Regrowing Carrots From Scraps

This is a great way to reuse water bottles before recycling, or you can use a glass Mason jar.

What you need: 2 or 3 carrots 2 or 3 empty water bottles or jars with lids Soil Optional: carrot seeds and extra bottles

WHAT TO DO: 1. If using water bottles, cut bottles in half, then cut three slits vertically into the top half about 2 inches long.

2. Cut the tops off of the carrots, leaving about 1 inch of carrot. (Eat the carrots! Yum!) 3. Fill the bottom of the water bottles with soil.

4. Put carrot tops into the dirt, covering about half-inch of the carrot, one per bottle.

5. Water the carrots and then cover with the top half of the bottle. Set in a sunny place 6. Optional: Repeat steps 1 and 3, then place carrot seeds in the soil. Water the seeds

MORE FUN WITH CARROTS!

RECIPE

WHAT YOU NEED: 2 cups all-purpose flour 1 teaspoon baking soda 1½ teaspoons salt 2 teaspoons cinnamon 1½ cups vegetable oil 1 cup sugar ½ cup packed brown sugar 4 eggs, room temperature 1 teaspoon vanilla extract 3½ cups shredded carrots, preferably organic *Optional: 1 cup chopped nuts (pecans, walnuts or pistachios)

WHAT TO DO: Preheat oven to 350ºF. Sift together dry ingredients. Set aside.

Using a stand mixer with paddle attachment, mix together oil and sugars. With the mixer running, add the eggs one at a time until combined.

Add all the dry ingredients and mix until all the flour is moist. Don't over-mix.

Shred the carrots in a food processor or grater and add to the batter. Stir until combined.

Use parchment circles to line the bottom of 2 (9-inch) round cake pans and spray with oil to prevent sticking.

Bake for 35 to 45 minutes, or until a toothpick comes out clean.

Cream Cheese Frosting 12 ounces cream cheese, room temperature 4½ cups powdered sugar 1 teaspoon vanilla Optional: ½ teaspoon lemon juice Beat cream cheese until smooth. Slowly add powdered sugar.

Beat on medium until fluffy.

What do you like about farming?

Well, it is really rewarding. We get to see how everything starts from a seed and grows into the food that we sell.

Why are the farmers' markets so important to your family?

I love growing things and helping people.

We have helped a lot of people over the years to get more healthy with our vegetables. I really enjoy working at the farmers’ market and at the farm. (Irma)

They are rewarding. I get to meet new people and learn new ways to cook what we grow. (Ricky) The markets are our employment. Vicente says the vegetables are like our children so we are so happy to see them come to the market when it all works right. (Irma)

What are some of the practices you use on your farm?

We use cover crops like kale that have a lot of nitrogen that give back to the earth what we have taken. We rotate the crops. We harvest everything by hand so there isn’t any use of herbicides or pesticides; and even though we can lose full crops to the bugs, it's okay because it is going back into the earth where it came from. The markets are the way that we make a living. It is the only way we can keep the farm going, because we pride ourselves on growing the best quality vegetables. To do that, you need to have really good quality seeds and those are always a bit more expensive. (Sylvia)

Why should we come to farmers’ markets instead of a grocery store?

We don’t have any other workers on the farm.

It is a family operation, so you are helping out a family when you shop here. Everything is fresh and local. (Ricky)

When you come to the farmers market you can usually talk to the people who grow your vegetables. Not only are you helping your community but you are helping whole families thrive. When you get things from the store they are usually from different countries and that adds a lot to the carbon footprint. (Sylvia)

Cómo volver a cultivar zanahorias a partir de restos.

Esta es una excelente manera de reutilizar las botellas de agua antes de reciclarlas, o puede usar un frasco de vidrio Mason.

Lo que necesitas: 2 o 3 canahorias 2 o 3 botellas de agua vacías o frascos con tapa Tierra Opcional: semillas de zanahorias y botellas adicionales

LO QUE HACER: 1. Si usas botellas de agua, corte las botellas por la mitad, luego corte tres ranuras verticalmente en la mitad superior aproximadamente 2 pulgadas de largo.

Pastel de zanahoria con especias De Leslie Arnette

Lo que necesitas: 2 tazas de harina para todo uso 1 cucharadita de bicarbonato de sodio 1½ cucharaditas de sal 2 cucharaditas de canela 1½ tazas de aceite vegetal 1 taza de azúcar ½ taza de azúcar morena empaquetada 4 huevos, de temperatura ambiente 1 cucharadita de extracto de vainilla 3½ tazas de zanahorias ralladas, preferiblemente orgánicas *Opcional: 1 taza de nueces picadas (nueces o pistachos)

MÁS DIVERTIDO CON ZANAHORIAS

Como hacerlo: Precaliente el horno a 350ºF. Tamice los ingredientes secos. Dejar al lado.

Con una batidora usando el accesorio de paleta, mezcle el aceite y los azúcares. Con la batidora prendida, agregue los huevos uno a la vez hasta que se combinen.

Agrega todos los ingredientes secos y mezcla hasta que toda la harina esté húmeda. No lo mezcle demasiado.

Tritura las zanahorias en un procesador de comida o usa un rallador y agregalas a la masa. Revuelva hasta que esté combinado.

Use círculos de pergamino para forrar el fondo de 2 moldes para pasteles redondos (9 pulgadas) y rocíe con aceite para evitar que se pegue.

Hornea 35 a 45 minutos o hasta que un palillo salga limpio.

Glaseado de queso crema 12 oz de queso crema, temperatura ambiente 4½ tazas de azúcar en polvo 1 cucharadita de vainilla Opcional: ½ cucharadita de jugo de limón Batir el queso crema hasta que quede suave. Agregue lentamente el azúcar en polvo. Batir hasta que quede esponjoso. Agregue más azúcar en polvo si está demasiado líquida.

¿Qué te gusta de la agricultura?

Bueno, es realmente gratificante. Vemos cómo todo comienza a partir de una semilla y se convierte en el alimento que vendemos. (Sylvia) Me encanta hacer crecer las cosas y ayudar a la gente. Hemos ayudado a muchas personas a lo largo de los años a estar más saludables con nuestras verduras. Realmente disfruto trabajando en el mercado de agricultores y en la granja.

¿Por qué los mercados son tan importantes para tu familia?

Es gratificante. Puedo conocer gente nueva y aprender nuevas formas de cocinar lo que cultivamos. (Ricky) Los mercados son nuestro empleo. Las verduras son como nuestros hijos, así que estamos muy felices de verlas venir al mercado cuando todo funciona bien. (Irma) Los mercados son la forma en que nos ganamos la vida. Es la única forma en que podemos mantener la granja en funcionamiento, porque nos enorgullecemos de cultivar verduras de la mejor calidad. No tenemos otros trabajadores en la granja. Es una operación familiar, por lo que está ayudando a una familia cuando compra aquí. Todo es fresco y local. No solo está ayudando a su comunidad, sino que está ayudando a familias enteras a prosperar.
