Macclesfield Hospital Catering Mark recognition for retail and patient food The catering service at Macclesfield Hospital has become only the second hospital in England to be awarded the Soil Association Food for Life Bronze Catering Mark for both its restaurant food and its patient food, recognising its drive for fresh meals and good food for all.

In a Family and Friends test of the new in-patient menus, feedback to catering and care staff was excellent. “Staff lovely; food lovely,” said one patient. Another commented: “The food was good – which I didn’t expect – and the smiles on the faces of the staff always made me feel warm.”

Providing over 200 daily meals to hospital visitors and staff as well as the general public and out-patients and 350 to in-patients, Macclesfield is part of an exciting nationwide initiative by catering providers ISS Facilities Services to improve hospital food.

The initiative involves changing menus, working with suppliers, sourcing fresh produce, preparing meals on site and training staff. For the team at Macclesfield, the passion to improve food in retail outlets and for patients stemmed from a desire to promote the

benefits of healthy eating to everyone in the local area.

Greene King one of UK’s top 50 apprenticeship employers The Apprenticeship Careers List, which is produced in association with the Daily Telegraph, aims to raise awareness of apprenticeships and celebrate the country’s leading companies who are investing in young people. Greene King was recognised as one of the top 10 organisations within the retail and services sector in terms of employee retention rate, recruitment strategy and the number of apprenticeships offered per year. Since 2011, Greene King has helped support over 7,400 apprentices and offers bespoke qualifications that support a range of job roles including front of house, kitchen and management that are tailored to each of the Greene King retail brands. Through a combination of workplace

learning and additional industry masterclasses, apprentices develop the capabilities and technical skills that enable them to reach their potential and support Greene King in delivering exceptional customer service. In just four years, 4,000 Greene King apprentices have achieved a qualification and 3,400 learners are currently working towards Level 2-4 qualifications. Greene King, which manages 1,900 pubs, hotels and restaurants across the UK, announced earlier this year that it had reached a key milestone by recruiting its 1,000th apprentice. This put the company ahead of schedule in its pledge to recruit 2,000 apprentices in the year to March 2016. Rooney Anand, chief executive officer of Greene King, said: “We are very

proud to be named as one of the UK’s top 50 apprenticeship employers. As a leader in hospitality, employing over 40,000 people across the UK, it is important to us that we attract, train and retain the very best people. This is why we strongly believe in the value of apprenticeships, and remain committed to growing, developing and investing in young people. It is important to raise awareness of apprenticeships as a credible alternative to further education, which allows young people to get that allimportant step on the career ladder.”


Danny Hoang from Colette’s at The Grove in Rickmansworth was named Young National Chef of the Year 2016 in the UK’s most prestigious chef competition, following a tense final at The Restaurant Show in London’s Olympia. Winning the Craft Guild of Chefs’ Young National Chef of the Year title is a huge boost for any young chef’s career and Danny joins a growing list of accomplished young chefs who are now working in some of the UK’s top kitchens. Danny competed against seven talented young finalists in a challenge which gave the chefs two hours to produce a three course menu for two using oven ready quail for the starter, a main course of fresh hake and their own take on bread and butter pudding for dessert. Danny’s starter was quail leg and breast, watercress and parsley sauce, hay-baked baby beetroots and nasturtium and his main; seared hake, baby leeks, vinaigrette of sea vegetables, mussels and celeriac, beet batter scraps, mussel cream sauce. His dessert was lightly spiced bread and butter pudding with vanilla ice-cream and malt custard, pickled blackberries and Braeburn apples. The menu was deemed a worthy winner by the judges who included: Mark Sargeant, Alyn Williams, Christopher Basten, Sophie Mitchell, Julie Walsh, Ben Tish and Brad McDonald. Danny Young from Northcote Manor in Langho came a close runner up, with Ruth Hansom of The Ritz London in third place. The winner and runners up will be taken to a food trends study trip to Scotland by headline sponsor, KNORR. KNORR has also invited all the finalists to a stunning five star venue in Scotland for a culinary study tour and a range of outdoor activities. As well as the industry recognition that the title provides, Danny Hoang also collects an exclusively designed winner’s plate from sponsors Churchill China and £500 worth of product, £1,250 voucher to spend within the Lockharts’ Product Range, a unique gastronomic trip to one of the world’s top restaurants courtesy of Lockhart Catering Equipment and £1,500 worth of activity voucher from KNORR. The standard of the competition goes from strength to strength and I may say it every year but these young chefs aren’t far off giving the senior chefs a run for their money!”

BBPA: Small businesses should be excluded from apprenticeship levy The BBPA has called for the exclusion of small businesses such as individual pubs, in the Government’s proposals for an Apprenticeship Levy. These, and other detailed comments, are contained in the BBPA submission to the consultation on the issue. The BBPA has also commented on the introduction of the National Living Wage, in a submission to the Low Pay Commission. While the BBPA has concerns about the need for a Levy, it says that any scheme should only apply to larger companies, to avoid placing an excessive burden on very small businesses; companies with over 250 employees would be broadly the right approach. The BBPA has also made a number of detailed suggestions to secure the maximum benefit from the scheme. It wants to ensure that the system of vouchers is designed to enable companies to get more out than they put in, if others are not using their allocation of vouchers, and to allocate their vouchers to partners in their supply chain, if they so wish. Employers must also be given the flexibility to decide where their employees are based within the UK where they work across devolved boundaries, and this must be simple to administer. On the Low Pay Commission submission on the introduction of the National Living Wage, the BBPA has stressed that the proposals represent a significant ‘unknown’ in terms of costs and impact on the sector. Other measures to mitigate this impact are therefore needed, such as reform of business rates and continued reductions in beer duty. The association wants to see an evidence-based approach to setting the National Minimum Wage rates for October, to support businesses and employees. The large increase in the apprenticeship rate just introduced needs time to settle in and this will also tie in with the impact of the Apprenticeship Levy. BBPA Chief Executive Brigid Simmonds comments: “Apprenticeships are vital for our industry. We need the new Levy system to provide flexibility to allow the large number of apprenticeships offered in our industry to develop and grow, so we need legislation that encourages this process that is not too burdensome for smaller businesses. The potential cost of the Living Wage makes it all the more important that the Government retain a strong focus on tax cuts and other regulatory burdens.”

Oktoberfest German Beer Festival Comes To London for First Time The world-famous German beer festival Oktoberfest is launching in London for the first time this year. The Bavarian festival which has been held in Munich since 1810 is going to be held at the Tabacco Docks in Wapping, east London from Thursday 8th October to Sunday 11th October. Over 100,000 pints of lager, in traditional German one litre Stein glasses, are expected to be drunk and over 50,000 traditional sausages eaten during the four day festival. A traditional German beer hall will be created with rows of seated on long tables with benches and over 24,000 people are expected to attend. There will be a Bavarian Oompah band playing on the main stage at the event but unlike the Munich based event, songs performed will be classic British pop and rock songs from bands like Queen and Oasis. Waitresses serving the beers will all be decked out in traditional Drindl dresses, with a laced up bodices, white blouses, with full skirts and aprons. The men’s outfits will include genuine lederhosen breeches, alpine hats and socks up to the knee.

Event organiser Joe Ryan said: “I’ve always thought that London would be amazing place to put on the Oktoberfest, and Tabacco dock is the perfect location for this event. The wooden beams and the high ceilings give an authentic feels to this satellite of the world famous Bavarian beer festival.” And he added: “It’s going to be amazing fun and we are already struggling to keep up with demand for tickets and may look to add another date in future. We would love to make this an annual event in London and because the German event has been put forward to September nowadays due to the inclement weather this will now the one genuine Oktoberfest in Europe.” There will be a selection of side-stalls, a Bavarian garden and games will be available including lessons from German professional footballers on taking penalties, and a special Beach Towel Toss game, where you have to throw a German flag beachtowel over 50ft and stake your claim to a sun-lounger by the pool. Food will be laid on from German restaurant chain Hermann Ze German who will offer Wurstl (sausages) with Sauerkruat (pickled cabbage), Shnitzel and Germany’s favourite potato salad. The event was first held in 1810 to celebrate the wedding of Crown Prince Ludwig of Bavaria to Princess Therese of SaxeHildburghausen, who was related to the

great-great-great-great grandmother of the Queen. The event is sponsored by German beer company Paulaner which is one of the original founders of the Oktoberfest event and based in Munich. They will be specially shipping over 600 beer barrels of traditional beer which is a particularly light lager with the recognisable frothy white head. As the event is held directly after the Oktoberfest in Munich, Paulaner will also send all of their tent decorations over to London. Tickets are £10 for general admission to the event including the Paulaner Beer Tent, the Bavarian Garden, the Paulaner Beer Tap Pub and the Munich Market. Seating is on a first come first served basis as long as there is capacity. A £60 Paulaner Pass includes unlimited steins of Paulaner beer and a meal of your choice from Herman Ze German. The original Rumbullion!, which recently took home a Gold Medal in the Super Premium category of the Spirits business Rum Masters 2014, was made with a base of Caribbean rum, to which exquisite Madagascan vanilla, orange rind, cinnamon, clove and cardamom are added. For the XO, however, many of these notes were found in the 15 year old Caribbean rum which sits at its core, a testament to its lengthy maturation. While the additional stunning spices haven’t changed, their quantities were reigned-in slightly to allow for the extraordinary flavours of the long-aged rum to shine through clearly. The result is the best of both worlds - The Rumbullion! XO has familiar, fantastic flavours from the award-winning Rumbullion!, with new dimensions of depth and complexity arising from the spectacular rum it is structured around. The flavour profile hasn’t just aged. It has matured - it is a grown-up version of an already awesome drink. As with all Professor Cornelius Ampleforth libations, it is handsomely packaged. It could very easily have come from a sea captain’s private quarters! The nose opens with rich, creamy wafts of vanilla and toasted cinnamon. Bright orange peel, dark chocolate and cola-cube sweeties surround classic sugary old rum notes. This continues on the palate with homemade marmalade, light oak and plum, with a thick, mouth-coating delivery. Beneath the sweetness lies a simmering pool of cinnamon, clove and liquorice. A new London boutique hotel has been given the Mitre Linen touch. The Mitre team has been working closely with the Shepherd’s Bush Boutique Hotel in the heart of London’s West End, which opened this summer. The hotel offers 4 Star Accomodation and facility Service. Mitre, who started working with the hotel when it was just a building site, gave each of the hotel’s 21 rooms their own individual design as well as personalising bespoke products. CABUCHON BATHFORMS LAUNCHES FIFTH GENERATION DEEP SOAKING TUB THE YASAHIRO British bath manufacturer Cabuchon Bathforms has announced the launch of the Yasahiro, a modern take on the traditional Japanese ofuro. Drawing upon more than 20 years’ experience of deep soaking tub design, it has a small footprint and is ideal for use in more compact bathrooms typical of boutique hotels, city apartments and townhouses. In 1991, Cabuchon launched the world’s first contemporary, Japanese-style deep soaking tub - the Imersa. Since then, the company has been steadily introducing new and improved designs. The Yasahiro represents the company’s fifth generation of deep soaking tubs and, as such, it incorporates everything its designers have learned about comfort, access and utility.

These aid entry to the bath and allow the user to maintain a position that is both relaxed and well supported. The Yasahiro also boasts a large footwell that makes it suitable for use with overhead or wall-mounted showers.

Like all Cabuchon baths, every Yasahiro is hand-built by a team of British craftsmen and can therefore be customised to include, for example, hydrotherapy or chromotherapy systems. The bath is manufactured from the company’s own Ficore® composite, which carries a unique 25 year guarantee. Cabuchon can match literally any colour and will match any current (and many past) sanitaryware colours in its standard pricing. For an extra fee, it can also match the base colour of any tile, paint, stone or textile.

rigid than any non-metal or nonstone bath and it possesses superior heat insulation and energy-saving properties.
