in 1627 on a ship called the Golden Seahorse 165 years before the French arrived.

Our region was initially named Pieter Nuyts’ Land in his honor, although this name clearly did not stick. The only name that did stick was the local orange-flowered ‘Christmas Tree’, named Nuytsia Floribunda after the trader who went on to have a very interesting life, including being taken hostage by the Japanese for a time.

Perhaps it is fortunate the area did not end up named for Nuyts, who in later life became notorious for arrogance, having affairs, racking up big debts and stealing taxes from the area he served as Mayor.

There are no records of any Europeans arriving in Esperance for another 165 years. In 1792, two French ships, the Espérance and the Recherche sheltered off Observatory Point, driven off-course by a storm. The Captain of the Recherche, Antoine Bruni d’Entrecasteaux, was leading the expedition in search of two other French ships, which were missing and later found wrecked in Vanuatu.

One of the ships’ officers, Citizen Le Grand, serving as lookout in the midst of the storm, first spotted land at Cape Le Grand, and thus the area was named him. The expedition stayed in

the area while the Espérance was being repaired, trying to find fresh water. They had several misadventures—the Chaplain of the Recherche fell into the water, and had to be rescued from a large shark that was following the ship.

The ship ’s naturalist, Claude Riche, got lost and made his way to a large salt lake that was probably Pink Lake, and then out to a swampy area, probably Lake Monjimup. He finally found his way back to shore two days later, very weak and dehydrated. The crew had feared him dead, and almost left without him.

The rest of d’Entrecasteaux’s expedition was equally fraught. Jean-Michel Huon de Kermadec, Captain of Espérance, died of tuberculosis, and d’Entrecasteaux himself died of scurvy. But they left a lasting legacy in the many landmarks named during the expedition.

Of course, contrary to the European explorers’ beliefs, they were many millennia too late to be the first arrivals. Aboriginal Australians already had a name for the place we call Esperance, the very poetic Kepa Kurl, meaning ‘place where the water lies like a boomerang’.

Teenage girls seem to be more and more often shying away from sport. I think this is due to lack of self confidence, “what will others think of me?” and the new age of technology. Some girls also stop themselves from participating in activities due to the idea that “sport is only for boys”.

Don’t let this stop you! If you want to do it, do it! Who cares what other people think? We need to get around our ladies and encourage them to do activities that get them out and about, off the screens and mixing with others!

Sport and physical activity can have huge benefits for our girls. It teaches commitment, ability to cope and concentrate under stress, how to stay fit and how to engage with others. You don’t even need to be part of a team to participate in sport. You can just grab a few mates, go to the beach, walk your dog or even kick a ball around.

In Esperance, we are lucky enough to have amazing beaches and plenty of sporting facilities, so you would surely be able to find something that interests you. There are heaps of different and unique activities to get into— it could be regular team sports like netball or volleyball.

Or, you could even have a go at more unconventional individual sports like skateboarding, stand up paddle boarding and surfing.

I hope reading this inspires a few of you ladies to ditch the screens, get off the couch, grab your girlfriends and seek out something fun to do. There are so many different sports out there. The possibilities are endless.

Esperance Sri Lankan Taste

For some time now, Esperance Sri Lankan Taste has had an air of mystery about it, with a reputation spread around town through local folklore rather than the standard business promotion techniques. Jayani Alexsanderge’s started taking orders to cook for family, friends and friends of friends out of her house in Sinclair

when things really started to really take off. In classic Esperance style, word of mouth spread like wildfire around town, and it became clear that the demand for her Sri Lankan cuisine was greater than what Alexsanderge could deliver from her kitchen at home.

Fast forward to now, and Alexsanderge is dipping her toes in the world of local commercial cooking.

Re-emerging on Facebook, there was whispers around town that Esperance Sri Lankan Taste was back: with a menu available for pre-order and food available to be picked up from the hired Esperance Civic Centre kitchen. Last week, Esperance Sri Lankan Taste took occupancy of the closed-on-Mondays kitchen at Fish Face.

After months of talk, finally it seemed there was an apt opportunity to try the much-talked-about delicacies once and for all.

Because the meal is pre-ordered, it’s hard to know what you’re going to be in the mood for, but overflowing with enthusiasm we decide to opt for a bit of everything. The menu is structured with a range of rice and curries, with roti and naan to accompany and fish cakes to start. When Monday comes around, we’re so excited to get around Alexsanderge’s cuisine we arrive right on 5.30pm.

The go is, having pre-ordered, there’s a two-hour window to pick up your dinner. After a false start (at this stage the business is cash-only) we get the takeaway home.

Naturally, we start with the fish cakes. They’re full-flavoured, with a mashed potato base rather than bread crumbs. Being philistines, we decide to give them a squirt of sriracha and the result is tasty. In our experimental haze, we’d opted for the yellow rice on the menu rather than plain. It soon became clear we’d made a mistake. Not because it wasn’t delicious—it’s really delicious. But loaded with spice and bits of fruit, it’s a little bit too

much for us when we’re overcome with the richness of the curries. Plain is fine. We also load up on naan and make the most of the roti on the menu.

Having a 50:50: split of vegetarians in the room, we opt for the lamb curry, a ‘Sri Lankan style’ chicken curry, the eggplant curry and the cashew curry. The lamb is divine. The meat is super tender and the sauce is simple but effective. The occasional chunk of potato makes this dish a great winter warmer. The chicken is also cooked well—big tender chunks swimming in a runny red curry sauce. For the vegetarians, it’s hard to determine which flavour reigns supreme. The cashew curry has a consistency more like stir fry and the cooked nuts themself have that satisfying crunchy-soft texture. On the other hand, the eggplant curry is extremely dense and rich in flavour—a couple of tablespoons of the stuff would defeat even the hungriest belly—but it’s a real delight, and another good winter warmer of the vegetarian variety.

Honesty, we were so shocked by how full we were after just a few mouthfuls of the immensely rich and flavourful creations. More than that though, it’s really wonderful to try some different kinds of cuisines, and it’s almost a sad reminder of how limited things can be down here for wonderful foreign culinary influences. Though the future of Esperance Sri Lankan Taste remains unclear for now, it’s increasingly clear that there are legions of punters all over town keen to see a Sri Lankan restaurant open up permanently. Esperance Tide has now officially joined their ranks.

METHOD

4 eggs Feta cheese 1 onion, diced Mushrooms, sliced Red capsicum, diced Spinach leaves Olive oil ½ tsp cayenne pepper 1 tsp cumin 1 tsp paprika 1 tsp sugar 1 can diced tomatoes Salt & pepper Loaf of crusty bread

1. Preheat oven to 200°C 2. Heat the olive oil in a large fry pan and add the onions 3. Add the mushrooms, capsicum and spices and cook, stirring frequently until the vegetables have softened for about 10 minutes.

4. Add the diced tomatoes and sugar and simmer until the tomato mixture begins to reduce, about 10-12 minutes. Taste and adjust the seasoning to your liking.

5. Add the spinach not long before removing from heat.Transfer to a low, oven-proof dish and sprinkle with feta cheese 6. Crack each egg into the dish. Place in the oven and cook until eggs are cooked to your liking, about 5 minutes 7. Serve with toasted sourdough or rye.

INGREDIENTS

METHOD

3 cups cornflakes 4 cups milk 2 tbsp brown sugar Pinch of salt Bourbon Vanilla extract Nutmeg

1. Preheat your oven to 150°C. Spread cornflakes onto a baking paperlined tray and bake for 15 minutes, until lightly toasted and fragrant.

2. Let cool completely then transfer to a large pitcher. Pour milk over cornflakes, stirring until well combined. Leave for 20 minutes.

3. Use a strainer to separate the cornflakes from milk. Gently press the cornflakes to extract as much milk as possible.

4. Whisk brown sugar and salt into the infused milk until fully dissolved.

5. Gently whisk to combine cereal milk, a shot of bourbon and a dash of vanilla in a small tumbler. Add ice and stir until chilled. Finish with a dusting of nutmeg.
