JUNIOR CHEF Nicholas fires up the grill for National Barbecue Month.
May is National Barbecue Month, so I thought it would be fun to share ways to become a kid cook. I actually have my own barbecue setup thanks to the Big Green Egg. My parents cook on the large smoker, and I have the MiniMax, sized perfectly for culinary-loving kids.
The Egg grills, roasts, smokes, and bakes. It can make pizza, burgers, and even tacos for Taco Tuesday!
It’s also safe to use because the outer ceramic surface protects your hands from getting burnt. You will need adult assistance to light the charcoal, but after learning basic grill skills, you’ll become the pro kid chef! Plus, it’s totally fun cooking as a family and creating delicious meals together.
Here’s one of my favorite recipes because my brothers and I love Mac & Cheese.
Mac + Cheese on the Big Green Egg
Ingredients:
4 tbsp unsalted butter
4 tbsp all-purpose flour
1 tsp dry mustard
1 tbsp Sweet & Smoky Seasoning
1 tsp kosher salt
1⁄2 tsp ground black pepper
3 cups heavy cream
2 cups whole milk
4 cups shredded sharp cheddar cheese
1 cup shredded gruyere cheese
1 cup shredded gouda cheese
1 cup grated Parmigiano-Reggiano cheese
1 pound of macaroni cooked al dente
Directions:
Set the Egg for direct cooking without the convEGGtor at 350oF/177oC; add the cast iron skillet to the Egg to preheat. Melt the butter in the cast iron skillet. Add the flour and, using a whisk and stirring, cook for 2 minutes. Continue stirring as you add the dry mustard, seasoning, salt, and pepper and cook for 3 minutes. Slowly add the cream and milk and continue cooking, stirring constantly, for 8 minutes (until the sauce bubbles slightly- but don’t let it boil).
Remove the skillet from the Egg and add 3 cups shredded sharp cheddar cheese, 1 cup gruyere, 1 cup gouda, and 1 cup
Parmigiano-Reggiano cheeses to the sauce. Stir until the cheese is melted. Add the pasta to the cast iron skillet and fold it into the sauce.
Set the Egg for indirect cooking with the convEGGtor at 300oF/177oC.
Add 1 cup of shredded sharp cheddar cheese to the top of the mac & cheese. Place the cast iron skillet in the Egg and smoke for 1 hour. Remove the mac & cheese once the top cheese is melted and bubbly. Eat and enjoy!

A Unique Graduation Brothers mark milestones together at Glendale schools.
By Sondra Barr
Photos courtesy of the Rickey family
As the end of the school year approaches, two brothers from Glendale are marking significant milestones in their academic journeys. Joseph Rickey, the youngest sibling, is set to graduate from kindergarten at Great Hearts Archway Glendale, while his older brother, Jacob, is preparing to don his cap and gown as a senior at Great Hearts Glendale Prep.
Jon recounts some special memories involving his two sons: "There is one funny and one sentimental [moment]. We were at Jacob’s basketball game and Joseph comes running up to us to say, 'You know, the Griffin (Glendale Prep mascot) isn’t real.’ We asked him how he knew that, and he said, 'I saw his head off in the storage room, he can’t be real!' It takes moments like this for reality to hit. Kindergarteners."
Jacob has been involved in various extracurricular activities, including football, basketball, drama productions, and being a student mentor during his time at Glendale Prep. As for his brother Joseph, Jacob has been a supportive figure, helping him with homework, teaching him valuable life lessons, and modeling hard work both in the classroom and on the athletic field.
room. I asked him what he was doing, and he said, 'Well, that’s it, Jacob is now in college, and I won’t see him again.' I was trying not to laugh and not cry at the same time. It was truly one of the sweetest things, and I’m really not very sentimental. He truly believed that with Jacob’s Senior Night the night before, that he was gone and not coming back!"
Both Joseph, Jacob, and their brother Josh, a sophomore, have grown and developed thanks to the support of teachers, staff, and their family's involvement in the school community. Jon emphasizes the importance of teachers who genuinely care for their students and push them to be better.
For the Rickey family, this year holds special significance as they celebrate these two graduations. Their father, Jon Rickey, has been the Athletic Director at Great Hearts Academies for years, and now he's witnessing his own children reach major academic milestones together.
Jon recalls a touching moment from Jacob's last home football game: "This one still brings some tears to my eyes. For Jacob’s last home football game, and last game of the season in late October, the school had the traditional Senior Night. The extended family walked him onto the field, which is customary, and we had his ceremony. He even scored a 60-yard touchdown on that night! The next morning, he had left early to do his gear turnin and team meetings. I came to his room, and I saw Joseph in there standing and looking around, very forlornly, in Jacob’s
As Jacob moves on to the next phase of his life, he plans to carry the values of hard work,
motivation, and appreciation for educators that he learned at Glendale Prep. He also hopes to give back by coaching sports and mentoring other students, just as his teachers and coaches have done for him. In reflecting on his sons' achievements, Jon offers advice for other families, by saying, "It is definitely a commitment by all that are involved in the house... Having a full slate of athletics for both middle and high school, along with fine arts and other opportunities, it is well worth the commitment!"
This graduation season, the Rickey family is celebrating not just academic accomplishments but also the enduring bond between brothers who have supported and learned from each other throughout their shared educational journey.

The program includes a two-way exchange between Scottsdale and Killarney, with the Scottsdale student delegation traveling to Dublin and Killarney from June 17 to 26, to be hosted by the families of four Killarney student golfers. The Irish delegation will visit Scottsdale from October 26 to November 4, where they will be hosted by local families. Both trips will include three matches for the student athletes to improve their skills, as well as cultural excursions and volunteer work with a charitable organization in the host city. The golf courses chosen for the exchange are Killarney Golf and Fishing Club and Dooks
Golf Links of Glenbeigh, which are known for their stunning locations overlooking Lough Leane and the Atlantic Ocean.
"Golf is a lifelong and non-violent sport critical to the prosperity of Scottsdale; therefore, Scottsdale Sister Cities is educating worldclass ambassadors of peace through the game of golf," says JoAnn Garner, chair of SSCA's Killarney Committee.
The International Student Golf Exchange program aims to promote cultural exchange and goodwill through the sport of golf, fostering greater understanding and appreciation among young people from different countries. The program is part of SSCA's mission to build bridges of international friendship and goodwill through citizen diplomacy with eight sister cities. Courageous 7-Year-Old Battles Rare Cancer
Family finds support in local nonprofit and community efforts.
By Naya Seth
Photos courtesy of the Dunn family
Introducing Kennedy Dunn, a brave 7-yearold in the fight for her life. She has alveolar rhabdomyosarcoma (ARMS), a rare form of cancer that affects 400 to 500 kids each year in the United States. Kennedy found a bump on her skin and the family had it evaluated in January 2023. They were told that it was most likely a cyst. The bump continued to grow rapidly and, eventually, an MRI was done. Unfortunately, the preliminary results revealed cancer. The family says that everything moved very quickly from there. A biopsy officially confirmed stage 3 ARMS solid tumor on March 1, and Kennedy’s port was placed, with her chemotherapy beginning on March 3. She currently receives chemo one to five times a week, which will last for a total of 60 weeks. She will also get radiation therapy. If everything goes well, Kennedy’s treatment will finish in December 2023.
Going through cancer is not easy. In Kennedy’s case, the treatment sometimes gave her negative side effects. Towards the beginning, she faced severe stomach cramping that left her in tears, as well as a suppressed appetite, which can lead to a lack of nutrients. She is doing much better now, and not only has the stomach pain gone away but also her appetite is returning.
The family has also faced emotional struggles, saying that when the diagnosis was first received, it was hard to process, and they wondered, “Why us?” They moved past this, however, and are focused on staying strong and positive. The family has tried to keep life normal, and they have never hid anything from Kennedy. She is very involved in her health and her treatment, and this helps her know what to expect.
in support of Kennedy's fight against cancer. You can also join the community's efforts, which have already raised over $40,000 through hosting benefits and a GoFundMe campaign. Don't miss the opportunity to contribute to Kennedy's journey and show your support by visiting her GoFundMe page at gofundme.com/f/kennedys-journey-withrhabdomyosarcoma.
Aside from the emotional toll, this illness has also placed a financial burden on the family, as some medications aren’t covered by insurance. Kennedy’s family did some research and came across the Armer Foundation. The Armer Foundation is a nonprofit organization founded by Matt and Jennifer Armer in 2019. Its goal is to help local children with extreme medical needs by reducing financial barriers that come with long hospital stays and treatment. Though the foundation doesn’t get a lot of publicity, they help so many families.
Visit armerfoundation.org/kennedy and make a difference by donating or purchasing a shirt
Despite facing this challenge, Kennedy continues to stay positive. The family has a large support system full of family and friends. Kennedy has one brother, Tanner, who is 4. Meanwhile, she loves learning and is a first grader at Cortina Elementary School. Because she cannot go to school right now, her teacher has been coming to her several times a week, and it is something Kennedy definitely looks forward to. She loves crafts, baking, and gymnastics, and her favorite foods are mac n’ cheese and pizza. Kennedy loves the color pink, and a big theme throughout this whole process has been rainbows. Her family says that Kennedy has been so strong, and they hope that you will send positive thoughts and good vibes to her!
Epic Kids student reporter Naya Seth is 12 years old. She loves to read and write. A member of National Junior Honor Society and National Charity League, she enjoys participating in various philanthropy activities.

SUMMER CAMP GUIDE
Overcoming Camp Anxiety for an Unforgettable Summer
Help your child embrace the adventure with these essential strategies to conquer pre-camp nerves and create lasting memories.
By Paige Sprague
Summer camp offers a wealth of learning and growth opportunities, but anxiety can sometimes prevent children from fully engaging in this experience. To help your child conquer their anxiety and make the most of their summer camp adventure, here are 10 essential tips:
1. Encourage participation in camp selection by allowing your child to help choose the camp they'll attend and familiarize them with the location and activities. This will help them feel more in control of their experience.
2. Generate excitement by shopping for new gear together and discussing the enjoyable aspects of camp life they can anticipate.
3. Steer clear of anxiety-triggering questions. Opt for open-ended queries like, "How are you feeling about the camp activities?"
4. Show empathy and understanding for their concerns, rather than trivializing their fears.
5. Focus on specifics like cabin arrangements, mealtime routines, or campfire rituals to help your child visualize their upcoming adventure.
6. Share your positive experiences away from home and encourage your child to openly discuss their feelings about camp.
7. Organize short sleepovers or visits to relatives' homes to help your child practice being away from home.
8. Keep farewells brief and positive to avoid exacerbating mixed feelings.
9. Facilitate communication by providing pre-addressed envelopes, stamps, and a schedule for calls or emails.
10. Help your child set realistic goals, such as making new friends or passing a swimming test, to build their confidence and shift their focus away from anxiety.
Remember, summer camp presents an opportunity for your child to develop crucial life skills, including resilience, selfreliance, and social adaptability. Trust in the dedicated team of professionals and counselors who will guide and support your child throughout their summer camp journey.
The summer camp environment encourages children to make their own decisions and develop a sense of independence. By empowering your child to take ownership of their experience and offering your support, you'll help them overcome their anxiety and create lasting memories.
If your child's anxiety becomes severe and starts to interfere with their daily life, consider seeking help from a mental health professional. However, with the right approach and support, most children can overcome their pre-camp nerves and thoroughly enjoy their summer camp adventure.

EPIC KIDS PRESENTS
CAMP NOT-A-WHEEZE
In a traditional camp setting asthma education is integrated with recreational camp activities. This empowers children to understand and avoid their asthma triggers, recognize warning signals of an oncoming episode, properly use their medications, and exercise control over their disease. Serving 7- to 14-year-old children with moderate to severe asthma, camp activities include horseback riding, adventure course, lake day, music, arts, crafts, exploring the outdoors, and more! Historically, a majority of these campers would not be accepted into other camps due to the constant monitoring and medication requirements that are typically integral to asthma management. Medical volunteers can be found throughout camp (in cabins with kids, accompanying kids to activities, teaching asthma education, and staffing the infirmary). These volunteers MUST be licensed medical professionals in order to attend. The camp's skilled medical direction and physician team are from Phoenix Children’s Hospital & Banner Health (Cardon Children’s Medical Center) and serve in the infirmary as the camp physicians.

BARRY GOLDWATER HIGH SCHOOL: A Community of Achievers Defying Expectations
By Sondra Barr
Photos courtesy of Deer Valley Unified School District
Barry Goldwater High School is defying expectations and transforming the way it is viewed by the community, thanks to its top-notch programs, diverse clubs, and competitive sports teams. Among these programs is the International Baccalaureate (IB) Program, which offers students a rigorous and comprehensive liberal arts curriculum. The school's Avenue 27 culinary program allows students to learn valuable skills and showcase their culinary talents, while numerous clubs and sports teams provide opportunities for personal growth, leadership, and teamwork.
One student who exemplifies this spirit of achievement is Asianna Junge. A senior at Barry Goldwater, she’s made an indelible mark during her four years at the school. A dedicated student, she has been involved in student government throughout her high school career, even serving as the student body president for the past two years. An IB diploma student, Asianna is heavily involved in various clubs, including the Society of Female Scholars, which she founded on campus this year as part of her IB CAS project.
One of the society's most significant accomplishments has been providing free menstrual care products in all
school restrooms. "We already had those products available in the nurse's office, but a group of women thought it was important to have those available in the restrooms as well," says Asianna. In addition to her work with the society, she has been actively involved in DECA, a business and marketing club that aligns with her career goals. Her participation in DECA led her to place first in marketing communications at the state level this year. Asianna's experiences at Barry Goldwater have shaped her into a well-rounded individual who is dedicated to making a positive impact on her community.
Asianna attributes her success to
12 | MAY 2023 | EPIC KIDS EPIC KIDS AZ.COM Cover story
the supportive community at Barry Goldwater. "The understanding and community we have on campus is what allowed me to be involved in so many things," she says. She will be attending Rice University on a QuestBridge National College Scholarship.
Junior D'Vaughn Hicks, a fourthgeneration track athlete, has similarly benefited from the nurturing environment at Barry Goldwater. D'Vaughn, a junior, has attended the school for three years. Among his proudest achievements is making it to the state finals in track and field, becoming one of Arizona's top hurdlers. "It's just amazing overall," he says. "I started from the bottom, and now I'm working my way to the top."
D'Vaughn began his Barry Goldwater journey when he moved to Arizona in 2019. Coming from Detroit, Michigan, a city known for its dangerous and challenging environment, D'Vaughn says that one's origins don’t have to define their future. He wants to inspire others by proving that anything is possible if you put your mind to it.
"Just because I grew up in a povertystricken area with drugs, gangs, and violence, doesn't mean I have to turn out that way," he explains.
D'Vaughn is determined to rise to the top, demonstrating that perseverance and a positive mindset can overcome any obstacles, regardless of one's background. Barry Goldwater has provided him with the supportive community and opportunities to pursue his dreams and inspire others. He credits the guidance of his coach, Bill Scott, and the support of his teacher, Ms. Torres, for helping him form a positive mindset. D'Vaughn plans to attend Macalester College.
Sadie Garcia, a senior at Barry Goldwater, has also experienced significant personal growth during her high school years. Initially shy and antisocial, Sadie credits her involvement in the culinary program and yearbook club for helping her break out of her shell. "I've met a lot of new friends," she says. Participating in yearbook activities,
such as attending games to take photos, has further encouraged her to step out of her comfort zone.
As Sadie reflects on her high school journey, she expresses gratitude for the teachers who have supported her along the way. Ms. Hansen, a history teacher, has not only provided academic guidance but also emotional support when Sadie faced challenges in other classes. Similarly, Mr. Moline, her yearbook teacher, has been a source of positivity and encouragement. Sadie's advice to incoming students is to "have a lot of confidence" and embrace the bumps in the road as opportunities for growth. She looks forward to pursuing a career as a 911 dispatcher and continuing her education in college.
Barry Goldwater’s IB Program, which has been in place since 1999, provides a comprehensive and rigorous liberal arts curriculum for talented students. With 33 IB schools in Arizona offering 40 programs, Barry Goldwater is among those leading the way in providing exceptional educational opportunities.
Another standout program at the school is the student-run Avenue 27 culinary program. Through hands-on experience in the culinary arts, students develop valuable skills and gain insights into the world of professional cooking. This unique program adds to the vibrant educational experience offered at Barry Goldwater.
The school's diverse array of clubs, activities, and top-notch programs are testament to its commitment to fostering a supportive and empowering environment for its students.
Through the dedication and hard work of students like Asianna, D'Vaughn, and Sadie, as well as the support of teachers and mentors, Barry Goldwater is changing the way it's viewed by the community. As more students take advantage of the opportunities available to them, the school's reputation as a center of excellence and achievement will only continue to grow.

Brain Play Sari on SCIENCE
RAISIN' THE ROOF WITH SCIENCE!
Unleash your inner scientist and make raisins dance in this fun, fizzy kitchen chemistry experiment!
Want a reason to play with your food? While adults may discourage us from doing so, food items can teach us a lot about science, especially chemistry. And it can be fun too! In this activity, you’ll learn about how vinegar and baking soda create a reaction and form carbon dioxide bubbles. When a raisin joins the (dance) party, the bubbles that are formed stick to the raisins and their many wrinkles, causing them to float to the top. When the raisins reach the top, bubbles tend to pop and release the gas which, in turn, allows the raisins to sink back down to the bottom.
Supplies
• 1 clear plastic cup
• 1 teaspoon baking soda
• 6 to 7 raisins
• Water
• Vinegar Challenge
• Fill you cup about halfway with water
• Add one teaspoon of baking soda and stir until dissolved in water
• Add 6 to 7 raisins into the cup
• Very slowly pour in vinegar until cup is three-fourths full
• Watch the raisins dance
What did you think would happen to the raisins? Did they surprise you? What happened? What do you think is causing the bubble to form? What type of gas is it? You can try this experiment with other small fruits–how do you think the reaction would
be different if you used grapes? Or a blueberry. What about a cherry tomato?
There are lots of different ways to learn about science in your very own home. Science is all around us, and as long as you ask and have supervision, it is great to be curious about what other experiments you can conduct. Visit azscience.org and find experiments just like this!
