ADDING POSITIVE SOUND TO THE SENSES OF DINING

September 2016

EAT. DRINK. SLEEP

Restaurant Design Show

A fundamental keystone that makes us human is our attitude to eating and drinking. The table is a place of ritual, a place where we develop culture, taste and become aware of ourselves and our company. It is therefore important the place that we eat is functional and represents us as society. Of course food is at the centre of your dining experience, but long before the food has arrived the dining experience begins as soon as you enter the restaurant, bar or café. How food is experienced has everything to do with the décor, the rituals, the company and the experience. Everyone knows a glass of fine wine and fresh seafood is going to taste better sitting on a sun drenched deck in a restaurant garden then sitting at home with central heating and looking out onto a view of a rainy cold street. That’s why it’s important to provide a positive experience from the beginning. Sound can be a crucial factor in a patron’s ability to enjoy their dining experience; Social interactions are a common source of excessive noise which can be explained by the noise-breeds-noise effect, also known as the caféeffect. This phenomenon occurs when conversations of individual groups create noise, which results in surrounding groups subconsciously competing to be heard and understood (Whitlock & Dodd, 2006). It could be said that this then would halter the functionality of a restaurant, bar, and café as the positive experience is drained away from the patrons bit by bit. English Philosopher Sir Roger Scruton has written that architecture is distinguished from other art forms because of a sense of function and goes on to call for a return to the first principles, contending that the aesthetics of architecture is, in it’s very essence, an aesthetic of everyday life. Because communication and sound is one of the very first experiences that take place in a restaurant, this should also be one of the first considerations of function when designing the interior of a hospitality space. In simple terms, positive sound equals a positive and functional dining experience. With modern design in hospitality focusing on harder surfaces, like concrete, glass and polished timber, these spaces can become a reverberating nightmare. The simple solution is to apply an acoustic treatment to absorb excess reverberation; this can come in a number of applications. However failure to

20

take the acoustics into consideration from the beginning of the design process can expose you to design limitations once the space is finished and in use. Enjoying and benefitting from functional acoustics means designing from the beginning. The premium range of 100% polyester acoustic products from Autex Acoustics are a modern solution to traditional fibreglass acoustic panels from the days of old, Autex manufacture a range of solutions that can be seamlessly specified into a space without compromising the design aesthetics. With the capacity to build bespoke designs, Autex can work with designers and architects to create stand out feature pieces or subtle solutions that absorb unwanted noise and create a uniquely human dining experience that satisfies the senses. Global Upholstery Solutions has only existed as a company since the start of the year, but has a long heritage and a wealth of experience. General Manager, Lee Ness, explains the paradox. “This business can trace its ancestry back 30 years in various forms and under various owners. The previous incarnation was purchased by the Stannah family at the beginning of this year to become part of the Stannah group of companies. Stannah has a heritage stretching back 150 years and most of it’s products are upholstered, so it is an obvious step forward.” The new business retained all the existing staff and have added new ones, but now has the backing of being part of a much larger group. This investment started with new, completely refurbished environmentally-friendly premises and in new machinery. The business is now fully operational and looks to grow into new, old markets. Account Manager, Steph Judge explains: “Over the years, our team has undertaken lots of different work and are highly skilled. We have manufactured bespoke furniture, refurbished everything from theatres to pubs and restaurants. Over the years, the business retracted back to a core set of products and customers but, with the backing of the Stannah family, we’re now moving back into those areas.” Global Upholstery Solutions has now joined the Hampshire Chamber of Commerce and has also been awarded British Contract Furniture Association membership after a successful audit. Existing relationships with customers like Herman Miller and Hussey Seatway have been strengthened while the supplier base now includes higher end fabric suppliers such as Panaz and Kvadrat. With the new facility tied to existing capabilities, the business is looking to connect with Interior Designers, Specifiers and Architects to work together with the team at Global and benefit from a fresh, responsive and vibrant company with low overheads, a simple, open price structure and the ethical approach of a family business. The GUS company motto from an African Proverb sums the company up nicely:

“If you want to go fast, go alone. If you want to go far, go together” Global Upholstery Solutions is happy to invite customers and specifiers to view their facility and discuss their requirements.

very comfortable and with a walk in kitchen this is perfect for a traditional Thai cooking class (which we will revisit later) Moving back to the incredible view as you walk out to your private bathing / infinity pool area the seascape really is breath-taking. The scenery cannot be compared and likened to any hotel view you have seen before. Whilst visiting this beautiful resort you will be able to visit the restaurant which is home to award winning dishes and offers both western and Asian cuisine. The head chef Leia is one of the world finest and has recently won an award for the best Gourmet burger in Phuket. Which was highly contested with many restaurants going in for the award. The Ohla burger swooped the prize and mouth-wateringly lived up to all expectations. A succulent mix of 80% Australian beef, 20% minced pork belly, Spanish Iberico ham, French brie cheese, extra virgin olive oil, homemade barbecue mayonnaise all piled high on a fresh house-baked hamburger bun. “ The restaurant proudly serves seasonally inspired Mediterranean cuisine featuring regional gourmet twists with a Spanish accent. Only the freshest produce and finest ingredients are used to ensure an inspired gastronomical experience. Executive Chef Laia Pons Spanish roots serve as the primary menu muse for many dishes. In Barcelona she honed her creative culinary talents at two of the city’s finest restaurant, Abac (two Michelin stars) and Caelis (one Michelin star). Her cultural background and training is also the inspiration for Phuket’s best brunch, available on selected weekends depending on the season. Chef Pons uses it to showcase dishes from one of the oldest and most renowned fishing village in the Ciutat Vella district of Barcelona. Combined with Kata Rocks’ stunning oceanfront location, its legendary weekend brunch treats guests to an authentic Mediterranean feast of delicious fresh seafood and the most elegant cuisine on the island. “ To keep in touch with Thailand’s exceptional cultural acclaim. A Thai cooking class is available and suggested as necessity whist on your stay. A professional cook will come to your villa and teach you all that is needed to bring a piece of Thailand home with you. Authentic cuisine will be taught with easy understanding and then the ability to master some signature dishes once you return home. One thing that really does stand out about the Kata rocks experience is the attention to detail shown by the staff. There is a faultless service provided by them and I would suggest this is amongst the best customer care I have known. Being a crucial instrument to your overall stay this most certainly was met to the highest of standards. Kata rocks is now an established hotel globally and has attracted not only holiday goers but also residence on a permanent basis. With the option of investment also there if you wish to purchase one of these magnificent villas. With Phuket being ever-growing in popularity, Kata rocks is a must as part of your trip in regards to not only accommodation but also so much more.

Making every day easier Whether you have one restaurant, or 100, in today’s instantaneous world technology underpins the daily operation – and therefore success – of your business. Technology is transforming the hospitality landscape. Consumers are driving further change and businesses are quickly having to look at mobile solutions, apps and online ordering capabilities. As stated on Forbes.com, “Customers are in the driver’s seat now and many businesses that don’t have the technology and systems in place to support an omni-channel customer experience will be forced to take the backseat.” NCR is the global leader in consumer transaction technology, providing a host of solutions that meet the needs and desires of hospitality professionals across the world. With hospitality in our DNA, we understand the exacting needs of the industry and our technology is designed to make things simple, easy and effective. Going mobile is the holy grail for restaurateurs in 2016. Meeting the tech-savvy consumers’ expectations is important. Via loyalty and reward apps, online ordering and payment, you are very much in your customers’ mind outside the restaurant, giving you the unique opportunity to increase your brand’s penetration into your customers’ world. The facts speak for themselves: engaged customers buy 90% more frequently, spend 60% more per transaction and deliver three times the value to the brand over the course of a year, according to Rosetta. Plus, it has been reported

34

that consumers who have placed an order online visit the restaurant 67% more frequently than customers who haven’t. So, to help you take advantage of these opportunities, NCR has developed a number of mobile solutions that integrate directly with your POS, CRM and intelligence tools. What’s more we can also help you go mobile in your restaurant with our professional handheld ordering devices. The Orderman is the industry-leading handheld device which enables restaurants to further improve their customer service, speed up processes and enable staff to spend more time interacting with customers. Purpose-built for the hospitality industry, Orderman is remarkably resilient. Compared to consumer devices often used for handheld ordering, the Orderman is designed to withstand the rigorous demands of the hospitality environment and therefore offers rapid return on investment. As the global leader for hospitality technology, NCR understands the challenges you face, but also how technology can make things easier, more efficient and, most importantly, more profitable. Come and talk to us on stand 1122 at the Restaurant Tech Live exhibition at ExCeL September 27th & 28th. Or visit www.ncr-hospitality.co.uk for further information.

Safety & Security

Hotel Security is yours up to The world of security is fast moving, nowhere more so than in the hotel and hospitality industry where hotels face a universal challenge: how to manage security without intruding on guests’ privacy, comfort and travel experience.

Due to the nature of their open access, hotels present significant challenges in that they need to provide discreet security for guests while ensuring that their stay is pleasurable and worryfree. Whether travelling for business or pleasure – guests need to have a high level of trust in the property they are staying in. Safety and security therefore should be a subject high on the wants list of any good hotel. But such a decision should not be based solely on cost or occupancy

66

levels, although cost must always be balanced with the quality of security provided. Hotels have a legal duty to provide reasonable measures for their guest’s protection and today’s travellers are security savvy. They expect good levels of protection as a matter of course and for the hotel that means a security risk assessment should always be the first port of call to identify what the risks to the hotel are and what preventative measures should be put in place to counter them.

Duty of Care Some hotels are not always aware that safety and security can and will be the subject of scrutiny by lawyers and juries if security based litigation occurs.

September 2016

As we have said, hotels have a duty of care to their guests and while it is unreasonable to expect any hotel to completely eliminate the risk of crime or potential security problems, it must take reasonable steps to deter or prevent such risks. Providing inadequate or inferior protection to hotel room doors because it was cheap, it was used in your last hotel or the company that sold it to you said it met all necessary security and fire standards is no defence. The onus is on you to ensure you comply with standards and it may therefore be no surprise to learn that hotels are among the top five commercial businesses that are most regularly sued. So what steps should you take to ensure your security is fit for task, and that it can not only provide a convenient, comfortable, safe and secure experience for the guest but also streamline and maximise staff management functions too?

Risk Assessment Examples of threats range from theft of guests’ belongings to opportunist theft to staff stealing. Each of these

Allegion gets behind fire door safety week Specialist security manufacturer, Allegion, will be showing its support for Fire Door Safety Week (FDSW) with a host of awareness activities. FDSW takes place 26th Sept 2016 to 2nd Oct 2016, with the aim of raising awareness of the critical element of fire safety in every commercial, public and multiple occupancy building. It is further supported by the British Federation of Woodworkers’ (BWF) #ClickItKickIt campaign, which is raising awareness of the dangers of wedging fire doors open and empowering people to photograph fire doors being wedged or propped open. The BWF has stated that: “A wedged-open fire door renders that door useless. It can no longer protect your safety or your property. It’s an open door to danger.” Allegion has benefits of 130 years of experience keeping people safe and will continue this by supporting FDSW with: • Radio coverage to include a questions and answers session on fire door safety and installation •

Demonstrating the correct installation of fire door hardware at Screwfix Live in September

Hosting events at their new offices in Aston, Birmingham

Distributing guides on how to correctly install and maintain fire door hardware

Giving end users and facilities managers the chance to try a door closer for free, with its no obligation ‘Try Me & Keep Me’ programme

Worryingly, a recent report from the Government has shown that there were 213 deaths and more than 6,700 casualties from building fires in England in the six months of April to September 2015. Full year figures are likely to show a significant increase on previous years. Paul Barrows, demand creation leader at Allegion, said: “It’s terribly sad to read the latest Government figures on deaths and casualties from building fires. At Allegion, we offer door closers that link with an electromagnetic hold open system to the fire alarm, which will release a door

68

to its closed position when the fire alarm actuates. This negates the need for any sort of wedge, or even worse, propping the door open with a fire extinguisher. “Alternatively, a free-swinging electro-magnetic door closer linked to the fire alarm system will facilitate a barrier free operation to the door whilst still allowing the door to be manually closed if required for areas of personal space where an element of privacy is required. Our events will aim to help people to find solutions to fire door safety – which could save lives. “We fully support the BWF in its efforts to encourage building owners and users to check the condition of their fire doors, and will help in any way we can to ensure that the right fire door hardware is selected, fitted correctly and regularly maintained.” Allegion products are suited for the education, healthcare, commercial, leisure, transport and hospitality sectors, and are fully compliant with current EN requirements. Avenista Table Reservations also provide all-inclusive access to their incredible support team (awards surely coming sometime soon!) who can implement booking strategies and take care of all of the administrative duties involved in managing the software too. It’s no surprise that Avenista® customers tend to be busy, extremely well-run restaurants who are always looking for that extra bit of efficiency and want it without hefty prices attached. Unlike so many booking systems Avenista® do not operate a Diner portal and so will never attempt to sell tables from competitor restaurants or gazump a restaurant’s Google ranking.

Never heard of Avenista®? Well, perhaps you can be forgiven. With the stampede towards basic, web-based booking systems in recent years many restaurateurs completely overlooked this unassuming UK company, attracted instead by the fanfares of the big booking operators. But one size does not fit all and having experienced high running costs or poor service delivery many restaurateurs are now looking elsewhere and finding Avenista has intelligent, super-easy software with everything they need and more for often a fraction of the cost. With more than 10 years’ experience delivering Table Reservation software the team at Avenista® know what makes busy restaurants tick and have continuously honed and polished their software to make running a Front of House effortless. These days millions of diners are seated each year using Avenista® systems. Oddly perhaps, at Avenista® their mission is for their customers to spend the minimum time possible using the booking software, yet still have the software do exactly what the customer needs, enabling them to spend more time in their restaurants on activities where they can really add value. To achieve this they worked on making Avenista® intelligent and efficient without taking away any of the features that allow restaurants to deliver really personal service to their Diners. And, so keen are they to deliver on the mission they

As Kerry Beswick (Managing Director of Avenista®) says – “We have absolutely no relationship with Diners at all. Everything we do is focused on the restaurateur. We are all about providing the absolute best tools and services for our customers to help them make the best restaurants.” With an impressive client roster, awesome features (including a new online payment feature for events and deposits – saving restaurants huge amounts of time, and reducing no-shows), and pricing lower than anything comparable, many restaurateurs are now getting the message and switching to Avenista® saving themselves time, money and headaches.

Hotels grab their slice of the online It’s amazing but true that 35m people in the UK now have a smartphone – and one in every six adults looks at their phone over 50 times each day.

So where does that leave you if your hotel has no access to online booking? More than a touch high and dry – with conditions likely to get even drier as telephone bookings slow. If your hotel hasn’t already embraced web-bookings, it’s time you did – and luckily, expert guidance is not far away.

So who can be surprised that online booking has become a modern-day phenomenon? More than 50% of hotel bookings are now being made that way.

NFS roomMaster hotel management software is among the most popular systems on the market, used by more than 6,000 hotels around the world.

And as we continue to organise more and more of our lives through hand-held devices, that trend is sure to strengthen.

RoomMaster offers many benefits that can smooth aspects of hotel operation, ranging from running the front desk to housekeeping to procurement and labour.

With the arrival of the generation known as Millennials – people born after 1980 – into the hotel market, online booking will receive a further push.

But one of its most popular features is its ability to provide a direct connection to online travel agents such as booking.com and Expedia via seamless integration with leading channel management services so you can offer bookings 24/7, 365 days a year. Through this seamless interface, the roomMaster system automatically pushes out room availability and imports reservations. Importantly, it also enables you to keep your rates and inventory synchronised across all the online travel agents. For owners of hotels that don’t already have representation with a channel management company, NFS can demonstrate how to promote the hotel and sell many more rooms.

These young people grew up with technology, and in a recent survey said they selected their hotels using Hotels.com, Expedia or Booking.com. They referred to these sites as web-booking, rather than thinking of them as online travel agents (OTAs). Above all, they told the survey they valued the ease of making their travel arrangements on the web.

Using roomMaster PMS saves a hotel’s staff a huge amount of time, because manual data entry is not required when bookings are made, and in addition all billing is automated. That means staff can spend their valuable time engaging more with your customers, making sure they have a delightful experience that will bring them back time and time again. Importantly, roomMaster also promotes hotels with the ability to encourage further bookings without commission.

EAT. DRINK. SLEEP

e booking action with roomMaster By Luis De Souza, CEO of NFS Technology Group It does this by capturing your guests’ email addresses and automatically emailing them promotional offers and deals that encourage them to book directly through your own website on repeat visits – and as the booking does not come through an online travel agent, you pay no commission. The return on investment is exceptional, and we find roomMaster hotel management software pays for itself within a few months.

“We used the system for a year or so and then moved our Edinburgh Serviced Apartments onto the system and introduced a channel manager that linked both to roomMaster and into our aggregator site in Singapore,” he said. Implementing the system group wide led to standardised reporting and increased efficiencies in their business processes – as all bookings that came via their own website, online travel agents and their own aggregator site were instantly integrated in the system.

One NFS customer who can confirm this is Mansley Serviced Apartments, which own and operate properties in London, Edinburgh and Inverness. Mansley offer a portfolio of 74 different apartments ranging from studios to four bedroom apartments. Apartments are designed both for the corporate and leisure traveller and are available for both short and long term stays. Under the brand Serviced Apartments Worldwide, based in Singapore, the group acts as an aggregator to the wholesale travel industry. It employs the latest technology in the sector to deliver up to date pricing and availability for over 500 serviced apartment blocks worldwide with particular emphasis on Europe, Asia and the USA. Mansley Serviced Apartments wanted to implement a system that could manage all their properties as well as connect the database to both channel management/online bookings and their own aggregator site (SAW). The financials from their system also needed to update their Sage accounting system. General Manager Colin Stone says Mansley initially implemented roomMaster from NFS Hospitality to manage their apartments in Mayfair and Kensington, along with an interface Sage accounting system.

“The property management system was set up to maximise the yield per apartment and this has resulted in higher ADRs,” said Colin. Not surprisingly, as NFS Technology Group is reporting increasing interest in roomMaster property management software and its effortless channel management and GDS integration – and we’re convinced the market will continue to grow. Globally, revenue in the hotel industry is predicted to reach $550 billion dollars this year. We believe the successful hotels and groups that grab their slice of that money will be those that – like Mansley Serviced Apartments – recognise that easy online booking and a personalised service are as important to today’s travellers as well-appointed rooms.

With more indepth reporting and synchronized editing across all terminals in a business, new products and promotions can be added anytime, anywhere. Intelligent Point of Sale is increasing subscriptions to its service at twice the rate of sign-ups six

months ago and posted a turnover in excess of £1m in 2015. Aiming for 15,000 users by 2018, intelligentpos comes at a fraction of the cost of traditional POS systems but with all the functionality to rival the largest competitors in the market. The Edinburgh Fringe isn’t the only festival where intelligentpos has made a splash. New client, Wonder Bars, operated 15 iPad terminals with intelligentpos across its six bars at Glastonbury 2016. More than 80 staff were trained on the system, which handled over 14,000 transactions over the June weekend. Robin Knox, co-founder and CEO of Intelligent Point of Sale, said: “Within the festival environment, the most important benefits that an EPOS system can deliver are speedingup service to cut queues at the bar, integrating chip and pin with contactless payments and cash, and providing reliable stock control. Our software does all of this and a great deal more from an iPad and we’re delighted that Intelligent Point of Sale will be at this year’s Edinburgh Fringe in even greater numbers.”

Guest WiFi

enables hotels to achieve so much more than keeping guests connected

Guest WiFi is now more important to travellers than anything else a hotel stay can offer, allowing guests to feel connected to home, or to keep on top of their workload wherever in the world they are. However, guest WiFi is even more important for hoteliers as public WiFi networks can have many more uses besides making guests happy. WiFi is an enabler. By deploying a guest WiFi platform such as MyAirangel, a savvy hotelier has at his or her fingertips, the ability to gain more insights, the means to engage with guests better whilst they are on the premises, and new ways of promoting hotel services, app downloads, and loyalty programs. A key objective for many hotels is to make every part of the stay an experience that is in every way better than what one might expect in the comfort of your own home. Yet, the one key area that lets many hotels down is the WiFi. At home there is no need to complete login forms, connection is simple. On your home wireless network, you can benefit from streaming content from your devices to your big screen TV, you can simply add games consoles and your other WiFi enabled systems, and once connected they will seamlessly connect every time they detect your WiFi networks’ name, or your SSID as the techies like to call it. A new key component of the MyAirangel platform is set to tackle this issue. With the introduction of the Personal Area Networks feature, guests will be able to take their home WiFi experience with them to any hotel with the ‘best of breed’ platform installed. Personal Area Networks enable hoteliers to provide guests with a Hotel Home Experience (HHE) where guests have their own personal SSID, they can even use the same one as at home if they want all their

devices to seamlessly connect when they arrive, where they will be remembered and automatically logged into the WiFi no matter which hotel in the group they visit. This enables guests to connect any or all of their devices and stream personal content to the biggest screen in the room. Hoteliers can also use HHE as a reward for regular guests, loyalty members or even use it as an upsell opportunity to loyalty members. WiFi can really strengthen the bond between the hotel and their guests by creating a bridge between them. Personal Area Networks, better engagement via Injection Jets, where content can be injected into the guest’s browser, promoting hotel services or third party advertising, and an overall positive WiFi experience are sure fire ways of improving satisfaction, promoting loyalty and generating additional revenue.

Unleash the Power Behind the Payment Zapper launches game changing in-app loyalty rewards platform Zapper has been disrupting the hospitality industry for the last 18 months, encouraging more and more customers to dine and dash using its simple scan and pay app. Now users can go completely cardless. The end is nigh for countless loyalty cards clogging up your wallet as Zapper launches its innovative stamp-style in-app loyalty platform.

via mobile phone and 3C’s revealed 60% of consumers make more monthly visits / purchases because of a mobile enabled loyalty programme. Zapper gives businesses a smart way to automatically understand their customers and reward loyalty to encourage future spend through in-app rewards, messaging, push notifications and beacon technology.

With an increasingly competitive market space, it’s critical for brands to go the extra mile to reward and retain their customers. Successful operations recognise customers are increasingly tech-savvy when it comes to hunting down offers and rewards with nearly one third of consumers using their smartphone to search for deals before dining out. Therefore, targeted offers and personalisation are an essential way to engage and encourage repeat visits, rewarding customers for their time and spend in your venue whilst ensuring they come back again, and again.

Gerry Hooper, CEO Zapper UK, says “Endorsed and trusted in 10 different countries, the Zapper solution is easily adapted to any payment environment. Simple to use, without compromising service, Zapper provides the hospitality industry (and now Retail, Bill Payments and Transport) with an ideal multi-platform for venues to understand and reward loyal customers, thus encouraging re-use and sharing amongst peers.”

Combined with Z-Beacon location-based technology and a messaging platform, businesses such as Caffe Concerto restaurants, are benefiting from new, smarter ways to engage with customers. Caffe Concerto, “We were really impressed with the complete Zapper solution, we’ve now rolled out through the rest of our Caffe Concerto sites.” Whilst users love the ability to pay securely using their smart phone, many still find their wallet laden with loyalty cards and expired paper vouchers. Zapper already enables customers to settle their bill in seconds, automatically redeem vouchers and leave instant starred feedback on their dining experience. However, diners are now able ditch their cards completely and instantly collect loyalty rewards for every visit via the app. James Sykes-Hagen, Director of Business Development, Zapper UK, comments, “Life loves loyalty. In the 2015 Loyalty Consensus commissioned by Colloquy, 75% of those surveyed said they stayed with a brand because the rewards and offers were relevant to them. Digital, in particular mobile, allows businesses to collect a variety of customer data, using Zapper at the point of payment, which recognises individual customer habits for future incentive campaigns.” The growth in smartphone use has driven significant changes in customer behaviour and presents a huge opportunity to businesses. Findings from Visa and Bond Loyalty show 57% of their members would like to engage with loyalty programs
