Stay One Degree: Home Rental Reinvented Introducing the First Social Network For Luxury Home Rentals

Stay One Degree is the first social network for luxury holiday home rentals. Tapping into the sharing economy trend, Stay One Degree has created a unique online platform, based on a circle of trust, that connects home owners and guests with their friends, mutual connections and trusted members all over the world.

Hotelier & Hospitality Design

The brainchild of Thomas Bennett and Jorge Munoz, Stay One Degree allows discerning global travellers looking for first-class home from home experiences, to rent directly from their network of connections within a members’ community. The idea came from their own rental experiences, which frequently left them frustrated and disappointed with uninspiring homes, at overinflated prices. Meanwhile, beautiful homes within their social network lay empty and underutilised.

4

Stay One Degree now offers its members access to some of the world’s most exclusive and beautiful villas, townhouses, apartments and ski chalets in more than 40 countries around the globe, with prices starting from £100 per night and rising to well over £10,000 per night. Every property within the Stay One Degree collection is hand-picked by the team, based on their architecture, interiors, outstanding locations and unique elements, from cliff-top infinity pools in Bali to mountain hot tubs in Val Thorens and villas with vineyards in Tuscany. Signing up to Stay One Degree is free and immediate, providing entry into a community with extraordinary homes to rent, without the risks often associated with renting from a stranger. The social network model allows members to grow their connections, creating a large pool of members they are comfortable renting to and from. Members can communicate through a private messenger

system, without restriction, building relationships and providing an insider concierge service of the very best local experiences, as well as sharing exclusive member benefits. Thomas Bennett, co-founder, says, “the unique concept allows our members to explore the world from the comfort of real homes belonging to friends and trusted connections. We provide access to amazing homes at preferential member rates and a forum for members to share their passion for their homes and travels.” The level of trust works both ways, with home owners having control over whether they would prefer to rent to immediate “one degree” connections or a wider pool of trusted members. Home owners also benefit from access to this worldwide customer base at a commission rate of just eight percent. Co-founder, Jorge Munoz, adds, “As a result of the unique platform we offer property owners, we are finding that owners who never would have considered renting out their holiday homes are now choosing to do so on an exclusive basis through Stay One Degree as they can be confident that their home is in safe hands. Members, therefore, have access to special homes that are impossible to find anywhere else.” For further information about Stay One Degree, please visit www.stayonedegree.com, follow on Twitter and Instagram @StayOneDegree or find them on Facebook at www.facebook.com/stayonedegree.

Me Dubai is Set Addition to the Luxury lifestyle hotel brand, ME by Meliá, has announced its debut property in the Middle East with the launch of ME Dubai at the end of 2018. Designed by late architect, Zaha Hadid, ME Dubai is set to become a legacy hotel. It is the only hotel project where she personally designed all of the interiors and exteriors, showcasing her vision of ‘interconnectedness’.

M

ME Dubai will take residence in the breath-taking, 95 metre-high, Opus building, which is the newest architectural icon in the Dubai skyline. Situated in the heart of the upcoming Burj Khalifa district in Downtown Dubai, The Opus building is managed by leading Middle East real estate developer, Omniyat.

Hotelier & Hospitality Design

ME Dubai will consist of 93 rooms and suites, across 19 floors, the ultra-luxurious ‘Suite ME’, as well as 98 serviced apartments. The property will feature dramatic, signature furniture in the lobby, vertical café, lounges and reception area, which were either designed or personally selected by Zaha Hadid.

6

The lifestyle hotel will offer 15 restaurants, including ROKA, the contemporary Japanese robatayaki restaurant. Founded in London in 2004, ROKA was created by Rainer Becker following the huge success of Zuma London. Hamish Brown, Group Executive Chef for ROKA Restaurants internationally, since March 2013, has successfully spearheaded the team who have created some of ROKA London’s most iconic dishes, including the yellowtail sashimi with yuzu-truffle dressing and lamb cutlets with Korean spices. To complement the food from the robata, a selection of expertly prepared sushi and sashimi will be available, alongside dishes from the main kitchen. The interior of ROKA Dubai showcases the collaboration between Rainer Becker and esteemed designer, Noriyoshi Muramatsu of Tokyo’s Studio Glitt. Located in the centre of the restaurant amongst diners, the robata grill is the focal feature of the ROKA experience and also brings with it the energy that ROKA is famous for. With awe-inspiring originality, Hadid’s design reinvents the balance between solid and void,

opaque and transparent, interior and exterior. The Opus spans 250,000 sq ft, comprising of two separate towers that connect in the form of a cube but with a ‘carved’ central void where the centre of the building provides unexpected and dramatic views of the exterior. Gabriel Escarrer, Vice Chairman and CEO, at Meliá Hotels International, said: “We are incredibly excited to open ME Dubai, our first ME property in the Middle East. Dubai is a fascinating, exciting city, known for its progressive feats of design; all of which are characteristics that resonate with ME by Meliá hotels and the high standards we offer our guests. We’re confident that our unwavering commitment to exemplary service, coupled with Zada Hadid’s remarkable design and ROKA’s sumptuous cuisine will make for an unparalleled experience for our guests in Dubai.” ME by Meliá is for culture-seeking guests that are driven by new luxury experiences. The brand has been built on first-rate service, and ME Dubai is no exception. Each guest’s stay is orchestrated by a dedicated Aura Manager, whose job it is to know the city back-to-front and use this knowledge to make the hotel’s service truly bespoke. ME Dubai’s facilities and Aura service will also be extended to the owners of the exclusive serviced apartments located on the upper floors, including four penthouses with private roof terraces. There are currently ME by Meliá hotels in Miami, Milan, London, Ibiza, Mallorca, Madrid and Cabo, with further openings in Sitges in 2018 and Barcelona in 2019.

Milsom Hotels:

Buying better with Lynx Purchasing Milsom Hotels operates five prestigious properties in Essex and Suffolk, including Maison Talbooth and the nearby Le Talbooth restaurant in Dedham, Essex, part of the Pride of Britain consortium, The award-winning hospitality operator works with buying specialist Lynx Purchasing to obtain the best prices on a range of core food products. Although each venue is very individual, the dining trade is key across the business, with menus focusing on fresh, seasonal food using ingredients sourced from a range of local suppliers, with many of whom the group has longestablished relationships. Milsom connected with Lynx Purchasing through Pride of Britain, where Lynx has preferred purchasing partner status. Stas Anastasiades, Milsom Hotels operations director, says: “We are very much a food & beverage business first and a hotel rooms provider second. Whether it’s our brasseries or our white tablecloth restaurants, we are all about a high quality customer experience, but we are often cooking high volumes as well. “Probably like many operators, we felt that we were already in a strong purchasing and procurement position, because we’re multi-site and we felt we had a real structure to our purchasing. As it turned out, though, Lynx were able to identify significant savings which, as a decent sized but not huge business, we couldn’t have negotiated for ourselves. Having someone come in from outside is like a health check on your purchasing.”

“Lynx are very good at making sure that we are buying the best products from the best suppliers for our needs. They also give us plenty of industry insight, such as the regular Market Forecast, which has been particularly helpful in planning for some of the unprecedented price increases our sector has seen.” Anastasiades sums up: “Lynx understand our business. They know that it isn’t price first, it’s about quality. They are able to get preferential prices that makes us savings on the high-end, quality products that are right for our menus and cooking style. Whether it’s a high volume supplier or a niche supplier, they know how to compare like with like and get the best product for our needs, at the right price.” Lynx Purchasing works with more than 2200 hospitality businesses. For more information go to www.lynxpurchasing.co.uk

Across the group, Milsom now buys products including some high-end butchery lines, fruit and veg, and dry goods, from suppliers nominated by Lynx, dovetailing these with its continued relationships with local and specialist suppliers. As with all Lynx customers, Milsom has no contract, pays no fees and is not tied to any specific supplier.

Equipline takes a glimpse

foodservice market and explores As a nationwide commercial catering equipment Distributor we have been able to maximise opportunities and capture some major concerns of foodservice operators through personal contact with customers either by visits, or conversations while attending our relaxed Open Kitchen Live events. These were ultimately distilled to the same fear: “loss of customers”.

There are multiple reasons to be fearful: loss of customers can be the result of many, complex, factors: the following were the foremost areas of concern:

The customer invested in the system including a Nieco automated conveyor char broiler, an Antunes ‘Cheese Melter’ and a VCT Hi-Speed Vertical Contact toaster for toasting their buns - their burgers sell at a whopping £14.75each.

Seeing is Believing! See Left for comparison of customers’ fresh burger cooked on Nieco conveyor char-broiler in 3.45 mins vs cooked on customers’ own chargrill in 8 minutes (cooked by its own Chef) to same internal temperatures

Shortages of skilled staff can probably be attributed to most of the fears outlined above plus the further fear of a reduced pool of potential employees. To harness lesser skilled staff savvy Operators have been investing in the latest technological advances unsurprising from large chains with very deep pockets.

10/12 second drop - its auxiliary heaters ensure super-hot buns

keep up with competitors

• How to offer wider day-part appeal to generate sales during quiet hours

• How to speed up service at peak times,

particularly during precious short lunch periods

• How to maintain quality when trying to speed up cooking/re-heating/Hot Hold processes

Hotelier & Hospitality Design

One (smaller) customer visited Equip Line’s Live Kitchen intent on speeding up service by introducing a Hot Grab & Go. The interactive live demonstration proved that we could simplify the system, significantly speed up their production process, and enhance its product.

See right for one of our companion pieces for the Nieco Broiler - Hi-Speed Vertical C o n t a c t To a s t e r VCT2000 – never proven by us but said to toast around 750 buns per hour – all we know for a fact is that in continuous production a single person cannot feed the unit fast enough!

• How to stay ahead of – or at least

24

One result of automated technology is BK, a major in every sense, uses conveyorised char broiling platforms worldwide to cook its burgers.

Interestingly, smart smaller start-up companies ‘bit the bullet’ and made substantial investments in equipment and so evaded several threats by either increasing their ability to employ unskilled staff, or enhancing or preserving their brands’ product consistency and quality into the foreseeable future.

Automation ticked all ’fear’ boxes for 3 Ethnic Operators. Visiting from the North East each were seeking a solution that would release them from the tyranny of char-griddles dogged by a lack of skilled staff, and to improve product consistency and temperature control.

at deepening fears within the means of minimising them. They brought their own products - spiced Burgers, marinated Chicken Tikka, marinated cubed lamb, spiced minced lamb kebabs, whole muscle marinated chicken breasts, a variety of mixed vegetables - to the Live Kitchen and tested the Nieco conveyor charbroiler:

Our team quickly established optimum temperature and belt speeds and produced each product to consistent core temperatures and an authentic finish comparable with that of a tandoor. All 3 invested to speed up their production, achieve product consistency, and easily train lesser-skilled staff to use this simple automated system. Sometimes Hot Holding is the answer to speeding up service and many customers use the visual attraction offered by presenting products in Hot MultiDeck display units.

Can’t ignore retail sector giants such as Tesco, Waitrose, Morrison’s, which primarily sell cooked Chickens, and passing their rigorous design standard testing processes acts as a testament to the efficiency of equipment, in this case Fri-Jado Hot Multi-Deck units.

Says Equip Line MD, Jacki Walker: “Our experience proves these innovative technologies are not just for major operators, but are equally applicable to small and independent operators. We have really enjoyed being challenged this past year, and look forward to working with customers to develop solutions to their specific challenges in 2018”.

A ‘Grab & Go’ is not just for Chickens! These household name retailers, together with many high street icons including Pret A Manger, Greggs, Itsu, Abokado, and many more are all further testament to the efficiency of the units when holding a great diversity of products. A few examples includes Soups, one-pot Stews, porridge, pastries & pies, hot sandwiches, - and not to forget Wraps which actually started the craze! All offer their customers high quality products held at correct legal temperatures that they can literally just Grab ‘n’ Go.

Hotelier & Hospitality Design

A ‘Grab & Go’ system is a real time-saving boon to time-poor customers who just want to run into your store, grab their favourite lunch, pay and go!

Food and Drinks Located in the world famous Hippodrome casino, Heliot Steak House is the perfect start for a great evening. The excitement & adrenaline that the west end offers is truly matched by the enjoyment that the casino offers. From entertainment to three gaming floors, from six bars to Lola’s underground casino room. Heliot Steak House fits in perfectly with its elegance & intellect. These being just two of many reasons it is well worth a visit. Once welcomed by the highly-attentive staff, little more than a glance at the menu was needed to see how much thought and care had been spent on its composition. The variety of dishes are to be admired. The USDA prime steaks which are aged between 6 to 8 weeks are delightfully tender and bursting with flavour. For me, when I have the pleasure of eating at such a wonderful establishment I often dismiss the other options on the menu when such a succulent cut of grain feed beef is available. Heliot Steak House has such a wide range of toppings if you do opt for one of their tantalising steaks, with this level of innovation, one could be forgiven for fearing the possibility of style dominating substance, but there are no such worries at Heliot Steak House: the focus here is most assuredly on the food, which is clearly designed to satisfy both the intellect and the appetite. I found myself undecided due to the quality of options but opted for the lobster tail which I cannot recommend highly enough. If steak is not your preferred choice there is an array of excellent dishes form surf & turf to duck breast and a whole host of amazing seafood options. My colleague decided on the grilled Lobster skewers and in one word described them as “marvellous”.

Hotelier & Hospitality Design

The staff were superb throughout the evening with much attention to detail paid for every diner. Hats off to the management for their clear vision on how they wish for their restaurant to be run.

I had the pleasure of meeting with Mike Haydon after our wonderful experience at Heliot Steak House who treated us to the last 10 minutes of the blues brother show which was showing in the 180 seat music room. After being left extremely satisfied with our dinner we had a fantastic time watching the show. This of course was no ordinary evening meal as its venue had so much more to offer. I can honestly say that the Hippodrome and Heliot Steak House was a great experience and I am looking forward to returning soon.

New Year New Look Radnor Hills have re-designed their adult premium soft drinks range Heartsease Farm with new labels and sugar reduced recipes!

R

adnor Hills are celebrating the New Year with a re-launch of their popular Heartsease Farm Premium Pressé range. The new reduced-sugar recipes will launch in January 2018 designed to meet the needs of the health conscious consumers looking for a premium soft drink with low sugar content. The much loved brand hasn’t just transformed the inside of the bottle but the outside has also undergone a new look with a brand new label design and a new sloping neck 750ml glass bottle. Radnor Hills are sticking to the brand’s main heritage and ethos by only using all natural ingredients as well as utilising their own lightly sparkling spring water from their farm in Powys, Mid Wales. The new recipes will be sweetened with Stevia – an all-natural plant based sweetener that contains almost no calories! Each bottle will still have the same amount of real delicious fruit juices which are expertly blended into traditional British recipes but the new ‘light’ approach will mean that some flavours could contain around 50% less sugar.

Hotelier & Hospitality Design

The Watkins family have farmed at Heartsease, in Mid Wales since 1903. It was soon after joining the family firm that William Watkins discovered that he had a source of delicious spring water on their land, and this was the trigger to diversify the business into bottled water based products. In 1990 Radnor Hills was born, producing a whole range of soft drinks including spring water, flavoured waters, juicy waters and pure fruit juices.

28

The drinks come in seven delicious flavours including a Traditional Lemonade which is gently bubbling with the finest Sicilian lemons! Raspberry Lemonade made with natural raspberries that have never been concentrated to give it a much fuller, fruitier flavour. Other flavours include an Elderflower Pressé, British Blackcurrant Crush, Apple and Rhubarb, Fiery Ginger Beer and the latest edition a Strawberry & Mint Pressé made with sweet juicy strawberries and refreshing garden mint. All flavours are available in a single serve 330ml glass bottle and family size 750ml bottle as well as a premium 425ml plastic bottle. As hospitality sings the Brexit blues…

Hotelier & Hospitality Design

Can Technology Really Help Change the Tune in 2018?

30

C

By Luis De Souza, CEO of NFS Technology Group

herish your serving staff. A recent report by KPMG for the British Hospitality Association warned that we’ll be short of half a million of them in less than five years’ time.

Yet the UK hospitality business is booming, because that same sterling devaluation is making it cheaper for tourists to visit. Further figures show that more than 7,000 extra hotel rooms are currently being built in London alone.

So isn’t this a crisis that’s already starting to happen?

We’re all probably very aware of the main reason – since the Brexit vote, the number of EU migrant workers has plummeted. Latest figures show net migration is down by 100,000 in 2017.

Hospitality academic Prof. Peter Jones notes in his white paper ‘Staffing – the issue of our times’ that the KPMG study says the hospitality industry already has the highest number of vacancies as a share of total employment, compared to other sectors.

And with unemployment at its lowest since the Seventies according to figures from the Office for National Statistics, it’s a struggle to recruit.

“It concludes that it will be hard to fill the recruitment gap with UK unemployed workers or workers from other sectors,” he says.

“For ‘hard to fill’ read ‘impossible’.” Prof. Jones quite rightly calls for a loud and vigorous response to the situation from a government perspective – but when it’s your café, your restaurant or your hotel that’s short of staff, there’s no time to wait for government initiatives. How can your hospitality business beat the Brexit blues? We’ve examined a number of highly successful UK restaurant and hotel businesses to discover the tactics they are using to help offset staffing issues. And we found thriving businesses have a lot in common when it comes to using EPOS management to drive up efficiency and keep operating and labour costs at a minimum. We identified 6 tactics these successful businesses are already employing: 1. Effective rostering 2. Efficient customer service 3. Use of mobile ordering devices tableside 4. Fraud detection 5. Better stock control 6. Better planning and decision-making

Fraud detection EPOS makes sure you protect your business and your customers’ data better. Every transaction is recorded, and it’s simply harder for staff to carry out dishonest activities.

Better stock control And how does it do that? This takes us on to our next point:

Use of mobile ordering devices tableside Bar Iberico, like other successful businesses we examined, uses EPOS software on mobile ordering devices so its staff can take orders and payments at tableside.

Effective rostering It’s always been difficult to have the right number of staff on at the right time. Too few and customer service is affected; too many and you are simply pouring your profits away down the drain. Using EPOS management software gives you detailed data that shows precisely when you are at your most hectic and when business tails off.

The data EPOS management software captures also includes real time information about which dishes are selling when. That helps you manage your stock control better, focusing on bestsellers and reducing waste.

Better planning and decisionmaking

These can be dedicated handheld devices, or tablets – even mobiles. In the kitchen, a digital panel displays the order so chefs can get to work on it immediately.

With valuable data easy to view at all times – I’d recommend using a cloud solution that enables you to check on your business online – you have the information you need to make really good planning decisions.

Jacque says: “The order going straight from the handheld to the kitchen screen ensures a blistering speed of service.”

These are challenging times, and likely to become more so as the Brexit deadline comes closer with few firm decisions made.

From a labour point of view, this is significant. Serving staff are no longer running back and forth to the kitchen delivering orders on bits of paper, which saves a great deal of time.

Staff are likely to become even more scarce - and the restaurants who manage to recruit will be those with a great track record for successful operations, and who offer workers an excellent working environment.

It takes the guesswork out of rostering, and means you can match your labour levels perfectly to your real requirements, keeping staffing costs to a minimum without affecting customer experience. Diners and guests are becoming more demanding – surveys show the average time now spent in a restaurant is just 45 minutes. Quick and efficient service is crucial to keep these hungry but time-starved customers happy. Jacque Ferreira is the Co-Founder and Executive Chef of Bar Iberico in Nottingham and Derby, one of the country’s top tapas restaurant chains. He says EPOS management is the only way to keep on top of serving more than 700 people a day when Bar Iberico’s outside area is running at capacity.

The Synergy Grill is a pioneering chargrill that uses 52% less gas. This gas saving equates to an average of £12,238 every five years, helping cultivate a carbon neutral kitchen. It also uniquely has no fat tray to clean. These benefits have been adopted by top chefs and snagged top prize for innovation at The Commercial Kitchen Show where the judges were “Wowed by a British-made design that is a true innovation for chargrilling.”

The greatest benefit, however, is flavour. Synergy Grills get hotter than average chargrills. Heat ‘atomises’ the natural fats that are released during cooking which are misted back into food making it incredibly succulent.
