Conversar de Pisco siempre va a ser difícil porque no tiene cuando acabar, podemos compartir horas enteras discutiendo distintos puntos de vista sobre el tema y siempre nos faltará tiempo. Es que el Pisco es tertulia, charla, recuerdos, nos une, además no es elitista pues en la conversación participan distintas personas de todos los niveles; no es necesario ser un bebedor, basta con tener interés en conocer su magia que contagia, historia, tradición, viñedos, climas, terruños, bodegas y porque no discutir la problemática actual del sector, en fin hay mucho que decir y aprender de él.

Dear Readers Talking about Pisco will always be a difficult task because it will never end; we can go on for hours and hours tackling different points of view, and we’ll always need more time. That’s because Pisco does not only consist of Pisco; it’s made of get-togethers, chats, memories, it brings us together, and Pisco isn’t elitist because people from different socioeconomic levels can participate in the conversation. You don’t even have to drink Pisco to enjoy it; all you need is an interest in understanding its magic, history, tradition, vineries, climates, its homeland, and bodegas.

And why shouldn’t we also talk about the sector’s current issues as well?

Corrían los años finales de los noventas y comienzos del 2000 cuando para entonces hacían unos siete u ocho años que mi esposa y yo nos afincamos en Nueva York. No viene al caso entrar en pormenores del porqué de ese viaje pero una pequeña reseña del motivo principal ayudará a entender ese amor y cariño por lo nuestro, por nuestro Perú.

Soy arquitecto y músico de corazón y la razón principal de nuestro traslado aquí fue la especialización de mis conocimientos de guitarra aplicados al jazz. y la práctica de mi profesión. Mi intención era lograr fusionar nuestra música, sobre todo la afro peruana con el jazz, combinación que hoy practican y desarrollan muy buenos músicos peruanos. Como es típico con los inmigrantes “temporales”, diversos motivos o circunstancias hacen que en su mayoría terminemos echando raíces aquí.

Traje conmigo a estos lares nuevayorquinos, mi acendrado apego a nuestra tierra, su cultura y su grandeza pese a que por esos años las noticias del Perú eran en su mayoría negativas. Pero si durante esos aciagos años y a pesar de todo siempre salía en defensa de lo nuestro, con mayor razón, cuando se revirtió la situación. Entonces se empezaban a inaugurar los primeros restaurantes “Nuevo Latino” que ostentaban algunos platos peruanos -mas de nombre que de sabor- pero ya era un primer paso hacia lo que vendría después.

Entre los primeros “chefs” latinos se hizo famoso Douglas Rodríguez, hijo de inmigrantes cubanos y estudioso de varias cocinas latinas. Estuvo en el Perú, particularmente en el norte recogiendo sabores de comidas y tragos peruanos, para luego en colaboración con un descendiente de irlandés

A Story in New York My wife and I made it through the end of the 90s and by the start of the new millennium we had been settled in New York for some 7 or 8 years. It isn’t important to discuss the details of why we made the trip, but a small summary in regards to our principal motive will help the reader understand the love and affection we have for our Peru.

I am an architect and a musician at heart, and the principal reason that we moved here was the deepening of my knowledge of the guitar as applied to jazz music, as well as practicing my profession. My intention was to meld our music, above all, Afro-Peruvian music, with jazz, a combination that today many very good Peruvian musicians develop and practice. As is typical with “temporary” immigrants, in the end, different motives or circumstances make the majority of us put down roots here.

I brought with me, to this New York neck of the woods, my unblemished attachment to our land, its culture and its grandeur despite the fact that over those years the news in Peru was, principally, negative. But if during those tragic years and despite everything, I always defended what was ours, I did so even more so when things changed. It was then that the first “New Latino” restaurants were inaugurated which flaunted some Peruvian dishes--more in name than in flavor--but it was the first step towards what would come next.

Among the first Latino chefs to become famous was Douglas Rodriguez, a son of Cuban immigrants and student of various Latin cuisines. He spent time in Peru, particularly in the northern regions, collecting flavors and Peruvian drinks, to later collaborate with a man of Irish descent in the

abrir el famoso restaurante Chicama de la calle 18 en Manhattan. El primer restaurante de ese tipo fue el Patria en Park Avenue y la calle 23 y en esos locales de calidad, aparecen por orden de permanencia y antigüedad en este país, junto con la comida latina, los tragos latinos, primero la margarita de México, el mojito de Cuba, la caipirihna de Brasil y por supuesto el Pisco Sour…

Allí es que en estos nuevos restaurantes que se multiplicaban por Manhattan y que recorrimos una y otra vez, al revisar la carta con los platos y tragos latinos, en la descripción que solía acompañarlos, encontrábamos algunas veces definiciones como esta: Pisco Sour, Brandy chileno mezclado con

...ya en el Menú figuraba: Pisco Sour, cocktail peruano elaborado con Pisco original del Perú, y si no, pregúntenle a José Luna, teléfono tal...

limón, azúcar, etc. etc. Entonces un amigo periodista argentino y yo, en una suerte de sociedad peruano-argentina, emprendimos la campaña de aclarar y promover la autenticidad y origen del Pisco, llamando muchas veces y cuando era necesario a los gerentes de los locales en donde nos encontrábamos, para explicarles de forma técnica y con pruebas, porqué el Pisco es peruano.

Alguna vez en uno de esos restaurantes cuyo nombre era Sonora, el gerente ante nuestra insistencia, respondió que iba a cambiar la carta pero para mayor seguridad por si alguien lo refutaba o reclamaba, pidió mi nombre y mi teléfono, a lo que accedí gustosamente. Por supuesto nadie nunca me llamó…

Un tiempo después regresamos al mismo local para cerciorarnos de que había cumplido y para nuestra grata sorpresa, ya en el Menú figuraba: Pisco Sour, cocktail peruano elaborado con Pisco original del Perú, y si no, pregúntenle a José Luna, teléfono tal...

Esto me llenó de orgullo pues hoy en día muchos restaurantes y bares que ofrecen Pisco Sour, lo presentan como lo que es, Peruano.

Como todo en esta ciudad, cuando crece, crece exponencialmente, ya no podríamos seguirle el paso a todos los locales que expenden nuestra bebida de bandera, pero eso sí, gracias a la labor de muchos peruanos como es mi caso, que con paciencia y cariño por lo nuestro hemos salido y seguiremos saliendo en defensa de nuestro Pisco, hemos ganado la delantera y ratificado una vez mas que el Pisco es de origen peruano, de una ciudad al Sur de Lima llamada Pisco, y que su combinación exquisita da lugar al inigualable y único, Pisco Sour.

The first restaurant of this kind was El Patria on Park Avenue and 23rd Street. In these quality restaurants, which appear to be under an order of permanence and seniority in this country, Latin drinks are served along with Latin food, the first of which is the Margarita of Mexico, the Mojito of Cuba, the Caipirihna of Brazil and of course, the Pisco Sour…

In those new restaurants that were multiplying across Manhattan and that we visited time and time again, we would always check the menu for Latin drinks and dishes. In the descriptions that normally followed, we sometimes found definitions such as this: Pisco Sour: Chilean Brandy mixed with lime, sugar, etc.

Then a friend of mine, an Argentine reporter and I, in a sort of PeruvianArgentine Society, launched a campaign to clarify and promote the authenticity and origin of Pisco. Many times, and when necessary, we called the managers of the restaurants in order to explain to them in technical terms and with proof, why Pisco is Peruvian.

Once in one of those restaurants which was called Sonora, the manager, at our insistence, responded that he was going to change the menu, but for increased assurance against the possibility that someone would refute the claim, or even complain, he asked for my name and number, which I gladly gave him. Of course, no one ever called me…

Sometime later, we returned to the same location to make sure that he had

Seeing that filled me with pride, as today many restaurants and bars that offer Pisco Sour present it for what it is: Peruvian.

Like everything in this city, when it grows, it grows exponentially. We can no longer track down every restaurant that serves our national drink, but this we can do: thanks to the labor of many Peruvians, like in my case, who have gone ahead with patience and affection, we continue to defend our Pisco. We have taken the lead and ratified, once again, that Pisco is of Peruvian origin, from a city south of Lima called Pisco, and that an exquisite combination has given birth to the unequalled and unique Pisco Sour.

Continuing with our section “Getting to know our Pisco,” this month we present another of our nonaromatic Pisco varieties: the Mollar.

Uva Mollar

Mollar Grape

Nombre: Mollar, es una variedad no aromática de color cobrizo lacre.

Se produce en muy poca cantidad y por lo general se le encuentra mezclada con los sembríos de quebranta.

Mollar Grape Name: Mollar.

It is a non-aromatic variety with a bright red copper color. It is generally produced in small quantities and often found growing in the shade of Quebranta grape plants.

Origen Geográfico: Islas Canarias España Origen del Nombre: La uva Mollar, que puede ser blanca o tinta, deriva su nombre del modo de conducción: Una vara de molle (aguaribay o pimiento) como tutor, que al echar raíces crece junto a la cepa ofreciéndole sostén sobre el tronco y las ramas hasta notable altura, con elevada producción y excelentes condiciones fitosanitarias atribuidas a la buena ventilación y a la intensidad aromática de las semillas del molle, que impiden la proliferación de enfermedades criptogámicas. Aún pueden verse viejas cepas conducidas sobre troncos de molle, en mollar.

Sinonimias: Mollar Cano: de alto contenido en azúcar más apreciada para mistelas y dulces, sus vinos, de escaso color, no son de gran calidad. También: Almuñeco (La Palma), Listan Morado, Listan Negro (Tenerife), Listan Prieto, Mollar negro, Negra común (en Lanzarote.

Características Ampelográficas Planta: Variedad de color cobrizo lacre Racimo: De forma cónica, mediano, sueltos a ramas Fruta: Bayas de forma ovalada mediano de color rosado violáceos diámetro promedio 1.3 cm.

Origin: The Canary Islands, Spain Name Origin: The Mollar grape, which can be white or red, derives its name from the way it is grown and shaped. A stick from the “molle” plant (which produces either Aguaribay or peppers), is planted as a tutor, or a plant for the Mollar grape to graft onto. When the molle plant produces roots, it grows along with the grape variety, offering the plant a means of support along its trunk and branches until it reaches considerable size. This helps ensure elevated production levels, and excellent plant conditions due to the good ventilation and aromatic intensity of the molle’s seeds, which prevent the proliferation of cryptogamic diseases. One can still see old grape vine stock which has been grafted upon the molle trunk.

Other varieties: Mollar Cano has a high sugar content which is most fully appreciated when served in hot punches, or sweets. Its wines, which are light in color, are not great quality. Also, Almuñeco (La Palma), Listan Morado, Listan Negro (Tenerife), Listan Prieto, Mollar Negro, Negra común (in Lanzarote).

Como parte de las actividades del VIII SIPAL, se llevaron a cabo los cursos internacionales de Ron, Cerveza, Pisco y Vino teniendo una gran acogida por parte de estudiantes, profesionales e investigadores de los diversos rubros. Siendo muy solicitado nuestro Curso de Pisco, ya que fue el primero en desarrollarse en nuestro país, ofreciendo una parte práctica que incluía el análisis cromatográfico principal instrumento para la determinación de los compuestos volátiles de los destilados.

La siguiente sede designada para realizar el IX SIPAL 2013 fue Cuba representado por el Dr. Marcelo Marcet, el cual espera que nuestro país siga la línea investigativa sobre el Pisco iniciada por la Ing. Beatriz Hatta y el Ing. Juan Carlos Palma.

Cabe resaltar que nuestros amigos pisqueros Giovanna López, Carlos Barriga y Livio Pastorino mostraron las bondades culturales y souvenirs de nuestro Pisco, los que fueron muy requeridos por los extranjeros visitantes que se llevaron parte de nuestra cultura a sus respectivos países.

As part of the VIII SIPAL activities, there were international competitions involving Rum, Beer, Pisco and wine, which were well attended by students, professionals and researchers from various areas. Our course on Pisco was very sought after, as it was the first of its kind developed in our country. The course offered a practical session that included chromatographic analysis as the principal instrument to determine the volatile compounds in distilled alcohols.

The site for the IX SIPAL in 2013 will be Cuba, and will be led by Dr. Marcelo Marcet, who hopes our country will continue with its investigations on Pisco, which were initiated by Engineers Beatriz Hatta and Juan Carlos Palma.

It is important to note that our Pisco friends Giovanna Lopez, Carlos Barriga and Livio Pastorino demonstrated Peruvian cultural goodness through the gift of Pisco souvenirs, which were solicited by our foreign visitors as a way to take part of our culture back to their respective countries.

¿Sabías que hay peruanos con pelo rubio y ojos azules que viven en la selva central de Perú? ¿Sabías que también hablan alemán y bailan polka?

Aproximadamente a 10 horas de Lima se encuentran los pueblos de Oxapampa y Pozuzo, donde hay una colonia austro-alemana, que todavía mantiene muchas de sus costumbres y comidas tradicionales. Lo más interesante de esta colonia es la mezcla única de las culturas peruana y alemana. ¡Si tienes la oportunidad de visitarlo, definitivamente vale la pena!

Historia Los pueblos de Pozuzo y Oxapampa se fundaron en 1891 por colonos alemanes y austríacos. La colonización se originó en 1853 con un acuerdo entre Baron Damian Freiherr von Schutz-

Holzhausen y el gobierno peruano para traer 10 mil colonos de Prusia. Después de un viaje infernal en barco por cuatro meses, los colonos llegaron al Callao, cerca a Lima, donde encontraron una guerra civil. Mientras algunos de los colonos se quedaron en Lima, la mayoría se mudaron a la selva por el puerto de Huacho, y hasta su destino final, hoy llamado Pozuzo.

A pesar de que 10 mil colonos emigraron de Prusia, solo 170 terminaron el viaje de dos años y llegaron a Pozuzo; algunos murieron pero la mayoría que no terminaron en Pozuzo, se afincaron en pueblos a lo largo del camino hasta el pueblo de la selva.

En 1891, Padre José Egg estableció a Pozuzo como un pueblo importante para la cría de ganados.

Hoy en día, aproximadamente un tercio de los habitantes de Pozuzo y Oxapampa son descendientes de los colonos alemanes.

An approximate 10-hour journey from Lima will take you to the towns of Oxapampa and Pozuzo, the site of a German-Austrian colony, which still today maintains many German customs and foods. The most interesting thing about this colony is its unique mix of German and Peruvian culture. If you have the opportunity to visit, it is definitely worth it!

History The towns of Pozuzo and Oxapampa were founded in 1891 by German-Austrian colonists. The colonization originated in 1853 with an agreement between Baron Damian Freiherr von Schutz-Holzhausen

and the Peruvian government to bring 10,000 colonists from Prussia.

After a four-month rough boat trip, the colonists arrived at Callao, near Lima, where they encountered a civil war. While some of the colonists remained in Lima, most moved to the jungle through the Port of Huacho, and toward their final destination, which is today called Pozuzo.

Although 10,000 colonists left Prussia, only 170 actually finished the 2-year journey to Pozuzo, with some dying but most settling in towns along the way. In 1891, Father José Egg established Pozuzo as an important cattle-raising town.

Today about one-third of the inhabitants of Pozuzo and Oxapampa are descendants of the German colonists. It is common to see locals with blonde hair and blue eyes, and traditional German wooden chalets can be found dotted across the countryside.

¿Qué hay para hacer?

Si bien la historia y la cultura del área es su principal atracción, hay varias actividades en las que puedes participar. Puedes hacer un tour y explorar una cueva de murciélagos en Oxapampa, y hay una hacienda de caña de azúcar muy cerca también. No muy lejos de Oxapampa esta la Catarata El Encanto, que está compuesta de 3 cataratas y cuenta con grandes piscinas. Cerca a Oxapampa, el Parque Nacional de Yanachaga es una reconocida reserva de biosfera de la UNESCO. Sirve para albergar varias orquídeas, cedros, venados, 427 diferentes especies de pájaros y el oso de anteojos. También es el hogar de las comunidades nativas Yánesh y Ashánika. Definitivamente merece una visita!

En Pozuzo los paseos en balsa y canotaje son actividades populares. La iglesia San José, del siglo XVIII, se ubica en la plaza central así como el Museo Schafferer, que tiene una pequeña pero muy interesante colección de antigüedades y fotos de la época colonial. También puedes caminar y ver una casa tradicional.

La caminata es hermosa, y permite apreciar la variedad de flora y fauna. Una vez que llegues a la casa, puedes visitar el Museo Egg Vogt. Cerca al museo está el Recreo Guacamayo, hecho de piscinas naturales, y un mirador para ver los Gallitos de las Rocas, el pájaro de bandera del Perú.

Es muy lindo visitar esta área durante los feriados. En Marzo y Abril, durante Semana Santa, hay muchas celebraciones y fiestas, comida y bailes. La fecha cambia cada año, así que asegúrate de revisar las fechas antes de ir a visitar el área. El festival Selvámonos, un festival anual que se celebra en Octubre, conmemora la historia cultural de estos pueblos. El festival promociona la comida local (una mezcla peruana y alemana), artistas y bailes, y hasta viene el circo para entretener! Si estás en el área durante Octubre, simplemente no puedes dejar de visitar este lugar!

Para llegar Hay buses directos de Lima a Oxapampa por Transportes Oxapampa y Lobato. Es un viaje de 10 horas, pero si no quieres ir directo, también puedes viajar primero a San Ramón o La Merced, y después tomar un colectivo hasta Oxapampa. Para ir a Pozuzo, hay cuatro colectivos que salen a diario desde Oxapampa.

While the history and culture of the area is its main attraction, there are also a number of activities you can participate in here.

Oxapampa has a bat cave, which you can tour and explore. There is also a sugarcane farm nearby, and not far outside Oxapampa is the Catarata El Encanto (The Waterfalls of Enchantment), which are 3 sets of waterfalls, with deep plunging pools. Near Oxapampa, the Yanachaga National Park is a recognized UNESCO biosphere reserve. It serves as a home to various orchids, cedars, deer, 427 different bird species and the spectacled bear. It is also the home to the Yánesh and Ashánika native communities. Definitely worth a visit!

In Pozuzo, rafting and canoeing are popular activities. In addition, the central plaza is home to the 18th century San José church, and the Schafferer Museum, which holds a small but very interesting collection of antiques and photos from colonial times. You may also take a walk to see a traditional house. The walk is beautiful – it gives you a great opportunity to appreciate the wide range of flora and fauna, and once you get to the house, you can also visit the Museo Egg Vogt. Nearby is Recreo Guacamayo, which is made up of natural swimming pools, as well as a viewing point for Gallitos de las Rocas, Peru’s national bird.

This area is especially great to visit during the holidays. In March/ April, during Holy Week, there are many celebrations and parties, food and dancing. The date changes every year though, so check before you go. The Selvámonos festival, an annual festival held in October, celebrates the cultural background of these towns. The festival promotes the local food (a mix of German and Peruvian), artists and dances, and even has circus acts as entertainment! If you are in the area during October, this is definitely one place you can’t miss!

Getting There There are direct buses from Lima to Oxapampa through Transportes Oxapampa and Lobato. This is a 10-hour trip, but if you want to break it up, you can book a trip to San Ramon or La Merced, then take a colectivo to Oxapampa. To get to Pozuzo, you can take one of the four daily colectivos from Oxapampa.

A little history…

José María Arguedas (el más importante escritor de temas indígenas del Perú) relata una leyenda de la aparición de Lúcuma (fruta de nacimiento peruana, hermosa y exquisita); pero también existe otra muy parecida que generalmente se escucha en la región de la Sierra Central Peruana, principalmente en Huánuco (pueblo de Aguamiro) y Ancash (pueblo de Chiquian). Según esta leyenda, el sacerdote y Padre de la Agricultura Andina, Huatio, aparece en el mundo tomando la forma de un indio andrajoso al que todos despreciaban y echaban en cara su suciedad. Huatio es el artífice de los andenes y los canales de irrigación.

José María Arguedas (the foremost Peruvian writer who covered indigenous issues in Peru), told the story of how the lúcuma, a beautiful and exquisite fruit of Peruvian origin, came to be. However, there is another tale that is very similar to the story often heard in the Central Peruvian Andes, principally in Huanuco, as told by the people of Aguamiro, as well as another version from Ancash, as told by the people of Chiquian.

According to this legend, the priest and father of Andean agriculture, Huatio, appeared on Earth in the ragged form of an Indian and was hated by everyone. People even threw dirt in his face. Huatio is thought to be the craftsman of the Andes and their irrigation channels.

During that time, there was a holy woman named Lúcuma. She was very beautiful, proud, and was so contemptuous that no man would pay attention to her. The story says that while she was resting in the

shade of a tree called “lugma” or “lúcuma,” Huatio appeared in the form of a beautiful bird. He caused a fruit, in which he had previously deposited his semen, from the tree to fall towards the woman. Lúcuma, when she took hold of the fruit, became pregnant, even though she had never been with a man. When her son was born, she breast-fed him. After a year, when the child began to move about, he asked the men of the village to clarify which one of them was his father.

Se reúnen en las faldas del PUNCHAO (antiguo nombre del Sol que significa Luz, claridad, en el hoy departamento de Huánuco), y como todos los hombres quieren casarse con la diosa, llegaron con su mejores vestidos y prendas, de acuerdo a sus rangos. Lúcuma pide a los hombres que digan quien era el padre y ante el silencio de todos, decide que el niño identifique a su padre, este llego gateando hasta Huatio y se quedó a sus pies. Cuando el niño llega donde Huatio, que tiene la forma de un indio sucio y andrajoso, lo abraza y se ríe alegre. Lúcuma siente vergüenza por tener un hijo de hombre andrajoso, de modo que decide dejar el pueblo y huir hacia las altas montañas. Como Huatio piensa ganarse sus favores, se viste con ricos atavíos de oro pidiendo a Lúcuma que se fije en él. Pero la mujer, llena de orgullo, no quiso voltear la cara y decide caminar más rápido. Lúcuma llega a las montañas más altas y empieza a llorar su desventura y sus lágrimas son negras. Se dice que del llanto amargo nace una alga que tiene forma de lágrima y es de color oscuro, cuyo nombre es CUSHURO o MURMUNTA (del quechua HIKUNTA, llorar amargamente) o LLULLUCHA (del quechua LLACHAPA que significa andrajoso pequeño).

La Lúcuma es una fruta hermosísima de piel verde, pulpa amarilla y corazón o hueso marrón brillante, pero es el caso que la pulpa es áspera y su hueso (semilla) es muy duro y está cubierto de una película marrón muy impermeable, los indios identifican esta descripción de la fruta como la descripción de una mujer orgullosa.

The Lúcuma is a beautiful fruit with a green peel, yellow pulp and a shiny brown pit. The pulp is coarse and the pit is very hard and covered with an impenetrable brown film. The Indians in the region identify the description of the fruit to be similar to the description of the proud woman. It just so happens that in Peru this fruit ripens during the months of March and April, just as the Cushuro, Murmunta or Llullucha plants ripen.

Al término del embarazo nace un hijo, lo amamanta y después de un año, cuando el niño empieza a desplazarse, pide llamar a los hombres para que se aclarara quien era su padre.

They gathered in the skirts of the PUNCHAO (which is the ancient name of the Sun. It means light, clarity, and is a location in the department of Huanuco). Since all the men wanted to marry the goddess, they arrived in their best clothing, all according to their rank. Lúcuma asked the men to tell her son who his father was. As they all kept silent, she told her son to identify his father. He crawled to Huatio, and sat at his feet. When the child reached Huatio, who had again taken the form of a dirty and ragged Indian, the child hugged him and laughed happily. Lúcuma felt so embarrassed to have had a son by such a dirty man that she decided to leave the village and flee to the high mountains. Huatio thought that he would be able to change her mind, so he dressed himself with rich gold adornments and asked Lúcuma to look upon him. But the woman was so full of pride that she didn’t want to turn her head and look at him. She began to walk even faster. Lúcuma reached the highest mountains and began to cry because of her misfortune.

Her tears were black. It is said that her bitter tears formed an algae that is in the shape of a teardrop and is black in color. It is known today as Cushuro or Murmunta (from the Quechua word Hikunta, which means to cry bitterly), or Llullucha (from the Quechua word Llachapa, which means little man in tatters).

Merengado de Lúcuma Ingredientes: 3 claras de huevo 1\2 tza (200gr ) de azúcar granulada

Para el relleno: 4 lúcumas peladas y picadas en gajos 1 tza de azúcar granulada 1 tza de agua

Para el chantilly: 2 tzas de crema de leche 1\4 de azúcar impalpable

Preparación:

Precalentar el horno a 110ºC (210ºF) engrasar y enharinar una lata de hornear grande. Dibujar 4 círculos de aprox. 20 cm de diámetro. Batir las claras de huevo con el azúcar a punto de nieve. Con una manga para decorar rellenar los círculos dibujados en el molde. Hornear a temp. baja x 2 horas, hasta que el merengue este crocante y seco pero no dorado.

Para el relleno en una olla a fuego medio cocinar el agua, el azúcar y el jugo de limón, hasta que el azúcar se haya disuelto unos 10mn aprox., dejar enfriar. Cuando el almíbar este lo suficientemente frio como para manipularlo licuarlo junto con la lúcuma y luego pasar la mezcla x un tamiz para descartar cualquier impureza. Cuando ambas preparaciones, el merengue y el relleno hayan enfriado armar los

merengues colocando uno encima de otro y rellenándolos con la crema de lúcuma.

Llenar una manga para decorar con el resto de la lúcuma y ponerle una boca angosta para decorar la torta. Sobre un bol con hielo batir la crema con el azúcar para hacer la crema de chantilly, esto hará más compacta la crema, cubrir el costado de la torta con una fina capa de crema de chantilly. Decorar los bordes superiores y la base de la torta con pequeñas bolitas de crema.

Servir con salsa de chocolate y chocolate rayado en forma de rizos.

Esta preparación se puede variar por crema de chirimoya y una capa de manjar blanco.

Lucuma Meringue Recipe: Preheat the oven to 110 C (210 F). Grease and flour a large baking pan. Draw 4 circles of approximately 20 cm of diameter. Beat the egg whites with the sugar until stiff. With a pastry bag, fill the circles drawn on the pan. Bake at a low temperature for two hours, until the meringue is crisp and dry, but not golden.

Filling: In a pot over medium heat cook the water, the sugar and the lime juice until the sugar is dissolved (aprox. 10 minutes). Let cool. When the sugar is cool enough to handle, liquefy it along with the lúcuma. Strain the mixture and eliminate all impurities.

When both preparations (the meringue and the filling) are cool enough, put the meringues on top of one another and fill with the lúcuma cream. Fill a pastry bag with the rest of the lúcuma cream, and fit with a wide cake decorating tip.

Over a separate bowl of ice, beat the whipping cream and sugar for the Chantilly cream.

The ice will make the cream more compact.

Cover the side of the cake with a fine layer of Chantilly cream. Decorate the edges and the base of the cake with tiny lucuma cream balls.

Serve with chocolate sauce and garnish with chocolate curls.

This dessert can also be made with chirimoya instead of the lúcuma, and with a layer of manjar blanco.

Luego que Ramón Castilla (Presidente 1845-51, 1858-62) abolió la esclavitud, la gran demanda de mano de obra en las haciendas costeñas fue suplida por los culíes, quienes eran cargadores y trabajadores con escasa calificación contratada de India, China y otros países asiáticos.

El lomo saltado es un plato criollo típico del Perú, fruto de la fusión de la sazón de dos gastronomías milenarias, la peruana y la china y fue llamado inicialmente «lomito de vaca», «lomito saltado» o «lomito a la chorrillana».

La clase alta y media estaba en contra de estos sitios y comerlo no siempre fue bien visto, ya que estos eran comedores populares manejados por chinos y tanto el lomo saltado como el tacu tacu, son platos surgidos de la necesidad que tenía la gente por comer en restaurantes populares donde se comiera bien y a un precio muy bajo.

En 1915 apareció el primer registro del lomo saltado en un artículo periodístico ya que en los recetarios de la época no figuraba este plato. Recién en 1928 se incluyó la carne saltada y el lomo a la criolla, que al final vendrían a ser la versión flambeada que se come hoy. La influencia china de Cantón se demuestra por el uso de la técnica de cocción en sartén (Wok de acero).

Es fácil de preparar y contiene un conjunto de sabores, donde cada ingrediente aporta lo suyo.

Originalmente se servía sin papas y con muchas verduras, luego las papas que acompañaban el plato eran sancochadas y no fritas.

Hoy en día el lomo saltado es un plato insignia peruano, muy difundido, apreciado y también uno de los más consumidos popularmente en el Perú, representando dignamente a nuestra incomparable cocina.

Lomo Saltado is a typical Peruvian dish, which is the product of the fusion of two cuisines, Peruvian and Chinese, which date back thousands of years. The dish was originally called lomito de vaca, lomito saltado, and lomito a la chorrillana.

Saltado, in Spanish, comes from the term salteado, or saute, which is the technique of frying food in a pan or a wok over a high flame.

In those days, the dish was only prepared in the back areas or “chinganas” of the Central Market of Lima, and in the northern areas of the province, such as Huacho, Paramonga, Barranca and Huaral.

The upper and middle class of Peru were against these areas, and eating there was not always well-looked upon. These were the popular areas of the masses, led by the Chinese. Thus, both the lomo saltado and the tacu taco, which are now popular traditional dishes, came from the necessity of the people to eat in lower-class restaurants, where they could eat well, but at a very low price.

In 1915, the first record of lomo saltado appeared in a newspaper article, and not that of a cookbook, as they did not record this dish. Only in 1928 were carne saltada and lomo a la criolla included, which have evolved into the flambéed version that we have today. The Cantonese influence is noted by the use of the wok.

It is easy to prepare, and contains a mix of flavors, where each ingredient brings an important quality.

It was originally served without potatoes, and with a lot of vegetables. Later, the potatoes were boiled, and not fried.

Today lomo saltado is a very typical Peruvian dish, very well known, appreciated and also one of the most popular in Peru. It truly and worthily represents our incomparable cuisine.

En aquellos tiempos sólo lo preparaban en las “fondas” y “chinganas” de los alrededores del Mercado Central de Lima y del norte chico (Huacho, Paramonga, Barranca y Huaral).

Lomo Saltado Ingredientes: 100ml de Pisco Quebranta 1 cdta de ajo pisado 2 cdtas de ají limo picado 1 kg de carne de lomo 1\2 kg de cebolla roja cortada gruesa 1\2 kg de tomate pera en cuartos 1 kg de papa blanca o amarilla 3 ajíes amarillos cortados en tiras finas Salsa de soya a gusto (sillao) Culantro fresco picado Tomillo a discreción Vinagre de vino tinto Sal y pimienta negra Aceite para freír

Preparación: Precalentar el horno a 110ºC (210ºF) engrasar Cortar la carne en tiras de 1 1\2 cm. de grosor Calentar aceite que cubra la base de una sartén o un wok y a fuego medio saltear el ajo y ají limo x 2 mn, subir el fuego añadir la carne y dorar., desglasar con pisco quebranta y flambear.

Sazonar con sal y pimienta y pizca de tomillo fresco.

Retirar la carne de la sartén junto con el jugo para mantener la humedad.

Agregar un poco de aceite a la sartén si es necesario y sofreír la cebolla hasta que este tierna aprox. 1 mn, sazonar con sal y pimienta.

Añadir un chorro de vinagre y continuar el sofrito hasta que se evapore el vinagre 1 mn aprox., la cebolla debe estar ligeramente firme, retirar la cebolla de la sartén y repetir el procedimiento

con el tomate.

En otra sartén freír las papas hasta que estén doradas. Retirar con una espumadera, escurrir sobre papel toalla y poner sal al gusto.

Regresar la carne, cebolla, tomate al wok, añadir ají amarillo y sillao y cocinar x 1\2 minuto. Finalmente agregar las papas fritas y mezclar todo con cuidado. Decorar con culantro fresco picado y servir inmediatamente con arroz blanco graneado.

PD. Se puede sustituir la carne x pollo o camarones y seguir el mismo procedimiento.

Lomo Saltado Recipe: Cut the meat into strips, approximately 1 ½ cm thick Add enough oil to cover the base of a frying pan or wok, and heat over medium heat. Fry the garlic and the aji limo for two minutes, increase heat. Add the meat and brown. Deglaze with Quebranta Pisco and flambé. Season with salt and pepper and a pinch of fresh thyme.

Remove the meat and all juices from pan, reserving the juice to keep the meat moist.

Add a little oil to the pan, if necessary, and fry the onion until tender, approximately one minute.

Season with salt and pepper.

Add a splash of vinegar and continue to sauté until the vinegar evaporates, approximately one minute. The onion should be slightly firm.

Remove the onion and repeat the procedure with the tomato.

In a different frying pan, fry the potatoes until brown. Remove with a slotted spoon, dry on paper towels, and add salt to taste.

Mix the meat, onion and tomato back in the first frying pan. Add the aji amarillo and soy sauce.

Cook for about half a minute. Add the French fries and mix everything carefully. Garnish with fresh cilantro and serve immediately with white rice.

Chicken or shrimp may also be substituted for the beef, following the above procedures.

Mis estudios sobre el pisco a lo largo de los siglos, me permiten afirmar que el personaje más influyente en el desarrollo de nuestra bebida nacional en el siglo XIX fue don Domingo Elías, un iqueño comprometido con el Perú en muchos aspectos. Empresario, político, industrial y agricultor, nació en Ica en 1805 y al terminar sus estudios secundarios, en 1818 viajó a España y Francia donde realizó estudios superiores. Ya de regreso en el Perú en 1825 se dedicó inicialmente a la agricultura pero las circunstancias del momento lo involucraron en la política nacional ocupando la prefectura de Lima durante el gobierno de Vivanco y encargado del ejecutivo cuando Vivanco fue a combatir a Castilla.

Posteriormente sería ministro en varias carteras, diputado por Ica y representante

My studies on Pisco through the years allow me to say that the most influential person in the development of our national drink, Pisco, during the XIX Century was Domingo Elias, a gentleman born in Ica in 1805 who was committed to Peru in many ways. He was involved in business, politics, industry and agriculture.

Soon after finishing high school he traveled to Spain and France where he completed his education. In 1825 Elias returned to Peru and dedicated himself to agriculture. However, the circumstances of the times got him involved in national politics. He was the Prefect of Lima during the government of José Antonio de Vivanco, and was left in charge of the presidency when Vivanco had to leave the capital to fight General Ramón Castilla. Ahora intentaré resaltar la actividad de don Domingo en el tema que nos interesa.

Ya Tauro en su reseña dice sobre sus aportes agrícolas a Ica; “Al volver (1825) consagróse a la agricultura y, animado por un pujante espíritu de empresa, inició el cultivo del algodón en gran escala, mejoró el cultivo de la vid, empezó a producir aguardiente en lugar de vinos.”

Estos esfuerzos fueron tan importantes que los viajeros que visitaron Pisco en esos años no pudieron menos que admirarse de sus logros.

In regards to education, Elias was the founder of Colegio Guadelupe, which had as director the Spanish educator Sebastian Lorente. Don Domingo ran for President against Echenique but lost and when the scandals of the “Consolidación” became evident, he pointed out that the money earned from the guano exports would not last forever. In 1854 Elias sided with Ramón Castilla and fought against Echenique until he was defeted. After the victory of Castilla Elias went to France for two years and only returned in 1858, again as a presidential candidate but after his new defeat he retired definitely from politics and dedicated himself entirely to agriculture until his death in 1867.

Until now I have been following Alberto Tauro del Pino, whose “Illustrated Encyclopedia on Peru” is a fundamental piece for the understanding of national figures. Now I will highlight don Domingo’s activities in the area of our main interest.

Mr. Tauro, in his summaries about Elias agricultural contributions to Ica states “Upon his return (1825), he dedicated himself to agriculture, and, motivated by a driving business spirit, begun the large scale plantation of cotton, improved grapevine fields, and began to produce pisco instead of wines.”

These efforts were so important that the foreign travelers that visited Pisco during those years could not avoid stating their admiration for his achievements.

Sobre la activa e importante decisión de don Domingo Elías en la producción de aguardiente dice al tratar de las instalaciones del puerto

Jacob Von Tshudi, the Swiss scientist who traveled throughout Peru between 1838 and 1842, wrote his impressions of the city of Pisco in one of his books. He stated that the port “is only a sort of key for the great city of Ica,” and explained that what gave the city such importance were its white destilate exports.

No escatima elogios el suizo al hablar de don Domingo Elías al que llama “El más rico, más emprendedor y más circunspecto de todos los hacendados de la costa.” Y sobre sus vinos comenta que prepara un vino de tipo europeo, que recuerda a “los vinos de Madeira y Tenerife” pero que su grado alcohólico es mayor y “tiene más fuego.”

El peruanista inglés Clemens Markham estuvo en Pisco durante su segundo viaje al país en 1853 y allí visitó las bodegas de Elías. Tuvo la oportunidad de probar los aguardientes locales y quedó impresionado, anotando que: “el mejor Italia es hecho de una uva blanca grande y es delicioso”.

Otro viajero que a su paso por Pisco, queda impresionado con la industria de don Domingo Elías fue el francés Alfredo Leubel que visitó ese puerto en 1860.

Aunque sus referencias están centradas en el vino, indica este autor que Elías tiene sus oficinas y “tonelerías” montadas en gran escala y que cuenta con personal venido especialmente de la isla de Madeira, y ello da como resultado que sea el único vino que se exporta, aclarando que dos tercios de la producción de Elías se envían a los mercados de Francia, Inglaterra y Estados Unidos, mientras que los vinos de otros productores del valle “son vinos delgados para el consumo del país solamente, pero de muy buena calidad.” En las bodegas de Pisco el vino se le deja reposar y es de “uva pura” sin ninguna mezcla, cosa que al parecer le llama la atención.

In regards to the active and important decision of Domingo Elias to produce pisco, Von Tshudi stated in regard to the port’s facilities: “Along the shore is the customs house with the Capitan of the Port and the impresive buildings constructed by Mister Elias for his pisco company.” 1 Von Tshudi spared no effort in praising Domingo Elias, who he called, “The richest, best businessman, and most circumspect of all the landowners of the coast.” And in regards to his wines, he stated that Elias had prepared a sort of European wine, which reminded him of the “wines of Madeira and Tenerife,” but it had a stronger proof and “has more fire.”

Another visitor who was impressed by Domingo Elias’ industry during his travels through Peru was the Frenchman Alfredo Leubel, who visited the port of Pisco in 1860. Although his references are centered on the wines, he stated that Elias had offices and large scale barrel-making shops. He also mentioned that Elias had personnel who was brought specially from the island of Madeira, which ensured that the only wine to be exported was Madeira wine. Leubel mentions that twothirds of Elias’ production was exported to France, England and the United States, while the wines and other products of the valley were “wines only for the local consumption, but of very high quality.” In the Pisco port bodegas, wine made of “pure grapes” without any mixtures, was left to rest and that quality caught Leubel’s attention.

British “Peruanista” Clemens Markham (...) visited Elias’ bodegas where he had the opportunity to try the local wine destilate and was impressed, noting that “the best ‘aguardiente’, the Italia, is made of a large white grape, which is delicious.”

Aside from the specialized barrel-making, Leubel also stated that thanks to a “reform” that was recently introduced by Elias in regards to production. (the reform consisted of heating a stove in the area where the wines were stored).

The aging effect was achieved in a short period of time. Or, as Leubel stated “[the wine] acquires the natural age that time normally gives it,” and after a year and a half, “can advantageously be exported.” The conclusion that the Frenchman reached was that Elias’ wine “had gained much, and could be perfect sustitut for Sherry.”

El inglés Warren fue otro viajero que quedo sorprendido con la obra de Elías.

En su Historia de la República 1850-1870 el historiador naval Fernando Romero Pintado menciona que Warren consideró a Domingo Elías como el principal hacendado de la zona de Pisco y lo cita en su juicio de valor del personaje que tratamos del que dice: “Sus viñedos son muy extensos y aparte de sus destilerías de uva Italia, posee grandes bodegas de vino bajo la superintendencia de experimentados vinateros europeos quienes producen un artículo muy escogido, de vino de madera, vino de Jerez y amontillado.” 2 Pero la obra de Elías no quedó solo en sus avances y reformas positivas para lograr mejores vinos y aguardientes, ni quedó esta solo en anotaciones y recuerdos de viajeros.

El 4 de diciembre de 1864, el gobierno pasó una circular a los prefectos de los departamentos de Arequipa, Moquegua y Ancash haciéndoles saber de su interés por desarrollar la industria del vino en el país. Explican en la circular que aunque las plantaciones de viña y la producción de vino está muy difundida en el país, estas no han logrado ponernos entre los grandes productores internacionales por falta de conocimientos y técnica, y que en vista de que el presidente es consciente de que el aumento de este cultivo e industria puede traer muchos beneficios para el país, se ha contratado a don Evaristo d’Ornellas para revertir la situación.

Es aquí también donde se ve la mano de don Domingo. El señor d’Ornellas era el enólogo de las empresas Elías y su participación en el proyecto es reflejo del interés de éste por la agricultura en general y la viticultura en particular. Fue éste préstamo de su enólogo una generosidad, un apoyo directo al desarrollo del país. Prueba de esto es el hecho de que el contrato firmado entre el enólogo y el gobierno especifica que, aunque debe viajar por los valles productores de vid del país e incluso ir al extranjero en busca de materiales y conocimientos, no está obligado a desatender su trabajo en las empresas de Elías.

Peruanos como don Domingo Elías introduciendo capitales y tecnología de punta que sin desvirtuar la tradición ni poner el riesgo el valor tradicional de nuestro aguardiente de uva hicieron posible en el siglo XIX el desarrollo de la industria pisquera.

Yet another visitor who was impressed by Elias’ work was the British traveler Warren. In naval historian Fernando Romero Pintado’s book on the naval history of the republic from 1850 to 1870, he mentions that Warren considered Domingo Elias as the principal landowner in the Pisco area, and quotes Warren’s judgment about don Domingo’s: character: “His vineyards are very extensive, and aside from his Italia grape distilleries, he possesses large wine bodegas that are under the supervision of experienced European winers who produce very well selected products: from Madeira and Sherry wines to Amontillado.“ 2 But don Elias’ work was not only recognizeded in his advances and positive reforms in order to achieve better wines and piscos nor were these developments mentioned only in the traveler´s memories.

On December 4, 1864, the government passed a circular resolution to the Prefects of the Departments of Arequipa, Moquegua and Ancash, informing them of the State´s interest in the development of the wine industry in the country.

The resolution explained that although wine plantations and wine production were prevalent in the country, they had not been able to compete alongside large international producers due to a lack of knowledge and technique. Since the President was aware that an increase in the production of this crop and industry could bring many benefits to the country, he had hired Evaristo d’Ornellas to review the situation.

Here too the hand of don Domingo can be seen. D’Ornelas was an oenologist from one of Elias’ companies and his participation in the project is due to Elias’ interest in agriculture in general, and specifically vineyards. This was his generous contribution in direct support of the country’s development. Proof of this is the fact that the contract signed between the d´Ornelas and the government specifies that, although he must travel through the wine producing valleys of the country, and even travel abroad in search of materials and information, he was not compelled to leave his work in don Elias’ companies.

Peruvians, such as Domingo Elias, who introduced capital and technology without risking the traditional value of our grape destilate, made the development of the Pisco industry in the XIXth Century possible.

Es valorar los productos por lo que son, desde un punto de vista meramente organoléptico, de forma comparada a otros productos similares. Probar las cosas sin ser influenciado por su reputación, por su fama o por la marca.

It is the valuing of products for what they are, from a purely sensory perspective, and their comparison to similar products. It is the tasting of things without the influence of reputation, fame or brand.

La idea de la cata ciega es muy interesante. Y esto por varios motivos: En primer lugar, porque los catadores son influenciables, y eliminando información exógena se evita que en la valoración del pisco exista un componente espureo (no relacionada con la calidad intrínseca del producto).

En segundo lugar, porque permite al catador concentrarse en lo realmente importante, el producto a evaluar.

En tercer lugar, porque obliga al catador a ser humilde y a no dar nada por sentado (este pisco famoso, tiene que ser bueno).

¿Cómo hacemos la cata ciega en Noches de Cata?

Se entregan las muestras a una persona que no es catadora y las lleva a un cuarto contiguo de donde se va a realizar la cata, numera la muestras de acuerdo a su criterio, luego se sirve cada una de las copas de izquierda a derecha, mientras los catadores han pasado a otra habitación. Cuando termina se nos invita a pasar a la sala, la única que conoce la numeración de las muestras es esta persona, una vez terminada la cata nos muestra la numeración y los resultados.

En esta oportunidad nos adecuamos a la Norma de los Concursos Internacionales de Bebidas Espirituosas de Origen Vitivinícola de la Organización Internacional de la Viña y el Vino O.I.V. incluimos el Esquema de Apreciación (puntajes), con los cuales trabajamos a partir de ahora.

El Pisco en San Francisco “No fuimos los primeros...”

In the 1950s and 60s, Casa Ranuzzi was one of the biggest exporters of Pisco in the United States. Using innovative marketing techniques and a good distribution network, the company was able to successfully popularize the brand “Inca Pisco” in the US. This Pisco, produced in Ica, was bottled in ceramic vessels with Inca and Lima motifs.

Utilizando técnicas innovadoras de mercadotecnia y una buena red de distribución, la compañía llegó a popularizar con éxito la marca Inca Pisco en el país norteamericano.

Como producto promocional también se crearon cerámicos de miniatura de 50 ml de capacidad, valiéndose para ello de más de cien diseños diferentes entre formas y colores (ejemplo - figura 1). También se publicaron en revistas gourmet propagandas creativas donde se presentaba la receta del Pisco Sour, publicitando de esta manera tanto al Inca Pisco como la preparación predilecta (figura 2).

As a promotional product, they also created 50ml ceramic miniatures with more than one hundred different designs, forms and colors (See figure one). They also published creative advertisements in gourmet magazines where they presented the Pisco Sour recipe, thus promoting not only Inca Pisco, but also its most popular cocktail (See figure two).

En las décadas de 1950 y 1960, la Casa Ranuzzi era una de las más grandes exportadoras de Pisco en los Estados Unidos. Utilizando técnicas innovadoras de mercadotecnia y una buena red de distribución, la compañía llegó a popularizar con éxito la marca Inca Pisco en el país norteamericano. Este Pisco, producido en Ica, era embotellado en vasijas de cerámica con motivos incaicos y limeños.

¿Cómo se inició esta iniciativa tan imaginativa? ¿Por qué se decidió por el mercado estadounidense? Parece ser que se ha encontrado una respuesta.

La pista es una prominente propaganda publicada en el diario El Comercio el 25 de noviembre de 1944 que lee: “¡SALUD!... CON PISCO COCKTAIL” (figura 3). Fue publicada por Mario Ranuzzi, fundador de la mencionada Casa Ranuzzi, natural de Boloña, Italia, y llegado al Perú durante la primera mitad del siglo XX donde se dedicó a la manufactura de licores.

¿Cómo se inició esta iniciativa tan imaginativa? ¿Por qué se decidió por el mercado estadounidense?

Parece ser que se ha encontrado una respuesta.

A fines de la década de 1930, el mítico Pisco Punch todavía era muy popular en San Francisco, California, aun después de su desafortunada ausencia de trece años debido a la ley seca de ese país. En esa década fue producido por mas de cuatro compañías sanfranciscanas de manera embotellada (ejemplo - figura 4).

Una muestra de la popularidad y éxito que tuvo Inca Pisco en los Estados Unidos es la gran cantidad de las miniaturas de cerámica existentes actualmente en el comercio internet de ese país.

Una comparación de la propaganda de El Comercio y de la etiqueta de la botella muestra que el diseño tipográfico de ambas es idéntico. Esto prueba que Ranuzzi era familiar con el Pisco Punch de California y que comercializó una bebida similar en Lima. Sin embargo, ésta parece no haber atraido a la colectividad limeña y despues de algún tiempo Ranuzzi decide dar un giro completo. Desarrolla Inca Pisco con toda su maquinaria mercadotécnica y apunta el negocio esta vez hacia el norte, pero siempre llevando sobre el hombro el misticismo del Pisco Punch y del Pisco.

How did this imaginative initiative begin? Why did Casa Ranuzzi decide to enter the United States’ market? It seems that we have found the answer to these questions.

The first clue that sheds light on these questions is from a prominent advertisement which was published in the newspaper El Comercio on November 25, 1944, which reads “¡SALUD!... CON PISCO COCKTAIL” (“CHEERS!...WITH PISCO COCKTAIL”), (See figure three). It was published

by Mario Ranuzzi, founder of the aforementioned Casa Ranuzzi, originally from Bologna Italy, and who came to Peru during the first half of the 20th Century where he dedicated himself to the manufacturing of liquors.

At the end of the 1930s, the mythical Pisco Punch was still very popular in San Francisco, California, even after an unfortunate thirteen year absence due to Prohibition. During this decade, it was produced and bottled by more than four San Francisco companies (See figure four).

A demonstration of the popularity and success that Inca Pisco had in the United States is the large quantity of ceramic miniatures that still exist and can be found for sale on the internet.

A comparison of the advertisement seen in El Comercio and the label on the bottle demonstrate that the typographic design of both is identical.

This proves that Ranuzzi was familiar with the Pisco Punch of California, and that he commercialized a similar drink in Lima. However, it seems that it wasn’t very popular with the people of Lima, and after a while, Ranuzzi decided to change tactics. He developed Inca Pisco with his marketing machine and pointed his business, this time, towards the north. While he did so, however, he constantly elevated the mysticism of the Pisco Punch and Pisco itself.

Al tener un copa de Pisco en la mano y empezar a descubrir todas las sensaciones que nos da, casi ni imaginamos todo lo que hay detrás. Si bien, el Pisco, como ya sabemos, si viene haciendo en el Perú, desde el siglo XVI, es recién en este año que se ha conformado, por primera vez, el Consejo Regulador del Pisco. Y es que sin duda, esta industria lo requiere.

Even with a glass of Pisco in hand, and having discovered the drink’s incredible sensations, one cannot even begin to imagine the history that precedes it. Although Pisco, as many of us know, has been produced in Peru since the 16th Century, only just this year was the Pisco Regulatory Council established for the first time. And, without a doubt, the industry needs it.

Sus respuestas han sido enérgicas como él, sin embargo, no pierde la sonrisa y la pasión que le brota cuando habla de Pisco. ¿Cuáles consideras que son los principales avances del Consejo Regulador en estos siete meses de gestión?

Es muy difícil hablar de avances. Hablemos de gestiones. Se han incorporado cerca de cuarenta productores más; se ha confeccionado un nuevo Reglamento de Concursos; se han abierto los registros de Bodegas y productores, de Catadores. Asimismo, se ha firmado un convenio de gestión con el Consejo Regulador de Tequila; se ha incorporado a la DO Pisco a OriGIn (www.origin-gi.com); el Perú fue nombrado vicepresidente para América del Sur de esta organización; se ha conformado el Consejo Consultivo, el Comité de Vigilancia y los Comités Regionales del CR. Se está terminando de crear la WEB del CR y la Intranet del mismo. Además, se han gestionado ante los Ministerios de la Producción y la Presidencia del Consejo de Ministros que las entidades del estado compren Pisco y se ha solicitado se derogue la prohibición de la compra por parte del Estado. Los productores no desean seguir regalando Pisco. Estamos confeccionando el Reglamento de Autorización y Patrocinio que deberá dar el CR para cualquier actividad que alguien desee generar a partir del Pisco, llámese festivales, catas, concursos, talleres, en fin, es una larga lista para que no ocurra otro Mistura 2011. Como ves la lista es larga y falta.

only about the most important advances during his period in office, but also give his outlook on the industry, as well as discuss the activities and the things the Council must deal with. His responses were as energetic as he is, and he certainly doesn’t lose his smile or passion when he talks about Pisco.

What do you consider to be the principal advances that the Regulatory w It is very difficult to discuss advances. Let’s talk about administration. Some 40 producers have been incorporated into the council. We have drawn up new rules for competitions; we have opened the registries of bodegas and producers, and of tasters. Also, we have signed an administrative agreement with the Tequila Regulatory Council, and the Guarantee of Origin of Pisco has been incorporated in OriGIn (www.origin-gi.com) and Peru was named Vice President for South America of said organization.

A Consultative Council was formed, as well as a Monitoring Committee, and Regional Councils of the Regulatory Council. We are about to finish the creation of the Regulatory Council’s website, and Intranet. Also, we are negotiating with the Ministry of Production and the Presidency of the Ministerial Council that state entities begin to purchase Pisco, as we are requesting that the prohibition of its purchase by the state be revoked, especially since producers no longer want to continue to donate Pisco.

We are drawing up the Rules of Authorization and Representation that the Regulatory Council must give to any activity that involves Pisco, whether it be festivals, tastings, competitions, workshops. Basically we have a very long list so we can prevent another mistake like that at Mistura 2011. As you can see, the list is long, and there is a lot more to do!

¿Cómo ha sido el panorama que has encontrado? ¿Con mayores o menores dificultades de las que imaginaste?

What is the outlook for Pisco like? Are there more or less difficulties than you imagined?

Aún no encontramos dificultades, solo maneras de pensar distintas y si las hubiera se salvarán con diálogo. La aparición del CR ha generado que se superpongan algunas actividades y responsabilidades con la Conapisco, Produce y demás organismos involucrados, pero conversando se arreglaron. Hemos definido roles sin que desaparezcan como en un primer momento se pensó. Muchos productores vieron la llegada del CR como la panacea para todos los males y eso no es así, este es y debe ser un trabajo de todos, yo solo armonizo el trabajo y dirimo en caso de igualdad de opciones. Ahora estamos abocados a generar los ingresos necesarios para seguir la gestión. Es muy importante que los interesados asuman que ya estamos manejando la administración de la DO y que todos tenemos que remar para el mismo lado. Por supuesto, nunca falta gente que pone cabes, pero así también se avanza, algo moreteado, más despacio pero siempre con entusiasmo.

Well, we haven’t had what I would call difficulties, just different ways of thinking. If we were to have any difficulties, we would fix things with dialogue. The recent creation of the Regulatory Council has led to some activities and responsibilities overlapping with Conapisco, Produce and other organizations that are involved with Pisco, but we’ll fix it all through dialogue. We have redefined certain roles without them disappearing, as was originally feared. Many producers thought that the creation of the Regulatory Council would be a sort of magical cure for all problems, but this is not the case either. This is, and should be, a collective work; I just harmonize the work and resolve issues, in a sort of equality of options. Now we are doomed to generate the income necessary to continue our efforts.

It is very important that the interested parties assume that we are working on the administration of the Guarantee of Origin, and that we all have to row on the same side of the boat, so to speak. Of course, there are always people who trip you up, but that is also how you advance…a little bruised, slowly, but always moving forward with enthusiasm.

IDENTIDAD básicamente. Ahora estamos estudiando la acción de talleres regionales a fin de articular los aspectos más importantes de cara a que los productores y partes de la cadena productiva de cada región tengan la posibilidad de esa articulación. Empezaremos por el principio: con comunicación, asociatividad, calidad, buenas prácticas; pero, sobre todo IDENTIDAD en toda la extensión de la palabra.

Todavía existe mucho desconocimiento en general en relación al Pisco. ¿Qué acciones tomaría el Consejo Regulador para la difusión tanto en el mercado interno como en el internacional sobre nuestro destilado de bandera?

Hay gran cantidad de folletos e información básica. Imagínate que hay personas que creen que el mosto verde es una uva pisquera.

Lo sé, por eso mi pregunta. Yo que vengo dictando el curso de vinos y Pisco en diferentes instituciones, pregunto en mis primeras clases ¿cuáles son las uvas pisqueras? Y lo máximo que me han respondido es quebranta, acholado y peor aún, chardonnay, que no es una uva pisquera.

Sí pues, por eso tenemos un deber y es enseñar a los peruanos desde las vocales (del Pisco) para aprender lo básico y hablar y consumir con propiedad. Estamos gestionando fondos para esta inacabable labor. Por ejemplo, Produce ha considerado dentro de la estrategia a fin de año privilegiar a los productos bandera, y el Pisco está en primera línea. Ya se presentó, el plan básico para una buena difusión del Pisco a la población de todo el Perú. Estamos a la espera de la decisión, esta gestión la encabeza Manuel Morón de Produce. ¿Qué opinas de la actual oferta formativa alrededor del Pisco? ¿Crees que estos ofrecen cursos con contenidos que garanticen una formación idónea a quien los toma? ¿El CR podría colaborar con éstos para garantizar que así sea?

Esto es parte de la respuesta, estamos definiendo el Reglamento de las Autorizaciones y Patrocinios del CR. Hoy día todo el mundo quiere hacer cursos de catas, cursos de aprendizaje en diversos bares, concursos distritales y muchas acciones con el Pisco de por medio. Pero quién verifica la bondad del sílabus y el conocimiento del expositor....? Acabo de leer una actividad de una universidad con la Academia del Pisco, que en su programa contemplan el análisis de la Norma Técnica del Pisco....!!!!! acaso ambas entidades no saben que ahora lo que manda es el Reglamento de la DO Pisco....????

Do you feel that it’s possible for a better organization among Pisco producers, which could be facilitated by the Regulatory Council? What would you have to do to achieve this?

Basically, work on our identity. We are studying the actions taken by regional workshops in order to coordinate the most important aspects so that producers and parts of the productive chain of each region have the possibility to be organized and coordinated. We need to start from the beginning: communication, association, quality, good practice; but above all, we need identity, in every sense of the word.

There is still a lot of ignorance in general in regards to Pisco. What actions will the Regulatory Council take to spread information both in the internal market, as well as the international area in regards to our national beverage?

There is a wide range of brochures and basic information available.

Imagine that there are people who believe that green must is a grape used for Pisco.

I know, that’s why I ask. I teach courses on wine and Pisco in different institutions and I always ask, what are the grapes used in Pisco? The best response has been Quebranta and Acholado, and the worst was Chardonnay which isn’t even a grape used in Pisco!

Yes, that’s why we have a duty to change this! And that duty is to teach Peruvians the basics about Pisco, and talk and consume Pisco with propriety. We are working on funding for this unending labor. For example, Produce has considered, within their year-end strategy, to favor national products over others, and Pisco is first in line. A basic plan has been presented for the spreading of information about Pisco to the entire population of Peru. We hope that a decision is made soon. Manuel Morón, of Produce, is leading this effort.

What is your opinion in regards to the current educational opportunities in regards to Pisco? Do you believe that courses with content that guarantee an ideal formation are offered to those who take them? Could the Regulatory Council collaborate with these courses to guarantee this happens?

This is part of the answer; we are defining the Rules of Authorization and Representation of the Regulatory Council. Today, everyone in the world wants to do tasting courses, training courses in various bars, district competitions, and many other things that involve Pisco besides. But who can verify the quality of the syllabus and the professor’s knowledge level?

I just read about an activity that a university will host with the Academia del Pisco and which will discuss the Technical Regulations of Pisco. Don’t both

¿Qué sensación te dejó la presencia del Pisco en Mistura? ¿El Consejo Regulador tuvo alguna participación? ¿Debería haberla tenido? ¿Cómo ves la presencia del Pisco en adelante en las próximas Mistura?

La verdad no esperamos un asunto cómo el que pasó. Una lástima que el área destinada fuera tan pequeña e incómoda. Pero este tema estuvo a cargo de la organización de la Universidad San Martín de Porres. Ahí nadie debiera meterse porque es un asunto bilateral entre Mistura y la Universidad. Y, respecto al video, fui advertido por Jaime Reátegui del contenido el cual estaba lleno de errores, y como yo estaba fuera de Lima, llamé inmediatamente a Soledad Marroquín, quien es miembro del Consejo Consultivo del CR por Apega, e intervino inmediatamente, lográndose levantar el video.

Bueno, lamentablemente se desperdició una gran oportunidad para difundir el Pisco correctamente.

Sin duda, en general, se tiene que regular este asunto y los demás del Pisco y sus actividades. Todas DEBEN ser previamente conversadas, analizadas y apegarse al espíritu del Reglamento de la DO Pisco. Además, por el Reglamento de Autorizaciones y Patrocinio, cuando esté listo, los interesados deberán solicitar la Autorización mediante compromiso de apegarse al Reglamento de la DO. Si desean el patrocinio del CR podrán contar con el previo pago de un derecho. Por ejemplo, en este momento estamos conversando, con el canal ATV que iniciará una novela con el Pisco de protagonista y los contenidos del guión, deberan ser correctos tanto del nivel histórico como del técnico y de fraseo. Se ha remitido una carta a los productores de que estaremos atentos a sus consultas y a lo que se difunda.

Es una labor de todos, los ojos y oidos de todos son más y pueden más que los de los miembros del CR. Mira como nos ponemos minas entre nosotros; hace más o menos un mes participé y asistí a un concurso provincial auspiciado por Produce; y, cuando comenzó la premiación se distinguió entre piscos sin autorizacion de uso y Piscos con Autorizacion de Uso. Esto es más grave que los errores de Mistura, más aún viniendo de Produce.

Sin duda! Eso da cuenta del poco nivel de conocimiento que todavía hay sobre el Pisco y el trato indebido que se le ha venido dando en diferentes espacios.Bueno, cambiando de tema, entre octubre y noviembre se llevarán a cabo los Concursos regionales y el nacional de Pisco. ¿Este año habrá algún cambio significativo, en relación a los años anteriores?

Si, grandes cambios, ya no serán dos concursos, será uno sólo con dos etapas. Nos apegaremos al máximo al reglamento de la OIV. Esta vez los catadores serán sorteados, y repito, habrá un solo Concurso Nacional, que involucrará los regionales o clasificatorios; y la gran final o el nacional.

En ambos sólo se premiará al 30% que mayor puntaje haya recibido por categorías. La premiación en la gran final o nacional, será el día viernes en la noche y se anunciará por marcas, para que el público pueda acceder a los productos ganadores durante más tiempo.

Pretendemos realizar en las mañanas del viernes y sábado, antes del medio día, ruedas de negocios con los productores en ambientes idóneos.

Habrá detalles a lo largo de este mes de octubre y el próximo mes. Los próximos cuarenta y cinco días serán de gran actividad pisquera.

Y desde ya, te doy la primicia. Esperamos realizar el concurso nacional en el Parque de la Amistad de Surco pero utilizado en toda su extensión utilizable, valga la redundancia. Ya tenemos la autorización y estamos verificando con la municipalidad el Lay Out del parque para hacer todos

Yes, big changes. There will no longer be two competitions, but there will be one with two periods. We will adhere as much as possible to the OIV Regulations. This time the tasters will be randomly assigned, and I repeat, there will only be one national competition, which will involve the regional or classification competitions. It will be followed by the grand finale. In both competitions, only the top 30% will be awarded prizes. No, en el congreso de Lunahuana que presidí, se definió que serían cada dos años. Este año le tocaba a Moquegua, pero por la coyuntura de las elecciones se perdió el apoyo de las mineras regionales. Así que serán en el futuro en los años pares. Será en Moquegua el próximo, hacia setiembre u octubre del próximo año. ¿Cómo va el tema de la Denominación de Origen en la Unión Europea?

Cuidado, no es un tema de DO. Hay mucho desconocimiento sobre de qué se trata y muy mala gente detrás para generar atención mediática. Es un tema de estado MUY RESERVADO que se está manejando con y por profesionales de primera y en los estamentos debidos. El escandalete, la rasgadura de vestiduras y pedir una o más cabezas, es solamente favorecer a nuestra pretendida competencia. Al concluir los plazos y las gestiones se generará un comunicado de prensa oficial de parte del gobierno, quien es el que administra los asuntos del estado. ¿Cuáles son los próximos pasos para los siguientes meses?

Por lo menos concluir los que tenemos entre manos e ir terminando de armar la casa. Es un gran trabajo que requiere de todos los involucrados, donde no solo hay que pedir, hay que dar y colaborar. La DO lo requiere y debemos aprovechar esta oportunidad histórica de gobernar nuestro futuro generando calidad. Estas oportunidades, no se dan dos veces.

Vengan a trabajar con nosotros, todos tenemos algo que hacer, hay un lugar esperando al que quiera colaborar.

Me gustaría aprovechar para resaltar que es muy importante que los medios nos ayuden a divulgar los acuerdos, normas, circulares y demás actividades del CR, para informar al Perú y el mundo sobre temas de interés y de gobierno de la Denominación de Origen Pisco que administramos. El CR aún no tiene fondos para ello, pero necesita comunicar.

Luego de esta larga conversación, me queda más claro que los frentes que tiene que atender el Consejo Regular son muchos: productores, comercializadores, diversas instituciones y medios, eventos, concursos, restaurantes, hoteles, y especialmente los consumidores. Pero asimismo, debemos estar conscientes que la única manera de sacar el Pisco adelante, será con el aporte de todos y cada uno de nosotros. Es el momento de demostrar nuestro patriotismo, trabajando con honestidad y pasión por el Pisco, por su calidad y por su prestigio. Y no se olvide…

And, starting now, I’ll give you the news. We hope that the National Competition will take place in the Parque de la Amistad in Surco, but, I must emphazise, using all of its available space. We have the authorization and we are double checking the layout with the Municipality in order to make this the exclusive “Mistura” version for Pisco, which is in the emblematic district of Surco and Santiago de Surco.

That would be marvelous! And what will happen with the National Competitions in Peru? Will they continue to be annual?

No. In the Congress that I presided over in Lunahuana, it was decided that they will take place every two years. This year, it was supposed to be in Moquegua, but due to the election, we lost the support of the mining companies. So the competitions will now take place during even years.

Next year it will take place in Moquegua, probably in September or October.

How are things going with the Guarantee of Origin for the European Union?

Well, it isn’t an issue of Guarantee of Origin. There is a lot of misinformation in regards to the issue, and very bad people are behind that information.

These people want to generate media attention. It is a very confidential issue that is being managed by and with first class professionals and in due strata. The scandal, the fake indignation, and the call for the heads of those involved is only favoring our competitors. By the end of this period there will be an official press release made by the government, as they are the ones administering the state issues.

What are the next steps the Council will take over the following months?

We have to at least finish those projects we are working on now, and finish building the house. It is a lot of work that requires a lot from all of those involved. One not only has to ask for things but one also has to give and collaborate. The Guarantee of Origin requires it. We need to take advantage of this historical opportunity to govern our future by generating quality. These opportunities do not happen twice. Come work with us, we all have something to do, and there is a place waiting for those who want to collaborate.

I would also like to say that it is very important that the media help us circulate the agreements, rules, brochures and other activities that the Regulatory Council does, in order to give Peru and the world information, as well as about the Guarantee of Origin that we are administrating. The Regulatory Council does not yet have funding for this, but it does need to be communicated.

After this long conversation, it was apparent to me that the issues the Regulatory Council has to deal with are many: producers, marketers, different institutions and media outlets, events, competitions, restaurants, hotels, and especially, consumers. However, we must be conscious that the only way to advance our Pisco will be with the support of each and every one of us. It is the moment to demonstrate our patriotism, by working with honesty and passion for Pisco, for its quality and its prestige. And don’t forget…Order Pisco, Demand Pisco, and Enjoy Pisco!

The “Tacna Sour” celebrates the 30 year anniversary of its creation in Southern Peru. The emblematic Tacna cocktail has even won over Chileans.

Esté tradicional coctel de Tacna es la huella indeleble de los tacneños, y no solo conquista a peruanos, si no principalmente a chilenos ; en la cuidad de Arica e Iquique, en famosos y concurridos restaurantes, ya se puede apreciar en las cartillas, los nombres de Pisco Sour, Chilcano de Pisco, Capitán, entre otros, así como lo inesperado, el “Tacna Sour” preparado con ingredientes similares a los del Perú. The Chileans use these names knowing very well that the cocktail originates both in name and preparation from Tacna, and uses ingredients from the city as well. This emblematic cocktail is made only with fruits from the Tacna and Pisco Valleys, and with Negra Criolla Grapes.

El 6 de agosto pasado cumplió 30 años de creación, desde 1981 es el aperitivo emblemático para celebrar la reincorporación de Tacna a la Heredad Nacional. Ya desde el 2009, mediante una Ordenanza Municipal Nº 21-2009, se declara como Día del “Tacna Sour” el primer sábado de agosto de cada año.

August 6th was the 30th anniversary of the creation of the drink, which has been the emblematic appetizer in the celebration of the reincorporation of Tacna to the National Estate since 1981. Starting in 2009, Municipal ordinance Nº 21-2009 declared the first Saturday in August as “Tacna Sour Day.”

Ingredients: 3 oz Tacna Apricot Liquor 1 oz cane sugar 1 oz lime juice 1 dash egg white Crushed Ice Preparation Liquefy apricot liquor, cane sugar, lime and ice. When mixed, add the egg white and liquefy a few seconds more. Optional: Serve with a drop of Angostura Bitters.

El mes de marzo es la etapa durante la cual se realiza “La Vendimia” que consiste en despojar a las parras de sus frutos que durante la época del verano han servido de deleite a los visitantes de las viñas. La uva ya sea Italia, Moscatel, Quebranta, ha pasado por muchos paladares dejando en ellas un agradable sabor y llega el momento de utilizar el jugo con el cual se elabora los Vinos y Piscos que tanta fama le han dado a nuestra ciudad. Es entonces cuando los dueños y obreros de un fundo se dedican a vendimiar, lo que se celebra con bailes, reinados en corzos, de carros alegóricos con motivos iqueños en los que se lucen todas las reinas de los diferentes distritos, instituciones nacionales que, justamente con la reina de la Vendimia Iqueña recorren las calles principales en medio del beneplácito y los aplausos del público.

La vendimia en ICA es una actividad tradicional y costumbrista. Se remonta hacia los albores de la colonia con los primeros sembríos de la parra en sus valles soleados y fértiles, teniendo su raigambre milenario en las fiestas que con motivo de las cosechas de maíz celebraban los pueblos de las culturas pre-incaicas e incaicas que florecieron en esta región.

En 1974 la Vendimia es trasladada de la calle donde se llevaba a cabo (Av. Matías Manzanilla) al Parque de Recreación y Cultura infantil, creado por el Senador César Elías Gonzáles y ahí toma su posición definitiva; El Presidente de ese Festival fue el Dr. Raúl Sotil Galindo.

drums and traditional musical groups that play songs about the harvest until very late at night. But over the last 50 years, increased and improved communication has triggered the constant migration of workers from the country to the city. These workers in turn have been replaced by farmers from other villages and farms, and these traditions might have been lost forever.

However, the idea to save these traditions was started with the organization of these harvest festivals in order to continue a celebration that has so much meaning for the people of this region, as well as on a national level.

So it was that in December of 1958, the newspaper “La Voz de Ica,” launched the idea of the celebration, which was adopted by the Junior Chamber of Ica who subsequently organized the first National Grape Harvest Festival.

Years later due to the growing magnitude and success of this Festival due to the initiative taken by the Ica Lions Club, the festival became international in 1965, and remains so today.

In 1974 the Wine Harvest Festival was moved from the street where it had originally taken place (Av. Matias Manzanilla) to the Park of Recreation and Infant Culture, created by Senator César Elías Gonzáles, where it became established definitively. The president of this festival was Dr. Raúl Sotil Galindo.

Currently, the Provincial Council of Ica, via the Festival’s organizational committee, believes that these events, due to their importance and unique nature, should be considered a key aspect for tourists, both domestic and foreign, and thus can generate even more resources that the region today requires. http://www.elpiscoesdelperu.com/boletines/marzo2009/primeraplana.htm

La presencia del vino en Arequipa, inicialmente estuvo en las botas de cuero curtido que trajeron los primeros españoles que recorrieron por primera vez el valle del río Chili hacia 1535. Luego en la fundación de Arequipa, en la misa y en el brindis de honor, en la ceremonia de la traza de cuadrículas e instalación de la picota y posteriormente en cada vivienda de las autoridades políticas, religiosas, encomenderos, artesanos y hasta curacas.

The presence of wine in Arequipa was initially in the wineskins that the first Spanish carried through the Chili River Valley in 1535. Later wine was present throughout the founding of Arequipa, during the mass and the toast of honor. It was present as well in the grid outlining ceremony and the installation of the pillories; and much later in each of the political and religious authorities’ homes, as well as the homes of the colonists, artisans and even chiefs.

En los veinte primeros años de vida, la ciudad estuvo convulsionada por las Guerras Civiles entre los conquistadores, fueron años en que el flujo de mercaderías que llegaban de la península ibérica a los puertos de Quilca y Chule a veces se interrumpía y generaba un alza en los precios. Las principales familias poseían en la margen izquierda del río sus huertas con manzanas, naranjas, membrillos y uvas, todas ellas para ser consumidas como fruta; la carencia de vino, fue suplida por las botijas traídas de Andalucía y Castilla a precios altos.

Civil wars between the conquistadors disrupted the city during the first twenty years after its founding. Hikes in prices and the interruption of the flow of merchandise from the Iberian Peninsula to the ports of Quilca and Chule happened often during those years. The principal families of the city possessed apple, orange, grape and quince orchards on the left bank of the river; all of which were to be consumed as fruits. The lack of wine was made up for in jugs brought from Andalucia and Castilla, but which were very costly.

Al parecer, no fue buena idea porque el 13 de marzo el Cabildo Civil revocó la ordenanza, prohibió la venta de vino sin previa medida y también estableció que los negros no tengan más de una india. Siete meses después, la autoridad recapacitó y ordenó que los indios vayan a cargar las mercaderías y que los comercializadores les paguen a los curacas conforme a las ordenanzas establecidas.

It seems that this was not a good idea, because on March 13, the civil council revoked the ordinance, and prohibited the sale of wine without a previous measure. They also established that blacks could not “have” more than one Indian woman. Seven months later, the authority reconsidered and ordered that Indians must carry all merchandise, and that merchants must pay chiefs according to the established ordinances.

A inicios de 1547, gobernaba Gonzalo Pizarro y su teniente de capitán Juan de Silveira estando en Arequipa, ordenó: “… que los mercaderes se moderasen en el vender el vino los cuales han subido de precio, mandan a rebajar el vino, el más caro de 20 pesos arrobado o rehenchido a contento del que lo comprare e que no lo dexen de vender, ni lo vendan a más precio, so pena de 200 pesos de oro la mitad para la Cámara de su majestad y la otra mitad para el juez que lo sentenciare”.

At the beginning of the year 1547, Gonzalo Pizarro was the governor and his Lieutenant Capitan in Arequipa, Juan de Silveira, ordered “that merchants moderate themselves in the sale of wine, which has increased in price. They must be mandated to lower the price. The most expensive, of 20 pesos, is not to be sold at a higher price, under penalty of 200 gold pesos, half for His Majesty’s coffers, and the other half for the judge who emits the sentence.

Hacia fines de esa década, ya existían mesones que brindaban alimentos y vino a propios y viajeros, pero ninguno estaba regulado por un arancel, por ello los precios del vino eran muy dispares, en algunos casos eran muy caros y generaban la queja de la ciudadanía, o eran muy baratos y “...por menudo y lo venden a esclavos y asi mismo que para ver taquies (bailes desenfrenados) de negros en las fiestas, muchas veces se matan unos negros a otros e hacen otras cosas muy feas en el servicio de Dios”. Por ello, las autoridades ordenaron que ninguna persona venda vino a esclavos si no llevan una cedula de su amo: “so pena de 10 pesos de oro; que se pregone que ningún esclavo haga taquies en ninguna parte de la ciudad ni fuera de ella y si lo hicieran que el alguacil los prenda e les sean dados 100 azotes, atado a la picota”. Además, por primera vez se estableció un tarifario de precios para los tambos de Vítor, Siguas, Camaná, Ocoña, Atico, Atiquipa, Acarí, Chule, Chiguata, y Quilca; un cuartillo de vino blanco, debería costar: 6 tomines; y un cuartillo de vino tinto: 1 peso y 2 tomines.

At the end of the decade, there were bars that served food and wine to citizens and travelers, but none were regulated by tariffs. Thus, the prices of wine were very different, and in some cases, wines were very expensive and generated complaints from citizens, or they were very cheap and “often were sold to slaves, and for watching blacks dance taquies (frenetic dances) during their parties. Often some blacks killed each other and did some very ugly things while in the service of God.” Thus, the authorities ordered that no one sell wine to slaves if they didn’t have an identity card mentioning their owner: “on pain of 10 gold pesos; let it be made public that no slave will dance taquies in any part of the city, nor outside of the city, and if they do, the sheriff will seize them and they will be given 100 lashes while tied to the pillory.” Also, for the first time a price was established for the wayside inns of the cities of Vítor, Siguas, Camaná, Ocoña, Atico, Atiquipa, Acarí, Chule, Chiguata, y Quilca; a quartile (half liter) of white wine was to cost 6 tomines, and a quartile of red wine 1 peso and 2 tomines.

Hacia 1557, los alrededores de Arequipa eran prósperos terrenos de variados cultivos de maíz, papa, cebolla, trigo y viñedos, que eran constantemente afectados por el ganado que transitaba en desorden, por ello las autoridades ordenaron: “que cualquier ganado ovejuno o puercos o cabras o ganado de la tierra y todo otro ganado menudo que fuere tomado haciendo daño en viñas en esta ciudad y en todo sus términos tenga de pena, siendo tomado de día, el quinto del dicho ganado siendo de 5 cabezas hasta 50 y den leña del camino se quinte y de noche tenga la pena doblada la cual se aplique las dos partes para el dueño de tal sementera o viña o heredad y la otra parte al juez y obras públicas de la ciudad por mitad”.

By 1557, prosperous farms of various crops, such as corn, potato, onion, wheat and vineyards, surrounded Arequipa. They were constantly affected by livestock that passed through the area in a disorderly fashion. Thus, authorities decreed that “any livestock such as sheep or pigs or goats or cattle, and all light-weighing livestock caught damaging vineyards in this city will have, under all terms, the penalty taking place on the fifth day.

The penalty will be the taking of from 5 to 50 heads of livestock. And if it happens by night the penalty is to be doubled. The penalty will be paid in two parts; one for the owner of the land or vineyard or estate, and the other part to the judge as well as half for the city’s public works.

Claramente, la disposición protege las áreas con vides porque serían las primeras cosechas para elaborar vinos. El comercio del vino en las dos primeras décadas de vida de Arequipa colonial, inicialmente fueron importaciones y posteriormente los mercaderes al ver su alta rentabilidad, adquirieron tierras para convertirse en productores.

Clearly, the disposition protected the wine-producing areas because they were the first plantings to be used for wine production. Wine commerce during the first two decades after the founding of Arequipa were initially important; later merchants took notice of their high profitability and acquired land to become wine producers.

“Moquegua... tierra de sol y Tradición” Su campiña de incomparable atractivo por sus huertos de diversos frutales, cultivos de pan llevar y campos de forraje con buena ganadería demuestran la excelencia de su clima, la fertilidad de sus tierras, la calidad de sus aguas y la bondad de su gente. Valle frutícola por excelencia llegó a desarrollar la viticultura como principal actividad económica durante la colonia, llegando a cultivarse más de 1,200 Has. de viñedos, que abastecían de materia prima alrededor de 120 bodegas para elaboración de Vinos y Piscos de excelente calidad. Esta actividad se desarrolló en diversos valles del país, especialmente en las regiones de Tacna, Moquegua, Arequipa, Ica y Lima, con tal éxito que comenzó a exportarse a España, motivando que los productores peninsulares gestionaran ante Felipe II la prohibición de este comercio lográndola en el año 1614.

Ante esta restricción se intensificó la producción de aguardiente de uva, producto exportado por el puerto de Pisco, por lo que lleva su nombre.

“Moquegua….Land of Sun and Tradition.”

The incomparably attractive farm landscapes with fruits, food crops and fields with good foraging for livestock demonstrate the excellent climate, soil fertility, the water quality and the goodness of the people of Moquegua.

This excellent fruit producing valley was able to develop wineries as their principal economic activity during colonization, and at one point had more than 1,200 hectares in wine cultivation, which at the time supplied around 120 bodegas in the production of high quality wines and Piscos. This activity took place in different valleys around the country, but especially in the regions of Tacna, Moquegua, Arequipa, Ica and Lima. The wine cultivation was so successful that the products began to be exported back to Spain. Thus, producers in the Iberian Peninsula requested that King Phillip II prohibit said commerce, which it was in 1614. However, due to this restriction, grape firewater was intensely produced and exported through the port of Pisco, hence giving the beverage its name.

El Pisco es un destilado tan sofisticado y versátil, que cuando hablamos de su maridaje no nos deberíamos limitar a buscar tan sólo la armonía entre esta bebida y una rica trufa de chocolate, es decir un buen matrimonio; sino, una relación más intensa, llena de sensaciones impredecibles, nuevas, pero absolutamente placenteras, donde ambos elementos, el Pisco y cada pieza de chocolate, magnifiquen las sensaciones de placer cuando estén coqueteando juntos en nuestro paladar, sintiéndose más exquisitos todavía, que cuando los disfrutamos a cada uno de manera separada.

Este espirituoso, tiene una graduación alcohólica de 42° aproximadamente, lo cual le da un gran carácter. Pero además, como tenemos ocho uvas pisqueras: quebranta, negra criolla, mollar, uvina, italia, torontel, albilla y moscatel; y cada una tiene sus propias características, eso las hace dueñas de una personalidad propia y por ende ideales para la búsqueda de su pareja perfecta.

There are various varieties that exist in the world that come from grapes Pisco is such a sophisticated and versatile distilled alcohol that when we talk about pairing it we shouldn’t be limited to just look for harmonies between this drink and a nice chocolate truffle, or in other words, a good marriage of the two; but rather, we should look for a more intense relationship, full of unpredictable senses, new ones, but completely pleasing ones. Relationships where both elements, the Pisco and every piece of chocolate, magnify the sensations of pleasure while they flirt together across our palate, tasting even more exquisite together then when they do separately.

This spirit, which has a proof of approximately 42, gives Pisco its great character. But also, since we have eight Pisco grapes: quebranta, negra criolla, mollar, uvina, italia, torontel, albilla y moscatel, and each has its own characteristics, this also gives Pisco its own personality and thus makes the search of its perfect partner ideal.

Entonces, lo que se tiene que considerar en este maridaje son los aromas y sabores del Pisco elegido y dependiendo de sus características, entonces, intentaremos acompañarlo con una trufa con rasgos parecidos.

Así podemos jugar e ir encontrando uno a uno el chocolate perfecto para nuestro Pisco favorito o el Pisco perfecto para nuestra trufa favorita.

We should also keep in mind that even though each Pisco grape has its own nature and thus similar characteristics, each Pisco depending on the region, valley, bodega, and even the producer, will give us a bottle with its own unique personality, even if it is from the same type of grape.

Thus, we must be assured that even if we have various glasses of Pisco Negra Criolla from different bodegas, we will never find two Piscos that are exactly the same, even if they do have very similar descriptors.

What we have to consider in this pairing are the aromas and flavors of the Pisco that is chosen, and depending on its characteristics, we will then try to accompany it with a truffle of similar characteristics. Thus, we can play at pairing, and try, one by one, to find the perfect chocolate for our favorite Pisco, or the perfect Pisco for our favorite truffle.

Quebranta: tiene aromas y sabores a plátano de la isla, melocotón, manzana, pecanas, lúcuma, granadilla, pasas y un toque herbáceo.

Maridaje: Trufa Bukaré de Guanni , trufa aterciopelada al 75% de Chocolate.

Quebranta: Has aromas and flavors such as banana, peach, apple, pecan, lúcuma, granadilla, raisins, and a herbaceous touch Pairing: Bukaré de Guanni Truffle, a velvety truffle with 75% chocolate.

Mollar: con aromas y sabores a plátano, melocotón, lúcuma, miel, pasas, pecanas y toffee.

Maridaje: Trufa Criollo de Guanni, manjar blanco y pecanas tostadas.

Mollar: Has aromas and flavors such as banana, lúcuma, honey, raisins, pecans and toffee Pairing: Criollo de Guanni Truffle, manjar blanco and roasted pecans.

Negra Criolla: con aromas y sabores a manzana verde, lima, melocotón, toques de toffe; y en algunos casos nuez moscada y canela.

Maridaje: Trufa Catacaos de Guanni, algarrobina y dulces especias con chocolate de leche.

Negra Criolla: Has aromas and flavors such as green apple, lime, peach, touches of toffee, and in some cases, nutmeg and cinnamon.

Pairing: Catacaos de Guanni Truffle, algarrobina and sweet spices with milk chocolate.

Uvina: con marcados aromas y sabores a aceituna, heno, mango, frutilla y toques ahumados.

Para este Pisco con características tan especiales, es preferible buscarles algo saladito, por lo tanto unos Palitos de queso enrollados en una lámina de prosciutto ahumado y con una exquisita salsa de chocolate de Guanni, le van de maravilla.

Uvina: Has aromas and flavors such as olive, hay, mango, strawberry, and smoky touches.

Pairing: For this Pisco, which has such special characteristics, it is better to pair it with something salty, such as cheese covered with a thin slice of smoky prosciutto and an exquisite Guanni chocolate sauce; they combine excellently.

Italia: intensos aromas y sabores a lima, mandarina, hierba luisa, miel y pasas rubias.

Maridaje: Trufa Italia de Guanni, chocolate, ají amarillo y Pisco italia.

Italia: Has intense aromas and flavors such as lime, tangerine, lemongrass, honey and golden raisins.

Pairing: Italia de Guanni Truffle, chocolate, ají amarillo and Italia Pisco.

Con frecuencia solemos escuchar que se habla de la D.O. Pisco, pero surge la pregunta ¿sabemos distinguir entre una Indicación geográfica y una DO. Denominación de origen? Es por ello que procedemos a definirlas

¿Qué es una indicación geográfica?

Una indicación geográfica es un signo utilizado para productos que tienen un origen geográfico concreto y poseen cualidades o una reputación derivadas específicamente de su lugar de origen.

Por lo general, una indicación geográfica consiste en el nombre del lugar de origen de los productos. Un ejemplo típico son los productos agrícolas que poseen cualidades derivadas de su lugar de producción, y están sometidos a factores locales específicos como el clima y el terreno.

El hecho de que un signo desempeñe la función de indicación geográfica depende de la legislación nacional y de la percepción que tengan de ese signo los consumidores.

We often hear people talk about a guarantee of origin and good quality of Pisco, also known as “Denominacion de Origen” in Spanish; but the question arises, do we know how to tell the difference between a Geographical Indication and a Guarantee of Origin? Due to this question, we will proceed to define the two.

What is a Geographical Indication?

A geographical indication is a sign that is used for products that have a specific geographical origin and possess qualities or a reputation that are derived specifically from the place of origin.

In general, a geographical indication consists of the name of the product’s place of origin. A typical example is agricultural products that possess qualities that stem from their area of production, and are subject to specific local factors, such as weather and soil.

The fact that a sign can carry out the function of a geographical indication depends on national legislation and the perception that consumers have of this sign.

What is a Guarantee of Origin?

A Guarantee of Origin is a special type of geographical indication that generally consists of a geographic name. It can also be a traditional designation that is used for products that have specific qualities or characteristics that are essentially due to the geographical area of their production, made up of natural and human factors.

Champagne, Cognac, Roquefort, Chianti, Porto, Tequila y Pisco son ejemplos de nombres que se asocian con productos de determinada índole, calidad y origen geográfico.

Champagne, Cognac, Roquefort, Chianti, Porto, Tequila and Pisco are examples of names that are associated with products of a determined nature, quality and geographical origin.

Estas indicaciones están particularmente expuestas a la apropiación indebida y a la falsificación por parte de terceros, que pueden utilizarlas junto con productos no relacionados con las mismas, por lo que la protección de dichas indicaciones es sumamente importante tanto en el plano nacional como en el plano internacional. Para ello existen tratados como el de Lisboa, adoptado específicamente en respuesta a la necesidad de un sistema internacional que facilitara la protección de las “denominaciones de origen” en otros países diferentes a los del país de origen.

These indications are particularly exposed to unlawful appropriation and falsification by third parties, which can use the indications along with products that are not related to one other. Thus, the protection of said indications is exceedingly important, both on the national and international level. That is why treaties, such as the Lisbon Treaty, have been adopted specifically in response to the need for an international system that will facilitate the protection of the “Guarantees of Origin” in countries that are different from the country of origin.

Es prioritario velar por la protección de las denominaciones, pues para los productores representan una ayuda para obtener mejores precios para sus productos; para los consumidores representan una garantía con respecto a los métodos de producción y la calidad del producto. Y, finalmente para el desarrollo económico de nuestro país, porque sirven de instrumentos de desarrollo y promoción de diferentes regiones.

It is important to protect the rights of different guarantees of origin, as they aid producers in obtaining better prices for their products. As for consumers, the guarantee of origin represents a sort of certification in regards to production methods and product quality. And finally, guarantees of origin are important for the economic development of our country, as they serve as instruments for development and promotion of different regions.

Aquí en la federación rusa desde aproximadamente el mes de abril de este año 2011, se ha empezado otra vez, repito otra vez a comercializar con fuerza (consumo - venta y propaganda) los aguardientes Chilenos como: Capel, Bauza, Aba; bajo el nombre de Pisco.

Que es lo que pasa ¡¡¡¡¡¡¡amigos!!!!!!! Y yo desde aquí completamente solo tratando de que alguien en el Perú me escuche para empezar a vender nuestro Pisco pero registrarlo antes de esto, en los registros de marcas y patentes de la federación rusa - con el nombre de Pisco antes que los chilenos lo hagan para su producto y nos tengamos que lamentar una vez más,ya que al menos hasta el mes de abril del 2010 se me aseguro que el nombre Pisco no se encontraba registrado en la oficina de patentes de la federación rusa. Más si se encontraba registrado la palabra - capel. (Ojo a esto amigos) Repito desde hace ya más de un año esperando que alguien me escuche hasta ahora mi reclamo no tiene respuesta, que pena …………… Muchas empresas importadoras rusas de bebidas alcohólicas me dicen sin ver y probar el verdadero Pisco de única procedencia del Perú, no pueden diferenciar la calidad y compararla con el producto de Chile de marcas Capel, etc. etc.

20. It is very unfortunate that despite the fact that I am Peruvian and I celebrate important days such as that of the Day of Pisco, the Day of the Pisco Sour and other festive national dates, I am living here in the Russian Federation without Pisco.

What’s going on friends!? Don’t fall asleep on me!

Here in the Russian Federation, since about the month of April 2011, once again, and I repeat, once again, Chilean firewaters such as those of Capel, Bauza and Aba are being promoted via consumption, sales and advertising, as Piscos.

What’s going on friends!? I’m all alone here in Russia, and I’m trying to find someone in Peru to listen to me, so we can begin to sell our Pisco here. But I would also like to register it here in Russia before importing Pisco; register it with the name of Pisco in the brand and patent registries of the Russian Federation, and do so before the Chileans do it with their products! Otherwise, we will have yet another regret. So far, at least as of April 2010, I knew that the name of Pisco was not registered in the patent office of the Russian Federation, but the word “Capel” was registered.

Pay attention friends! I repeat that I have been waiting for more than a year for someone to listen to me, and so far, no one has answered me… what a shame!

Many Russian companies that import alcoholic beverages have told me, even without trying or seeing the true Pisco which only comes from Peru, that they cannot differentiate between the quality or even compare it to the Chilean product, under the brand name of Capel.

I hope someone hears my plea!
