Baklava and Beyond Petos Bakery
Carmel's newest sweet spot brings the authentic flavors of Thessaloniki, Greece, to Main Street, offering a tempting array of traditional Greek pastries and European-inspired desserts.
Step through the bright blue door of Petos Bakery and be transported from the bustle of Carmel's Arts & Design District directly into the heart of Thessaloniki, the world’s famed capital of sweets. As you cross the threshold, the aroma of freshly baked phyllo and honey-drizzled pastries whisks you away to sun-drenched Mediterranean shores. This small space is more than a bakery, though. It's the community's answer to a long-felt absence and a dedicated haven for specialized, delicious—and authentically Greek—sweets and treats.

Founded by Cairo native Nermine Fanous and her husband Alain Jesus Raphael, from Thessaloniki, along with their daughter Patricia, the story of Petos began in 2016 at the Carmel Farmers Market, where the community first got a taste for the Raphael family’s mouthwatering baklava. Their popularity paved the way for bigger dreams. The family opened their first restaurant the following year, and they opened Petos Greek Restaurant on Main Street in 2022. This summer, with the help of family friend Sandy Tawfik, they've expanded their offerings by opening Petos Bakery right next door.

The bakery offers an impressive array of traditional Greek pastries and baked goods. Visitors can indulge in an array of baklava, including a unique chocolate version that's exclusive to Petos in Carmel. Raphael shares, "We offer all types of baklava with pistachios, walnuts or chocolate, and this type is our innovation and the only one in Indiana.” He adds that they also offer cheesecake baklava and kanufa as well.
Another standout is the loukoumades, often referred to as Greek donuts. Raphael describes them as "completely different in taste and preparation" from American donuts. At Petos, you can enjoy these the traditional way with sugar and honey, or try modern variations topped with Nutella, pistachios or strawberries.
Other Greek specialties include spanakopita, tiropita, kourabiedes, and koulourakia. For those with a penchant for custard-filled delights, the bougatsa is a must. This heavenly treat features delicate phyllo dough filled with creamy custard, dusted with powdered sugar and cinnamon, and served piping hot. Petos Bakery also offers a selection of Italian and French-inspired indulgences such as carrot cake and gelato, and a variety of coffee and drinks.
What sets Petos apart is their unwavering commitment to authenticity. "We follow our grandma's recipes, and we try to let people try our authentic recipes, not Americanized ones," Raphael emphasizes. This dedication to tradition is evident in every bite. To maintain the true flavors of Greece, Petos imports key ingredients directly from the source. Cheeses, olives, phyllo dough and extra virgin olive oil all make the journey from Greece to Carmel, ensuring each pastry captures the essence of Greek culinary tradition. It's this attention to detail that transforms a simple sweet treat into a passport to the Mediterranean.
Step into a slice of Greece at Petos Bakery, located at 15 W. Main Street in Carmel. For more information, visit petosfamily.com and follow @petosbakery on Instagram. Kalí óreksi!

Dr. Kingsley’s BACK TO SCHOOL
A new school year often brings changes in diet, sleep patterns, and stress levels, all of which can impact skin health and result in one of the most common inflammatory skin conditions: acne. If acne is a concern for your child, I recommend using the CAMU ClearSkin line from SkinTherapy MD, a simple skin care routine which treats acne with safe, natural ingredients.

Shallan Hazlewood of Lunch Money Boutique
By SuSaN Salaz | PhotograPhy By Gabrielle Noël | artwork By eduardo Peña
As school bells ring signaling the start of another semester, Shallan Hazlewood's upscale children’s clothier, Lunch Money Boutique, aces the test of backto-school style, writing a new chapter on little looks.
(promotional content)
Growing up, Shallan Hazlewood had a secret. Each day, as her classmates headed to the cafeteria, she'd carefully tuck away her lunch money, her mind filled with visions of the mall. Those quarters and dollar bills weren't destined for school lunches—they were her ticket to the latest trends. "I could spend entire days shopping for t-shirts, hats, candy, sunglasses, headbands and jeans," the self-proclaimed mall-rat reminisces, with a glimmer of that childhood excitement still in her eye. Little did she know that her youthful passion for fashion would one day inspire the name of her own boutique, a store that's rewriting the rules of children’s clothing in Indianapolis.
In the heart of Butler-Tarkington, at the corner of 56th and Illinois, Lunch Money Boutique now carries all the things Shallan remembers saving up for. As the shop celebrates its second anniversary this August, it's clear that this upscale children's clothing store has quickly become a treasured resource for discerning Indianapolis parents.
After running a home furnishings boutique in Chicago and moving to Indianapolis to raise her family, Shallan noticed a gap in the market. "While raising three kids, I noticed Indy was in need of unique, fun, high-quality children's clothing," she explains. This observation, coupled with her love of kids' clothes, toys and accessories, led to the birth of Lunch Money Boutique.
The location holds a special significance for Shallan’s family. "My husband grew
up in the neighborhood," she shares. "He rode his bike to the Rivi and was a regular at the Baskin Robbins located in what is now Lunch Money Boutique!" This connection to the community adds a layer of nostalgia to the store's modern offerings.
At Lunch Money, the focus is on quality, style, versatility and durability. "We offer fun, modern, fashion-forward brands as well as timeless, classic and elegant designs," Shallan states. The boutique carries sizes from newborn to 16 years old, with options for boys and girls, along with a great selection of gender-neutral clothing. "While fast fashion offers quick and affordable trends, it often comes at the cost of quality, environmental degradation, unethical labor practices and disposable culture. Slow fashion, on the other hand, champions sustainability and quality craftsmanship." This approach aligns with the boutique's emphasis on sustainability and ethical manufacturing.
Annie Stultz, co-buyer at Lunch Money, highlights some of the exclusive lines for back-to-school shopping: "Bobo Choses, Mini Rodini, Hebe, and Tinycottons are some of the brands we're excited about." These European brands, rarely found in the Midwest, make Lunch Money a destination for unique childhood style.
As for back-to-school trends, Annie notes, "We're seeing lots of fun sports prints, matching sets, and music-themed prints." She also emphasizes the importance of foundational pieces. "Khaki pants and shorts, a good pair of jeans without too much detail, a polo, lightweight knit

Shallan Hazlewood, owner of Lunch Money Boutique, celebrates the store's second anniversary this August. Her upscale children's clothing shop in ButlerTarkington has quickly become a go-to destination for unique, high-quality kids' fashion.

At Lunch Money Boutique, fashion isn't just about looking good—it's about doing good. The store prioritizes sustainably and ethically sourced materials, focusing on certified organic cotton clothing that's gentler on children's skin and the environment, as well as avoiding production in countries with questionable labor practices.
turtlenecks, solid hoodies, and cardigans,” adding that Mayoral is a high-quality brand for these staples.
But Lunch Money, with its bright and inviting atmosphere, is more than just a clothing store. It's a place where children can express their individuality through fashion. "I love the idea of kids being involved in their clothing selection," Shallan says. "Fit and feel are obviously very important to them. Style is, too. I really believe clothing can help develop a child's sense of self and allow them to express their individuality."
This philosophy extends to the shopping experience. The boutique offers personal shopping and styling experiences, and the staff takes a refreshingly relaxed approach. They understand the store's inventory and brands but focus on listening to each customer's needs and offering thoughtful suggestions tailored to the child's personality and style.
Lunch Money goes beyond clothing, offering baby gifts, birthday presents, holiday gifts, books, toys, jewelry and candy. They even carry Indiana and Indianapolis-specific T-shirts and gifts, showcasing their commitment to supporting local brands.
As parents prepare for the back-to-school season, Lunch Money offers a unique proposition. "You can get special items that no one else in their class will likely have," Annie explains. "We only order one per size, and they are designed and crafted to last for multiple seasons." This focus on
Most of the brands we carry are small companies that focus on using sustainably and ethically sourced materials," explains owner Shallan Hazlewood. This commitment to sustainability extends to the longevity of the clothes. By offering high-quality pieces designed to last multiple seasons, Lunch Money helps reduce fashion waste and promotes a more conscientious approach to children's clothing.
quality and uniqueness appeals to parents looking for sustainable options. If a child can wear something for more than one season, you aren't constantly getting rid of clothing, which not only saves money but also cuts down on waste and pollution associated with manufacturing.
In a world of fast fashion and massproduced clothing, it’s clear that Shallan and her team have created something special here, offering a thoughtful alternative that celebrates childhood and individuality. "Fashion should be fun!” says Shallan. “It's okay to wear a bucket hat and mismatched socks, or a T-shirt and tutu." In the end, that's what Lunch Money is all about—helping children express themselves through fashion, one unique piece at a time.

Larry Hanes
Eggshell Bistro Executive Chef/Owner

Since 2011, visionary chef and owner Larry Hanes has been redefining the local brunch experience at Eggshell Bistro in Carmel City Center. His philosophy centers on exploration and discovery, pushing the boundaries of what brunch can be. “My bistro’s philosophy is to provide an alternative menu that will allow you to explore and discover some new things that could possibly become your next new-favorite-things,” he says, adding, “Variety is truly the most important spice of life.” Here, tradition meets innovation in a carefully curated atmosphere that reflects Hanes's passion for global flavors and cultural fusion.
The bistro's menu is a testament to his creative approach, offering dishes that challenge the conventional notions of breakfast and brunch. Chris Holland
Le Petit Gâteau Owner/Executive Pastry Chef

At Le Petit Gâteau in Carmel, Chris Holland blends the precision of science with the creativity of art to craft exquisite French-inspired pastries and custom cakes. Founded in 2019, this bakery has quickly become a destination for those seeking edible masterpieces that are as visually stunning as they are delicious. "What I love about being a chef is that it blends my two passions of art and science," says Holland, who holds degrees in both culinary and fine arts. This dual expertise is evident in every creation that emerges from Le Petit Gâteau's open kitchen, where traditional French techniques meet innovative flavor combinations and artistic presentations.
Holland's culinary philosophy centers on quality ingredients and meticulous craftsmanship. "You are only as good as the ingredients you start with," he explains. The bakery uses trusted brands that are minimally processed and ethically sourced, including unbleached flour, cane sugar, fair-trade Belgian chocolate and European-style butter.
While Le Petit Gâteau offers traditional French pastries like almond croissants, Holland isn't afraid to innovate. Unique offerings such as crème brûlée croissants and chocolate peanut butter croissants showcase his creative flair. This balance extends to the bakery's custom cakes, where Holland works closely with clients to create designs that tell their individual stories.
To aspiring chefs and culinary innovators, Holland advises, "Take risks and don't be afraid of failure. It's only when you are being tested that you learn to grow and true innovation occurs." Looking ahead, Holland plans to share his expertise through classes at the bakery, continuing his passion for culinary education.
Le Petit Gâteau is located at 525 N. End Drive in Carmel. Visit lpgbakery.com and follow @lepetitgateauindy on Instagram for more information and innovative inspiration.
Shari Jenkins
Tipsy Mermaid and noah grant’s Owner/Operator

A longtime fixture in Zionsville's dining scene, Shari Jenkins is bringing a taste of the Florida Keys to Main Street with her latest venture, Tipsy Mermaid Conch House & Cocktails. This new concept joins her successful seafood restaurant, noah grant's grill house & oyster bar, further cementing Jenkins' reputation as a driving force in the local culinary landscape. Jenkins' journey in the restaurant industry began at age 14, working at an ice cream parlor in downtown Zionsville. Years later, she returned to her roots, opening noah grant's in the same space where she started. She has since been instrumental in shaping Zionsville's dining culture.
With her focus on pushing internal boundaries and reimagining traditional dishes with creative twists, Jenkins explains, "It's about experimenting with new ingredients, techniques and presentations to offer unique dining experiences." This philosophy is evident in both her restaurants, with Tipsy Mermaid showcasing her love for Key West and its flavors through items like conch fritters with guava marmalade and a ceviche flight inspired by Hemingway's wives.
Jenkins believes that exceptional food alone isn't enough in today's competitive market. "Serving sustainable seafood and fostering an atmosphere where guests, servers and bartenders are curious and looking for adventure in dining is important," she says, adding that she strives to stand out in a competitive market and ensure guests leave with a sense of happiness and anticipation for their next visit. Through her restaurants, Jenkins continues her mission of bringing exciting culinary experiences to her hometown, creating a diverse and vibrant dining scene in the heart of Zionsville.

Jeff Berman
Bazbeaux Pizza Founder and Owner

In 1986, at the age of 29, Jeff Berman took a leap of faith that would change the city’s pizza scene forever, bringing all new flavors to Indy with Bazbeaux Pizza in Broad Ripple. “We were doing innovative pizzas at the time. Nobody was doing that here yet," Berman recalls. He introduced toppings and combinations that were unheard of locally. The Quattro Formaggio quickly became a bestseller, securing Bazbeaux's reputation for culinary creativity. Many menu items are inspired by his travels, especially the city of New Orleans, where he attended Tulane University, including the Muffaletta sandwich and Cajun-inspired Tchoupitoulas pizza.
From the beginning, Bazbeaux has focused on scratch-made items and fresh ingredients. "We make our dough fresh every day," Berman explains, adding, “We source high-quality stuff. We don't skimp on quality." As Bazbeaux grew, Berman's emphasis on relationships also became evident. Many of his employees have been with the company for decades, growing alongside the business. "I've had managers with me for over 30 years," he proudly states. This loyalty extends to his bookkeepers and even to former employees who went on to open their own successful restaurants, maintaining close friendships with Berman.
Bazbeaux's expansion strategy has focused on growing neighborhoods, bringing its unique concept and atmosphere to new areas. The move to Massachusetts Avenue in 1989 put them at the forefront of the district's revitalization, while the Carmel location, opened in 2005, capitalized on the city's vision for its Arts and Design District, and has become a popular spot along the Monon Trail.
You can find Bazbeaux at 111 W. Main Street in Carmel, as well as in Broad Ripple and on Massachusetts Avenue in downtown Indianapolis. For more information, visit bazbeaux.com and follow @bazbeaux on Instagram.
Paul Aréchiga
Aréchiga Restaurant Group CEO

Paul Aréchiga has transformed the local dining scene with his creative vision and entrepreneurial spirit. Since opening his first restaurant, Verde Flavors of Mexico, in 2009, Aréchiga has expanded the empire to include 14 establishments across Indianapolis and suburban Chicago, each offering a unique atmosphere and elevated Mexican cuisine. He has a passion for this, and he says there is still more to come.
At the heart of Aréchiga's success is his ability to create immersive atmospheres that transport guests to his home country of Mexico. His newest venture, Casa Santa in Noblesville, exemplifies this approach. With seating for 400 (including intimate booths and private dining rooms), custom-made decor and a wide-ranging menu, the space is designed to be an experience, evoking the essence of Mexican culture and cuisine.
Aréchiga's commitment to authenticity and innovation is evident in his frequent travels to Mexico, where he seeks inspiration from the latest food, drink and design trends. This dedication to research and development ensures that each new restaurant concept surpasses the last, offering diners fresh and exciting experiences. “Every location is different. We always want the next one to be better and try not to repeat ourselves,” he says. From the upscale Verde brand to the fast-casual Quesa Tacos, Aréchiga has demonstrated a keen eye for expansion and diversification. His upcoming highend concept, Piedra, set to open in the Bottleworks District in downtown Indianapolis, showcases his ambition to push the boundaries of innovation and bring Mexican culture to the fine dining scene.
Find Aréchiga’s newest establishment, Casa Santa, at 13521 Tegler Drive in Noblesville. For more information and reservations, visit casasanta.restaurant online and follow @casasantaofficial on Instagram. You can also learn more about his other restaurants at verdeflavorsofmexico.com.
Kurt Cohen
Arni’s Co–Owner

Arni’s Restaurant is the essence of culinary tradition in Indiana's dining landscape. Kurt Cohen, son of founder Arnold "Arni" Cohen, along with his brother Brad, has helped steer this beloved institution through decades of success, maintaining a delicate balance between honoring tradition and embracing subtle innovation. "Next year will be our 60th year in business," Kurt explains. "We have multi-generations of loyal customers, and we have a certain core menu that we really can't mess around too much with." This core menu, featuring items like their famous party-sliced pizzas, Stromboli, and Junior Salad, has remained largely unchanged since 1965.
Yet, Kurt recognizes the importance of staying relevant in a changing culinary landscape. "We constantly work around that core menu and add items to keep ourselves viable to changing customer tastes," he says. This approach has led to the introduction of items like flatbreads, tacos, and new flavor profiles that complement—rather than replace—Arni's classic offerings. Sometimes, the most innovative approach is to honor tradition while carefully evolving to meet the needs of both loyal and new customers alike.
Under Kurt's leadership, Arni's has expanded to 17 locations across Indiana, driven by customer demand and loyalty. Kurt's approach to running Arni's reflects a deep understanding of the restaurant industry's challenges and the importance of staying true to one's roots. His advice to aspiring restaurant owners is succinct and practical: "Have good financial backing and be ready to roll up your sleeves."
Find nearby Arni’s locations in Brownsburg, Greenwood and River Ridge Crossing in Indianapolis. Visit meetyouatarnis.com and follow @arnisrestaurant to explore their menu and find a location near you.
Blake Fogelsong
Clancy’s Hospitality Owner/Director of Operations

At the helm of Clancy's Hospitality, headquartered in Noblesville, Blake Fogelsong carries forward a rich family legacy in the Indianapolis restaurant scene. Since joining the business a decade ago, Fogelsong has expanded on the foundation laid by his grandfather, Carl, and father, Perry, dating back to 1965. Balancing tradition with innovation, Fogelsong maintains the company's core values of honesty, integrity, fairness, focus and concentration while embracing new technologies and concepts at the company’s restaurants, including The Fountain Room and Clancy’s Hamburgers in Indianapolis’ Bottleworks District, Grindstone on the Monon in Westfield, Grindstone Public House in Noblesville and more. Through it all, Fogelsong remains committed to the hospitality that has been the hallmark of Clancy's success for over five decades.
Fogelsong's culinary philosophy centers on attention to detail. He believes that the components that make a restaurant work are simple, imploring, “Think of your senses. How does it look? Feel? Sound? And, of course, how is the food?" This approach is evident in Clancy's restaurants, where the atmosphere and service are top-notch, but the classic dishes served are so well-executed that diners remember why they became classics. “My mission is to make hospitality a transformative force in the community and to bring joy and fun to every dining experience,” says Fogelsong, who also sits on the Board of Directors for the Indiana Restaurant & Lodging Association.
With an eye toward the future, Clancy's Hospitality is exploring new ventures, including a Southern-inspired concept called Rosanell's. Fogelsong's advice to aspiring restaurateurs reflects his own journey: "Be passionate, work super hard. It takes a village and relentlessness tenacity—never giving up."

Q&A with Gabrielle Noël of GC Photography

Meet Gabrielle Noël, a local lifestyle photographer who brings extensive experience, an artistic eye and a passion for preserving memories to every one of her full-service photography sessions. Here, Gabrielle shares her insights on creating timeless family portraits that tell your unique story and become cherished heirlooms for generations to come.

Q: Why do you believe it is important to document family life through photography?
A: As a photographer and a parent, I know how fast time flies and how quickly children change. Every year brings something new and different. Capturing their history is important for them to look back on and have memories together. But it's more than that, too. It's about giving kids a visual narrative of their lives.
Q: What advice do you have for families preparing for a photo session?
A: Find a photographer that makes you feel comfortable so that you’ll remember those moments in a fun and happy light. I spend time getting to know my clients and tailor sessions specifically to each family. I often remind my clients to let go of expectations. Kids will be kids, and sometimes those unplanned moments make for the most
genuine and heartwarming photos. The key is to relax and be yourself
Q: How do your photo shoots differ from everyday phone pictures?
A: When I'm snapping photos of my kids throughout the day, I'm getting a lot of core memories of home life and our fast-paced daily routine. But I'm not always capturing the details and intricacies about them as they grow. Professional sessions create more purposeful, clean images of who they are. My photography sessions are also about creating memories. They are about having fun together and doing something special that really slows you down for a second—just to be present with each other, which doesn't happen much these days. The images will last for generations. They are not intended to be kept digitally. They should be printed, shared and displayed.

Q: Do you have any wardrobe or styling tips?
A: Local boutiques like Hey Little Diddle or Lunch Money offer personal styling and can help select children’s outfits that will look great in photos while reflecting their personalities. The most important thing is not to be overwhelmed by style—it's about capturing genuine family moments. I believe there is something to be said about wearing clean and classic pieces that allow each individual to shine, which is why I offer a neutral wardrobe to choose from. Still, many moms arrive anxious, which can affect the whole family. To help, I offer hair and makeup services for moms, giving them a moment to relax and feel prepared.
Q: How do you approach locations for family shoots?
A: For locations, I tend to choose places that speak to the family. Maybe that’s at home or at Holliday Park, so we're capturing those fun memories that are actually true to their daily life. But sometimes it's nice to do a studio session, taking away the distractions and making it really clean and just about the family
and the connection they have.
Q: What's your philosophy on preserving these memories?
A:These photos are not meant to be kept digitally. They should be printed and shared. With my clients, I go through the images and choose the ones that speak most to their story. I do gallery wall designs or heirloom framing with them, so they actually walk away from their sessions with something that is printed and framed in an archival way that will last generations to come. I also make annual albums with their images so they have something later that they can take with them, that really tells their story year by year. It's about creating those lasting, tangible memories that your family can enjoy for years to come.
