BARBERS Cheddar has been made at Maryland Farm in Somerset since 1833 by the Barber family, making this the oldest cheddar maker in the world. Graham Padfield is a fourth generation farmhouse cheese maker and produces cheese organically at Park Farm, Kelston, near Bath. WHITE LAKE CHEESE

Jamie Montgomery is well known in the cheddar world for producing benchmark, traditional, cloth bound Somerset cheddar.

Andy Shorrock makes his wonderful Lancashire cheese on the farm at Goosenargh, the heartland of Lancashire cheese production. Matured cheese is extruded and waxed, presented as a cartoon shaped bomb.

Roger Longman runs Bagborough Farm, the base for White Lake Cheese, run by Pete Humphries, Roger, and their expanding team of genial cheesemakers. The range principally consists of goat cheese with milk from the farm, but the line-up also includes cheese from Guernsey cows and now sheep.

Ogleshield: A semi soft cheese made with milk from the farm’s Jersey herd. Great for cheese board or melting. 5127

Lancashire Bomb: 2 year matured Lancashire cheese, full strength, with a creamy texture that maintains a crumbly nature. Complex, long and absolutely divine.

Tor: Is an ash coated, fresh aged goat cheese, with a mousse like consistency and clean, creamy flavour, with a spicy finish.

The dairy at Stonegate in East Sussex is run by the Dyball family, and the cheese is made from their own herd of cattle or responsibly sourced sheep milk.

Olde Sussex: A cheddared disc that is matured for around 4 months, the Olde has a bright, fruity tang.

The Betts family set out to make a traditional cheese with minimal impact on the environment at their beautiful farm in the North Downs. With a hillside cave, UV panels and underground heat sinks, they have achieved the impossible, a carbon neutral product. And what a cheese.
