Matsusaka beef is a brand of Wagyu that comes from the Mie Prefecture. It ranks as one of the top three Wagyu beef (among Kobe and Ohmi beef) and is famous

for its tender and heavily marbled beef. Due to its low melting point, the beef has a superb “melt in your mouth” quality. Only beef that meet strict grading criteria can be marketed and sold as Matsusaka beef. To become Matsusaka beef, 12-month-old female black cattle of excellent pedigree

are gathered from across the country and fed a special diet of soy, wheat, barley and rice for up to three years. The diet dramatically increases the animal’s weight, resulting in an incredible amount of marbling. Some farmers also feed their cattle beer and massage with Shochu (Japanese sake), but is not a requirement for Matsusaka grading.

Ready to sample soft, succulent and absolutely delicious Matsusaka beef? Mid-Autumn Bounty MOO NCAKES BY CHEF ANDY LIEW

The Mid-Autumn Festival is considered the second most important

and grandest festival in China after the Chinese New Year. It is celebrated on the 15th day of the 8th month according to the Chinese lunar calendar, the middle of the autumn season. The day

is also known as the Moon Festival, the time of the year when the moon is at its fullest and brightest. To the Chinese, a full moon is a symbol of reunion, harmony and happiness. One way to celebrate the festival is by eating mooncakes – delicious, moon-shaped sweet cakes that’s baked or steamed. Mooncakes are cut into small wedges and shared with a group over tea. Most are filled with lotus paste and salted egg yolk while others contain red bean, date paste, fruit, nuts and seeds.

Traditional Chinese Mooncake YOU'LL NEED Yield: 8 pieces For the dough 100 grams all-purpose flour 60 grams golden syrup 1/2 tsp alkaline water 28 grams vegetable oil For the filling 420 grams lotus paste 6 salted egg yolks 1 tbsp rose-flavored cooking wine For the egg wash 1 egg yolk 2 tbsp egg white

PROCEDURE: Preparing the dough: 1. In a large bowl, mix the golden syrup, alkaline water and vegetable oil together. 2. Sift in the flour. Use a spatula to combine all the ingredients. Ensure not to over–stir. 3. Knead mixture into dough. Cover with cling wrap and let it rest for 40 minutes. Preparing the filling: 1. In a large bowl, mix egg yolks with wine. 2. Wipe the yolks dry with kitchen paper. 3. Cut each yolk into two halves and set aside. 4. Roll the lotus paste into a long tube and cut into 12 equal portions. 5. Roll each portion into a ball shape. Set aside and preheat the oven to 180°C. For the egg wash: 1. Whisk the egg yolk with the egg white. Sift through a fine sieve. Combining the dough and filling: 1. Divide the dough into 12 equal portions. Roll each portion into a small ball shape. 2. Cover a dough portion with cling wrap and roll into a thin disc. 3. Take a lotus paste ball and poke a hole in the middle with your finger. 4. Place the egg yolk inside and roll the paste into a ball. Wrap the lotus paste ball with the dough disc. 5. Place the stuffed mooncake into the mold. Lightly press the mold handle, then remove the mooncake. Transfer the stuffed mooncake onto a lined baking tray. 6. Repeat steps 1-5 until you finish the remaining dough and lotus paste. 7. Bake in the preheated oven for about 10 to 12 minutes. Brush the mooncakes with egg wash at about five minutes, before removing from the oven. Continue to bake until the cake turns golden brown. 8. Remove from oven and leave to cool on a wire rack. 9. The pastry will become soft and shiny in one or two days and will be ready to be enjoyed.

SECRETS of the TANDOOR Working with a tandoor takes great experience to get it right. First things first, what is a tandoor? A traditional tandoor is a clay oven shaped like a pit. Its bottom is lined with hot coals. Skewers of meat are cooked by lowering it into the tandoor. Too low in will overcook the meat and too high up will cook only the meat’s outside, leaving the inside raw. The abaniko (traditional hand fan) possesses unparalleled craftsmanship. More than its design, novelty, and original purpose of cooling us down, the fan played a big role in our own history as it acted as a secret communication device. During the Spanish era, women were expected to maintain a modest decorum. Fortunately, women were resourceful enough to cleverly use fans to convey words and emotions they were supposed to keep to themselves. It was an unspoken and widely understood language that women would use to interact with suitors.
