Eric Kayser to open restaurant and pâtisserie in London French master baker Eric Kayser will open his first UK outlet tomorrow, fittingly enough on Baker Street, London. The renowned boulanger has been looking for a UK site for over two years and settled on Baker Street because the Marylebone area has had something of a renaissance in recent years. The location’s name proved to be a matter of synchronicity rather than design, according to a spokeswoman. The Baker Street Maison Kayser, which will offer a takeaway, pâtisserie and a 60-cover restaurant, will open from 7am-11pm. All “Natural fermentation is the essence of our bread and we are proud to have crebread, brioches and viennoiseries will be made on the premises using natural liquid ated a wide range of breads that serve every kind of taste,” he said. “We believe fresh baked bread is a joy that should be shared and experienced every day.” leaven. Kayser, a fourth-generation artisanal baker, is famous for using liquid leavening rather than commercial yeast in his breads. At the age of 30 he invented the Fermento Levain with fellow baker Patrick Castagna, a machine that facilitates the continuous use of liquid leaven.

The first Maison Kayser opened in Paris just over 20 years ago and there are now more than 100 bakeries in 21 countries, including 19 in Tokyo, five in New York City and three in Singapore. Kayser refused to be drawn on plans for further expansion in the UK. Baker Street has no historical connection to the gentle art of leavening, but was so named after builder William Baker, who laid out the street in the 18th century.

More Britons plan staycation in 2017 than took one in 2016 More Britons plan to take their main holiday in the UK in 2017 than did so in 2016, with eastern Europe another favoured option for this year. That’s according to research from Travelzoo, which asked over 1,200 Britons where they planned to holiday. It found that 52.4% of respondents were considering the United Kingdom or western Europe for their main holiday in 2017, with 24% saying they would be holidaying in England, 6% in Scotland, 4% in Wales, and 3% in Ireland. That compares to a similar survey conducted in October last year which found that 29% of Britons said they had spent their 2016 holiday in the UK. Meanwhile, fears about safety and the weakness of the pound is driving more Britons away from traditional western

European destinations in favour of eastern Europe. Travelzoo said that central and eastern Europe as a whole (12%) was now more appealing and affordable for Britons than Spain (10%). Croatia, Bulgaria and Poland were found to be the most popular eastern European holiday destinations this year, despite the fact that nearly half (45%) of Britons considering travelling there admit that they wouldn’t have done so before 2017. Joel Brandon-Bravo, managing director of Travelzoo in the UK, said: “Six months on from the Leave vote and it’s encouraging to see Britons considering Eastern Europe as a travel destination in 2017. As flight bans to Sharm el Sheikh and Tunisia continue, and uncertainty over the value of the pound remains, countries such as Croatia and Bulgaria – which operate outside of the Euro – offer better exchange rates and great value for money to British tourists.” Brandon-Bravo continued: “UK tourists who are now looking further east won’t be disappointed. If you take the Balkan Peninsula for example, the coastlines of Slovenia, Bosnia and Herzegovina, and Montenegro, are just a stone’s throw from the east coast of Italy. They boast the same warm weather and beautiful beaches, lakes and mountains, and present a wonderful opportunity for British people to explore new travel gems.

Preliminary data from STR’s monthly report found occupancy soared 7.1% in the capital to 80.1%, while RevPAR increased 14.5% to £119.41. Meanwhile, average daily rate (ADR) was also up 7% to £149.02. The increase was down to demand outstripping supply, with supply increasing 2.7% compared with a 10% jump in demand.

December marked London’s highest year-over year RevPAR increase in the past 52 months – since the UK hosted the Summer Olympics in 2012. STR analysis noted that while the performance growth is compared with a weak December 2015 – when London hotels experienced a downturn in performance following the terror attacks in Paris – December 2016 marked London’s highest actual occupancy level for any December on record.

Cornhill Castle set to undergo £750,000 refurb Cornhill Castle hotel in Biggar, Lanarkshire, has announced it is to undergo a £750,000 refurbishment programme. The first phase of the project will see the opening of its ‘Grand Ballroom’ on Sunday, 12 February. The room will have a traditional castle-period feel with bookcases lining the walls and a sloped ceiling that will give the optical illusion that it’s higher than it actually is. Although the castle can accommodate 220 people for meals, and 250 plus for an evening reception, a statement from the property said the overall ambience of the refurbishment is “warm and intimate”. Also planned is a new honeymoon suite housed in one of the original castle turrets. Set over two storeys, the honeymoon suite will have a luxury copper bath, rainfall shower and its own private mini-spa. A further phase will include the

conversion of an existing grade B-listed stable block into 15 bedrooms with an additional courtyard.

Fallon Cowley, group operations director at Manorview, said: “Weddings are a key part of our business but rather than have a standard formulaic wedding throughout all our hotels, we allow each hotel to have its own personality, therefore we can cater for all types of weddings. “At Cornhill we wanted to create something that complemented the castle and its stunning location. I’m proud to say we’ve achieved that with our Grand Ballroom.” The refurbishment is expected to be completed in February 2017.

Glasgow-based electronic music label Soma Records has branched out into the world of drink, releasing a limited edition bottling of rare 18yo Single Cask Caroni Rum. The team settled on this rare spirit from the former Trinidadian distillery after trying a number of other contenders. ‘We also tried some single-cask 65% abv, but thought that might have been a little too much!’ MD Glenn Gibbons explained. ‘We know a lot of techno lovers, and people who work for us, that also love a good quality rum. The correlation between the two seemed like a natural thing. We often have a bottle of rum sitting in the office to crack open to celebrate a big release, to get the party going, or to have a nip before venturing out to a club.’ Only 200 hand-numbered bottles of Rum & Techno were released, but there are plans to follow it with a limited-edition gin this summer (G ‘n’ T ‘n’ Techno, anyone?), followed by a single malt whisky in the winter to celebrate the label’s 25th anniversary. Why it makes sense to PAT Test

www.onlinepattestingcourse.co.uk The law says that you need to inspect and maintain your portable electrical appliances; the best way to demonstrate that you have complied with this requirement is to follow the guidelines set out by The Institution of Engineering and Technology. In reality though, how do you realistically integrate this into running your business? It’s a lot easier than you might think! So there’s no avoiding it, you really do need to PAT Test. But you can simply fit it in as a part of your health and safety routine, you don’t need to be an electrician or have any formal qualifications. You simply need to know what you are doing, and it’s all pretty straightforward. You know your appliances, how the equipment is used and who uses it and this is the basic information you need to build your own inspection routine. The frequency of PAT Testing is not one size fits all. It is about assessing the risk of the appliance and where and how it’s used; it’s also worth checking your insurance to see if it mentions PAT Testing. It’s not

10

uncommon for insurance policies to mandate PAT Testing as a pre-requisite for cover. Once you have started PAT Testing you need to keep records of your inspections. This actually makes perfect sense, as with some equipment you will start to see deterioration in an appliance before it actually fails, meaning that you can plan and budget for replacements. It helps to encourage staff to treat appliances carefully and with respect, after all the responsibility for inspecting appliances is shared with the user, as they too should be checking for signs of damage, before using equipment. You can read more about this is the free Government Health and Safety pamphlet the INDG236 www.hse.gov.uk/pUbns/indg236.pdf. Fuelling business with Ringtons One of Northumberland’s most popular service stations is fuelling its customer service and profits thanks to the installation of a brand new Ringtons hot drinks tower within its forecourt shop. Owners of The Purdy Lodge in Belford have invested in a state-of-the art, bespoke coffee tower fitted with the latest La Cimbali bean-to-cup coffee machine. Specified and stocked by tea and coffee experts Ringtons, the machine has been installed to meet demand for top quality coffees and teas on the go and to allow for sales growth. The Purdy Lodge in Belford is situated on the A1, the main route between Newcastle and Berwick, and the complex includes a garage forecourt, 24-hour café, hotel and bar and grill restaurant. The family business also operates self-catering holiday cottages. Since installation of a custom-built Ringtons coffee tower, The Purdy Lodge owners have seen an 18% year-on-year growth in its hot beverages sales, with a similar footfall to the previous year. Paul Hodgson from Ringtons said: “The Purdy Lodge has been a Ringtons client for a number of years now and our coffee, tea and sundries have been enjoyed in the cafe, hotel and restaurant by thousands of people during this time. When it became evident the forecourt’s existing coffee tower was not performing, we worked alongside John – one of the Lodge’s owners – to design, specify, install and supply a purpose-built coffee tower featuring a high tech bean-to-cup coffee machine. The tower’s machine grinds quality coffee beans to order and uses fresh milk to ensure a premium beverage – the fact sales have increased by almost 20% since

installation is testament to the fact the hot drinks facility was worth investing in.” Ringtons is renowned for offering a traditional doorstep delivery service, online store, business-to-business food services division, and a private label packing business. Operating from its head office in Newcastle, the company boasts over 20 sales offices, a team of over 500, and a north east factory which blends and packs all of the company’s tea and coffee to ensure quality and freshness. John Davidson from The Purdy Lodge added: “The Purdy Lodge is situated on the busiest commuter routes between Northumberland and the Borders so we are popular with passing trade, commuters, locals and HGV drivers. Whether our customers are looking for a full meal, accommodation, a quick snack or a take away coffee we want to make sure they get the very best, and we know that with Ringtons this is always the case. Our previous coffee tower, although well used, was unreliable and the quality variable, but since installation of our new tower we can clearly see the impact having a recognised brand in Ringtons, great quality coffee and a well-designed coffee tower is having on our sales and repeat business and we expect this to only grow in time.” Ringtons Beverages sells through its UK-wide sales team, an expert team of customer care advisors on Freephone 0800 0461 444 or online at www.ringtonsbeverages.co.uk.

Retox vs Detox at Tom’s Kitchen this January

This January, Tom’s Kitchen will put London-based healthy food and drink company, Rude Health, and social media influencer and Instagram account, KS_Ate_Here, head to head with the ultimate Retox vs Detox menu, available throughout the whole month. Founded by renowned chef Tom Aikens, Tom’s Kitchen has worked closely with both Rude Health and KS to create two dishes that are polar opposites, whilst also both using fresh ingredients and unique flavour combinations. For those in need of a health kick after an indulgent Christmas, Rude Health has created a delicious Smoked salmon tartare, served with a wasabi crème fraiche and cured egg yolk. A good source of protein and omega-3 fatty acids, the dish is ideal for diners looking for a light lunch (£10) or dinner (£18) after a month or two of pure indulgence. In contrast, KS’s contribution is the ultimate Cardiac stack burger, featuring chicken schnitzel, smothered in homemade pickles, crispy sage chicken skin, streaky bacon and smoked Applewood cheese. The schnitzel is then topped with its very own duck fat potato

rosti, sandwiched between a duck fat brioche bun and served with a side of triple cooked chips (£20) – perfect for those who aren’t quite ready to let go of the festive feasting! Available for lunch and dinner at all Tom’s Kitchen restaurants, including the newly launched site in Birmingham, these delicious dishes will be pitted against each other in the ultimate food fight from 2 January – 31 January 2017.

With managing director Martin Porter’s combined experience of over 30 years in the HVACR industry; enjoying the success in the largest and most demanding commercial environments, rexmartins has simplified the process of specifying, choosing and purchasing refrigeration, air conditioning and catering equipment. With a main office situated in Tunbridge Wells Kent, as well as a distribution centre in Greenwich, London, the whole of the UK is covered. An expansion at their Tunbridge Wells site means they have acquired additional warehouse space to help with the continued development of the company. Also, an increase in staff numbers has complemented the business growth and increased efficiency, whilst still managing to retain the family

run feel of the company. There is also a demo kitchen onsite at the Tunbridge Wells location where anyone can visit to view the range of products and equipment on offer, as well as receive tailored and individual customer service. The launch of the new rexmartins brand features innovative products that focus on energy efficiency and ease of use. The new products range from induction grills to cooking stations that are suitable for various catering needs. Whether your business is looking for a fryer or pasta cooker, rexmartins now produce a variety of induction cooking equipment. The use of induction cooking makes the new range energy efficient, whilst still maintaining high quality cooking and safety. It utilises electromagnetic energy which only heats what needs to be heated, instead of the entire surface, meaning food is cooked quicker and no energy is wasted.

The ease of use means catering businesses can prepare food rapidly, so more time can be spent on perfecting the quality of the dishes and customers are served quickly. This type of cooking offers electronic, temperature control when cooking, so not only does it save energy, but also money. rexmartins are venturing into other products including heating and cooling units that can be used for indoor or outdoor events. rexmartins will also be a regular at many catering shows throughout the year, make sure you don’t miss them at multiple shows including ScotHot, Commercial Kitchens, Casual Dining, The Restaurant Show, Lunch!, and the European Pizza and Pasta Show. www.rexmartins.co.uk

Avenista Table Reservations also provide all-inclusive access to their incredible support team (awards surely coming sometime soon!) who can implement booking strategies and take care of all of the administrative duties involved in managing the software too. It’s no surprise that Avenista® customers tend to be busy, extremely well-run restaurants who are always looking for that extra bit of efficiency and want it without hefty prices attached. Unlike so many booking systems Avenista® do not operate a Diner portal and so will never attempt to sell tables from competitor restaurants or gazump a restaurant’s Google ranking.

Never heard of Avenista®? Well, perhaps you can be forgiven. With the stampede towards basic, web-based booking systems in recent years many restaurateurs completely overlooked this unassuming UK company, attracted instead by the fanfares of the big booking operators. But one size does not fit all and having experienced high running costs or poor service delivery many restaurateurs are now looking elsewhere and finding Avenista has intelligent, super-easy software with everything they need and more for often a fraction of the cost. With more than 10 years’ experience delivering Table Reservation software the team at Avenista® know what makes busy restaurants tick and have continuously honed and polished their software to make running a Front of House effortless. These days millions of diners are seated each year using Avenista® systems. Oddly perhaps, at Avenista® their mission is for their customers to spend the minimum time possible using the booking software, yet still have the software do exactly what the customer needs, enabling them to spend more time in their restaurants on activities where they can really add value. To achieve this they worked on making Avenista® intelligent and efficient without taking away any of the features that allow restaurants to deliver really personal service to their Diners. And, so keen are they to deliver on the mission they

As Kerry Beswick (Managing Director of Avenista®) says – “We have absolutely no relationship with Diners at all. Everything we do is focused on the restaurateur. We are all about providing the absolute best tools and services for our customers to help them make the best restaurants.” With an impressive client roster, awesome features (including a new online payment feature for events and deposits – saving restaurants huge amounts of time, and reducing no-shows), and pricing lower than anything comparable, many restaurateurs are now getting the message and switching to Avenista® saving themselves time, money and headaches.

Electrolux Professional has unveiled the all new myPRO washer and dryer range. Engineered to bridge the gap in the market for a laundry solution that sits between the domestic and commercial markets, myPRO meets the needs of small businesses including hotels, bed and breakfasts, hair and beauty salons, sports clubs, facilities management companies and restaurants. myPRO presents an opportunity for small businesses to bring their laundry in house, or for those which may be struggling to keep up with the constant demand for clean linen, towels, mops and cloths while working with domestic washers and dryers, to improve the quality of their output. The new laundry range offers significant benefits over domestic appliances as it completes a wash cycle in half the time, thanks to a host of professional programs. Additionally, great wash results are guaranteed time after time thanks to the Electrolux SpeedCare drum, while peace of mind is provided through the professional warranty designed for light commercial use.
