Brooklyn Brewery joins Carlsberg UK’s House of Beers Leading US brewer Brooklyn Brewery is moving its UK distribution to Carlsberg UK from the start of 2017, after 15 years with James Clay. Brooklyn’s well-respected portfolio includes renowned beers such as its Brooklyn Lager, the modern classic Sorachi Ace, and seasonals such as its Summer Ale, and its range will become part of Carlsberg’s recently launched House of Beers division, joining a small number of premium brands including Sweden’s Backyard Brewery, Belgium’s Grimbergen and Herefordshire’s Bad Apple cider. The House of Beers is designed to provide specialist support to premium, independent free trade outlets in major cities throughout the UK. Carlsberg already distributes Brooklyn Brewery’s beers in over a dozen European markets, and the pair have opened two microbreweries in the last couple of years, New Carnegie in Sweden, and Dahls in Norway. ‘We would like to thank everyone at James Clay for the great work they have done to build Brooklyn to this point in the UK’, said Eric Ottaway, the brewery’s CEO. ‘After recently moving into a new facility in the North of England and acquiring the wholesale arm of London-based beer distributor Utobeer, this transfer allows us the resources to invest and support expansion from our existing and potential new brewery partners from across the world,’ said James Clay. www.wearecarlsberg.co.uk

Britain’s pub scene is thriving but transforming Around 1,000 pubs make their debut in the 2017 CAMRA Good Pub Guide, published this week, alongside over 1550 breweries, an increase of over 200 since last year.

Edited by renowned beer journalist Roger Protz, the guide is seen by many as a barometer of the health of the pub industry. Despite pub closures still making the headlines, Protz is upbeat about today’s scene. ‘We’re not drinking more but we are drinking better,’ Protz told Imbibe, ‘It’s very sad that 21 pubs are closing a week, but there are wonderful new pubs opening,’ he said, albeit in more unusual settings, from disused railway arches to former pharmacies. The rise of the micropub has been well documented, but larger formats are succeeding too, according to Protz, citing The Parcel Yard at Kings’ Cross St Pancras, now one of owner Fuller’s most profitable sites. The Good Beer Guide includes 4500 pubs each year, with an annual turnover of roughly a quarter. All pubs are nominated and further checked by CAMRA’s branch network. ‘I think [this turnover] is a good thing,’ said Protz. ‘Consumers are looking for the very best thing,

and CAMRA members are too.’ Food quality is a factor which continues to improve. ‘When the Good Beer Guide started, we never spoke about food. It was a cheese sandwich and a packet of crisps,’ said Protz. ‘At a time when budgets are tight, you get such good value in a pub.’ The number with beer lists and promoting food and beer matching is growing too, a feature that Protz would like to encourage. The region with the highest percentage of new pubs in the guide is Central Southern, which includes Berkshire, Buckinghamshire and Oxfordshire. ‘There are some very active CAMRA branches there,’ Protz told me, singling out Aylesbury, where a striking amount of pubs had applied for and won Asset of Community Value status. The region with the least turnover is the West Midlands. ‘Birmingham is stuffed with some of the most amazing drinking establishments,’ said Protz, mentioning The Bartons Arms. Resurrected by Oakham Ales in the noughties, it boasts breathtaking Victorian interiors, tasty Thai food and a guest rollcall which includes Laurel and Hardy and Charlie Chaplin.

Whisky Exchange identifies key drinks trends for 2017 The Whisky Exchange team dusted off its crystal ball at its Covent Garden shop last night to make some drinks trade trend predictions for the coming year. The first, from head buyer Dawn Davies MW, was about the rise of tonic water, and not necessarily mixed with gin either. Davies listed various alternatives that she’s encountered, from sherry, madeira or port, to peated whisky or even rum. Whisky Exchange co-founder Sukhinder Singh described a trend he called ‘Age ain’t nothing but a number.’ This wasn’t necessarily about no-age-statement whiskies, but more about a rise in younger scotch whisky releases, such as the recently-launched Lagavulin 8yo.

Japan is likely to be Taiwan. Specifically, Kavalan is the distillery to watch, as it rapidly increases production and experiments with a number of barrel types. In addition, Taiwan’s climate means its whiskies reach maturity faster, even if their angel’s share is quite significant.

Other trends identified by the team included Iceland (with a tip to keep an eye on Icelandic Mountain Vodka, on its way to the UK), as well as an overall move away from sugar, as evidenced by the rise in zero-dosage sparkling wines from outside Champagne. And finally, Davies’ Christmas product of the year? The exceptionally on-trend Mr Black coffee liqueur, made with cold press coffee.

‘Who needs Europe if we can make it here’ was the question posed by another trend discussed by Davies. In light of post-referendum exchange rates, she pointed out the advantage that local products currently have, provided they don’t raise their prices in line with their European counterparts. Davies singled out English eauxde-vie, pastis, various whiskies and a brandy. According to Singh, the whisky category’s next Calls to Sky cost 7p per minute plus your provider’s access charge.

Molson Coors launches

Brew+Press Beer & Cider Collective Brew+Press, the Molson Coors collective of beer sommeliers, seasoned bartenders and marketing pros charged with bringing Molson’s premium brands to life, made its debut on Tuesday this week in lively fashion in London’s Shoreditch. The event showcased experiences such as Beer Confessionals and Flavour Pong, created to engage customers’ interest, alongside food matches curated by beer sommelier Ed Hughes, and a cider cocktail bar hosted by new team member, Drinksmith’s James York Pryce. Molson Coors’ acquisition of breweries and cideries such as Sharp’s and Rekorderlig had shown the power of teams with ‘a real passion and talent for talking to the consumer’, Martyn Cozens, UK independent on-premise sales director told Imbibe. Initially targeting London, the plan is to roll Brew+Press out to major cities around the UK over the next two to three years.

sessions. ‘Food matching is one of the reasons for the group’s creation,’ said Martin Coyle, Molson Coors’ UK marketing director. While Molson Coors itself already has five qualified beer sommeliers on staff, Hughes is ambitious. ‘I want the whole team to gain the qualification,’ he said. ‘Beer is subjective, just as music is,’ said Coyle, explaining the approach taken with some of the experiences on offer, designed both to challenge preconceptions as well as to engage consumers. One such activity on show was Flavour Pong, a variant on Sharp’s Beer Pong game. Styles of beer come under scrutiny, rather than specific beers, explained Brew+Press’ Alan Carroll. ‘It’s about bringing the fun back into beer,’ said Carroll, as he described opportunities for host outlets to follow up the games with an offer of a free half-pint of the contestant’s favourite beer, or to head into food matching territory.

Sharp’s and Rekorderlig sit at the heart of the beer and cider collective, along with producers such as Staropramen, Blue Moon and Franciscan Well, with the prospect of other ‘craft’ brands being added as and when further breweries or cideries are acquired. ‘We want to bring the brands to life. We want to be giving consumers something a bit different,’ said Meanwhile, over at the the Brew+Press bar, Pryce rustled Cozens. up a number of Rekorderlig cocktails, highlighting the opportunities to upsell cider while recognising that simple Expect more opportunities for meet-the-brewer sessions serves are as valid as complex creations. ‘These [recipes]are for staff and consumers, plus more food matching training just stepping stones,’ he said.

Diageo releases World Class: Future of Cocktails report It also reports on performance art and provocative theatre – triggering reactions from customers – and the next generation menu – revealing how innovative bartenders are now going against the traditions of the trade and thinking of creative ways to navigate menus and name cocktails.

Diageo wants the world to drink better. To this end, it unveiled the World Class: Future of Cocktails report yesterday at the World Class Bartender of the Year Global Final competition in Miami. The report explores the future trends of cocktails, from controversy cocktails to drinks with feelings. The report shows how cocktail culture is booming and shows no signs of stopping – with forecasts that by 2020 there will be 400m new consumers drinking luxury spirits. Ask anyone in the know what the two leading cities for cocktails are, and they’ll probably say London and New York. The report shows, however, that the industry is growing on a global scale. Consumption of spirits has risen by 26% in Africa and the Middle East, 15% across Asia and 22% in China in the last five years. Partnering with future consultancy The Future Laboratory, the World Class report aims to reveal cocktail trends that are set to change and improve drinking experiences, as well as themes to look out for. The report is split into three sections, Controversy Cocktails, Emotional Cocktails and Fluid Identity Patrons – all with many different themes explored. The first, Controversy Cocktails, looks at the time people spend online, and how this supposedly makes us more opinionated than ever. The section explores how people are looking to brands to do the same things, revealing 40% of people want a more purposeful brand.

It uses the example of Operation Dagger in Singapore, where a cloud of light bulbs on the ceiling greets drinkers, and with an installation of fake CCTV cameras in the toilets. The second section, Emotional Cocktails, details how people now value experiences over possessions, with people looking for deeper connections to brands. Exploring the trend that bartenders have always been early adaptors when it comes to connecting with people, the report looks at how bar owners and drinks brands are now establishing more innovative ways to connect with customers. These include ‘cocktails with feelings’, where cocktails are listed by mood or emotion instead, ‘story in a glass’, where cocktails are used as a story to transport drinkers and the new trend, ‘the micro-friend’, where bartenders focus on building relationships with customers in the short time that they have with them. The final section, Fluid Identity Patrons, reveals that according to the UN, 232m people are living outside the country they were born in, revealing the trend that bar owners are now catering for drinkers who disregard conformity. The Future of Cocktails report also explores the subject of gender, revealing that bartenders are now using gender neutral language to name and serve cocktails, phasing out drinks being considered ‘manly’ or ‘girly’. It also reveals that more men are enjoying rosé, with more women ordering Old Fashioneds.

How the role of a bartender is evolving is also covered in the report, revealing how global competitions show how bartending now relies on a variety of intricate skills.

It also states that the next generation of bartenders are more willing to voice their opinions and are giving up on trying to please all of the people, all of the time. The section features an anecdote from Benjamin Padrón Novo, owner of Mexico’s Licoreria Limantour: ‘I always get customers asking me to sweeten the drinks we serve, even though by doing so it’ll dilute the taste of the spirit or the fruit. So, now, we just say no – and explain our reason to the guest. It’s all part of the education process.’ Calls to Sky cost 7p per minute plus your provider’s access charge.

Heritage and innovation combine at Wilton Carpets The Wiltshire town of Wilton has a carpet manufacturing history dating back over 300-years and at its heart now resides Wilton Carpets, renowned for the production of high-quality, wool-rich hospitality carpet right here in the UK. A modern success story of UK manufacturing, the company has just invested £1.5m in a high-speed, computer-controlled axminster loom (the first of three planned), ensuring it can continue to meet growing demand.

“It’s always great to work with Wilton, particularly in design work such as this, where the quick turn-around of concepts and interpretation of sketched ideas always hits the mark,” comments the design team at Mitchells & Butlers.

Sitting side-by-side narrow-gauge looms that have been weaving carpet for over 100-years and are still in use today, the highly efficient new loom is the embodiment of Wilton’s investment in innovation, the latter testament to its tradition and craft.

The Admiral Collingwood, Ilfracombe, part of the JD Wetherspoon empire, also saw Wilton Carpets deliver bespoke carpet over some 400m2.

It is this ability to respect the heritage of British carpet manufacturing while understanding the need for fast turnaround and faultless service on stock and bespoke carpets that sees carpets from Wilton used in a huge variety of bar, restaurant and public house locations. From small owner-managed venues right through to international leisure groups, the results are always the same; enduring carpet that is in perfect balance with the ambience of the interior. Take the recently completed Amber Tavern in Birmingham, marking a new direction for the Sizzling Pubs chain. Here, the design team at Mitchells & Butlers, mirrored the fabrics and textiles used throughout the interior in 500m2 of bespoke woven axminster throughout bar and dining areas.

8

This time, the design team at JD Wetherspoon began by supplying Wilton with pictures and colour combinations for inspiration and ideas of the direction in which they wanted the bespoke designs to head: “We wanted one of the carpets to mirror the magnificent skylight found directly above, an important part of this eccentric building’s design. Here Wilton envisaged a stunning seven-metre wide geometric circular creation, while for the second bespoke design, inspiration was taken from the countryside surroundings of Ilfracombe and the traditional hedgerow, with Wilton giving it a thoroughly modern reworking.” All carpets were specified in a nine-row wool-rich heavy contract axminster quality, suited to the busy bar and restaurant surroundings in which they are found. Made in Wiltshire, the 80% wool 20% nylon blend offers the ideal combination of durability and appearance retention in busy commercial environments.

Other recently completed works include the new grandstand at the famed Cheltenham Racecourse and country house hotels including Glasgow’s striking art deco inspired Boclair House, the 18th Century former mansion at Outlon Hall Hotel & Spa and Cumbria’s Inn on the Square. For UK-made hospitality carpets that have a proven track record in quality backed by a service that ensures many clients return year-after-year, there are few companies better versed than Wilton Carpets. The manufacturer is ready to bring beautiful and lasting carpet to your interior through a reassuring library of stock patterns, or the creative freedom of a bespoke design. BOHEMIANS & BON VIVANTS: BALANS SOHO SOCIETY CAFÉ ARRIVES IN SEVEN DIALS Too much of a good thing is a GOOD THING, which is why Balans Soho Society has expanded its family and opened a café in a brand new location - this time, bringing the spirit of Soho to the vibrant Seven Dials village near Covent Garden. Taking its lead from the Old Compton Street Café, the newest reprobate in the Balans Soho Society family will welcome those in the pursuit of pleasure for breakfast, brunch, lunch, supper (and everything in between) with a laid-back café-style approach. DIAL IT UP Not for the fainthearted, Balans Soho Society Café in Seven Dials is a place to indulge. Enjoy breakfast, lunch, dinner and after-dark activities in the company of fellow bon vivants. It’s a café, a bar, and definitely a place where rules are made to be broken. A place to go when you feel like doing things you probably shouldn’t. DEVOUR Escape the mundane everyday and fill your boots and your belly from Balans Soho Society’s extensive café style menu. Overseen by Executive Chef Crispin Chetwynd, a culinary superstar who has spent time touring the globe with the likes of Paul McCartney, Michael Jackson and Pink Floyd, the seasonallychanging dishes shine a light on the best local produce from the likes of Ginger Pig and H. Forman & Sons (the oldest smokehouse in London). It’s a café at heart, so breakfast is nonnegotiable. For both the bed-headed and those yet to reach the pillow, breakfast is served from 8.00am daily, offering a restorative feast. Favoured classics are brought to the fore Balans-style including: a breakfast burrito with spiced scrambled eggs in a toasted flour tortilla with sour cream and salsa fresca; the luxurious High Society Eggs Benedict with lobster, avocado and bacon; and the signature Eggs in Hell – two eggs poached in a tomato chilli sauce, Parmesan and

10

Balans potatoes. Or just roll in for a sausage or bacon sarnie (with or without a fried egg) on buttered sourdough bread – the perfect cure for the night before! As breakfast turns to brunch, then lunch, small plates, sandwiches and a well-appointed selection of classics feed any appetite. Light bites on petite plates include: Moroccan lamb and apricot meatballs; coconut shrimp with mango salsa; pulled duck taco with habanero sauce and crab croquettes with brown crab aioli. Quintessential Balans Soho Society is ever-present in the mains, from The Infamous Balans Burger to the coffeerubbed bavette with onion rings and chipotle tomatillo salsa.

The edgy and slightly risqué artwork and festooned lighting are a nod to all things theatrical, (there had to be some element of drama!), reflecting the area’s theatrical history. Also newly-introduced is the member keyholder card, which basically rewards you for being you, whether you’re good, bad or downright naughty. Bestowed benefits include birthday double points, access to exclusive cardholder-only events and unexpected gifts thrown in for good measure. So let curtains twitch and the outsiders come in. Balans Soho Society Café has arrived in Seven Dials!

Take a bite out of summer with ricotta and lemon ravioli with brown butter, peas and roast peppers; or black garlic roast chicken with shiitake mushrooms and broad beans. Indulgent desserts change daily and include freshly baked cakes like carrot, chocolate, coffee, red velvet and banoffee.

OPENINGTIMES: Monday – Wednesday 8am - 11pm

DRINK

32-34 Monmouth St, Seven Dials, London WC2H 9HA

With the Balans Soho Society name comes a decadent libation list to quench thirsty mouths (and easy lips) with must-have classics like the martini-style Porn Star (Tito’s vodka, vanilla, passion fruit and a Champagne shot) or step out of your comfort zone and try the Beeta-Rita (El Jimador tequila, lime and beetroot), Slap ‘n’ Tickle (Lemongrass infused Broker’s gin, elderflower, lemon) and Great Balls of Fire (Fireball cinnamon whisky, lemon, egg white). DÉCOR The facades and interior sprung to life from the vision of Simon Costin, who made his name creating outlandish fashion shows for Alexander McQueen and has since worked with Stella McCartney and Hermès. Updating the décor yet keeping it lovingly lived-in and a bit rough ‘round the edges, you’ll find tributes to Soho past in the detail.

Cafes Novell Coffee today is part of our culture and to be enjoyed on so many different occasions – whether it’s having a social chat, whilst at work, during a business meeting, when taking a rest, reading the morning paper, grabbing a cup whilst travelling and certainly to linger over when on holiday – whenever, a cup of coffee seems to suit the occasion. One thing is certain though – a bad cup of coffee makes for a bad occasion! Tasting is very personal and it’s an important decision to make as a restaurateur or coffee shop owner as to what you offer your clientele. It is also an opportunity to educate customers with the many varieties and varying quality of coffees now available in the UK. As more and more people become coffee enthusiasts, so restaurants are having to be more discerning about the coffee they offer to their clients to finish off their meal. Since 1958 Cafes Novell has been seducing the senses of millions of Spanish people with its continued pursuit of ‘The Perfect Cup’ of Espresso which is currently enjoyed by over 500,000 people daily around the world and increasing. In 2011 Cafes Novell embarked on a global expansion drive. The first choice for expansion was Italy where it opened in Milan and Rome. This may not be the first choice for a coffee company to embark on global expansion but with an exquisite product Novell were ready to take on the Italians on home turf! Since the continued success in Italy, Novell quickly followed with expansion into Hong Kong, China, USA, and more recently Novell opened its doors for business in the UK in April 2015 with their first clients, a Bakery chain in London. Now 16 months on and Cafes Novell UK now boasts over 100 clients in the UK including aquariums, visitor attractions, hotels, restaurants and many coffee shops along with a few football clubs for good measure! Earlier this year Novell launched its bio-degradable Nespresso compatible capsules initially focusing on the hotel sector enabling hotels to provide premium coffee in an ‘eco-friendly’ capsules, allowing Cafes Novell UK to be a complete hotel coffee provider from machines and beans through to capsules for bedrooms. In the last month Cafes Novell UK has launched its e-commerce site with the primary aim of targeting the home market for Nespresso compatible capsule. This site sits alongside www.cafesnovell.com where more information can be found about the company and its growth. Afternoon Tea

with a Twist Having sampled a huge selection of Afternoon Teas over the years, there really wasn’t much excitement as we made our way down Oxford Street to the Radisson Blue Edwardian Berkshire. Passing the hundreds of shoppers on our way to another unexciting selection of sandwiches and a couple of cakes, we joked about heading off to get a ‘proper lunch’ after.

We were asked to head up to the first floor, where we were welcomed by the large glass double doors and the happily enthusiastic staff of the Scoff & Banter Tea Room.

to a beautiful dining experience, with some cookery of very high standards. Firstly, the hot dishes. A great selection of meat, fish and vegetarian choices. The Spiced scallops and cauliflower beignets are perfectly cooked, light and bursting with the natural sea flavours. However, the real stand out for us was the Lamb Cutlet with a mint, lemon and Cyprus Parsley crust. A perfectly cooked piece of meat that left me nibbling at the bone to draw more of the juices out. A great start to the meal!

Having been seated we were talked through the menu, which gave us some real optimism for the afternoon. The menu is broken into four sections. These are Hot Dishes, Scones, Sandwiches and Desserts. You get to choose two from each section and of Turning at the iconic Disney store course can mix and match and share to the hotel entrance we managed between you. to break away from the hordes of Then the more traditional dishes came A fantastic idea that has really retail therapists and find our way out. How we provided a major supermarket brand with a bespoke sink solution for its UK in-store bakeries As a leading designer and manufacturer of stainless steel furniture and equipment for catering environments, Parry were recently enlisted to deliver a UK-wide bespoke project for a major supermarket chain.

The client was undergoing a rapid expansion and refurbishment programme, which involved fitting hundreds of stainless steel sinks within its in-store bakeries.

A BUILT FOR PURPOSE SOLUTION

FROM SPECIFICATION TO IN-HOUSE DESIGN

The sinks not only needed to be the right size for staff to wash their hands, but also large enough to wash and stack bakery trays, which meant a bespoke solution was required.

The units were designed by Parry’s in-house design specialists at its centre in Draycott, Derbyshire, which includes a CAD facility and is home to its R&D team, who work closely with its clients to develop and refine products until they’re exactly right for the required purpose.

Parry started by conducting a pre consultation with the client to develop a clear understanding of their requirements, identify any limitations and establish how the end product needed to perform, as well as helping with the specification process. From working closely with the client from the outset, Parry developed a product that ticked all of the right boxes – a stand alone sink featuring an integral splashback.

www.parry.co.uk

They selected Parry to manufacture the units for a number of reasons, including their extensive experience of providing customers with industry-leading solutions tailored to their individual requirements, and their specification and complete fabrication capabilities.

This particular design involved incorporating taps that were specified by the client and an integral splashback that stands at 400mm high, as opposed to the standard 50mm measurement.

Meticulously designed, durable stainless steel products

Backed by 40 years experience in commercial catering, Parry designs and manufactures stainless steel equipment and furniture.

Versatile new background music system creates just the right atmosphere – virtually anywhere A background music system delivered on a powerful tablet platform has been launched by music entertainment specialists NSM Music. The icon BGM is ideal for anywhere unattended background music is needed and, used strategically, creates instant atmosphere for pubs, hotels, restaurants, and larger retail centres, as well as being suitable for venues and themed events. The icon system is available on an 8 or 10-inch tablet operating on the Android system and it’s supplied with legally sourced music content, providing the user with access to more than 150,000 tracks. The management system enables users to set up their own playlists and audio line output enables connection to an amplifier or speakers. Users can create playlists quickly and intuitively and up to 3,000 tracks can be stored locally at any time. Touch and slide selection and multi-string selection (genre, decade, mood, etc.) and multi-zoning options make the icon ideal for pubs, clubs, restaurants and hotels, as well as the retail sector. “The icon is an innovative marketing tool for making sure customers and guests feel comfortable and ensuring the

26

right atmosphere is created for an event or environment,” says NSM Music’s Sales Manager Alex Kirby. “It also has the options for audio advertising. “Its amazing versatility means you can play jazz in the Jacuzzi, bhangra in the bar and something soothing in the quieter areas – all at the same time,” adds Alex. “In fact it can play up to five playlists at the same time. “By creating MP3 audio adverts on a PC and then linking the tablet to the PC for download, users can then specify how often they want adverts to play,” explains Alex. “The BGM will play a loop of adverts, like a radio station does, say every 30 minutes or whatever time interval is set.” The icon can be purchased with or without an additional kit that comprises a wall bracket, blue tooth adapter and leads. November 2016

British furniture designer Ercol, has been producing quality furniture for 95 years, and for 2017 will bring products that are synonymous with quality and offering timeless, pared down design combined with excellent functionality. Said Ercol md, Nick Garratt: “The key industry theme moving into next year will be the weakness of sterling and increased factory input prices putting pressure on margins. This is likely to feed through to selling prices. “Ercol will be stepping up the rate of new design and new product introduction and we are working on a range of new themes for next year.” According to Britain’s largest upholstery manufacturer, Buoyant, one of the biggest changes in the industry is consumer demands.

JANUARY FURNITURE SHOW ACCOMMODATES THE BEST OF THE BEST

If you want to see the best of the best in furniture and furnishings, then the January Furniture Show is the place to be. Continuing support for the show comes from right across the furnishings industry, which prompted organisers to expand stand space across the five halls for 2017. So far, there are over 300 confirmed exhibitors

28

The company says consumers’ have massively increased expectations of better value for money, shorter lead times and more choice. Accommodating these demands, Buoyant will be showcasing its innovative designs at the show in a multitude of sizes and shapes alongside storage, beds and motion. Its fabric offer has become increasingly complex. As the Parker Knoll brand continues to grow, it remains committed to designing and developing collections in line with the changing market place and latest trends – whilst providing the ultimate in comfort. Pub Blocks Social Media for More Social Atmosphere

EAT. DRINK. SLEEP

These days many people seem to be on their phones 24/7, even when they are out and about everybody seems to have this fatal attraction to staring at their small screens whenever they can. Verbal conversation is at the brink of decline and it seems that nobody is caring about it. But one bar called “The Gin Tub” in Brighton is bringing socialising back to the old days. They have declared that mobile phones are killing pubs due to customers always being on them whilst inside the venue and not participating in the atmosphere of the place, and so they have come up with a solution – a mobile phone signal blocker.

November 2016

The Gin Tub has included an additional feature to the roof of their property, a mobile phone signal blocker that disables customers receiving 3G and 4G signals. But they have placed old style phones with rotary dials at each table that can connect to other tables or to the bar for ordering a round of drinks. The Gin Tub is speculated to be the only one bar that has a mobile phone signal blocker attached to the venue ceiling in England, and within its first few weeks of business, it has received a great amount of reviews on how

well it gets customers to socialise without the use of mobile phones. For those who have companions who are stuck to their mobile phones, then this may be a great place to bring them and truly interact in a social way without media. Whilst The Gin Tub has installed a mmobile phone signal blocker, they have allowed rotary phones on each table to order at the bar. Whilst The Gin Tub has installed a mobile phone signal blocker, they have allowed rotary phones on each table to order at the bar. The Gin Tub is the only bar which has a mobile phone signal blocker, but maybe not for long. Other bars and pubs are now starting to look into having signal blockers on their roofs to get people socialising in the old fashion way. So maybe verbal conversation is not as near to a decline as we thought.

It’s All About the Figures….. It was during the swinging 60’s when our rebellious founder, Brian Murphy, established Europa International - with the back room of his Camberwell digs doubling up as a warehouse for the limited-stock then on offer. Since then, the family run company has held onto its fun-loving, customer service driven roots… but little else remains the same. Here, we’ll use a dollop of creativity (and perhaps a sprinkle of fantasy) to help bring you up to speed with where we find ourselves today. Imagine you’re meandering along the M1 when, out of the corner of your eye, you spot a long row of bar stools. 10,323 to be precise, and they’re conga dancing up the motorway. You pull over, take a sip of water, and scold yourself for working too darn hard on all those events over the last year, before heading to the nearest service station for some much needed rest and a strategic caffeine boost.

We’ve sent enough bar tables out to reach the top of Mont Blanc, and so many display racks that they could house every single book available in your average central library... Even the really big boring ones.

OK, so the bar stools weren’t quite strutting their stuff up the motorway, but we all know that stranger things have happened in this industry - and the point we’re trying to make is that we have enough said bar stools for a game of leapfrog all the way from London to Glasgow.

Simply put, over the last 12 months the Europa International team has been busily preparing for events across the UK, from concerts to conferences and intimate seminars to sensational soirees. During that time we have delivered in excess of 1,250,000 items of furniture, carpet and panels to more than 4000 ‘happenings’.

And whilst the figures alone can be boring, can you imagine seeing Big Ben clad in graphics which look like they belong on conference Shells, poster boards, showcases or cupboards, ‘cos we’ve produced plenty!

We’ve travelled more than 208-thousand miles and could shrink wrap the Shard with the number of rolls we have used on our glass and cabinets. And although we look after all of our much loved furniture which is

also treated to a pamper session from time to time (aka, a good old rub down) we also regularly replenish our stock to keep it looking top-notch. That means that of the 10.6 tonnes of waste that we had to wave goodbye to in the last year we were able to recycle a pretty impressive 74.3%! 2017 is already looking set to be equally busy, and all because our customers love to feel all #HireHappy.

What can your menu do? This was the question asked by NextMenu throughout their launch at Restaurant Tech Live. Indeed looking at traditional paper menus in use today the answer would seem to be “not much”.

“unstoppable wave of change” There were quite a few companies at the show promoting the various benefits of smart menus and it appears this trend is really happening. Despite the reluctance of restaurant managers to digitize, the first unstoppable wave of change is already under way. McDonalds have been rolling out their self-service order kiosks “almost everywhere in the UK and this goes a long way in educating both diners and other restaurants. It is only a matter of time until we will demand such digital interfaces it in more up-market eateries as well.

“turbo-charger for busy city restaurants” So what can these fancy menus do? We have seen instant editing, instant language switching, mouth-watering photos, full search and filtering capabilities and even videos of the cooking and preparation process. This already trumps any paper menu, but the ambitious ones go a lot further by integrating it with the kitchen and bar for instant order processing. This is definitely a turbo-charger for busy city restaurants.

“number one smart-menu solution of 2016”

NextMenu went all the way with their vision of the connected restaurant by integrating smart-watches worn by waiters who can now be buzzed from the menu or automatically called to the kitchen when an order has been prepared. They also added advanced feedback functions directly into the menu, helping restaurants improve service. This complete solution approach helped them climb to the finals of the Innovation Awards, making NextMenu the number one smart-menu solution of 2016.

“essential to remain competitive” Speaking to their co-founder, Tibor Barna, we asked when such solutions would become mainstream: “Five years from now almost everyone will be using digital menus or kiosks.” He commented further on their new kiosk solution: “This allows the smallest take-away or coffee shop to leverage the same technology as McDonalds, without the multi-million pound investment”. From what we saw at the show, we are convinced that smart-menus will soon become essential to remain competitive for any busy restaurant. Five years from now, we will be amazed at how much more menus can do.

FINALIST 2016

NextMenu puts your menu on a tablet and brings it to life with videos, photos and dynamic recommendations. It connects the diners directly with the kitchen and bar for instant orders and notifies waiters on smartwatches when the orders are ready or when they are called to a table. NextMenu helps you: • Capture every up-sell opportunity. 30% up-sell of drinks, starters and desserts • Serve more customers, more easily. 17% rush hour revenue increase from faster table turns Tablet menus for table service venues, kiosk solution for take-aways and pubs. Booking Software

Sleep? We’d rather be booking a hotel online...… Would you rather sleep or do some online booking? It’s an easy answer for one in three Brits – they use their smartphone even in the middle of the night, according to a new report. With device-dependency at that kind of level, it’s not surprising that the hotel industry is moving fast to give mobile-minded guests everything they need to achieve their perfect hotel experience – from booking online to the final payment. More than half of hotels told a recent survey that they are spending more on technology in 2016. Travel industry analyst Henry Harteveldt – who used to work for Forrester – says: “Mobile has produced a permanent sense of immediacy. It’s changing forever how our guests interact with us and how they expect us to interact with them.” Even if it’s in the middle of the night… This trend towards online booking has been hastened by the arrival of the millennial generation in the hotel market.

54

They’re the generation most likely to select their hotels using Hotels.com, Expedia or Booking.com. They don’t think of these channels as online travel agents – they refer to them as web-booking, and told the survey the ease of booking online is crucial to them. Add these travel-hungry newcomers to older generations who have also embraced online booking, and it’s easy to see why the hotels that are succeeding are the ones that embrace booking software in all its cutting-edge glory. And that’s true whether your hotel or group lies at the full-service end of the spectrum, or sits on the economy side.

“Whether hotels are luxe or budget they still have a world in common – filling rooms with the right guests at the right time and the right price – and booking software is helping to provide a great answer. “For the full-service hotels, the guest experience is paramount – it’s what sets them apart from their competitors, encourages loyalty and enables commission-free repeat bookings that maximise yield. Creating effortlessly convenient booking is paramount for this customer. “Along in economy class, the emphasis is on creating easy accessibility, so guests can book quickly via a mobile device; see it, book it, sorted… “Fortunately, hotel property management systems (PMS) are developing fast to keep in step with these changing needs in the industry.” A PMS will automatically synchronise rates and push out availability across all the online travel agents to your potential guests, who are all out there searching for accommodation on their smartphones or laptops. “It provides a direct connection to online travel agents such as booking. com and Expedia via seamless integration with leading channel management services so you can offer bookings 24/7, 365 days a year,” said Luis.

How booking software works for Mansley Serviced Apartments Mansley Group Holdings owns and operates serviced apartments under the ‘by Mansley Serviced Apartments’ brand in London’s Mayfair and Kensington, Edinburgh and Inverness. It also owns Serviced Apartments Worldwide who act as a global aggregator to the wholesale travel market for more than 500 serviced apartments. Implementing a powerful property management system across all its properties has created significant savings and efficiencies for the Group. Mansley Group Holdings, a privatelyowned business and a customer of NFS Technology Group software, offers a portfolio of around 100 different apartments ranging from studios to four-bedroom apartments, designed both for the corporate and leisure traveller and available for short and long-term stays. Under the brand Serviced Apartments Worldwide, based in Singapore, the group acts as an aggregator to the wholesale travel industry.

“Technology such as booking software is no longer a luxury in the hotel business - it’s as necessary as clean sheets if you want to attract and retain guests.”

It employs the latest technology in the sector to deliver up-to-date pricing and availability for over 500 serviced apartment blocks worldwide with particular emphasis on Europe, Asia and the USA. Mansley Serviced Apartments implemented NFS Technology’s roomMaster PMS system group-wide to manage its four properties and connect the database to both channel management/ online bookings as well as their own aggregator site (SAW).

* Luis De Souza is CEO of NFS Technology Group, a leading international provider of hospitality software – www.nfs-hospitality.com

Deploying the system and its booking software has led to standardised reporting, and increased efficiencies in Mansley’s business processes, because all bookings that come via their own website, online travel agents and their own aggregator site are now instantly integrated in the system.

“Those online bookings are then imported without manual intervention from the hotel – a timesaving benefit whether you are luxe or economy.” It’s a service he believes hotel guests now demand – and he expects their appetite for online booking to continue to grow. “It’s a trend hotels ignore at their peril,” he said.

In addition, the roomMaster property management system was set up to maximise the yield per apartment, and this has resulted in higher ADRs for the company. Colin Stone, Group General Manager of Mansley Serviced Apartments, says: “We’ve been delighted with the performance of the PMS system across our properties.”

Booking Software

Avenista Table Reservations also provide all-inclusive access to their incredible support team (awards surely coming sometime soon!) who can implement booking strategies and take care of all of the administrative duties involved in managing the software too. It’s no surprise that Avenista® customers tend to be busy, extremely well-run restaurants who are always looking for that extra bit of efficiency and want it without hefty prices attached. Unlike so many booking systems Avenista® do not operate a Diner portal and so will never attempt to sell tables from competitor restaurants or gazump a restaurant’s Google ranking.

Never heard of Avenista®? Well, perhaps you can be forgiven. With the stampede towards basic, web-based booking systems in recent years many restaurateurs completely overlooked this unassuming UK company, attracted instead by the fanfares of the big booking operators. But one size does not fit all and having experienced high running costs or poor service delivery many restaurateurs are now looking elsewhere and finding Avenista has intelligent, super-easy software with everything they need and more for often a fraction of the cost. With more than 10 years’ experience delivering Table Reservation software the team at Avenista® know what makes busy restaurants tick and have continuously honed and polished their software to make running a Front of House effortless. These days millions of diners are seated each year using Avenista® systems. Oddly perhaps, at Avenista® their mission is for their customers to spend the minimum time possible using the booking software, yet still have the software do exactly what the customer needs, enabling them to spend more time in their restaurants on activities where they can really add value. To achieve this they worked on making Avenista® intelligent and efficient without taking away any of the features that allow restaurants to deliver really personal service to their Diners. And, so keen are they to deliver on the mission they

As Kerry Beswick (Managing Director of Avenista®) says – “We have absolutely no relationship with Diners at all. Everything we do is focused on the restaurateur. We are all about providing the absolute best tools and services for our customers to help them make the best restaurants.” With an impressive client roster, awesome features (including a new online payment feature for events and deposits – saving restaurants huge amounts of time, and reducing no-shows), and pricing lower than anything comparable, many restaurateurs are now getting the message and switching to Avenista® saving themselves time, money and headaches.

Mobile Friendly/App Friendly Bookings Marketing & Promotion Tracking Extensive Pre-Payment Features Intelligent Diary With Class-Leading Flexibility Table Management Walk-Ins and Waitlisting SMS Paging FREE Online Bookings Avenista is the must-have tool for busy restaurants still struggling with pen and paper and is also the solution most favoured by restaurants needing an alternative when existing providers prove slow, expensive or ineffective. You built a great restaurant by insisting on quality, attention to detail and customer service. Now choose Avenista to ensure you get the same from your reservations partner.

Choosing the right coffee supplier customer service and responsiveness to communications, delivery times and added value to the customer – do they go above and beyond to help e.g. training. Buying locally is of course important these days, a local provider cares about local reputation so is likely to be more reliable BUT only choose them if they are the right fit and their product is great. Learn about the coffee being offered to make the most of the free time being given to you by the supplier. Do you like them? Having a good relationship with your supplier is fundamental, so get a feel for their business style and personality. If you like them and they are courteous and helpful, then chances are you will have a good relationship. Find common ground (kids, sport etc) and make sure they like you too.

More than just coffee

Quality first is key, but choosing a reliable supplier that can respond quickly is also hugely important. Choose a supplier with knowledge and passion. The right supplier will really know their beans. A deep understanding of coffee and a passion for the product is something that you can trust. You will then be able to learn from them and then pass that on to your customers. Your supplier should be able to tell you where the beans are from, how to get the best from them and explain the aromas and flavours to help you sell more effectively.

Try before you buy. You drink coffee too and your business instincts matter, so trust your palate and that of your staff. Get sample packs and ask for a tasting session. Make the coffee yourself in your own machines to get a real sense of what your customer will be drinking. A good supplier will bend over backwards to come and see you and discuss their product with you.

Do your homework Once you’ve found a potential supplier ask them who else they supply and if you can get references. This may seem a bit much for buying coffee, but one phone call could save you a lot of fuss later down the line. Ask other customers about the consistency of the product,

60

The main event is the product but there is no harm in finding out if there are other things provided. Can they beat the prices for any other product, machine servicing, teas and chocolates, syrups and free training etc Is there point of sale products?

DO…. • • • • • • •

Try the product first with your staff and friends Ask the supplier’s other customers about the service provided Make sure you trust and like them Make sure they are passionate and knowledgeable about their product Ask what else they can do to help your business Keep focused on what you need and don’t be charmed into things you don’t need To really make sure all of these boxes are checked, come and talk to Hessian Coffee.

In September, intelligentpos, the leading cloud based point of sale solution for shops, bars and restaurants in the UK, announced it had been acquired by iZettle. The acquisition sees the two disruptive tech companies joining forces resulting in a ‘onestop-shop’ for commerce in store and on the go. Together iZettle and intelligentpos provide an integrated payment and point of sale solution that allows small businesses to take card and contactless payments and use hundreds of different features on the point of sale app to help them manage and grow their businesses. For fast growing businesses already using iZettle’s payment systems, intelligentpos offers advanced point of sales features including; table management, which gives restaurants a bird’s eye view of their tables and helps them provide a higher level of service; stock management, which helps merchants make sure they never run out of their customers’ favourite products; and advance reporting that helps users make informed decisions about their business. Tom Allerton, Finance Director at The Mae Deli (Deliciously Ella’s cafe) said: “We use iZettle and intelligentpos at our deli in central London. We needed an integrated system that was able to scale with our business. Using intelligentpos and iZettle we are able to easily monitor tables, stock, staff and take payments within one app, it’s these added tools that help us sell smarter.”

62

Jacob de Geer, CEO and co-founder at iZettle says: “Five years ago, iZettle set out to empower small business owners with tools to help them accept card payments in an easy way - tools which were typically reserved for larger businesses. “One year ago, iZettle broke new ground by offering small businesses hassle-free access to financing with iZettle Advance. Today, via the acquisition of the talented team and great product at intelligentpos, iZettle takes yet another step towards its mission of providing small businesses with a wide range of services and features that are critical to helping them grow and build their empires.” Robin Knox, CPO and Paul Walton, CTO, co-founded intelligentpos in 2013. Robin comments: “As businesses increasingly are looking for a unified point of sale and payments experience this is a natural next step for us and for the market. Moreover, iZettle have the same ethos and values as us and we’re thrilled to be joining the team and develop future products that help small businesses thrive.”
