Butter, vegetable oil, olive oil and animal fats such as lard or duck fat are the staple cooking fats that can be found in most modern kitchens. Saying that there are a whole host of different kinds of fats, oils and butters available that come from other sources, which often have higher levels of 'healthy' fats and additional benefits that appeal to the informed consumer. It's no secret that avocados are amongst the healthiest foods in the world, with benefits for the skin and circulatory functions, amongst other. It is from the oil that most of these benefits stem, so as 'healthy fats' go, there is probably none healthier. Use as a finishing oil, or the fact that it has the highest smoking point of any plant oil (271oC), it is great for high temperature frying and searing.

COCONUT OIL
The darling of the 'healthy fats' market for a while now, the advantages of coconut oil have been well documented. From being the cure-all beauty product, to being a good alternative for frying, roasting or used instead of margarine in your baking, it has a multitude of uses. Can impart a subtle coconut flavour to dishes, so is well suited for Asian style cuisine.

Including the more common varieties such as rapeseed and sesame oil, seed oils are generally all very good sources of fattyacids and Omega-3, which both help lower cholesterol levels. Flavours and uses can vary as some have higher smoking points than others. The three featured here all have relatively low smoking points (below 177oC) so are best used for finishing and adding flavour.
As the name suggests, nut oils are created from pressed nuts. Most have a low smoking point so are usually not suitable for cooking, but are fantastic as finishing oils as they are generally strong tasting and impart some of the nutty nuances of each variety. Being strong-flavoured a little goes a long way, especially in the case of pistachio and walnut oil. Almond oil is particularly good for baking. It is advised that once opened, nut oils should be kept in the fridge to extend their shelf life. Argan and hazelnut oils also available. Essentially the fat extracted from the cocoa bean, this vegan-friendly vegetable fat is highly stable (melting at around body temperature) and is used to make chocolate when combined with cocoa powder, and also to temper couverture. An additional benefit of cocoa butter in its powder form is its use to sear meat, fish or vegetables at a high temperature.
Peanut butter aside, nut butters have for a long time been associated with the health conscious consumer due to their nutritional benefits. High in protein, vitamin E and magnesium and usually free from sugar and gluten, they are good for vegan, vegetarian and paleo diets.
