restaurant news Warm weather gives restaurants and pubs a business boost Restaurant and pub groups saw a boost in business in September, thanks partly to the unexpectedly warm weather. Monthly like-for-like sales were up 2.2% on the same month last year, according to latest Coffer Peach Business Tracker data. The figures also showed it was the sector’s 18th consecutive month of positive growth. “Pubs in London and restaurants outside the M25 were the strongest performers – with likefor-likes up 4% and 4.8% respectively. September’s warmer weather was a welcome bonus after a colder than average August had seen like-for-likes up a more modest 1.3% across the market,” said Peter Martin, vice-president of CGA Peach, the business insight consultancy that produces the Tracker, in partnership with Coffer Group, Baker Tilly and UBS. Total sales, which reflect the effects of new site openings, were up 5.2% on September 2014. Although the better than expected late summer weather helped the market, the figures revealed steady, consistent growth in eating and drinking out, stretching back 18 months. "Looking at the underlying trend, the 28 companies in the tracker sample together recorded year-on-year sales for the 12 months to the end of September 2.7% up on 2013,” said Martin. Brits are also continuing to eat out more, with the Peach BrandTrack consumer survey showing that 42%

of adults eat out at least weekly. This is even higher, at 58%, in the 25-34 yearold bracket.

Thief banned from every pub, restaurant and hotel in London

The data shows that the weakest part of the market remains drink-led bars and pubs outside of London, with like-for-like sales flat in September. However, branded casual dining chains emerge as a significant driver of growth outside of London.

A persistent thief has been banned from every pub, bar, restaurant and hotel in London for 25 years.

“Total sales for the restaurant groups in the sample grew 11.6% outside the M25, buoyed by continuing brand roll-outs,” said Martin. “Like-for-like performance is also improving as chains revamp existing sites and are more willing to shed poorer sites.”

He was also jailed for four years.

The figures are a further demonstration of strength in the eating and drinking out sector and reflect both the improving economy and the gradual habitual change to drink and dine out more often. Paul Newman, head of leisure and hospitality at Baker Tilly, predicted: “The continuation of such positive like-for-like sales growth will do nothing to quell the current private equity feeding frenzy in the restaurant and bar sector and provides further impetus for those brands that are expected to consider exit options over the coming months." The Coffer Peach Tracker industry sales monitor for the UK pub and restaurant sector collects and analyses monthly performance data from 28 operating groups, and is recognised as the established industry benchmark.

The ban bars Rodney Williams, 34, from some 35,000 businesses that serve alcohol across the capital. It is thought to be the first time a court has banned a criminal from entering all of Greater London's licensed premises. Williams received the ASBO after he admitted 12 counts of theft and one count of theft by finding at Snaresbrook Crown Court.

Williams was arrested in April on suspicion of stealing a handbag from a licensed premises in Hoxton in east London. He was then charged with a string of copycat offences, all carried out across the area, according to the Daily Mirror.

Paleo and gluten-free restaurant to open in London The UK’s first gluten-free and paleo restaurant Pure Taste will open in West London after securing the site of the former El Pirata Deptapas on Westbourne Grove. Nutritional therapist and chef Holly Redman launched the Pure Taste concept as a monthly pop-up in Sussex, and has been searching for a permanent site since hitting her £30,000 Kickstarter target last December. After narrowly missing out on a Portman Estate property near Marble Arch earlier this year, Redman managed to secure the site at 115 Westbourne Grove in a deal negotiated by restaurant property specialists Davis Coffer Lyons. “I did the pop-up in Haywards Heath because it was local,” she told BigHospitality. “But I wanted to open the permanent site in London because what I am doing is very niche, and I wanted it to be as accessible to as many people as possible.”

So called ‘frat cups’ form part of a new £500,000 on-trade campaign for US cinnamon spirit Fireball, aimed at university students. The cups are a branded 50ml version of the plastic red beakers that have become synonymous with raucous US college parties. They will be given out as part of Fireball Freebie Fridays, in which Fireball merchandise will be distributed in university and town centre bars around the UK during this freshers’ season. A competition will also offer the chance for one lucky fresher to win the holiday of a lifetime in Mexico.

Local company Mobile Bar Hire Ltd played a key part at last nights UK launch party for the much awaited NBA 2K15 video game. The launch party, held at Nike’s ‘The Regal’ basketball court in Lambeth, was attended by basketball fans, gamers and celebrities along with many sporting and gaming reporters. Attended by approximately 200 people, the event allowed guests to play the latest basketball game available on Sony’s Play Station 4. The NBA 2K15 evening comprised of a live basketball competition, prizes, demo’s and great give aways. The launch was done in true NBA style, with a basketball demo, cheerleaders and beatboxer – there was lots to keep people interested in this great new game.

Technology could help attract youth into industry, says Hotel Inspector Alex Polizzi Giving the opening keynote speech at the Annual Hotel Conference 2014, Alex Polizzi, who presents the TV show Hotel Inspector, explained that though technology has a role to play in today’s hotel sector, nothing can replace human interaction in customer service. Admitting she personally preferred traditional ways of providing hospitality, Polizzi pointed out that technological advances could potentially help attract young people into the industry, after calling recruitment, training and retention ‘the greatest challenge’. “In the best case scenario, some of this new technology will make the hospitality industry more attractive to new recruits, who still dread the long hours, low wages and often antisocial shifts that bedevil our reputation. “But as I see it, that very human need of conversation, face to face or at least voice to voice, shows that whatever the advances we make in terms of innovation, our real challenge is to go on in investing in our staff and training them properly, as technology hasn’t made us and our traditional skills obsolete quite yet,” she said. She explained that no one can ignore the way technology is changing the industry, and that all businesses need to change to remain relevant, but that replacing front desks with check-in machines for example made the customer experience more impersonal. “I am glad that checking in and checking out are simplified, but I have never found a good substitute for a smile.” Remembering staying at three of London’s ‘swankiest’ hotels and not being able to work out the lighting system at any of them, she also admitted to ‘loathing’ the prospect of iris recognition, and called access to bedrooms through mobiles apps ‘a threat’.

Soho House development planned for Brighton seafront Plans have been submitted for a Soho House development on Brighton seafront, incorporating Dirty Burger, Chicken Shop and Pizza East restaurants and a private members club. The 1296 sq m development is proposed for 6-8 The Terraces on Madeira Drive, a site which sits opposite Brighton’s The application, submitted by Michaelis Boyd Associates, outlines plans to repair and redecorate the 1920s pavilion and create three different restaurants at terrace level, with an outdoor dining area. The private Soho House members club will be located

on the roof, with a newly created sun deck, one metre deep plunge pool, seating area, outdoor bar and as yet unnamed fish restaurant. The application is currently being considered by Brighton & Hove Council, with a decision expected by 26 November 2014.

Village Urban resorts to open first Scottish hotel Village Urban Resorts will open its first Scottish hotel in Aberdeen this December following a £21m investment. The 148 bedroom hotel, located 6 miles from Aberdeen airport, is one of three Village properties to open in Scotland over the next two years. The next will open in Edinburgh in January 2015, followed by Glasgow in summer 2015. The Village Urban Hotels will feature the distinctive ‘Black Box’ design, and provide free Wi-Fi, flat screen televisions and modern furnishings in all rooms. The Aberdeen hotel will feature 46 luxury UpperDeck rooms with Sealy Sweet Dreams beds, Bose speaker docks, Starbucks products and Sky Movies & Sports package. The onsite the Velocity Health and Fitness Club will include a state-of-the-art gym,a 20m swimming pool and a Viva Urban Spa offering ESPA beauty and relaxation treatments.

This year they are working on some top secret restaurants, hotels and retail projects as well as spreading their wings to Morocco for a boutique hotel in Chefchaouen. Last year KAI were awarded with Best standalone bar or club design for Birmingham based Lost & Found project which led on to even more success with this years Hoxley and Porter also being Shortlisted for Best London Restaurant from the Casual Dining Awards and Restaurant & Bar Design Awards. KAI are a young, enthusiastic and determined team of creatives who continuously strive to produce interesting and innovative interiors, the company is expanding and looks forward to the next exciting project to get their teeth into!

Access to finance just got easier for hospitality sector After some challenging years for the sector, it’s heartening to see a positive upturn and one which has conveniently coincided with easier access to business funding so hospitality operators can make the most of the opportunity. Although the banks haven’t loosened their purse strings for operators, the alternative funding sector has grown 250% in the last 12 months. The upshot is that a wide choice of non-bank lenders have emerged as credible and increasingly recognised routes for business funding, moving from the fringes to sit centre stage with traditional lenders.

Collingwood Lighting Helps Enhance Luxury Features At Carbis Bay Hotel & Spa Illuminating areas both inside and out at the Carbis Bay Hotel & Spa in St. Ives, Cornwall, Collingwood Lighting has supplied a series of its advanced LED solutions, to help enhance features and fittings around the hotel. Chosen due to the ease with which they could be fitted coupled with the ability to achieve a seamless look and feel once in place, Collingwood supplied a range of energy efficient, low glare LEDs to be used in various locations.

Outside, Collingwood’s LEDLINE RGB, a fixed linear waterproof colour changing bar was also used around a water feature to create an interesting colour changing effect, complementing the external features.

Installed throughout the upper section of the Spa, Collingwood delivered its Halers H5 500 Symmetric model which features a beam angle of 40° with a recessed low glare down light, specifically pointing the source of light downwards, delivering greater illumination at floor level.

Mark Hatton from Hatton Electrical Contractors installed Collingwood’s products at Carbis Bay Hotel & Spa, he commented: “Considering the scale of the job, it was important to ensure that an easy to fit solution was sought. All of Collingwood’s products were quick and simple to install and we were particularly impressed with the flexibility offered by the symmetric and asymmetric versions of the H5 500 model.”

Due to the nature of the space, it was important to ensure that a combination of appropriate task lighting solutions, required by the spa therapists, could be installed alongside more ambient lighting that was required to help achieve a calming look and feel. Using Collingwood’s LED lighting products made it easy to strike just the right balance between these key needs. In the bar and reception areas, the Halers H5 500 Trimless option was selected. Offering a 38° beam angle coupled with an IP65 rating, meaning it is also suitable for use in rooms where moisture is present, such as bathrooms, the H5 500 Trimless is ideal when looking to illuminate a large space. Fitting Food Waste Management Into Your Kitchen Design Food waste management & disposal is a very important consideration when planning a kitchen and is often overlooked within project budgets. Legionnaires’ disease tackling the risk

The Problem • Legionnaires’ disease is a potentially fatal illness caused by the legionella bacterium, which may be present in tepid water and is spread by inhalation of fine water droplets or spray. • Risk of outbreaks are higher for hotels than many other buildings, due to the number of showers and baths that see low/infrequent use. • The HSE’s code of practise L8 requires all businesses to implement a full legionella risk assessment, and to maintain an effective water temperature testing regime in order to prevent outbreaks of the disease. The Solution UK manufacturer, TM Electronics, leads the field in developing temperature measurement equipment for legionella prevention. Their newest low-cost innovation is the TC Wall Port: a new low-cost wall accessory working with discrete sensors to monitor water outlets with difficult or impaired access from up to 20 meters away, avoiding having to work at height or dismantle boxing. How does it work? Discrete fine-wire sensors are attached to a temperature test point (such as boxed-in TMV’s, concealed pipes and high-level water tanks), and left in-situ. The wires are run neatly to the TC Wall Port (52x52mm), which is screwed to the wall. Temperatures are taken by ‘plugging’ in a standard thermocouple thermometer. A complete system The TC Wall Port can be used in conjunction with TME’s bestselling MM2000 waterproof thermometer and a variety of fine wire, surface/immersion and pipe probes to deliver a complete, low-cost Temperature Measurement System for legionella water monitoring. The latest research by the National Cancer Institute reports that coffee is good for your liver. The study used data from a survey of 27,000 coffee drinkers, who recorded their caffeine intake over a 24-hour period. Their blood was then tested for levels of enzymes including aminotransferase (ALT) and alkaline phosphatase (ALP), which are markers of liver function. Participants who said they drank three cups of coffee or more a day had lower levels of the enzymes in their blood, indicating healthier livers.

Lead researcher Dr. Xiao concluded: ‘Our findings link total and decaffeinated coffee intake to lower liver enzyme levels. These data suggest that ingredients in coffee, other than caffeine, may promote liver health. Further studies are needed to identify these components.’ Coming on the back of studies which found that moderate coffee consumption can help lower the risk of developing type 2 diabetes, as well as delaying the onset of degenerative illnesses such as Alzheimer’s and Parkinson’s, it sounds like pretty good news for the nation’s coffee drinkers, who knock back 70 million cups of the brown stuff every day.

New Study Blames Genes For Coffee Addiction Genetics may be what separates people who can’t function without coffee and those who never touch the stuff, according to a new large-scale study. Scientists have long known that your DNA influences how much java you consume, but the new study has pinpointed six new genetic variants associated with habitual coffee drinking. Four of the new variants implicate genes that are involved with caffeine, either in how the body breaks it down or in its stimulating effects, the researchers said in the paper. The two other newly implicated genes were the most surprising, as they are not clearly linked to coffee or caffeine, but rather involved with cholesterol levels and blood sugar. Researchers believe these findings could help to explain why a given amount of coffee or caffeine has different effects on different people, and provides a genetic basis for future research exploring the links between coffee and health. To make their findings published in the journal ‘Molecular Psychiatry’, researchers from Harvard School of Public Health and Brigham and Women’s Hospital analysed 20,000 regular coffee drinks of European and African American ancestry.

Researchers also analysed the results of around two dozen previous studies with a combined total of more than 120,000 people. Each participant described how much coffee they consumed a day and also allowed scientists to scan their DNA. The new work looked for minute differences in the DNA of participants that were associated with drinking more or less coffee. The resultant study suggests that people naturally curb their coffee intake to achieve the best effect caffeine can give them, and that the strongest genetic factors linked to increased coffee intake likely work by directly increasing caffeine metabolism. Marilyn Cornelis, research associate in the Department of Nutrition at Harvard School of Public Health and lead author of the study, said: “Coffee and caffeine have been linked to beneficial and adverse health effects. Our findings may allow us to identify subgroups of people most likely to benefit from increasing or decreasing coffee consumption for optimal health.” Daniel Chasman, associate professor at Brigham and Women’s Hospital and the study’s senior author, said: “Like previous genetic analyses of smoking and alcohol consumption, this research serves as an example of how genetics can influence some types of habitual behaviour.”

Insomnia Investigates Possible Move to Britain

After another successful Seminar in 2014, the BCA will be looking to hold its next Educational Seminar ‘From Tree to Cup’ in London during 2015, dates to be confirmed.

You may think that there is already too much competition on the high street, but customers in the United Kingdom could be further spoilt for choice as the Dublin-based coffee chain Insomnia could be entering the British market.

This will be the 28th Seminar, following on from those previously held by the Coffee Trade Federation Ltd. This unique course is run over 3 days, the general theme of the Seminar continues to be ‘From Tree to Cup’. Coffee Facts • Worldwide coffee consumption is estimated at around two billion cups consumed every day. • UK coffee consumption is estimated at 70 million cups of coffee per day. • In 2011, consumers spent £941 million on coffee • In 2012 the estimated turnover for coffee shops was £5.8 billion • 75% of all UK adults drink instant coffee, compared to around half who drink fresh coffee. • Coffee is generally grown within 1,000 miles of the equator, from the Tropic of Cancer to the Tropic of Capricorn. • Coffee grows in more than 50 countries and financially, is the second largest export in the world after oil. • The main suppliers of coffee in the world are Brazil, Colombia and Vietnam, with Brazil contributing around 30% of the total. • Hawaii is the only US state in which coffee is grown commercially. • There are two main commercial types of coffee bean – Robusta and Arabica. Robusta coffee grows best at lower altitudes whereas Arabica is better suited to higher altitudes. • It takes 42 coffee beans to make an espresso. 54

The owner, the businessman Bobby Kerr, told the Independent that they are “looking at a few sites” already. This move across the Irish Sea is just one part of the company’s expansion plans; it is expected that a further thirteen outlets will open up in Irish locations such as in the cities of Galway, Cork and Dublin with $1.2m (€1m) being set aside for this investment. No figures have been released regarding the cost of the move to the United Kingdom as of yet. Insomnia has already been testing the water on British shores, so this move is not exactly a bolt out of the blue. In recent months around ten branded self-service machines have been installed in Spar grocery shops and the initial feedback has been quite positive. Mr Kerr – who was a former member of RTE’s syndicated version of Dragons’ Den and a one-time Newstalk host – alluded that the expansion will be funded by cash flow and additional borrowings. It is hoped that the business will be debt free within three years. This is a major move for the Irish chain, but the UK is not the only area in which Insomnia’s management has been scouting. Mr Kerr has also let slip that the chain has looked at the potential of opening coffee shops in the Middle East, specifically Abu Dhabi and Dubai, but no decision has been made as of yet. He described those plans as “tentative”. Alongside announcing their plans to move into the British market it was announced that the company’s earnings before tax, depreciation, interest and amortisation is likely to be 20% higher than last year. It would value Insomnia in the region of $31m (€25m).
