GUIDE Wellsville Brewing Company cultivates homey pub atmosphere

WELLSVILLE — Started as a retirement project among friends, Wellsville Brewing Company strives to harness a homey pub atmosphere. And with its hand-crafted front doors, front bay leather armchairs, various glossed wooden tables and a standing bar to facilitate casual conversation, the local brewery does just that. Patrons listen as an unobtrusive radio plays music at a comfortable level, watch as large bay windows let in natural light and open up to the street and speak with acquaintances under soft lighting in an intimate setting. “We have tables and chairs but no bar stools,” said owner Tom Reuning, who has worked hard to cultivate the image of Wellsville Brewing as a small-town pub. “People come and stand at the bar or they sit down and talk,” he added. “It’s more of a conversation

bar. We haven’t had too much music except for the speakers we added to play the radio.” Purchased in February of 2016 by partners Tom Reuning, Shaun Walsh, Ed Fahs and Jim Knapp, the Wellsville Brewing Company is located at 104 N. Main St. The building was gutted, with large renovation
projects performed by the four partners, and opened for business in October of 2018. The facility has a threebarrel brewing system that supplies the 11 craft beers on tap at the pub. A 12th tap is reserved for a rotation of ciders from local craft cideries. “We’re making about 90 gallons to serve, and
because of our small kitchen, we’re constantly brewing,” he said. Brew flavors include A River Ramble IPA, Mosaic Skies, Brent’s Smoked Scotch Ale, Chocolate Peanut Butter Porter, Cuddle’s Irish Red Ale and their signature brew, Killer Light, which has its own dedicated brew barrel. In tune with the owners’
intention to maintain the pub’s low-profile, light refreshments from local venues are the only foods served. Described as a farm brewery, 60% of the brews’ grain is local. Additionally, their cheeses come from Cuba and their meats come from Wilson Farm in Canaseraga. “We don’t really have a restaurant,” he said. “We serve small plates for finger foods, sandwiches and soup in the winter, but what we mainly want is to have a welcoming, casual atmosphere.” Kept behind the bar are menus of all the local restaurants within walking distance of Main Street, so people can either order out or go out and come back to the bar at will. “It seems like most of the time people don’t really care about loud music and food,” he said. “It’s a homey place for friends and family.” Wellsville Brewing Company is open from noon to 10 p.m. Thursday through Saturday and noon to 6 p.m. Sunday.

classes; collects data about class participation; provides data for grant writing. •Fundraiser (unpaid volunteer, complementary membership) — coordinates fundraising concepts with AAA board members; manages volunteers, publicity, and participation for fundraising events and activities in the local community to benefit AAA programming. •Instructors ($25 per hour plus cost of materials) — provides instructional art activities for local youth and adults in a public space; a class-outline approved by the AAA youth activities director; intended age range of students and number of students,

Allegany Arc awarded $15,000 in grants for Special Olympics
WELLSVILLE — Allegany Arc, a notfor-profit organization supporting people with disabilities in Allegany County, has been awarded $15,000 in grants from the Trustee Management Board of NYSARC Trust Services to support Special Olympics. More than 70 athletes take part in competition through

Autumn is apple-picking season, and many farmers markers, grocery stores and even roadside apple stands are chock-full of delicious apples this time of year. That makes fall the perfect time to whip up some apple-inspired foods. This recipe for “Elsie’s Stewed Apples” from Laurey Masterton’s “The Fresh Honey Cookbook” (Storey) requires a tad more effort than traditional applesauce recipes, but the extra work is well worth it in the end. When shopping for apples in advance of preparing this recipe, avoid apples that have a mealy texture as well as those that are overly sweet. Elsie’s Stewed Apples Serves 6 to 8
Vegetarian cuisine in India is very flavorful. Vegetarian dishes in Indian cuisine showcase vegetables at their finest and are full of warming spices and aromatic flavors. In the southern region of India, many individuals are skilled at making a dish known as “dosa.” Uttappam is a type of dosa that can be flavored with tomatoes, onions or grated cheese. This dosa recipe for “Semolina Pancake with Onion and Cilantro (Rava Uttappam)” courtesy of “India’s Vegetarian Cooking” (Kyle Cathie Limited) by Monisha Bharadwaj, gets its punch from onion and cilantro and can be enjoyed hot right from the pan. Semolina Pancake with Onion and Cilantro (Rava Uttappam) Serves 4 1 medium onion, finely chopped 1 heaping cup coarse semolina
Pinch of turmeric Salt, to taste Handful of cilantro leaves, finely chopped 2 fresh green chiles, finely chopped Sunflower oil for shallow frying Combine the onion, semolina, turmeric, salt, cilantro, and chiles in a mixing bowl. Pour in enough cold water to make a batter of pouring consistency, almost like thick custard. Heat 1 tablespoon of oil in a large pan. Pour a ladleful of the batter into the center and spread it in quick circles to form a flattish disc about 4 inches in diameter. Cover the pan and let the pancake cook in its steam. Flip the pancake over when the underside has turned gold and spotted. Cook the other side by dotting the edges with some oil and covering the pan. Keep warm. Make all the pancakes similarly and serve hot with chutney.

1. Melt the butter in a large skillet over medium heat. Add the apples, turn the heat to high and sauté until they begin to brown on the edges, about 5 minutes. If some are getting too well done, remove them and place on a plate while the rest continue to cook, then return them to the skillet when all are done. 2. Reduce the heat to low and add the honey, wine, lemon zest, lemon juice, and 1⁄2 cup water. Cover and allow to cook until the apples are tender but still firm; you don’t want them to turn into applesauce. 3. Serve this in a bowl, tuck in a couple sprigs of fresh sage from your garden, and tell your guests all about sage honey.

WELLSVILLE — “You have been hugged!” That’s the message included with the comfort kits handcrafted by members of the Jones Memorial Hospital Auxiliary’s Lilac Twig. The kits will be given to youngsters who come to the JMH Emergency Department and include a soft fleece blanket, a stuffed animal, and a book. Prompted by the desire to bring a
little joy and comfort to a kids in a scary situation, several members of the Lilac Twig get together regularly to make and assemble the kits. “We can’t thank the Lilac Twig enough for thinking of our young patients,” said Kelly Foster, director of Emergency and Cardiac Services at Jones. “They are sure to be appreciated by the kids and their families.”
