BBC MasterChef winner Steven Edwards to guest at Pennyhill Park Steven Edwards, winner of the BBC’s MasterChef: The Professionals in 2013, is to appear as guest chef at the Latymer, the Michelinstarred restaurant at the five-star Pennyhill Park hotel in Surrey, an Exclusive Hotels and Venues site. On selected dates from 5-20 February, Edwards will bring a range of six-course, £65-per-person tasting menus to the site, which have been specifically designed for the Latymer. Edwards will appear with his business partner Josh Stanzl, with whom he runs the fine-dining pop-up concept Etch, also as part of Exclusive Hotels and Venues. The duo comes to the restaurant following the departure of its former executive head chef, Michael Wignall, at the end of December last year. Wignall first came to Pennyhill Park in 2007 but left last month to take over Michael Caines executive head chef role at Gidleigh Park, Devon. No permanent replacement for him has yet been announced. Edwards’ dishes will include line-caught mackerel with roast celeriac and pickled celery; coffee glazed duck breast and pressed leg with artichoke puree and roasting juices; fillet and belly of Petworth pork with slow-cooked celeriac and mustard; and Twineham grange doughnut with crispy kale, broccoli puree and gherkin. The Valentine’s week menu will feature sea trout carpaccio with tartare, oyster beignet, and oyster mayo; plus roast fillet and tail of Sussex beef with leek and potato purée and charred spring onion; with mango panna cotta, passion fruit sorbet and fennel for dessert. The BBC show winner previously worked as head chef at the Camellia restaurant at South Lodge near Horsham in West Sussex, also part of the Exclusive Hotels and Venues group. He favours the use of locally-sourced, fresh produce to create simple food. Julian Tomlin, general manager at Pennyhill Park, commented: “We are delighted to welcome Steven Edwards to our kitchens at the Latymer [of which] we are immensely proud. Steven’s unrelenting passion, unique talent for marrying wonderful flavours, and his creative artistry in the kitchen will complement the restaurant offering perfectly.”

Splendid Restaurants to support Jack & Alice expansion Jack & Alice, the fledgling wine bar, pantry concept led by former Mitchells & Butlers (M&B) retail director Mark Hall, has come under the umbrella of Splendid Restaurants, the sister company of Splendid Hospitality Group that currently owns 19 hotels across the UK. According to BigHospitality’s sister website M&C Allegra , Splendid will support the continued expansion of Jack & Alice, which recently opened its first site in Gerrard’s Cross, Buckinghamshire.

Flexitarian diets set to rocket in 2016 The popularity of flexitarianism is set to reach new heights in 2016, following recent figures from consumer analyst Mintel that showed 35% of Brits now identified as ‘semi-vegetarian’. The number of flexitarians is set to rise by 10% in the UK next year, Mintel said. The eating-out sector has responded to this by boosting the number of vegetarian dishes on menus. Meat-free dishes accounted for 31% of new menu items across the eatingout sector, which was up from 18% in 2014. Research by Vegetarian Express earlier in the year claimed 71% of those asked wanted to see more vegetarian options on menus, with more protein and better health qualities incorporated into them. More than half (52%) of consumers also told Mintel they believed vegetarian options were better for the environment.

‘Vegetarian market growing’ Managing director at Vegetarian Express Will Matier, said: “There’s no doubt about it, the vegetarian market is growing. You just have to look at the number of dedicated vegetarian restaurants opening up on the high street to see evidence of that. “If caterers are to compete, they must offer more choice – not just in terms of the number of dishes, but also the quality of food.” Most popular vegetarian ingredients: Beans (63%), Nuts (48%), Tofu (37%) Beef dishes dropping As a result of the rise in flexitarians and the subsequent increase in vegetarian options, the number of beef dishes on menus had dropped significantly in popularity. Just 8% of new menus incorporated beef into dishes, compared with 18% in 2014.


Camden Town Brewery Taken Over By AB InBev

Working with Hatch Mansfield and private investors, the team has purchased 69 hectares of farmland at Stone Stile Farm in Kent, forty hectares of which will be planted with Chardonnay, Pinot Noir and Pinot Meunier vines to produce premium English Sparkling Wines. Glendalough releases Wild Autumn Botanical Gin

Irish craft distiller Glendalough has released the last in its range of seasonal gins, called Wild Autumn Botanical Gin. Every release starts with a core of six botanicals – juniper, coriander, angelica root, orange peel, bitter almond and orris root. With the help of a local forager, Geraldine Kavanagh, local and seasonal botanicals are added, resulting in a similar botanical mix over the years for each season. Wild Autumn Botanical Gin incorporates plants such as heather flowers, meadowsweet, yarrow, fraughan berries, and many more. It’s suitably autumnal, with ripe citrus fruit and some herbal, minty notes, leading to a warming, zesty palate with citrus sweetness balanced by a brisk, pleasingly bitter finish. It’s a bit of a no-brainer if your cocktail list itself is seasonal. Because the only thing better than foraging is getting someone else to do it for you. Four of those seasonal gins are released per year. Look out for the Winter variant, whose botanicals are currently being foraged. Champagne Taittinger invests in English sparkling wine

Popular London craft brewer Camden Town Brewery is being bought by the world’s biggest beer maker, AB InBev. The deal values Camden Town Brewery at around £85 million – Camden declined to comment on the value. The takeover drew immediate criticism from craft beer purists, many of who view the major brewing companies with suspicion. James Watt, one of the founders of craft beer group Brewdog, rounded on his rival for selling out to a global behemoth of the drinks industry. He said Brewdog would no longer stock any Camden Town beers in its bars because it does not sell drinks made by AB InBev. Brewdog even released a video onto social media showing one of their bartenders removing Camden Hells Lager from their menu. Long-time fans of Camden Brewing Company also expressed their disappointment. AB InBev, which makes world known beers like Corona, Becks, Budweiser and Stella Artois is buying 100 per cent of the 5-year-old brewery. Iain Newell, European director of specialities and craft beer at AB InBev, added: “Camden Town Brewery is a creative business with a great range of brands that will complement our existing portfolio. “We will support their ambitious plans for the future, using our expertise and global distribution network to help them get their great beer to more people.” Camden Town Brewery, launched in 2010, now employs 95 people having sold 12 million pints in 2015. The beer is available in more than 1000 pubs and is available in certain supermarkets. Camden plans on building a second brewery in London next year to add to the production it currently has from its Kentish Town brewery. The deal between Camden Town Brewery and AB InBev is expected to be completed by the first week of January.

Called the MORPHotel, this cross between a hotel and a cruise ship is the work of Turin native Gianluca Santosuosso, who has envisioned a hotel with the ability to adapt and move with the ocean currents. The “floatel” ecosystem is developed with a linear, spinal structure about a half a mile in length that changes shape based on the currents. It is designed to slowly travel around the world, docking in cities to let passengers board or disembark. It would be composed of individually connected room capsules, restaurants and luxury facilities, such as a pool. The floating hotel would also feature a helipad so passengers would be able to fly aboard regardless of where it is in the world. Guests would get an ever-changing view from their rooms because the craft will be constantly moving across the ocean -but at a rate slower than an average boat.

St. James’ Group to create a Hotel Indigo in Bath St James’s Hotel Group, a longstanding partner of InterContinental Hotels, has announced that it is building a new 117-bedroom boutique hotel in Bath, which will operate under IHG’s Hotel Indigo franchise. The new hotel will become Hotel Indigo Bath and will be created on the site of Pratt’s & Halcyon hotels in the area. Rather than being a new-build, the new hotel will be completed through a comprehensive refurbishment of a number of Grade-I listed Georgian buildings in the South Parade, including Pratt’s Hotel, The Halcyon and a neighbouring property. Pratt’s Hotel will be temporarily closed from 4th January and The Halcyon from the end of January for the work to take place. This will be St James parent company Somerston’s first Hotel Indigo property and forms part of a larger portfolio of Hotel Indigo hotels being developed by the

group - a clear vote of confidence in the brand. The hotel is expected to open towards the end of 2016. Shaun Robinson, managing director of St James’, commented: “It is good to be starting on site after many months of planning. This is such a good opportunity to create an outstanding boutique hotel right in the heart of Bath, one of the UK’s most popular tourist destinations, and Hotel Indigo is just the right brand.” Every Hotel Indigo property is designed to reflect the local neighbourhood and Hotel Indigo Bath will be no exception. From the exterior architecture to the hotel’s interior design and locally inspired menus; every Hotel Indigo is unique to its surroundings, and no two hotels are the same.

Four-star Oxford hotel bids for expansion A plan to expand a fourstar hotel in Oxford by 48 bedrooms has been submitted to the local City Council. The Oxford Spires Four Pillars currently consists of 174 bedrooms but a proposal has been launched by the hotel’s owners to build a 18room block at the back and a 30-room block at the front. Also included in the plans is a project to expand the existing restaurant and bar into

the current car park, which isn’t being used by guests at the moment. Oxford City Council is aiming to make a decision on the plans by Wednesday March 23. The plans, the biggest since the hotel was built in 1999, come as a £5.5m, 83-bedroom Travelodge opened at the bottom of Abingdon Road last month. Oxford Spires said that the plans were not in response to the new budget chain’s arrival.

Once you have finished the delightful Om Ali dessert, a traditional Alexandrian third course. You will be able to join the fun downstairs at the bar and get to meet some regulars as well as speak with Aladin and his welcoming bar staff. High five for Chantelle Lighting’s design excellence Turning designers’ ideas into a stunning reality is all part of the job for the team at Chantelle Lighting, but now some of their hard work has been praised in a prestigious industry awards event.

Designers who work in partnership with Chantelle entered 13 of their recent bar, restaurant and pub design projects into the international Bar and Restaurant Design Awards and five have made it through to the judging stages in four different categories. Beef and Pudding in Manchester and Jinjuu in Soho, London are finalists in the Standalone Restaurant category, One over the Ait in Brentford is up for the Pub award, Dirty Blonde in Brighton is shortlisted for the Nightclub award whilst Topolabamba in Glasgow is a finalist in the Fast/Casual category. The shortlisted entries feature a wide range of bespoke lights manufactured by the team at Chantelle Lighting, as well as fittings from their District, Industrial and Retro ranges. “From hotel and bar chains through to independent pubs and nightclubs, we are lucky to work with acclaimed designers on a vast range of projects,” said Chantelle Lighting managing director Anthony Holly. “With over 25 years’ experience of

To keep things fresh, the organisers of Caffè Culture 2016 are delighted to announce an exciting range of new show features too. The popular Business Theatre programme is expanding into two theatres this year, each providing tailored and relevant seminars, advice sessions and workshops for coffee businesses at different stages of their growth. A new masterclass programme will offer interactive demonstrations on how to create signature drinks as well as blind tasting sessions. There will also be a new cupping area for visitors to hone their coffee-tasting skills. Research by the Caffè Culture Show in 2015 revealed that nearly six in ten (59.2%) owners of independent coffee shops and cafés saw business performance improve in recent years. A large majority (92%) felt confident and optimistic about their business in 2015 with expectations of turnover growth (80%). Taking the temperature of the

sector again this year, the show’s Cafeconomy study will explore how operators are feeling about the state of the market a year down the line. The Vauxhall restaurant which is really well located in the heart of Vauxhall, just a stone’s throw away from the all public transport locations. I was pleasantly surprised & extremely happy to be greeted by the owner himself, the lovely Philip Reicherstorfer. The Counter is a fabulous place with a sophisticated touch both in terms of ambiance and design but also the cooking. At the same time the experience is very informal and the service was absolute fantastic - prompt and professional, the staff are incredibly friendly, all of which made us very welcome and provided a good service, considering how busy it was the crew did an excellent job. Food wise, the menu is pretty eclectic and hence offers an opportunity for a quick bite on the go or a full proper 3 course dinner. A great place to catch up

with friends whilst in the city or a meal before hitting Vauxhalls vibrant nightlife, as was the case for myself & my guest the beautiful Hannah The restaurant has very funky decor, and tables are lined up as booths along the two long walls, meaning there is good privacy. There’s a touch of grandeur about the space, with a long shimmering bar skirting much of the elongated (it’s 60m long) space, while its railway arch setting makes the desirable industrial look an easy one to achieve. Bright bar-hugging lights and elaborate modern chandelier-style fittings ensure there’s a fair bit of Vauxhall kitsch amongst the Soho cool. Entertainment was fabulous with the hilarious & world famous Lady Diamond, keeping permanent smiles on all diners’ faces. I am very much looking forward to returning for the long list of various entertainment I had the pleasure of sitting with Philip for 20 minutes talking about the birth & design of my now favourite place to eat in South London. Philip has a vast knowledge of the restaurant & food industry, the Counter being proof that hard work & dedication pays off with plans of expansion throughout London. What is EPoS? What EPoS is will depend on who you talk to. EPoS (Electroinc Point of Sale) was the next level of progression from ECR’s (Electronic Cash Registers). Lots of clients within a range of industries still use their EPoS till system in the same way as they would an ECR but most EPoS systems can do so much more. Depending on the supplier of software and the level clients want to take loading their stock and products in to the system it can become a very powerful business tool. EPoS systems with the hospitality market can deal with on-line orders, deal with multiple methods of payment, process orders from a range of input methods and deliver business owners detailed reports and business critical information at the touch of a button.

By altering the configuration of the software setup the software can be programmed to give the very different requirements of the service through the same terminal. Hotels, particularly large hotels need additional functionality, and although Emperium Software is used in a number of smaller hotels, the demands of larger hotels are not catered for at its current level of development. This may change in the future.
