Last week gasoline hit record prices at dispensers across the country. Some sites, such as those in B.C.’s Lower Mainland, posted values above $1.60 per litre, a level not seen since 2014. At fault is the cost of crude oil, making a comeback following a downturn during the height of the pandemic. Remember the low fuel prices back when people were locked down with vehicles sitting on driveways and airplanes resting in hangars? The oil sector responded to market forces during COVID-19 and tooled back production to accommodate the reduced demand. Now that economies are on the upswing as vaccination rates have climbed, supply has fallen short. When supply is low and demand climbs so too do prices at the pumps. High gas prices signal good news in Canadian society. Certainly, there is a challenge caused by higher gas costs, but broadly, the higher prices at the pump indicate we are moving forward again, and COVID-19 is starting to take a back seat. The higher prices are also an impetus toward alternative energy solutions. As gasoline becomes more expensive, alternatives such as electricity look like better bets as we move ahead. In this issue, we discuss greener methods at car wash and look at forecourt alternatives coming on now as we move toward the 2035 deadline to remove fossil fuels from the supply chain. Will fuel prices come down? Over the short term, expect to see the industry ramp production to meet demand with dispenser prices levelling off during the early winter. However, as alternative fuel demand increases, analysts suggest the oil industry will seek to right size. The upshot is fossil fuel prices will climb over the long haul in a move that will only drive increases in alternative energy usage. The future is bright. Expect it to be fueled by alternatives. hen it comes to eco-friendly car washing, Canadians are hugely misinformed. A recent Ipsos-Reid study conducted for Suncor found that almost 60% of us believe hand washing a vehicle in the driveway is the most ecologically sensitive way to clean our rides. Younger Canadians, as well as a majority of those from Quebec, Ontario and the Atlantic region, see commercial car wash sites as being harsher on the environment than washing cars in the driveway. The truth is the opposite. Car washes use less water, use less (and better) chemistry, and sites send lower amounts of effluent to municipal water treatment and septic systems per capita than an on-driveway car wash. According to the Capital Regional District of Victoria (CRD), well-maintained self-serve facilities typically use about 60 litres per vehicle (lpv) without recycling wash water. Automatic systems with water recycling can use less than 30 lpv.

Natural Resources Canada estimates that an average commercial car wash uses 260 lpv of heated water, and uses 1,300 gigajoules per year heating water to wash cars. Driveway washes typically use 450lpv (Lower Colorado River Authority study). In Victoria, as well as a host of other centres across the country, wash operators are required to have an interceptor tank to remove soil and grease from wash water before it enters the sewer. Big savings can be had by reclaiming water from the interceptor and conditioning it for use in the tunnel, where savings can be as high as 80%. The CRD points to an example in nearby Seattle where Grey Line busses spent close to $100,000 on a water recycling system purchased to reduce water use from 1300lpv to 130lpv. The system reduced usage to 100lpv, a 92% reduction. The CRD points out that a 20% improvement in water efficiency in Greater Victoria can save a typical automatic car wash about $1,500 in water and sewer costs and over $3,000 in energy costs annually.

Commercial car wash sites offer ‘greenest’ solutions

A 2019 survey of 1,000 consumers by CGS, a U.S.-based applications, learning and outsourcing company, claims that Gen Z and millions of millennials are willing to spend more on sustainable products such as eco-friendly car wash solutions. CGS’ Consumer Sustainability Survey found that 35% of the interviewees said they would be willing to pay 25% more for sustainable products. Gen Z participants told researchers they would pay as high as 50% to 100% extra for goods and services that were kinder to the environment. Among all respondents, 7% were willing to pay 50% more for sustainable products and 5% would pay 100% more. Rexdale’s SuperKleen Car Wash in Etobicoke, Ont. has made environmental sensitivity part of their business model. Manager Ankit Shaw reports that they have elected to go with Mondo’s line of biodegradable chemicals to improve their environmental footprint and meet the demands of customers. “Yes, this costs a bit more than traditional chemicals, but we wanted to make a statement in the market that we are responsible operators who care about the environment. These products enable us to do this. Our customers have told us this is the way they want us to go,” he says. At Ontario’s Valet Car Wash chain, operator Mike Black has turned to products like Simoniz to help his staff stay on top of greener detailing solutions. Simoniz offers a full range of EPA-approved car wash products. “We purchase wash products based on their safety and effectiveness and use technology to help us make sure mix rates are accurate,” he says pointing to blend centres that proportionate solutions to make it fast, easy and safe for staff.

Mike’s view is that when it comes to detailing (a big part of his business), if products are harmful to staff, they are likely not good for sensitive interior surfaces either. “We are also very strict on labelling. All products our staff utilize must have full instructions intact on packaging so that crews are fully aware of the application and any hazards. “The days of acids for car washing are finished. The only use for these harsh chemicals might be for cleaning the tunnel itself during a major maintenance cycle,” he says, concluding that with all the greener options currently available, operators should pay attention to this trend. Entries and exits are also important to keeping energy costs in line at car washes. According to Airlift Doors president Josh Hart, the basic use of any door is to keep the heat in and the elements out. Airlift is one of the most recognized names in car wash entries. “The two styles we see most commonly used in a car wash are the polycarbonate door and the vinyl roll-up. The polycarbonate door offers better R values, and the fact that they can be made to allow natural light into the tunnel means sunlight can also warm areas. These attributes mean more heat and less cost.” The vinyl roll-up door is another great tool for lowering heating costs thanks to its speed of operation. The Airlift door opens and closes at 34-inches per second. This speed limits the amount of out-draft and helps keep warm air inside tunnels and bays. “A good quality, well-maintained door system is the best first line of defence against heat loss, and this is good for the environment,” says Hart. As fossil fuels wind down, electric and fuel cell tech rise to the occasion

T

he tides are changing fast regarding fossil fuels. Consider upfront that jurisdictions in the U.S., such as Sonoma County in California will no longer allow new gas stations to be built. Other areas are looking hard at this idea. By 2035 Canadian vehicle sales will no longer include cars and trucks that burn gasoline or diesel. The thinking is that alternative energies such as hydrogen and electricity will curb our carbon footprint and power fleets and private vehicles. Government, the public, and fuel retailers are already making the switch. The Canadian government is spending big money on this changeover. Already, the federal government has committed $96.4 million to create the Electric Vehicle and Alternative Fuel Infrastructure Deployment Initiative. This program is a multi-year effort (2016 to 2022) designed to establish a coastto-coast network of fast-charging stations along our highways, natural gas refuelling stations along key freight corridors and hydrogen refuelling stations in major metropolitan areas. Further spending of $130 million will now support Canada’s mandatory zero-emission vehicle (ZEV) penetration targets of 100% new vehicle sales by 2035. Spending is for incremental funding to the Electric Vehicle and Alternative Fuel Infrastructure funding and to accelerate and densify infrastructure deployment. According to Natural Resources Canada (NRCan),

the investments go beyond the national highway system and focus on EV level 2 charging at workplaces, commercial and multi-unit residential buildings, public places, on-street and projects for fleets. The Electric Vehicle and Alternative Fuel Infrastructure Deployment Initiative offers repayable contributions to support the construction of an electric vehicle (EV) fast charging, coast-to-coast network. NRCan’s repayable contribution through the program will be limited to a maximum of $5 million per project. For EV fast chargers (from 50 kW power output and above), the program will pay up to 50% of the total project costs to a maximum of $50,000 per fast charger. In Vancouver, Shell and Hydrogen Technology & Energy Corporation (HTEC) have built two hydrogen refuelling stations in the Greater Vancouver Area over the past couple of years in a move to reduce carbon footprints. Now, 7-Eleven, alongside ESSO, will be offering hydrogen fuelling at two sites of its own in the city, with a third coming to the Okanagan. “The innovative hydrogen refuelling solutions we are building with HTEC continue to reduce our carbon footprint while meeting the evolving transportation needs of our customers,” says Norman Hower, vice-president & general manager, 7-Eleven Canada. And, while 7-Eleven Canada is looking hard at hydrogen,

others are taking the electric route. For example, Parkland recently announced it will sponsor a design competition to develop ‘The Electric Fuelling Station of the Future’. Run by Electric Autonomy Canada, the competition invites the architectural and design communities to envision ground-breaking concepts that may serve as a blueprint for future EV fuelling stations alongside integrated, value-added customer experiences. According to Ian White, senior vice-president, strategic marketing & innovation at Parkland, “Making our On the Run branded convenience stores a destination with innovative design elements, value-added amenities and exceptional customer service, further reinforces our purpose of powering journeys and energizing communities.” The ‘Electric Fuelling Station of the Future’ is an ideas competition. Architects, designers, and cross-disciplinary practitioners are invited to reimagine the traditional fuelling station as a new roadside oasis for EV drivers, where travellers can rest, eat, recharge and more. The design proposals, presented by the finalists and winner, will be shared with architectural magazines and websites, and the top three entries will collect a total of $40,000 in prize money. Barj Dhahan, through his Sandhurst Group business, operates a group of three fuelling sites in British Columbia. He is also a leading Tim Hortons franchisee with drive-thrus and restaurants partnering with his fuel retail businesses. In 2018 he partnered with BC Hydro to place a fast charger at the Surrey location at 16815 96th Ave. He discovered an opportunity to drive business to his foodservice and convenience retail operations. “They came to me and told me there was not enough capacity in our region and asked if they could install a unit on my site. This installation cost me nothing, and there is no payback from the equipment. However, people charging cars come into the c-store and the Tim Hortons for the 20 minutes their cars are charging. For us, this means more sales in coffee, donuts and drinks.” EV use has been ahead of hydrogen in equipment placement. Companies such as FLO (AddÉnergie), IVY (Ontario Power Generation and Hydro One), and Chargepoint are helping to grow the market through partnerships with key industry stakeholders. For example, FLO is working with GM. As part of GM’s Ultium Charge 360 program, EV customers will soon be able to easily see real-time charging information, find stations along a route, and initiate and pay for charging across EV charging networks directly through GM vehicle mobile apps. Chargepoint, a company with 115,000 chargers worldwide, just announced an agreement with Volvo Canada to provide fast charging for its XC40 customers. Montreal-based Group Crevier (Parkland announced the acquisition of their Fuels Division in July 2021) has recently opened a $10-million MultiENERGIE service centre located just off Autoroute 20 in the west-end of Lévis, Que. The new service station offers six varieties of fuel for light and heavy vehicles. The location also offers four supercharger positions that can recharge electric vehicles 80% in just 20 minutes. The site also has five refuelling points for heavy vehicles that use diesel or run on one of the two kinds of natural gas (compressed and liquified gas) that the station has on offer. Looking to the future, underground tubing for hydrogen fuel was installed during the construction of the green-field site in 2019. “This is all about investing in the future,” says JeanClaude Clément, VP fuel for Crevier Group. “Service station networks need to be open to and ready to adapt to the new types of energy that are coming online so that we can develop and offer the right multi-fuel offer for our customers.” OCTANE

ubbles is big. Not only is the 10-group chain the largest full-service car wash company in Canada, but its new two-storey Edmonton facility at 6231 Andrews Loop SW is among the largest in the country. Important, says Bubbles Car Wash and Detail Centre COO Natasha Toffoli, is that everything, including vacuums, is now inside. “It gets cold here, and this all-interior service greatly adds to the comfort of our guests and team members.” The new 23,000-sq.-ft. location, opened to the public June 5, 2021, features a 7,500-sq.-ft. detail shop with 12 bays on the second level and a ground floor 100-ft. PECO tunnel to complete the service-heavy package. While services are being performed, customers have the option to wait in the site’s highstyle lounge area. Here, customers can relax with a Nespresso or cold drink and watch the action while vehicles get cleaned. Natasha reports that each location offers customers a well-appointed lounge to kick back, but the new Andrews Loop site has taken design and comfort to the next level. Inside, guests find WiFi, television, fireplace, as well as a selection of air fresheners and other products. Bubbles distributes its own brand of fresheners, as well as offering Areon fresheners from Europe. “We attended Car Wash Show Europe and saw this line. We were attracted by the quality and selection, so we brought it in for the Canadian market,” she says. Toffoli’s father, Silvio Toffoli, started Bubbles Car Wash and Detail Centres 40 years ago. His idea was to focus on the guest

experience, an aspect of the business that is still front and centre at each location. Vehicle wash packages include hand wash and dry even with the tunnel. Prices start at $19.95 for a Bubbles exterior wash, with services as much as $1,000 for the top comprehensive detailing package. From shampoo services to rid the carpets of dirt and salt, to deep cleaning and conditioning of leather seats, there is a service fit for just about every vehicle cleaning need. They specialize in paint decontamination, correction and protection, and offer GT Quartz nano-ceramic coating (to transform the depth, colour and shine of vehicle surfaces to deliver superior, long-lasting protection. (They even detail boats.) “We have a team at the front end of the tunnel that pressure wash and hand wash to remove any film before the vehicle goes into the tunnel. At the tunnel end, we air and towel dry,” she says, mentioning that through the winter months, they air dry all locks, latches and door seals as well as treat the lock mechanisms with a de-icing agent. “It is all about the details, and we work at getting at the little things like side-view mirrors and bumper steps. By having staff hand clean and dry, nothing is left off, and our customers are happy,” she says, mentioning that their level of service is what makes them stand out in the local markets they serve (Calgary, Edmonton, St Albert, Kelowna, and Sherwood Park). Bubbles employ a team of 250 workers across ten outlets. “We need about 20 members at each site to offer our signature service. And, we train all our guest experience personnel in customer relations. This training includes greeters, quality control staff, and car delivery personnel as well as others who have direct contact with our customers.” According to Toffoli, the COVID-19 pandemic has hampered their ability

to hire and recruit new staff. “We were closed for eight weeks at the beginning of the pandemic. When we reopened, it was hard to get some of our people to return and continue to face staffing shortages like many other service businesses,” she says, mentioning that locations are on reduced hours to accommodate the lower number of workers. Water is another important component of the wash. Bubbles use only freshwater for the car wash. At the chain’s locations, they reclaim reject water from the softeners and reverse osmosis water (RO) to flush the track and trenches to keep the entire system as grit-free as possible. According to Toffoli, the system is scheduled to flush every 15 minutes and can be adjusted depending on the season. They utilize RO water and a softener on the final rinse. Across the chain, the equipment mix is largely the same with PECO tunnels (Bubbles is a distributor for PECO Car Wash Systems) and detailing operations. Traditionally, staff take the car from each customer on arrival. But, with COVID presenting challenges, Bubbles introduced an optional drive-thru tunnel service that allows people to stay in their vehicles to limit exposure. Customers still get a high level of exterior attention with front-end and blower-side crews working on the details. For those who prefer to wait in the lounge with a coffee in hand, cars glide past window walls while tunnel mechanicals perform undercoats, Rain X applications, Clear Coat and Wheel Blaster functions. While Bubbles offers no loyalty programs, they do offer three monthly subscription tiers for unlimited car cleaning. Subscription packages start at $59.99 for the Silver package with unlimited hand wash and dry. The Gold package is $74.99 and features unlimited hand wash and dry, as well as a Clear Coat, foam polish and underbody rinse. The top tier is Bubbles’ Platinum package at $84.99 that adds Rain X and tire dressing to the mix. “We are not solely focused on volume at Bubbles. Rather, we try to maximize on the additional services and the quality of these services we sell to each customer,” says Toffoli, reporting that they are in development of another site in Calgary and will be introducing the Bubbles brand to Saskatoon shortly thereafter. When I lived in Dublin, my colleagues and I grabbed lunch at our local convenience store most days (well, days we didn’t end up at the pub). Egg and cress, roasted vegetables with sharp cheddar on a toasted baguette and curried chicken were among the office favourites. When I returned to Canada, convenience store lunches no longer held much allure, that is until Leslieville Pumps opened its barbeque-inspired kitchen at the end of my street. Suddenly, my local c-store was, once again, a meal-time destination. The space is novel, selling decadent breakfast sandwiches, loaded poutine, an array of BBQ and salads, alongside convenience store staples, such as lottery and tobacco, beverages and snacks. Once the domain of independent restaurants and coffee shops, the neighbourhood has more recently attracted several chain restaurants, but the local convenience store is holding its own due to its unique offering. This is a micro-illustration of a larger trend, with food-forward c-stores going head-to-head with quick-service restaurants in the bid for consumers’ take-out dollars: Canadian c-store foodservice sales for this year are expected to hit $1.143 billion, according to research from Technomic. As some traditional categories wane and the wait for beer and wine continues in most provinces, foodservice is an area for potential growth. All the big players, including 7-Eleven, Circle K (p. 12) and Parkland are investing in foodservice, while Rabba Fine Foods, which a year ago partnered with Paramount Kitchens, and other regional operators recognize that food is a traffic driver—Davisville Hasty Market in Toronto is famous for the Flaming Stove shawarma stand tucked inside. Independent operators are also embracing foodservice to differentiate and drive store revenues. In this issue, we’re spotlighting Hanamaru Market and Bento (p. 18), which embodies the rise in specialty convenience stores offering cultural products, from shelf-stable items to snacks, drinks and freshly made food, that attract an enthusiastic customer base hungry for something different. Of course, not every operator can also wear a chef’s hat. Tortoise is partnering with King Retail Solutions to expanding its remote-controlled delivery robots to convenience store chains across the U.S. KRS, a retail brand strategy company that works with c-stores, will resell and distribute more than 500 of Tortoise’s sidewalk delivery vehicles to help c-stores facilitate affordable, same-day last-mile delivery options in response to changing consumer expectations. Tortoise’s vehicles are best for deliveries within about 5-km. Co-founder Dmitry Shevelenko told CSNC he is having " a lot of active conversations" about bringing the concept to Canada.

THE PERFECT PAIRING Fire & Flower is opening cannabis retail stores adjacent to existing Circle K stores in new markets across Canada, including Alberta, Saskatchewan, Manitoba and Ontario. The move builds on the operational partnership announced in 2019 when Alimentation CoucheTard invested about $26 million to obtain a 9.9% ownership interest in Fire & Flower. Don’t be chicken Plant-based poultry is the menu trend to watch

M

cKinsey & Company, the global management consulting firm, has developed a proprietary Electric Vehicle Index (EVI) to track the dynamics of the electronic vehicle market in 15 key countries worldwide. Not surprisingly, EVI results for 2019 and 2020 extended the pattern of EV share expansion evident since 2015. That being said, McKinsey estimates that EVs currently represent just over 2% of light vehicle sales in key markets. So why all the hype around electric

vehicles? It has everything to do with the potential of the opportunity. The global light vehicle market for 2021 is estimated to be worth around $700 billion. At this valuation, each point of market share that EVs gain, represents $7 billion.

The power of big categories

For more than 15 years, I worked for an organization that curated a database of commercial and non-commercial foodservice operator purchases. The database, like Nielsen CPG tracking but

solely for foodservice, followed every food and non-food SKU, shipped from broadline distributors to chain and independent foodservice outlets. The SKUs were classified by the 34 category definitions developed by IFDA. The top category by value every year was meat (processed and unprocessed). The second most dominant category was poultry (not including eggs). Combined, meat and poultry accounted for more than one-quarter of the total purchases of foodservice operators. And this data didn’t even include protein purchased through specialty meat and poultry purveyors, or via proprietary direct distribution. The initial wave of protein replacement alternatives, not surprisingly, targeted meat offerings in foodservice. Unicorn start-ups, like Beyond Meat and Impossible Foods, have become market makers. According to NPD (U.S.) SupplyTrack for Q1-2021, Beyond Meat is the top selling plant-based meat brand and Beyond Burger is the top selling plant-based burger patty in foodservice. Earlier this year, Burger King Canada introduced the Impossible Whopper, becoming the first quick-service restaurant in Canada to put the award-winning plant-based Impossible Foods patty on its menu nationwide. Plant-based protein alternative carving out a share of the foodservice burger market is big news. McDonald’s just launched a McPlant burger in the U.K. to try to staunch the bleeding. But burgers are just the beginning. Market strategist Bill Aulet describes the model being used by plant-based disrupters, a “Beachhead Strategy,” whereby an entry point into a market is found “from which to launch (an) invasion of the market, because it’s where the paying customers are found.” Foodservice is key, because it facilitates a low risk opportunity for consumer trial. If consumer satisfaction is high, then the trial will naturally drive retail purchases of plant-based proteins.

The year of the chicken

The next logical step for plant-based suppliers is to consolidate and continue their advance in foodservice. The target

for 2022 and beyond is likely to be chicken. Plant-based chicken may not be everywhere yet, but there are indications of increased competition in this space (Exhibit 1), and market penetration. • In August, A&W Canada expanded its partnership with Beyond Meat, with the introduction of Beyond Meat Nuggets for a limited time. • KFC added a plant-based KFC sandwich and KFC Popcorn made by LightLife in the summer of 2020. • 7-Eleven Australia started offering No Chicken + Lettuce with Vegan Mayo, and No Egg + Lettuce with Vegan Mayo sandwiches last year. • U.S. c-store chain Wawa partnered with Beyond Meat to add two plantbased breakfast sandwiches to its system menus last year. The Sizzli breakfast sandwich is made with Beyond Breakfast Sausage, egg and cheese on a bagel, or the protein can be added to breakfast bowls, bagel sandwiches and breakfast burritos. There’s no reason to doubt that plant-based chicken will follow a similar pattern of diffusion in foodservice that we’ve seen with veggie meat/burger introductions. Let’s not forget, 7-Eleven Canada tested Beyond Meat on its pizza offering in 2019.

Count your chickens

Tastewise, an AI-powered food intelligence source, offers real-time industry insights. Founded by a former Google executive, Tastewise predicts changing consumer needs based on analysis of restaurants and delivery menus, and billions of daily social network interactions. Crunching the data on U.S. menu mentions, Tastewise has documented a significant rise in vegan meat interest—a 1,320% increase since before the pandemic. Penetration of plant-based meat at restaurant menus overall is growing, with 13% of restaurant chains now serving vegan meat. Tastewise has additional data showing plant-based chicken is taking flight—menu incidence is tracking 133% growth year-over-year. On social media, chatter around plant-based chicken is also up. are currently the most popular application for plant-based chicken (18% discussion share), but burgers, salads, and pizza are popular applications, with pizza growing at 24% YoY. According to Tastewise, the combination of perceived healthy eating and protein content are driving consumer interest in plant-based chicken.

The time is nigh

For decades, Norway’s economy has been tied to the exploration and sale of crude oil, representing more than 40% of Norway’s the country’s exports. Yet, recognizing the shift in the market towards greener alternatives, Norway’s government backstopped a wide range of financial incentives to encourage Norwegian consumers to convert to battery electric vehicles (BEV). In 2020, the share of new BEV cars sold in Norway rose to 54% of total new vehicle sales, compared to vehicles powered by petrol, diesel and hybrid engines. Sales of diesel-only engines have plummeted to less than 10% of overall market share, compared to almost 80% share in 2011. Norway is on track to meet its commitment to become the first country to end the sale of petrol and diesel cars by 2025. China, the world’s largest car market, is already positioned to follow in kind. Peak oil likely already happened 10 to 15 years ago. This reminds us of the importance of always asking the key strategic question: If not now, when? Tastewise compared plant-based dairy, plant-based meat, and plant-based seafood in terms of interest, growth, and penetration to advise clients whether the time is right to jump in. Plant-based dairy was classified “too late” (declining), and seafood “too soon” (emerging). Meat alternatives were deemed to be the “Goldilocks” of the plant-based alternatives landscape—just right. cleaned and sanitized. Operators and employees serving food should have a foodservice handler’s certificate. 3. FOOD HANDLING: Related to food

safety but worth mentioning. Employees should wash hands before handling food. To capitalize on the labour advantage, service utensils can be used by cashiers to avoid touching food when serving it to customers. However, a hand sink near the service area is important. 4. FOUNTAIN DRINKS ARE PROFITABLE:

M

any c-stores successfully enter the foodservice business. What started with coffee and baked goods expands at some locations to significant foodservice offerings. There are, however, a few things that should be considered. 1. LABOUR ADVANTAGE: The two

greatest expenses in food service operations are labour and cost of goods. Foodservice cost of goods, like retail cost of goods, is effectively 100% variable. C-stores have a labour advantage over restaurants as little, if any, additional labour is required to provide foodservices. C-stores should purchase prepared foods (e.g., pizzas, meatballs, sandwiches, baked goods, etc.) to further capitalize on this labour advantage. By generating foodservice sales with limited additional labour, c-stores will generate margins that make traditional foodservice operations jealous. 2. FOOD SAFETY: An outbreak of

food-borne illness can be devastating for a foodservice operation. Many c-stores have hot food held in a steam table or warmer. Other food may be in a cold display. Food is often stored in refrigerators prior to use. Operators must regularly check temperatures of food and coolers to make sure food isn’t spoiling. The hot displays are important, harmful bacteria can grow quickly in food held in the danger zone of between 4 and 60 degrees Celsius. Raw foods must be handled properly. Preparation areas and tools must be

A significant portion of c-stores sales are bottled beverages. Beverage suppliers like this as bottled beverages are more profitable for them than fountain beverages. However, many c-stores are benefiting from the increased margins offered by providing fountain drinks. These should be considered. Allowing customers to pour their own fountain drinks and coffee helps add to the labour advantage (unless COVID-19 restrictions do not allow self-service beverages). Cups may be held for purchase at the cashier station for an element of control. These beverage stations will require regular cleaning. 5. SPACE ALLOCATION IS IMPORTANT: As

every operator knows, sales per square foot is a key metric. Determining how much space to allocate to foodservice is important. Generally, beverage stations are profitable and can be in the back of the store, allowing customers to pass items that may be purchased on impulse (even after they have paid for the cups in advance, as suggested above). Hot food that is to be served for customers should be located near the cash to allow the cashier to serve and maintain the labour advantage over traditional foodservice. For most operators, a sixto eight-ft. hot food display proximate to the cash station and a beverage station located elsewhere is enough to generate significant incremental sales. 6. MENU MANAGEMENT: In addition to

selecting items that are easy to prepare, pay attention to customer preference. Items that don’t sell should be replaced. 7. PERISHABLE INVENTORY: C-Store

operators typically have some perishable inventory that must be sold by a certain date or must be discarded. The

foodservice business is even more difficult from this perspective. Often, food must be sold within hours or discarded. Tracking itemized sales and understanding how demand flows for various products, then using this knowledge to decide how much to order and prepare, helps mitigate this challenge. 8. PRICING: Restaurants typically

markup their menu items by 65% to 70%. But remember, c-stores have a labour advantage. I recommend checking pricing of quick service foodservice operations in the area and price slightly below average levels. 9. LOYALTY PROGRAMS: Regular

customers are important to the success of a small business. Rewarding customer loyalty is effective in preserving these important customers. This can be as simple as a beverage card that provides a free beverage after a certain number of purchases. 10. PACKAGING AND PRESENTATION:

Very few c-stores have seating areas, so the food is sold to go. Packaging must preserve the food quality while it is being transported to where customers will eat it and/or food must be portable—easy to eat while moving. Presentation is important as well, food must not only taste good, but it must also look good. 11. SPECIAL DIETS: The incidence of

people with special dietary needs is increasing. A foodservice operation is not required to provide options for all dietary needs, but must be able to tell customers what the ingredients are in an item and how the food is prepared. Some dietary needs are by choice; however, some are due to health implications. For some, ingesting food they are allergic to is life threatening. And though a c-store doesn’t need to accommodate all special diets, having vegan or vegetarian offerings will likely be successful. Fresh starts

T

he pandemic has not been kind to the gum and mint category as lockdowns tossed aside daily routines, like going into an office, and shrunk the number of social interactions we had, crushing the need for minty fresh breath. Have you tried chewing gum while wearing a mask? Recent figures from Nielsen shows the overall gum category in the Canadian C&G channel dropped by 16.8% versus 2020 and total sales for breath fresheners were down by 15.3%. Despite the grim news, c-store operators and companies have reasons to smile. The worst seems to be over for the gum and mint category and it’s poised for a rebound. If we look to the U.S., gum sales are already on the upswing, according to data from NielsenIQ. In May, consumers put an end to two years of straight declines and started buying gum again. That’s music to the ears of big players in the space that were chomping at the bit for some good news. Craig Cuchra, VP, marketing, Perfetti Van Melle North America, is feeling optimistic. “Though top brands in gum are following the category decline, some are now showing positive results,” he notes. “Despite the declines, Mentos Gum continues to bounce back faster than the category due to its high brand loyalty.” As work, school and socializing resumes, gum and mint sales will continue to strengthen. Companies are doing their part to bring consumers back in the fold with new offerings, like ‘functional’ gum. “Innovation can play a huge role in driving the benefits of the category and reminding consumers of the need for fresh breath,” says Cuchra. PVM has launched Mentos Gum with Vitamins and will follow up with a new mint gum in Q1 2022. When it comes to flavour, the top three remain spearmint, peppermint and bubble gum, accounting for 46% of sales in the convenience and gas channel. Recent numbers show bubble gum sales popping with an increase

of about 4% over a four-week period (ending August 14). To ride that wave upward, Cuchra has a few suggestions for C&G operators, including maintaining the space devoted to their mint and gum business; ensuring product is available on shelves, especially around the holidays; and providing secondary placement opportunities (counter displays, gravity feed options, etc.). “Consider promoting all brands to re-engage the mint and gum consumers after they’ve been experiencing a period of less demand,” he says. Daniel Hill, marketing director, Tic Tac, Ferrero Canada, offers this advice to c-stores: “To make the most of the category’s impulsivity and boost sales, it is important to give the category high visibility around the store and comerchandise with adjacent categories or usage occasions, such as coffee stations or flowers.” Brand recognition is key. “Putting category leaders like Tic Tac on front counters will help build basket size,” he adds. “Using these spaces add incremental points of purchase and could increase sales.” Tic Tac has developed an array of tools to support retailers with eye-catching, consumption-driving POS, such as clip strips and counter units. Of course, the allure of new and interesting is powerful, too. Launched this year, Tic Tac Big Berry Adventure, a blend of blueberry and raspberry mash-up, has leveraged the growth of fruity flavours in the category and is now the eleventh best-selling SKU in the C&G channel, while Tic Tac Coca-Cola flavour, which made its return this year, has been a consumer favourite taking the 10th spot. “Although consumption behaviour and usage occasions shifted, consumers continued to look to confectionery,” says Hill, “and, generally, sales of treats have been steady throughout the pandemic as people look for some normalcy and joy.” For c-store operators, that’s good news to chew on. As this large and influential group continues to take hold of spending power from more mature cohorts, it will be critical to consider how to realign strategies to address consumers’ evolving needs so that you can both remain relevant to younger shoppers and play your part in the future of societal health. While in the early days of the pandemic, March to Sept 2020, conscious consumption priorities motivating daily food and beverage choices dipped somewhat, the ensuing period has seen concern rates rebound considerably. Increased information access and rising outcome awareness has fuelled consciousness of the entire life cycle of our foods and prompted us to reevaluate the personal and systemic impacts of our everyday choices. For c-store operators, these considerations should help shape category assortment, as well as overall operations. CSNC

s Japanese author Sayaka Murata wrote in her awardwinning novel, Convenience Store Woman, her first to be translated into English as well as multiple other languages, convenience stores in Asia are designed to be more than a place for people to quickly pick up necessities and their favourite confectionary. She observes: “It has to be somewhere they can enjoy and take pleasure in discovering things they like.” That ethos has made its way to Canada, with the rise of specialty convenience stores that offer cultural products, from shelf-stable items to snacks, drinks and freshly made food, all waiting to be discovered by a diverse customer base. One of those new stores is Hanamaru Market and Bento, in the Pape Village neighbourhood of Toronto. Opened in February 2021, it is the brainchild of husband-and-wife team, Teddy Park and Susan Lee, who immigrated to Canada from Korea eight years ago. Until their new venture, Park had worked in retail and Japanese restaurants in Toronto, while Lee, who has a culinary degree, was a chef at various restaurants for both Western and Japanese cuisine. Stepping into Hanamaru, visitors come across items they’re unlikely to find anywhere else in the neighbourhood. There are DIY sushi and hamburger meal candy kits by Japanese manufacturer Kracie; honey butter chips by Korean manufacturer Haitai; the yogurt-based drink, Bikkle, by Japanese drink giant Suntory; and frozen Korean ”pancakes” in flavours like brown sugar, leek and green onion. With the colourful packaging displayed against the small store’s all-white walls, an experience at Hanamaru is also a feast for the eyes. “We wanted to introduce Korean and Japanese products to those who want to try it, and we figure there was no store doing that in Toronto’s east end,” says Park. And repeat customers can always make new discoveries, whether on shelf, or in the frozen or refrigerated sections. “There are many distributors which carry Japanese and Korean products in Toronto, but it is difficult to get products regularly from suppliers right now because of COVID-19,” he says. “That’s why I always try to get new items to substitute items the suppliers may no longer have for us.” While the pandemic necessitated that they be flexible with merchandising from the outset, the strategy has been perfectly suited to the Asian c-store concept of discovery. Plus, as Park notes, “not one or two items are big sellers on shelf –all the items are steady sellers.”

It is not that these snacks, pantry items and frozen foods can’t be found elsewhere in the Greater Toronto Area, but residents of the Pape community would have to venture out to a busy Korean or Japanese supermarket, situated mostly in the GTA’s ethnic neighbourhoods. Where Hanamaru makes its biggest impact, at least in terms of sales and local buzz, however, is in its foodservice. “Many convenience stores in Korea and Japan serve a variety of grab-and-go food, which we think is suitable for a fast-paced environment and for post-COVID in Toronto,” says Park. Early each morning, from a modest-sized kitchen at the back of the store, Lee makes Bento boxes with side dishes, called banchan in Korean cuisine, as well as sushi rolls and maki platters, which are then displayed in a “grab-and-go” refrigeration near the cashier. She also prepares orders phoned in, or submitted via their website or online ordering app Ritual (which takes a small commission) for pick-up. During lockdown, most customers opt for take-out, but Hanamaru has set up a standing bar at the front of the store, where two different people or a single family can eat, in keeping with social-distancing protocols. On the day of our visit, it is quickly apparent the store’s foodservice has made Hanamaru a community favourite. While looking at the store from across the street, a passerby stops to recommend the fresh dishes Lee prepares. “You have to try their tuna onigiri and chicken karaage,” says Jo-Anne Wilson. “What I’ve learned is you have to get there early, because by 12:30 it is usually all gone.” Wilson, who works at Club Sandwich, an organization that delivers sandwiches to local missions, says “many of my neighbours and friends hope for Hanamaru to stay for many years to come,” and calls it “a welcome addition to the Pape Village strip.” Whatever grab-and-go items Hanamaru still has left by 3 p.m. each day gets discounted by 30% to ensure no food waste. That may seem early in the day for a markdown, but as Park notes, “it is really because we’re thinking of the freshness for customers.” The founders have also listened to customer feedback. “What we learned after we opened Hanamaru is that there are many vegetarians in this area,” says Park, “and so we now always consider a vegetarian alternative to an item with meat.” With its one-year anniversary approaching in February, Park humbly says the store has been gaining momentum. “We feel the support of customers from around Pape Village,” he says, “We are getting busier than when he started.” CSNC

Expert tips to maintain c-store commercial kitchen equipment

“Whenever we’re heating up milk or water, you get calcium or milk-stone deposits, so that needs to be cleaned daily,” he explains. If your machine has an internal boiler, you’ll need a water filtration system in place, and pay attention to your water monitor, because sediment levels fluctuate and the system may need adjusting. Also, the natural oils in espresso beans can gum up the hopper and block the machine, so clean the bean receptacle weekly. “Make sure the hopper is 100% dry before putting in a fresh batch of coffee beans,” Cheung cautions. “We’re mixing natural oils from the beans plus ground beans and water: You’ll get a thick paste that could seize the grinders and cause a very expensive repair.” Built-up coffee oil along the sides can change the flavour profile of the coffee bean, making it taste bitter.

In addition to offering grocery and snack items for onthe-go customers, c-stores are competing with quick-service restaurants for fresh meals and hot and cold beverages. That means knowing how to operate and maintain commercial kitchen equipment. Here’s how to keep your money-making machines running smoothly so you can ring up sales instead of repair people.

Slush machine product sales bring in big bucks—especially during hot summer months. “Next to a car wash, a machine that serves a frozen beverage drink is the most profitable item in a c-store, and the more you love your machine, the more the machine will love you back,” says Michael Cheung, VP of business development, sales and marketing at TFI Food Equipment. Keep the exterior of the unit sparkling clean, suggests Cheung. “Those are the customer-facing components, and we want to attract as many guests as we can to draw off those colourful slushy beverages,” he says. Operators should follow the supplier’s regular maintenance schedule, which includes changing the tune-up kits and blades every three months, plus making sure the syrup lines are cleaned and connected properly each time the syrup bags are changed. “These machines use a bag-in-box technology; the plastic bag with the flavoured syrup is connected directly into the CO2 system, which then drives syrup through our machine, so it’s important to always check the CO2 system to make sure the tanks are at the proper levels,” adds Cheung. “If the CO2 connections are loose and leaking, it’s a huge safety hazard for store clerks and customers. Making sure connections are tight and fastened is also important because without CO2, you won’t get any product dispensed.”

Follow manufacturers’ recommendations to keep your unit in good shape, but make sure it’s thoroughly washed, rinsed and sanitized at least once a week. “If there’s still product in the machine, you don’t necessarily want to throw it away; it’s fine to save it. But never re-introduce frozen product back into the machine,” Cheung explains. To save product, let it thaw out in a refrigerator and then reintroduce it in smaller amounts into the fresh mix. “With soft-serve ice cream, the freezing process is so important, because we really want that soft texture and consistency. When reintroducing frozen mix, we run the risk of getting ice crystals instead of that smooth texture. The product will get over-beaten, and although it’s safe to eat, the texture and colour may be off because the sugar starts to caramelize and you get butterfat separation.” Change the machine’s tune-up kits and scraper blades inside the freezing cylinders quarterly, says Cheung. “When the barrels are flooded with product, the refrigeration kicks on. Then, those blades inside the barrel scrape the frozen product off the sides and bring it forward to create ice cream or slush. “The sharper the blades, the better and longer the machines run. The better your equipment operates, the more money you make.”

Coffee machines

Grab-and-go coffee requires top performing equipment that’s not on the fritz during morning rush hour. Knowing how automatic bean-to-cup machines operate will help you keep it happy, says Cheung.

Walk-in coolers and refrigerators

Don’t take shortcuts when it comes to refrigeration equipment, says Chris Midbo, a sales consultant with Western Refrigeration in Edmonton. Refrigeration units have compressors that pump the refrigerant through the system to provide cooling, and fans that help cool that compressor down. No matter how clean your store is, that fan collects dust. “Ninety per cent of the reasons for early breakdowns on refrigeration equipment comes from people not cleaning out those parts,” he says. “These units are designed to run most efficiently at room temperature – 72 degrees F. If dust accumulates and you don’t have good airflow, the unit will run hot and break down.” Every six months, take the front vent cover off—it’s either along the bottom or top of the machine—and vacuum the dust out. Also, don’t just jam your freezer into a corner. Instead, make sure there’s enough air circulation around your unit—at least three to six inches—because the machine blows hot air out. “Pull your machines out periodically and clean up the dust inside, around and outside,” he adds. “And be sure your air conditioning in the building is working properly. If it’s 85 or 90 degrees inside, your equipment will start running hot.” Don’t forget about sliding doors: Products will spill, clog up the tracks and prevent the door from opening and closing properly, adds Midbo. “Wipe down the gaskets for the doors, because with built up dirt and spills, they’ll become brittle and then crack, breaking your seal. Ice machines

Most manufacturers’ warranties require that ice machines be thoroughly cleaned every six months with a specialized cleaner, says Midbo. “And depending on your area, you might have scale deposit buildup from your water,” he explains. “Clean those units according to the manufacturer’s suggested maintenance plan, using approved ice machine cleaner. You’ll also be cleaning the condensing fans.”

Novelty ice cream freezers

Ice cream freezers need to be emptied and defrosted as ice builds up, usually every few months, because they don’t have an automatic defrost setting where the unit melts off ice from the coils. “If you had a defrost setting on a novelty freezer, product would continually be slightly melted and slightly frozen,” explains Midbo. “The more often you defrost, the less time it takes because there’s less buildup. You may end up with a big puddle inside the unit at the bottom of the self-contained unit, so make sure you dry it out before putting everything back.”

Fountain beverage dispensers

Water scale buildup can alter the flavour and quality of your soda, says Midbo, who recommends having a filtration system. “With these machines, you not only need to clean and sanitize the syrup lines every six months, but you should also re-lubricate the wear parts,” he suggests. “This equipment is expensive and if maintained properly, you should get 15 or 20 years out of it.” C-store operators can contract suppliers to do the six-month cleaning service for them.

Countertop ovens and hot dog roller grills

C-store operators running hot food programs take safety courses to learn the proper operating procedures, including recommended temperature settings, notes Midbo. “When you’re cooking product, it needs to be brought up to an internal temperature of 165 degrees to kill any potential bacteria, and then held at 140. The biggest mistake we see with hot food offerings is people holding the product way too warm,” he says. That will dry out products like pizza very quickly and cause shrinkage, so monitor your temperatures closely and be diligent about regular maintenance. “If you cooked on your stovetop at home for a year and never cleaned up any spills, you’d have a problem. It’s the same for hot dog roller grills: They need to be cleaned on a daily basis,” says Midbo. The longer you wait to wipe up baked-on grease, the harder the job gets, he adds. “The grease will slowly migrate inside the equipment, so you’ll have mechanical issues as well. Clean up spills and wipe the units down with hot, soapy water.”

Getting the right recipe for success

Cleaning procedures take time, but it’s time well spent, insists Cheung. “It’s all about proper store-level operations, proper service by your equipment reps and a planned maintenance program,” he says. “That’s the recipe for success: maintaining a high percentage of up time, not down time.” CSNC

As convenience’s core categories shift (and in some cases decline), the industry is increasingly embracing foodservice to attract more customers and drive revenue across all the dayparts. Major players across Canada, including 7-Eleven, Circle K and Parkland, are investing heavily in foodservice, with a focus on freshness, variety and quality, and often going head-to-head with quick-service restaurants in the competition for consumers’ dollars. While some independent operators are looking at foodservice as a core means to differentiate their business, for many, especially those with limited space, time and the resources to invest in and run the equipment and technology needed to maintain a kitchen, getting into the foodservice game can be a challenge. So, here’s some food for thought on a few ready-made and emerging foodservice possibilities ideal for space- and culinary-challenged operators.

BECOME A FR A NCHISEE

Karen Weldman is a busy woman. As VP, new business development with Montreal-based franchising giant MTY Food Group, she spearheads the effort to establish two of her company’s top-selling express food brands—Country Style and Mr. Sub—as market leaders in convenience stores and gas stations across Canada. “It starts with me talking to the owner and sending the information package (and) there will always be follow up questions,” says Weldman. “I field a lot of calls.” Operators interested in MTY’s turnkey brand franchise kiosks—either a stand-alone, bean-to-cup coffee operation or one twinned with sub sandwiches—require site visits, interviews and training. “They need to manage it,” says Weldman. “It’s a business within a business. You don’t want the person pumping gas or handling the register to also be making sandwiches.” Despite the ongoing pandemic, she has added 17 new express locations to her portfolio this year, bringing the total number to more than 300 across Canada, the vast majority branded fuel partners and independent convenience stores in rural areas. MTY is one of several express coffee and foodservice franchisers proving popular among independent c-stores in Canada. “The game has changed from the days when the local gas station and convenience stores were the only game in town on Sunday,” says Weldman. “To compete now it is critical for convenience stores to have food and coffee. They need to establish that point of difference.” In addition to having a good location, as well as a willingness to invest capital into upgrading your store, Weldman says retailers require very little space to execute fresh food programs. As an example, the Country Style/Mr. Sub express kiosk takes up only 500 sq. ft. (250 sq. ft. front counter, plus 250 sq. ft. back prep area). This multi-branded fresh food program continues to experience robust growth within the petroleum and convenience channels, addressing all day parts and satisfying hungry customers from breakfast through dinner and late-night snack attacks. At a minimum, Weldman recommends the self-serve coffee kiosk, which is equipped to make a fresh-ground cup of coffee in one minute, and baked goods that can be kept in the freezer until needed (to help manage waste). According to the Coffee Association of Canada, twothirds of Canadian adults drink an average of 3.2 cups of joe each day. Total annual national consumption is 15 billion cups a year: Not surprisingly, branded coffee is the biggest selling grab-and-go item in the foodservice sector. “It’s very lucrative if done properly,” says Weldman. “There’s not another product in an operator’s store with the same margins.”

EMBR ACE V EN DING These days, vending foodservice options go well beyond pre-wrapped sandwiches and a bag of chips. Visit Japan and you’ll see a world of inspiration, from steaming noodles to cooked rice. In the U.S., players like Burritobox, Farmer’s Fridge and Chowbotics’ Sally the robotic salad maker are a convenient source for fresh foodservice. Closer to home, Toronto-based PizzaForno is making it easier for smaller footprint stores to feed hungry customers. The company’s 58-sq.-ft. PizzaForno kiosks are now situated outside of 34 locations across Canada, including several convenience stores, providing 24-7 access to a menu of eight artisan pizzas cooked in an automated oven in just three minutes. Customers can also opt for a cold pizza to cook at home. For convenience operators, the effort involves keeping the machine stocked, which can be a daily or every other day task, depending on sales. PizzaForno handles maintenance and service, as well as credit and debit reconciliation. These vending machines attract customers who love the novel idea, while at the same time boosting sales across other convenience categories, such as beverages and snacks.

It can require a little extra legwork, but many independent operators are carving a foodservice niche by partnering with local food companies that share the same ethos and appreciation for quality food. For instance, Toronto-based Runner Market (check out the Retailer Spotlight in the September/October 2021 issue) partners with local empanada company Gaucho Pie Co., while also sourcing its popular beef patties from Street Bites, which, like Runner, places a premium on quality ingredients. This approach allows operators to test and offer a variety of menu items with very little investment beyond proper hot/ cold storage and display.

As the world moves towards electric cars and tobacco sales decline, trend anticipator Tim Tang sees prepared foods as an essential source of revenue for convenience store operators of all sizes and stripes. He says independents without the physical space and/or financial wherewithal to buy a franchise or join a program might want to consider tapping into an emerging foodservice concept: ghost kitchens. According to Tang, many restaurant operators are using ghost kitchens—locations that make food for home deliveries by third parties like DoorDash and Uber Eats—to reach customers. That trend increased dramatically during the pandemic, when restaurants were ordered shut, and continues due to severe labour shortages in the service industry. Tang says this model is challenged by concerns over the security of food delivered by private operators and the meagre profits those drivers earn from making deliveries to addresses across cityscapes. However, convenience store operators could be a solution. “C-stores have the footprint in the community as convenient and trusted points of presence where consumers already go to gas up and get food and beverages,” says Tang, director of enterprise solutions for Hughes Network Systems, a Maryland-based, satellite internet networks and services provider with more than 1 million subscribers. “They could leverage that strength by becoming a distribution site for restaurant food.” Under this model, Tang says operators could offer dozens of brands of fresh food from ghost kitchens, providing a welcome and profitable addition to traditional convenience channel categories. “It could crack open and unleash the c-store’s access to customers,” he says, adding: “What operators need—and this is where it gets interesting, but not that hard—is to participate in the online ordering phenomenon by using technology that’s already out there and become a third-party delivery service knockoff.”

FIN D A PROGR A M PA RTN ER Another popular option for c-store operators getting a foothold in foodservice is to join one of the ready-to-eat products programs offered by national and regional food manufacturers and distributors. These groups supply retailers, restaurants and theatres with everything from sandwiches and sliced meats to cooked meals and bakery goods. Plus, they’re already supplying other key categories, from grocery to confectionary and household products. “Demand for ready-to-eat foods just keeps going up,” says Serge Nadeau, VP, development at Beaudry & Cadrin. Several recent acquisitions have transformed the Montreal-based firm into a significant independent food manufacturer and distributor for c-stores and foodservice in Eastern Canada, serving 1,200 independent c-stores in Quebec, as well as Loblawlinked corporate stores across Atlantic Canada. Other major players in the space include American-owned Tyson Foods (their Jimmy Dean grab-and-go breakfast sandwich program is a morning favourite), Cagrill and Edmonton-based Wallace & Carey, which also partners with Beaudry & Cadrin to fulfill c-store operator needs across Canada. Through many partners, retailers can avail of loyalty programs, rebates and money-saving incentives for foodservice products, recipes, equipment, tools and support in the convenience channel. Beaudry & Cadrin is popular in Quebec for its turnkey fresh foodservice program, La Cour aux Saveurs. Some 200 (mostly independently owned) stores are currently enrolled in the program. With a minimum of space and a roughly $15,000 investment, the Cour aux Saveurs foodservice program promises to help operators—both through training and binders filled with instructions and recipes made by a corporate chef, including regional dishes—to turn their store into a “bistro” that serves everything from sandwiches made with baguette bread to croissants and wraps; raw veggies and dips; grapes and cheese; yogurt parfaits; cooked meals like lasagna and shepherd’s pie; and carry-out lunch boxes. “Everything is thought out with quality and convenience in mind,” Nadeau says of the program, which was first introduced at a single store in the Montreal region in 2013. “We’ve continued to refine and develop the concept with new recipes and better packaging that gives longer shelf life and is easier for eating when driving. We always think about the consumer.” In addition, Beaudry & Cadrin has about 170 stores enrolled in its M&M Express program, which launched in 2018 and offers 75 frozen products, including 45 heat-and-eat meals. Nadeau notes that the fresh and frozen foodservice offerings are finding favour with consumers in Quebec, where convenience stores also now sell good-quality wines and beers: “More and more, especially since the pandemic, c-stores are becoming a destination where people can go to get everything they need for a healthy lunch or snack or an evening meal.” CSNC

Coffee talk

Coffee Association of Canada president Robert Carter sees an opportunity for the convenience channel to up its game and become a coffee destination

A

year into the pandemic, Robert Carter stepped into the role of president of the Coffee Association of Canada, a not-for-profit trade group representing the industry, from importers and roasters to foodservice retail and related businesses. That was March 2021, and the coffee industry was grappling with major disruptions reshaping consumer behaviour. Canadians were drinking just as much coffee as they had pre-pandemic; however, they were doing so at home, heavily impacting the out-of-home coffee market, including convenience operators who count on coffee sales to drive foot traffic and as a gateway to boost foodservice sales (especially during the morning daypart). The CAC’s Canadian Coffee Drinking Trends Study reveals that in any given month, seven in 10 Canadians will have consumed a coffee in the past day, but as we enter the later months of 2021, out-of-home coffee consumption is still very much in recovery mode: The latest stats show 23% of respondents had a coffee prepared out-of-home the previous day compared to prepandemic levels of 40%. What opportunities lie ahead right now? RC: We’re seeing a lot of signs of

How has the pandemic changed awayfrom-home coffee consumption? RC: Obviously with the restrictions, we

saw a dramatic decline in out of home coffee consumption, particularly during the morning daypart, which accounts for 80% of away-from-home coffee consumption. People were just not commuting, going into work and out and about.

recovery. In fact, as people were getting back out, coffee was one of the first areas that started to see a bounce back, particularly with coffee drive-thru and on the off-premises access to coffee. Through our CAC research, we launched what we call waves to gauge consumers' sentiment on a number of different areas. We were constantly asking consumers: What is it going to take for you to get back to your local coffee shop? Are you going to feel comfortable? And the results were positive in terms of consumers saying they were, one, looking forward to getting back to their local coffee shop, and, two, that they were feeling safe to do so. Coffee’s one of those highly habitual and ritual behaviours—that interruption was difficult for the segment, but consumers were eager to get back into it. It’s an increasingly competitive market. Do you see convenience stores evolving their coffee programs and becoming key players? RC: The convenience channel from a

coffee standpoint in Canada has always been underdeveloped, particularly when you compare it to the advance of coffee in the U.S. convenience store channel. So, there’s always been a strong opportunity for the convenience store to up the game and compete more aggressively with

compared to the distribution. There continues to be an opportunity for that channel to evolve and add coffee more aggressively to their offerings. What trends are shaping the coffee category that you think our readers would want to know about? RC: Overall coffee consumption when

“The sustainability aspect of coffee is huge. We’re working very collaboratively with (other) associations from a global standpoint” the quick service coffee channel overall. And the challenge for QSR coffee today is going to be that morning ritual. With working from home more, are customers going to get back into that morning routine? The dynamics are going to change in that regular routine of outof-home coffee consumption and that’s where convenience stores can play a greater role. The opportunities are for convenience stores to up their coffee game and then create that destination experience. You get a coffee, you get a snack, it’s your afternoon break. Maybe when you take a walk around your neighbourhood or something like that? RC: Exactly. And the additional

opportunity is not only within the brewed coffee category, but also continuing to evolve into some of the more specialized coffee programs. C-stores obviously have a good selection of ready-to-drink through beverage fridges, but cold brew coffee is on fire right now. With some of these innovations, it’s an opportunity to up their coffee game.

How can convenience operators work with your members to benefit from introducing an in-house coffee program? RC: A lot of the roasters offer good

programs for c-stores and operators can work with the roasters to develop a customized program that touches on the different offerings, from brew to the specialty. It’s a simple way for a convenience store to get into the coffee game. The benefit for them is offering

a product with high margins that really translates into a destination, giving consumers another reason to stop by the convenience store or gas station, as well as a point of difference compared to their competitors overall. Looking down to the U.S. and Europe, there’s some learnings that we can take from those markets to apply here in Canada. For instance? RC: Obviously the convenience factor is

so important, but it’s really around their quality and innovation. Gone are the days where you have a commodity-based coffee program where it’s just there. You need to focus more on the quality play. You could talk about the origin of the coffee. There’s so much more that you can use in your marketing arsenal that resonates well with consumers. And then pricing: I think a lot of the convenience and gas station stores look at it as just an inexpensive offering, which doesn’t necessarily have to be the strategy. You look at the QSR coffee players and their pricing strategies and I think c-store and gas station stores can mirror that because we know that Canadians are willing to pay for quality. If you have a good quality product, you can charge a higher price point. That’s a win-win. What role do c-stores play in the success of your members? RC: If you look at the number of units

through the convenience store channel or the gas station store channel, coffee’s percentage of the penetration through that channel is underrepresented

the pandemic hit did not decline, however there was a switch to the in-home versus out-of-home and there was an opportunity through the pods or ground roast. It’s interesting that the convenience stores and the gas stations just don’t really have that type of program. The in-home consumption is much stronger than it’s been, and I think it’ll continue. So, what role could a convenience store play to support inhome consumption? The second is the continued growth through innovation of coffee moving beyond the traditional brewed, to the nitro, the cold brew, espresso based, all the different types of flavoured coffee beverages. There’s a big opportunity to expand the program in the channel. C-stores and gas stations are well-known for frozen slushy drinks. How does coffee play into that? There’s the opportunity to focus on innovation through some of those different types of coffee, ice coffee beverages, based on the Starbucks model of expanding the scope of the coffee drinks. The reality is that a lot of Gen Z consumers are really getting into coffee beverages, so how can c-stores and gas stations capitalize on that? There’s a lot of opportunity to be more creative and strategic than just having a very basic coffee program. Do you have any advice or tips for operators when it comes to choosing a coffee program partner? RC: The key is to get a partner who’s

going to take the time to help map out a successful program, look at best practices in different areas of the market and determine what that means to the individual convenience store or gas station operator. There’s lots of great understanding of consumer behaviour and what that means for a coffee category. It’s important for operators to make sure that they’re looking at this as more of a value add, and a point of difference to their business versus just selling coffee at 50 cents and putting it in the back corner. Working with a partner that can help identify and recognize that this is a good opportunity and provide that support is valuable. CSNC
