November 7 Beer Fest Brewers Dinner Holiday Valley

Annual Beer and Wine Festival This Weekend

November 8 Beer and Wine Festival

By Alicia Dziak

Ellicottville’s year-round fun continues this month with the annual Beer and Wine Festival, Nov. 8 at Holiday Valley, hosted by Holiday Valley, Ellicottville Brewing Company and Southern Tier Brewery. Brew Masters Dinner The weekend kicks off with the Friday night Brew Masters Dinner, with a “Cirque de Bière” theme, at Holiday Valley Lodge. The circusthemed evening will feature unusual surprises, a unique photo booth, and a traditional tapping of the keg by the “god of beer” just as guests enter the dining room. The keg tapping will be followed by an array of food stations, boasting nationally recognized craft beers paired with classic, seasonally focused cuisine, with beer incorporated as an ingredient in almost every dish. Brewers will also be on hand to discuss each beer and the pairing decisions. “Our resort chef, Dave Seitz, has put together everything from wild game sausages to roast pork belly and steamship of venison with Yorkshire pudding,” said Franco Brady, general manager of Centerplate at Holiday Valley, the exclusive provider of all food and beverage at the resort. “His focus was to marry the food to the beer and create that unique fall flavor that embraces comfort food.”

Saluting Our Veterans Recognition Includes Nonprofit Organization’s Annual Fundraiser

By Daniel Meyer

Veterans Day, which is observed annually on Nov. 11, represents a single day of remembrance that recalls the signing of the armistice, which ended World War I in 1918. Military veterans are

honored and publicly thanked for their service to their country on Veterans Day in a variety of ways, including parades, church services and other types of community-wide recognition ceremonies. Congress officially recognized the end of World War I in 1926 and declared that the anniversary of the armistice should be commemorated with prayer and thanksgiving. Nov. 11 was approved as a legal holiday in 1938 and was originally known as Armistice Day to honor all World War I veterans. Following the mobilization of servicemen to fight in World War II, it was decided in 1954 to change the name of the holiday to Veterans Day. In addition to the various VFW posts and American Legion halls recognizing our veterans on Nov. 11, a local non-for-profit organization See Saluting Veterans page 8

His performance earned him a Connolly Cup nomination this week. This award is intended “to recognize outstanding varsity football players from over 80 schools in Western New York State.” Senior Callum Watt had six carries for 28 See Eville Sports page 8

Four Mile Brewing Reinvents the Past Olean Craft Brewery Planning Spring 2015 Opening By Eva Potter

There’s nothing like repeating history, especially

when it comes to brewing great beer, and Four Mile Brewing will soon have patrons hooked on their specialty brews. The Olean startup has been renovating two old buildings on East Green Street in Olean, and it just so happens this was

the site of a brewery more than a century ago. The original Olean Brewery was established by Charles Dotterweich in the same building in 1856. In 1872, the building was destroyed by See Four Mile Brewing page 3

School Board to Consider New Capital Project Strategic Plan Extension in Development

By Jann Wiswall

At its meeting on Tuesday, Nov. 4, Ellicottville Central Schools (ECS) Superintendent Mark Ward asked the school board to think about a new capital project that would repair/replace leaking roofs and pay for some projects that were eliminated for budget

reasons from the capital project that is now underway. The current project, which we’ll call capital project No. 1, is the $9.8 million renovation project approved by voters in March 2013 and is well under way. Demolition is complete, concrete work has begun

and steel beams are set to be delivered in early December. As Ward explained to the board (and in an article in the newest edition of the school’s newsletter, which is viewable now at www. ellicottvillecentral.com), New ECS Capital Project page 4
