Eelbrook to bring al fresco dining Young's adds boutique hotel rooms to Richmond pub to South West London West London’s latest all-day eatery Eelbrook will open in Fulham later this month, offering al fresco dining with a European and North African twist. Located on the south east corner of Eelbrook Common, the venue will serve a menu of breakfasts, mezze-style small plates, main courses and home- made desserts created by head chef Brett Barnes, who has gained experience at Soho hotspot, Duck Soup, Michelin starred Fäviken, Arbutus and Mark Hix. With full-length doors and a covered, heated terrace, it will focus on year-round outdoor eating with stunning views. “For us, Eel Brook Common epitomises the vibe we want to create in our restaurant. The whole area has a great community spirit and a real village feel, nestled away in a trendy corner of West London,” restaurant manager Olga Ciobanu told BigHospitality. “What’s particularly special about the South East Corner of Eel Brook Common is its sweeping vistas, which provide this space with the perfect backdrop for spectacular outdoor dining – an opportunity, which was too tempting to pass up!” All-day dining Open from 10am, Eelbrook will also serve breakfasts such as homemade muesli, fresh fruit scones and pancakes as well as classics such as kedgeree and a ‘full English’ featuring cured meats and sausages prepared from scratch. A selection of grazing items from Eelbrook’s small plates menu as well as the full breakfast menu will also be available later in the morning. “Brunch is more of a social affair, with a menu of sharing plates such as Turkish çilbir, a fiery baked egg dish, perfectly paired with a whole home-made Fougasse loaf ideal to tear, share and get dipping,” explained sous chef Aidan Brooks, who trained in Spain under internationally renowned chefs including Carles Abellan of Comerç 24. A selection of fresh juices and smoothies will be made in house daily, with artisan coffee and English and flowering teas available alongside a wine list and cocktail menu. The bulk of ingredients used by the restaurant will be sourced locally from British producers. “Fresh, tasty ingredients are integral to producing the best quality food for our diners, so this is really important to us at Eelbrook,” said Barnes. Outdoor interiors Eelbrook’s interiors have been created by Wagamama and Hakkasan designer Haruo Morishima, who worked in collaboration with architectural designer Kok Loong Wong. “The interior is designed to be neutral and light with smooth blond woods to reflect the surrounding grand maple trees dotted around Eel Brook Common,” said Ciobanu “By blending Eelbrook into its natural environment, we hope that it will provide a truly seamless outdoor dining experience, with a focus on the delicious food that we’re serving and the natural beauty of Eel Brook Common.”

Young's is adding 13 boutique hotel rooms to The Orange Tree pub in Richmond-upon-Thames, which is due to re-open in September following a £7m refurbishment.

The new bedrooms will include three feature rooms and a family suite. All of the rooms will feature Hypnos beds, flat screen TVs with Sky Plus, complimentary WiFi, fully- stocked mini-bars and Algotherm toiletries, while the three feature rooms and family suite will also have king-sized beds, roll-top baths and walk-in showers. Young’s has also transformed the bar and 80-cover dining room, with a new interior décor that reflects the The Orange Tree's rugby links and proximity to Twickenham Stadium, as well as the green spaces in nearby Richmond Park and Kew Gardens. A new menu will be comprised of classics and specials made from seasonal ingredients, such as confit Gressingham duck cottage pie with Butler’s Secret cheddar mash; crispy squid, marinated courgette and white bean salad with lemon and basil mayonnaise; and a traditional Young’s ale battered cod and chips, minted peas and tartare sauce. The bar will stock Young’s cask ales and London craft beers, with an extensive wine list and a ‘Shrubs’ vinegar cocktail menu also available.

Customers less satisfied with leisure sector Customer satisfaction with leisure sector businesses has fallen slightly over the past six months, new research shows. The UK Customer Satisfaction Index from the Institute of Customer Service (ICS) - which asked for feedback from 10,000 people on customer service levels across different companies, brands and sectors - gave the leisure sector a rating of 79.6 out of 100, down from c82 in January. The slight decline was reflected in individual companies and brands that are included in the list of top 50 firms ranked according to customer satisfaction. The top performer in the eating and drinking out sector was Pret A Manger, which was included for the first time and had a ranking of 83.4, making it 12th in the list. Toby Carvery moved up from 23rd to 17th place but its customer satisfaction score fell from 83.7 to 82.8. Greggs’ score declined from 84.8 to 82.5 as it moved from 14th to 21st.

Swinging London After table tennis and bowling, it seems there’s a new ball sport that’s enjoying an upward swing in bars: crazy golf. After Chris Edwardes and Amanda Blanch’s Hidden in Ibiza, it’s Winterwell Festival’s founder Josh Ford’s turn to venture onto the green – with Swingers, a crazy golf-cum-clubhouse bar and terrace. The new venue, which opens in autumn, will take over a 7,000 sq ft warehouse in the Old Street area with a 9-hole crazy golf course and the ‘Royal Shoreditch Clubhouse’ – a 1920s clubhouse with full cocktail bar and dance floor. Of course, there will also be kitchen space to welcome appearances from London’s street food scene – with residents Pizza Pilgrims, and guests including Patty and Bun, Hix Fishdogs and When Mac Met Cheese. Passes for the golf will start from £5, and will soon be available for pre-booking online. We don’t think this is the most exhausting exercise you’ll be faced with, but if it’s really too much, punters are also welcome to limit their visit to the bar.

Moët Hennessy champagne house Ruinart has launched its Dom Ruinart Blanc de Blancs 2004, two years after its last vintage of the celebrated prestige cuvée.

For those wanting to delve further into the world of botanical distillates, you could do worse than knock on the door of the shiny new Cotswolds Distillery, which has has created a huge single-botanical distillate library.

The grapes used were sourced exclusively from Grands Crus sites, with 69% from the Côte des Blancs and 31% from the northern slope of the Montagne de Reims. The champagne is very lively for a 10-year-old, with lots of youthful character still present, and Imbibe reckons that it could be laid down for another 15 years. Ruinart says that its delicate structure and outstanding freshness make this vintage a great complement to dishes such as sea bream ceviche or lobster carpaccio. ‘With almost 10 years of bottle age, the Dom Ruinart Blanc de Blancs 2004 displays characteristic richness and focus, and is showing very nicely already, but I believe it has the potential to age beautifully for many years to come,’ declared Ruinart cellar master Frédéric Panaïotis.

With the distillery set to open at the beginning of September, the single-botanical distillate library is currently 151-strong and growing, and it will serve to explain how botanicals react during distilling, thus helping with recipe development. It will also be used as an educative tool for on-trade visitors doing tastings, to help them pick out aromas in the gin. The library is being created with help of local expert botanist Benedict Pollard. The main part of the library should remain at the distillery, but smaller selections could be travelling for on-trade events or tastings down the line. Making gin and whisky, the distillery’s headline product will be its Single Malt Whisky, which will be made in small batches under supervision from head distiller Alex Davies, who was previously at Chase Distillery. It will also be making a London dry gin, giving it a Cotswolds twist by incorporating locally sourced botanicals, such as lavender and pink peppercorns – the distillers are currently finishing recipe development, so the definite ingredients list isn’t known yet. Davies said: ‘We didn’t want to create just another gin on the market and so, with our focus on wild, locally-sourced, unique Cotswolds botanicals, we are creating a gin with a purpose – a gin that represents the Cotswolds, a place of true beauty and food heritage.’


Topland has acquired Hallmark Hotels in a £75m deal as part of a plan to build a £1bn hotel business in the UK.

Menzies portfolio acquired in November 2013 and the day to day operations will be managed by Bespoke Hotels.

The acquisition, which comprises eight four-star hotels, takes its hotel portfolio to 30 hotels across the UK and adds 730 rooms and 600 employees to Topland’s overall business.

Sol Zakay, chief executive at Topland group, said: “Securing this off-market transaction further cements Topland’s ability to effect hotel portfolio transactions to complement and further develop our existing hotel business.

The firm currently employs around 2,000 staff, and existing hotels include Bath’s Royal Crescent Hotel, the Brighton Metropole, the Glasgow Hilton and a portfolio of Thistle Hotels. Topland will add the Hallmark hotels to the platform of the

Colwall Park Hotel in Malvern under new management The Colwall Park Hotel near Malvern, Worcestershire, is under new management following a sale brokered by Colliers International. The 22-bedroom, three-star country hotel, which has two AA food rosettes, has been sold to “experienced” local hotel operators. Colliers International hotels specialist Peter Brunt said the hotel enjoyed a “superb village location in the midst of the Malvern Hills.” He added: “Colwall Park Hotel is beautifully presented and has an enviable reputation for first class service for which our clients Iain and Sarah Nesbitt who have run the hotel since 2000 can be proud of. “There is definitely an upswing in confidence in the regional hotel market and we are very busy with interest being shown by buyers across the price ranges and from pubs to B&Bs to hotels.

“The market is not roaring red hot but it is a nice balanced one with enough strength in it for vendors to find that they have power in the negotiation around price. We are out of the doldrums.” Renowned for its lively Lantern Bar, the hotel boasts a blackand-white mock Tudor style façade and features, along with two comfortable furnished lounges.

The four hotels to join the Holiday Inn brand are Cardiff, London – West, London – Heathrow T5 and Birmingham North – Cannock. The first to open will be the 95-room property in Cardiff in a few weeks’ time, and will be operated by Kew Gardens, a long standing partner of IHG. It will feature leisure facilities including a pool, spa, sauna and gym, as well as a bar and restaurant, board room, four meeting rooms and a newly designed lobby.

IHG signs four hotels to Holiday Inn portfolio The InterContinental Hotels Group (IHG) has announced the signing of four more Holiday Inn hotels to its UK portfolio.

The London – West property is set to open in August, the 225-room property, including 75 new rooms and 150 refurbished rooms, will operate under a franchise agreement with first time IHG owner Mango Hotels. Meanwhile the 119-room London – Heathrow T5 will open later this summer under a franchise agreement with Arora Hotels, and Holiday Inn Birmingham North – Cannock will open in early 2015 under a franchise agreement with Nine Hospitality.

A POPULAR bar in Manchester city centre has had no reported bag theft since customers started using an ingenious clip which can be fitted inconspicuously under tables. The Manchester Bierkellar, a theme bar boasting a wide range of German beers and a Bavarian style menu, has had a number of Chelsea Clips fitted in its dining area, which can seat more than 200 customers. The busy venue, which features 4 bar areas, regularly attracts more than 1,500 people on a Saturday night. Bags left unattended on the back of chairs or on the floor are prime targets for bag thieves but the clips offer customers peace of mind as they relax with a drink or eat a meal with friends.

European Food Safety Authority Tackling Acrylamide, Seeking Public Consultation

Let’s Talk Coffee, the annual supply-focused event hosted by importer Sustainable Harvest, is happening this year in Panama, Oct. 9-12.

The agency’s Panel on Contaminants in the Food Chain released a draft of the opinion yesterday and is seeking public consultation from the world scientific community, with a Sept. 15 deadline. The EFSA will release its final opinion on acrylamide in June 2015, and the group says it will use the report to “support European and national decision-makers to consider possible measures to further reduce consumer exposure to this substance in food.”

“Building a World Class Supply Chain” is the theme of this year’s event, which will include educational seminars, field trips to some of Southwestern Panama’s renowned Geisha-growing farms, and plenty of networking opportunities over food and drink. Home base for 2014 Let’s Talk Coffee will be the Westin Panama Playa Bonita Hotel outside Panama City. The event is well-known for including numerous stakeholders in the coffee supply chain, focusing on issues affecting farmers, exporters importers and the specialty green market as a whole. The European Food Safety Authority says it has confirmed previous science suggesting that acrylamide — a naturally occurring chemical compound created during coffee roasting — potentially increases the risk of cancer among all age groups.

In previously published research from European sources and the U.S. Food and Drug Administration, coffee is often listed at the top of the list of acrylamide-heavy foods, although the compound occurs in any number of cooked foods that experience browning — a.k.a. the Maillard Reaction — at temperatures above 150°C (approximately 300˚F). In the EFSA’s draft opinion, Panel chair Diane Benford wrote: “Acrylamide consumed orally is absorbed from the gastrointestinal tract, distributed to all organs and extensively metabolised. Glycidamide, one of the main metabolites from this process, is the most likely cause of the gene mutations and tumors seen in animal studies.” While the EFSA and other European national food safety agencies already suggest reducing acrylamide consumption, especially among children, Benford noted that, “so far, human studies on occupational and dietary exposure to acrylamide have provided limited and inconsistent evidence of increased risk of developing cancer.”

South Korean Coffee Imports from U.S. Roasters Increase in 2013/14 South Koreans are importing more roasted coffee from the United States, reflecting the popularity of U.S. brands, as well as relaxed trade taxes. The amount of roasted coffee imported by South Korea from the United States saw a double-digit annual increase in 2013, according to data released July 4 by the Korea Customs Service and obtained by multiple Korean news outlets. U.S. roasters supplied the country with 3,066 tons of roasted coffee in 2013, a 16.5 percent increase from 2012, and a 97 percent increase from 2011. Much of the increase can be attributed the U.S.-Korea Trade Agreement, signed in March of 2012, which reduced tariffs on roasted beans from the United States from 8 percent to their current level of 3.2 percent. The United States continues to be the top supplier of roasted coffee to Korea, and in 2013 increased its percentage share over the second and third largest suppliers, Italy and Japan. In total, the United States accounted for nearly half of the 6,127 tons of roasted coffee imported by Korea — and both numbers are growing.

Vanessa Brady awarded an OBE for services to the design industry

Vanessa Brady, international multi-award winning interior designer and Founder of the Society of British and International Design has been awarded an OBE for her services to the design industry. Her central London based ISO 9001 design practice, Interior Design Services Ltd, has amassed an award winning portfolio including past projects such as Hard Rock Cafe, the Design Council, the Kabaret Club, British Luxury Club, Unilever, high security government offices, Head of State Palaces, and the private residence of numerous diplomats. Hard Rock International opens Hard Rock Hotel Ibiza

Nominated twice over in 2010 and 2013 by NatWest Bank for their Business Women’s Award, she is also an MBA business consultant, working with global business brands and private clients over the past three decades who have commissioned Vanessa for her vision for growth. In 2009, she led the Society of British International Design (SBID), to become the national representative organisation of the European Council of Interior Architects (ECIA) for the United Kingdom, developing new markets in the UK where previously, due to a lack of standards, Britain had been excluded. SBID placed Britain on a level playing field within Europe and globally, creating a British standard of education, competence and practice for the first time. In three years, SBID grew to become the largest professional membership interior design organisation in Britain, sitting amongst 16--member qualifying countries of the ECIA. Vanessa is the British Ambassador for Design to France for the Hospitality sector and continues to work closely with trade in Europe; particularly in France and Italy, as well as in the Middle East, USA and Canada, creating routes to market for import and export through commercial and diplomatic routes.

Luxury hotel and spa for sale on historic St Austell estate A luxury hotel and spa, set in 43 acres of beautiful parkland and woodland in St Austell, Cornwall — and which also has planning permission for 36 holiday lodges — has been brought to the market by Christie + Co.

The Cornwall Hotel & Spa is set on the Cornwall Estate which has its origins in the Anglo-Saxon period. In the early 19th century the estate was acquired by the Coode family and the striking house which is now the Cornwall Hotel was built for the successful St Austell banker in 1834.

Lodges

Within the grounds are also 22 detached, two-storey lodges, and a refurbished Edwardian cottage. While the freehold to all the lodges and the Edwardian cottage have been sold, the hotel provides a lettings management service to lodge owners, which provides a significant revenue stream to the hotel. Twenty of the 23 owners currently rent their homes through the hotel. The hotel also manages the estate and collects the lodge share of the maintenance through a service charge.

Today, the Cornwall Hotel provides luxury 4-Star accommodation across 65 guest bedrooms — nine of which are situated in the imposing Grade II listed Manor House, with 56 located in the adjoining Woodland Rooms that was constructed in 2008 & 2009 and is seamlessly connected to the Manor House, effortlessly blending the old and the new. Accommodation is in a contemporary style with minimalist, modern elegance, with south-facing private balconies providing views over the estate’s sweeping parkland. In addition to the guest rooms, the hotel has an AA Rosetteendorsed fine dining restaurant called Arboretum and brasserie restaurants, along with bars and terraced areas — again, with views over the estate. The Leisure Club and Spa The original stable block, located a short distance from the main hotel, has been converted and developed to provide a luxury spa with an indoor swimming pool, sauna, aroma steam room, whirlpool, gymnasium and five treatment rooms providing a variety of health, beauty and relaxation treatments.

Furthermore, planning permission exists for an additional 36 holiday lodges. Matthew Smith of Christie + Co in Exeter is handling the sale of The Cornwall Hotel & Spa.
