The Origin Story

How did we come to create Sing for Your Supper?

It all began at our Christmas potluck last year (2023). A group of us sat around, enjoying the delicious food we had shared, and someone remarked on how wonderful it would be to compile these recipes. And just like that, the idea for this cookbook was born!

Why Potlucks?

Why does the Elgin Master Chorale (EMC), formerly the Elgin Choral Union, hold potlucks between its two holiday concerts? The reasons are pracLcal and a liNle fun!

It’s a Long Day:

On days with two holiday concerts, the schedule leaves liNle Lme for a proper dinner. The first concert at 2:30 PM wraps up around 4:30 PM, and the call Lme for the evening concert is 7 PM. With limited Lme, many of our members—who live as far away as Mundelein, Aurora, Lockport, and Lake in the Hills can’t make it home, eat, and return in Lme.

Limited Local Op<ons:

While Elgin has a few downtown dining opLons, the restaurants oWen fill with patrons aNending the same concerts. For chorus members, finding a place to eat and geYng back in Lme can be a challenge.

The Wardrobe Dilemma:

Let’s face it: going out in our concert aYre coordinated dresses and tuxes can draw some amusing looks. Whether we resemble a group of nuns or a quirky wedding party, some of us would rather avoid the spectacle.

Lobster Rolls

Total Prep & Cooking Time: 15 minutes

Ingredients:

1 lb. cooked lobster (from 3 lobsters)

½ c mayonnaise

2 T fresh lemon juice

2 T minced fresh chives

1 T fresh chervil, plus more for serving

Coarse salt

1/4 t Old Bay seasoning

1/8 t cayenne pepper (opGonal)

12 pull-apart dinner rolls, such as King’s Hawaiian Sweet or MarGn’s (do not separate)

Melted buOer.

Comments:

Direc<ons:

Preheat oven to 350 degrees. In a large bowl, sLr together lobster, mayonnaise, lemon juice, chives, chervil, 1 t salt, Old Bay, and cayenne.

Split rolls across tops; brush generously with some melted buNer. Heat in oven on a baking sheet for 3 to 5 minutes unLl warmed through.

Divide lobster salad among rolls, drizzle with remaining buNer, sprinkle with more chervil, and serve.

Santa 7-Up

Ingredients:

1 46-ounce pineapple juice (canned)

70 ounces of 7-up (2 liters or 6 12 oz cans)

2 6-ounce cans of frozen orange juice

½ teaspoon peppermint flavoring

Maraschino cherries

Comments:

Direc<ons:

On day before, freeze maraschino cherries into a circular jello mold to make an ice ring with cherries in it.

Mix all ingredients into punch bowl.

Add ice ring.

Award-Winning Chili

Total Prep & Cooking Time: 2 hours

Ingredients:

• 1 T. olive oil

• ½ large onion, chopped

• ½ c. chopped green pepper

• 1 tsp. minced garlic

• 1 pound lean ground beef

• 1 (14.5 ounce) can diced tomatoes

• 1 (10.75 ounce) can condensed tomato soup

• 1 (14.5 ounce) can beef broth

• 1 (15 ounce) can chili with beans

• 2 T. mild chili powder

• ½ tsp. salt

• ½ tsp. ground black pepper

OpLonal:

• Shredded cheddar cheese

• Chopped onions

Comments:

Direc<ons:

Heat oil in a stockpot over medium-low heat. Add onion, garlic, and green pepper; cook and sOr unOl onion is translucent, about 5 minutes. Add ground beef; cook and sOr unOl browned; drain.

Add diced tomatoes, tomato soup, beef broth, and canned chili; sLr. SLr in chili powder, salt, and pepper.

Cover and simmer over low heat for 1-2 hours.

Served topped with cheddar cheese and/or chopped onions, if desired.

Chocolate Avocado Mousse

Total Prep & Cooking Time: Prep 30 minutes

Ingredients:

5 ripe avocados

1-2 c. chopped dates

(Soaked overnight and drained)

1 c. raw cacao

1 c. carob powder

1 tbsp. vanilla extract

Agave syrup to taste

1+ c. cocoa powder

Direc<ons:

Mash avocados in blender.

Add soaked dates, raw cacao, carob powder and vanilla. Blend well.

Add agave syrup to sweeten to taste.

Mix in ½ c. of cocoa powder.

Keep add in ½ c. increments unLl chocolate level tastes right.
