New Year’s Resolutions: TIPS TO STAY ON TRACK

We are finding ourselves in the new year once again. After all the eating and drinking of the holidays, it can often be a struggle to get back on track with your healthy eating and exercise plans. Once out of habit, it becomes easier to continue to stay in our “holiday” mode as the new year begins. This year can be different! There are many ways to get motivated or back on track after the holidays. A few of my favorite ideas are downloading fitness apps or purchasing a fitness tracker, changing your routine, and joining a fitness challenge. 22

between meetings. Now that they have been available for a few years, the trackers are becoming much more user friendly and have sleek designs that can fit with anyone’s style. Search online reviews and pricing options to find a fitness tracker that fits you and your budget.

2. Change your Routine

1. Purchase or Download a Fitness Tracker or App Your investment in fitness trackers does not have to be monetary—there are many fitness apps that can be downloaded for free. One of my favorites is the My Fitness Pal app (available on iPhones and android options). The app allows you to track your food intake and your exercise. This simple act helps to provide you with accountability. Often apps will send you notifications when you have not tracked your food or exercise. You can even set goals within the program and challenge your friends to competitions! Looking at your caloric intake and nutrients can help you to get back to your pre-holiday self! When searching for an app, find one that fits your needs and is user friendly. I love the My Fitness Pal app because I can scan foods using their UPC codes with the camera on my phone. It makes it much easier (and less time consuming) to track the foods I consume. It also stores foods I commonly consume to make logging faster. There are tons of apps available, I strongly recommend trying a few out and determining which one you like best—then stick with it! You can also certainly purchase fitness trackers, such as the Fitbit, Garmin Vivofit, or Moov systems. These trackers help to track your activity for the day. Some even alert you when you have a new message or phone call (like the Apple Watch). These can help you to track your activity levels and calories burned. Some even will vibrate or “buzz” you when you haven’t moved in a while. They are great reminders to get up and moving, even if it is only for 5 minutes in

A great way to help motivate yourself to get back into your routine is to plan to do something different! It’s so easy to fall into a fitness rut, doing the same thing each day when you hit the gym. Check out Groupon for the latest, local deals on fitness classes or purchase a Class Pass (https:// classpass.com/plans/st-louis) to purchase a class pass good at several studios in your area to try all different classes! If classes aren’t your thing, try setting up an appointment with a personal trainer. The personal trainer should ask you about what your goals are and what you currently do in your routine. The personal trainer can then help you develop a program that will help you reach your goals without becoming bored. Find new activities that you enjoy that will help you want to continue your regime. Your routine doesn’t have to end with exercise, either. I know I am guilty of using the same recipes over and over because they are easy and clean. This time of year, I love to check out what’s new on recipe websites (like allrecipes.com or pinterest.com) under healthy recipes. Cleaning up your eating routine can definitely help motivated you to stay active!

3. Join a Fitness Challenge or Find a Fitness Buddy Another way to motivate you in your New Year routine is to find a fitness challenge or a friend to workout with you. Fitness challenges come in all shapes and sizes. There are some websites, like http://30dayfitnesschallenges.com, that have lots of 30 day fitness challenges to choose from. You can also search “Fitness Challenges” on social media websites like Facebook (www.facebook.com) to see the different challenges available. Many challenges are free to join and participate in. Other challenges do charge a small fee, but often if you complete the challenge, you win the money you “invested” back! Finding a friend who wants to be fit with you can be a challenge in and of itself! Thereafter meeting his client’s needs naturally led to business referrals from them, which negated the necessity to advertise for new business. Tamara Netsch, Owner, Shine Boutique

Building a company is not an easy job. It is a long process of designing, launching and finally running a concept you believe in. With the right tools such as experience, patience and a little luck, starting a business can be a success. Tamara Netsch, owner of local boutique Shine, spent years learning the retail ropes before opening her shop. “I started working in retail when I was 15 for Melanie’s in Columbia, MO. After college I became an apparel buyer for Bibelot, an apparel company in Minnesota for 14 years. I always gravitated toward woman owned local businesses, “ she said. Netsch moved with her husband and daughter to St. Louis in 2014 to manage the Melanie’s location in Ladue. When owner Melanie Bascom retired and closed her shop, Netsch saw an opportunity to fill the void left by that absence. “I had worked closely with Melanie for around 10 years at that point and knew that there were no other shops in St. Louis doing what she did,” Netsch explained. Shine opened in the summer of 2016 and has been steadily gaining a loyal following ever since. “It’s difficult in the beginning, not having a last year to compare to, not knowing what to expect. You have to go into it knowing that part of being a new business takes time.”

Rick Gary,

Renaissance Man

Meet St. Louis’s most versatile—and possibly successful— entrepreneur. If you can’t find Rick Gary, founder and principal of Diversified Insurance Group, you might want to check the Ritz-Carlton in Clayton. Nicknamed “the Mayor of the Ritz,” Rick dines, entertains and kicks back in its well-appointed rooms. In 2010 at the request of his good friend Donny Blake, a local independent film producer, he threw a fundraiser there for "Joe's Place", a home for homeless teenagers located in Maplewood that was covered by the Post-Dispatch; he'll be there this Friday for dinner and a cigar. Rick isn’t just a bon vivant (though he would love to spend 2 weeks in Maui if he had the time “or on the Katy and Greenway Trails atop my trusted Trek Hybrid whenever the weather is accommodating,” he admits). He’s also a noted businessman whose CV boasts tenures

at insurance giants CIGNA, United Healthcare and Anthem, as well as General Electric. The walls of his office are covered with accolades: President Council (5 times over), Executive Council (5 times as well), the $50 Million Award’s Club and the 2004 “Million Dollar Round Table”. Judging from his Rolodex and resume, you might think he was born and raised in the Arch City, so entrenched is he in local culture and policy at the city and state level. (An expert on health care insurance, he consulted on Missouri State House Bill 818, which established the Missouri Health Insurance Portability and Accountability Act, among other things). But Rick didn’t come here until adulthood, wooed by an offer at Monsanto. Native to South Carolina and an alum of Clemson University, Rick perhaps made his mark here with his effusive, unaffected friendliness—a quality highly valued here in the Midwest but perfected in the Deep South. He finishes nearly every sentence with an exclamation point, remembers names and faces with aplomb and love for his adopted hometown. “The Saint Louis community provides me the opportunite to engage with some of the most amazing, innovative, creative, inspiring, ambitious, conscientious people on the PLANET!” he gushes [emphasis his]. Now, when was the last time you heard such loving words about our fair city? Tom Zupon, Founder And Owner, Zupon Construction And Development In the past ten years, Tom Zupon, owner of Zupon Construction And Development, has built a solid reputation as a premier custom homebuilder in Clayton, St. Louis County’s most cosmopolitan city. BACK THEN, ONLY THE VERY RICH COULD AFFORD to experience the magnificence of this continent. Progress in aviation, transportation, hotel, cars and the modernization of cities have made trips to Africa much more feasible and welcoming than back when I heard Mancini’s “Baby Elephant Walk” in 1961. Now, we can fly to Nairobi or Johannesburg and hop in a taxi or bus that takes us to our dream of participating in an African safari! (Merriam-Webster Dictionary defines “safari” as either a journey or a hunting expedition. In this article, I am referring to the African Safari as a journey of searching for animals in their natural environment and not the practice of trophy hunting.) Whether as a single, in a group or a more private tour, you can experience Africa any way you chose, but first, we recommend some fun homework for you to help prepare for your very first safari! Make a list of what would you like to see. Where you travel in Africa will depend on the species of animals you will see. For example, Uganda and Rwanda are where the gorillas are located. Desert rhino are in the dryness of Namibia. Decide how long will your stay be in Africa? If your trip will be less than two weeks, you will want to limit your travel to one area. To see both East and South Africa in only ten days to two weeks will be somewhat limiting with too much travel time. When do you want to travel? Remember that Africa is on the other side of the world and is larger than the US and Europe combined! Therefore, East Africa will have different weather than South Africa! You won’t want to be in Tazania in April or May nor go to Maun in Botswana in January as you will be wetter than a water buffalo! What are your travel preferences? Would you like to go by bus, car, train, Jeep? Would you like to see some beach time? Travel to a big city? Decide how you feel about animal

The majority of companies are very involved in conservation efforts, especially since their livelihood depends on it. Would you like to travel with a group? Semi-private? Private Tour? As a family? Now you can choose the right tour company! Consider the cost, how strenuous is the tour, the experience of the company, how much the tour company covers in x amount of days and the caliber of the accommodations. Do you want a hotel, lodge or tent? Check out the Fairmont in the Kenya Masai Mara National Reserve! Tents can be very elegant compared to many American hotels! Figure out the length of overnight stays, the company’s safety record, how many meals are included as well as the tour company’s overall reputation. You can’t go wrong with the more upscale companies like Abercrombie and Kent, Kensington Tours, Tauck Tours, &Beyond, National Geographic, Britain’s Yellow Zebra or Africa Serendipity out of New York. Some more familiar companies also offer less pricey trips such as Globus and Trafalgar. Try G Adventure Tours which is perfect for the younger adults. If you are a Senior Citizen, an African safari can be the perfect adventure. The right tour company can offer you a meet and greet at the airport, assistance with immigration and customs and get you to your lodge or connecting flight. There are many tours perfect for seniors with little walking, memorable scenery and senior friendly accommodations. Kenya and Tanzania are not to be missed. Many travelers consider The Masai Mara National Reserve to be the best game park in the world. The 497 mile reserve is host to the Great Migration. From July to October you can watch zebra, gazelle and wildebeest travel from the plains to the greener grass areas. The wonderful Maasai people reside here and contribute to the colloquial feel of the area and you can visit

their village first hand. In the reserve, you will be able to see well over 450 species of birds, lions, leopards, cheetahs in their natural habitat. As far as accommodations are concerns, you have many choices which include tented camps of any price and style, lodges and private houses. Serengeti National Park is the most popular in Tanzania, where you can see zebra, wildebeest, lions, leopards, cheetahs, hyenas, baboon, African wild dogs and giraffes. If you choose to see South Africa, you will most likely fly into the city of Johannesburg which has a population of around 3 million people. Take a tour of this cosmopolitan mecca and visit the Mandela Museum, the MuseuMAfricA and see the view from the Carlton Centre. If you are not sure how you will fare on a full safari type trip, you can always take a day trip to Pilanesberg National Park where you can have a light lunch and go out in a Jeep with a guide and see some wild beasts! Kruger National Park and Greater Kruger Park is managed by South African National Parks and has almost 7,800 square miles full of bird, mammals and 336 types of trees! Do your research when choosing between East and South Africa. Some camps in South Africa have stricter restrictions for camping with minimum age requirements and the parks themselves are perhaps less commercialized and more private with different rules. Make sure you know all the restrictions and if you are traveling with younger children, East Africa may be your best bet. No matter what your choice, you will have a trip of a lifetime. Your travel agent can recommend the perfect safari for you along with help for your immigration and any medical concerns you might have. Even though the research may sound tedious, it’s the beginning part of any journey and I promise, you will have more fun in the long run! Safe Journeys! MEET MIKKI AND HER DOGS HOLLIE, LUCIE & MAGGIE Chesterfield “Hollie is a silky terrier. We found her in a pet store window; she was just crying to be let out because she had so much energy. My daughter and I took her to Annie Gunn’s that night, and she kept trying to get out of her new carrying case. She is so funny! She was diagnosed with pneumonia soon after, which was pretty scary since she was only 10 weeks old and 6 pounds, but she pulled through. She turned 10 years old just before Christmas. “Lucie is my golden retriever. She was also found in a pet store. When we brought her home, she romped around in the yard, as if she knew she was FREE. She’ll celebrate her 12th birthday this summer. “Our Brittany spaniel is named Maggie. She is 13 years old now, and such a love. When we found her, she was the runt in a litter of 5. Now she loves the beach and can still run and play forever in the sand!”

“My husband and I found Huck at an online rescue site and adopted him the next morning—just one month after we got married! We were not looking for a pet but could not refuse him. He’s now 5 years old and is adored by our two young children. “We feel blessed to live close to Forest Park where Huck can socialize and chase ducks. He’s a golden retriever and great Pyrenees mix so he loves to fetch balls and take long walks. Our neighborhood [Little Maryland] is also full of other dogs to play with so he always has friends around. We also appreciate all the dog bowls left outside stores in downtown Clayton for thirsty guys like Huck!” MEET TOM AND HIS DOG WES Ladue “I found out about Wes through a neighbor and was immediately interested. My partner and I are his third owner. The first died, and the second could not give him enough attention. Now he’s a regular at Glen Alspaugh Co. [where Tom is managing partner]; he greets the clients and on occasion even attends a meeting—sometimes going so far as to jump on chairs at the meeting table! He so looks forward to going to work that when the weekend comes around, he gets depressed because we don’t go there. “Wes loves Pupperoni treats. I know you should not feed your dog table scraps, however, I always have. My first dog lived to be 16 and the second, 17! We don’t resemble each other [as the cliché suggests], but we are both dedicated to our jobs at Alspaugh Co. and our morning walks at 9 o’clock sharp every day. UT


Chocolate Cravings I’VE ALWAYS BEEN A CHOCOHOLIC, but over the past couple of years I’ve tried to curb that craving a bit. However, sometimes you just have to give in to temptation. With Valentine’s Day quickly approaching I thought it would be fitting to share one of my favorite chocolate recipes. After all, chocolate symbolizes affection, attraction, deep love, luxury, passion, sensuality and some even say it’s an aphrodisiac, increasing desire and energy levels from the endorphins released. Sharing chocolate has a huge psychological and emotional effect on people not just sexual. It can also express sincere apology, delight, happiness, rekindle friendships and uplift morale. With all these benefits and luxurious taste, I know you can’t wait to wrap your lips around this No-Bake Strawberry Chocolate Tart while sharing it with someone special this Valentine’s Day? What I love about this Chocolate Tart besides being velvety and rich it’s incredibly delicious, and requires no baking! Making it perfect for adults and even children to create. It’s best prepared the day before you plan to serve it. If you’re not a fan of strawberries then raspberries would be a nice alternative. Don’t feel like you need to run out and get a 5 x 14-inch tart pan - a round, square, or even heart-shaped one will do too! You could also prepare the tart in a baking dish, but be sure to line the pan with foil before pressing the Oreo crust into the bottom of the pan. When ready to serve, just lift the foil out of the pan, and set it onto a work surface to slice. The edges may not be as pretty as the tart pan, but it will still taste amazing! So what are you waiting for? Win your Valentine’s heart with this……..

NO-BAKE STRAWBERRY/ RASPBERRY CHOCOLATE TART

Yield: 8-10 servings INGREDIENTS Crust 32 Oreo cookies 1/2 cup butter, melted Chocolate Filling 7 oz. milk chocolate 3.5 oz. bittersweet chocolate 7 oz. heavy cream

Topping 12-14 Strawberries or 2 pints Raspberries Chopped nuts (almonds, pistachios, etc.), optional

DIRECTIONS Place Oreo cookies into the bowl of a food processor and blend until crumbs form. Add melted butter and pour over the crushed cookies. Process until evenly moistened. Press cookie mixture with the back of the spoon and your fingers where necessary, into the bottom and edges of a rectangular 5 x 14-inch tart pan. Freeze until you prepare the filling, just for a few minutes. In a small saucepan, or glass microwave safe bowl, heat cream until hot but not boiling. Approximately 1 minute 20 seconds in the microwave for chilled cream. Remove from heat or microwave, pour over chopped chocolate and let rest for 1-2 minutes. Stir until dissolved. Pour chocolate filling over Oreo crust, and top with fresh strawberries or raspberries. Refrigerate for at least 2 hours or overnight before serving. Prior to serving slice into wedges and if desired sprinkle chopped nuts of choice.

AS A LITTLE GIRL GROWING UP, I CAN REMEMBER MY GRANDMOTHER making Beef Barley Soup. It was comforting, and satisfied all my cravings. It wasn’t until I was an adult that I decided to recreate this savory meal for my own family. Barley, prominent in this dish, is a whole grain, rich in protein, vitamins, minerals and amino acids essential for our health. More importantly, barley is one of the richest sources of both soluble and insoluble fiber. Insoluble fiber aids in proper excretion of waste products in the body, while soluble fiber mixes with liquid, binds to fatty substances, and allows them to leave the body. Barley, also rich in tocotrienols, an antioxidant, helps lessen the risk for contracting heart disease and cholesterol problems. In addition to barley, the celery, carrots, mushrooms, garlic and onions help create this thick hearty & nutritious soup that will have you coming back for more.

Serves 6 INGREDIENTS 3 lbs. beef or veal shanks, or beef stew meat 3 large yellow onions, chopped 6 carrots, peeled and chopped 4 celery stalks, chopped 1 cup tomato puree 1 cup barley 6 Tbs. unsalted butter 1 lb. fresh cremini mushrooms, cleaned, and sliced 1 clove garlic, minced Salt and freshly ground pepper, to taste 4 Tbs. chopped fresh dill 1/4 cup chopped fresh flat-leaf parsley 6 Tbs. sour cream (optional) DIRECTIONS Place shanks (or stew meat) in a saucepan. Add water to cover generously. Bring to a boil over high heat for 10-15 minutes, skimming to remove foam that forms on the surface. Reduce heat. (Never allow a stock to boil continuously. As meat and bones cook, they release proteins and fats into the surrounding liquid. At a slow simmer, they appear as scum at the surface and can be skimmed. If stock is boiling, these substances are churned back into the stock and become emulsified. The resulting stock is cloudy and has a dull, muddy, greasy flavor, which will worsen if the stock is reduced for a sauce”). Add two-thirds of the chopped onions, the carrots and celery. Reduce heat to low and cook, uncovered, for 1 hour. Add tomato puree and barley. Cover partially, continuing to cook over low heat until barley is tender, about 1 hour. While soup is cooking, in a large sauté pan over medium heat, melt butter. Add remaining chopped onions and sauté, stirring occasionally, until pale gold, 10 to 12 minutes. Raise heat to high, add mushrooms and sauté, stirring often, until softened, 6 to 8 minutes. Add garlic, reduce heat to medium and sauté until soft but not brown, about 3 minutes more. Season with salt, pepper and 2 Tbs. of the dill. Remove shanks from pan (if using), when cool enough to handle, cut meat from bones. Chop and reserve meat; you should have approximately 1 1/3 cups. Add mushroom mixture and reserved meat to pot and stir to heat through. Season with salt & pepper. Garnish with sour cream and parsley if desired.

Philip Slein

Renaissance Man Philip Slein represents everything that defines a Renaissance Man - cultured, knowledgeable, educated, and proficient in many fields. HE IS BEST KNOWN ABOUT TOWN as co-owner (with Thomas Bussmann) of the Philip Slein Gallery in the CWE. With a solid background in painting and art history, Slein is a true expert in his profession. (His degrees include a Bachelor of Fine Arts from the University of Missouri, Columbia and a Master of Fine Arts from Washington University.) He has taught at the university level in most of our area’s universities including Webster, Wash U, and UMSL. Since 2003, his Gallery has focused on exhibits of geometric abstraction created by the best of modern American artists. But there is another side to this charming man. He is literally a Jack of all Trades. Besides being an art gallery director, Slein is a painter, instructor and collector. His downtown loft is filled with an awesome mix of both modern and antique artwork, furnishings and collectibles, all from different eras. Here, his eclectic collections are arrayed to the max. Slein explained how his passion for collecting began, “I guess it all started with collecting and trading baseball cards.” Today he haunts estate sales, flea markets and auctions. Throughout his quests, he’s found amazing items. Slein enjoys conversing with student groups visiting the Gallery. He’s like Johnny Appleseed – planting the seeds of collecting joy. “I try instilling the concept that they don’t have to be wealthy to be collectors. That is a misconception. All they, or anybody, needs is some knowledge and the desire to keep on learning. I also encourage students to trade art amongst their peers.” If beginner collectors are equipped with these basic tools, they too can spot great items. Examples from Slein’s forays include these items he bought for under $10! - a 1931 signed print by Rockwell Kent – an illustration of Beowulf, and a 1968 tin print by British pop artist Peter Blake (Sgt. Pepper album designer) now worth $1500! “People say I’m lucky, but it’s all due to perseverance – the frequency of going out on the hunt, and it’s fun too!” Slein believes in the linkage between an art personality and collecting. “I get my creative fix from collecting.” He illustrates creative placement of his treasures through side by side displays of modern and antique pieces. “Think of the Ying and Yang symbol – it shows balance in all things.” A fine artist himself, Slein began as a landscape painter and later more abstract. “Painting has taught me to truly look

at things. So many people go on their way, not really seeing.” One of Slein’s paintings is on view at Pi Pizza in the CWE. It’s his painting of the seven bridges over the Mississippi which originally hung at the Sheldon Gallery during St. Louis’ 250th birthday celebration. “They represent all the eras of our city’s history!” He is also well known for satirical, but gentle, portraits of friends and the famous. The Philip Slein Gallery has planned an exciting 2017 calendar. “Something is scheduled for everyone’s tastes in our upcoming shows.” Sounds like this Renaissance Man has it all covered.
