ECU Alums Are Making a Difference!

Every day I hear wonderful stories about another successful ECU alum and it brings a smile to my face. This issue is about our alums making a difference. Whether they are going on a mission trip, receiving a national award or simply being a good parent – we are extremely proud!

The only downside is that we do not know about many of our successful alums. Please tell us about your achievements or about other ECU alums who are making a difference.

I want to challenge you to reach out to someone and share your ECU memories. Maybe you would like to reconnect with someone you sat next to in class or maybe your child is about to graduate from high school and, hopefully, you want them to attend ECU. So plan a day to come back to the campus for a visit or become a fan on Facebook or follow us on Twitter. Maybe you’ve been wondering if any of the yearbooks from your time here are still available.

ECU Inaugurates Its Eighth President East Central University inaugurated its eighth president, John R. Hargrave, in a ceremony held on Nov. 19, 2010.

RUSO Board of Regents Chair Connie Reilly delivered the charge of leadership to Hargrave.

Chancellor Glen D. Johnson and Regent Mike Mitchel presented the symbols of office.

Other participants in the ceremony included Chickasaw Governor Bill Anoatubby, Oklahoma Supreme Court Judge Rudolph Hargrave, senior faculty member Bruce Weems, Student Senate President Valina Sefa and Alumni Association Board of Directors member Monica Neal.

Carvajal Presides Over Bainbridge College

Richard Carvajal, an East Central University alumnus, has been named president of Bainbridge College in Georgia.

Carvajal accepted the position while serving as vice president for student success services at Cascadia Community College in Bothell, Wash.

His new position was announced in November.

“I am truly blessed to be the newest president of the fastest-growing college in the University System of Georgia,” Carvajal said, “but my wife and I never would have gotten here without the amazing support we got from some amazing mentors at East Central University.”

One of those mentors, he said, was Dr. Gerald Williamson when he was vice president for student services and now serves as the development officer in the advancement office.

“He has been like a second father to me,” Carvajal said. “Anything I have been or ever will be in my profession, I owe to Dr. Williamson.”

Carvajal graduated from ECU in 1993 with bachelor’s degrees in mass communications and sociology. That year he was presented with the George Nigh Award as ECU’s outstanding graduating student. He said that theater was one of his favorite pastimes at ECU, adding that he met his wife after she appeared in a theater production.

“We could not be more proud of our alma mater and the difference it continues to make in the lives of its students,” Carvajal said.

Nero Retires from Connors State

Donnie Nero, president of Connors State College and an East Central University alumnus, announced he will retire in June.

He said he and his wife, Shirley, will live in Clearview, Okla., after his retirement and focus on work in that community.

“I won’t be able to sit around doing nothing since I’ve worked all my life,” Nero told the Muskogee Phoenix. “So, I’ll probably be involved in some consulting services and will be focusing on working with youth in the community in various capacities and mentoring.”

Nero has worked at Connors State for 11 years. The college is currently in the process of choosing a new president.

Nero received his bachelor’s degree in health, physical education and recreation from ECU in 1971. He was named ECU Distinguished Alumnus in 2002, and was inducted into the Gene and Evelyn Keefer Educators Hall of Fame last April for his significant contributions to the field of education.

Other awards and recognitions he has received include the Department of Human Services Trailblazer Award, the Phi Theta Kappa Distinguished CEO for the Oklahoma/Arkansas Region, both in 2002, and the 2007 Progressive Award.

ECU Educators Hall of Fame Three life-long educators to be honored

Three life-long educators will be inducted into the East Central University’s Gene and Evelyn Keefer Educators Hall of Fame at 2:30 p.m. on Wednesday, April 13, in ECU’s Danley Hall atrium.

The inductees are Dr. Jack W. Paschall, Elizabeth Smith and Stella Robinson. Their photographs will be displayed in the Hall of Fame in the Education Building along with those of past inductees.

The Educators Hall of Fame is sponsored by Janice Diamond and Paul Keefer, the children of Gene and Evelyn Keefer, to recognize ECU-prepared educators at any level who have made a significant contribution to the field of education.

The Hall of Fame is dedicated to the Keefers and other parents like them who could not afford to go to college but who made it a priority that their children have that opportunity.

Dr. Jack W. Paschall Dr. Paschall’s career spans 44 years, with all but five of those years at ECU. He is now retired but continues to teach some online classes at ECU. Paschall also was inducted into the Oklahoma Educators Hall of Fame in 2009.

Paschall, an Adolph Linscheid Distinguished Teaching Professor, has worked with the state’s Resident Teacher Program for first-year teachers since its beginnings in the early 1980s, visiting schools to observe new teachers at least twice during the first semester and once during the spring semester. New teachers must participate in order to qualify for an Oklahoma teaching certificate.

He taught at the Ardmore Higher Education Center the first semester ECU offered classes there. He also was dean of ECU’s School of Graduate Studies from 1990 to 2000.

As the faculty member with the longest continuous service to ECU, Paschall held the honor of carrying ECU’s mace, a symbol of authority, from 2000 to 2010 while leading the president and platform party in commencement ceremony processions.

He has conducted numerous research and consulting projects in instructional technology, classroom management and multicultural education He earned his doctorate in secondary education and instructional technology at the University of Oklahoma and both his bachelor’s and master’s degree in secondary history and education at Southeastern Oklahoma State University in Durant.

Elizabeth Smith Elizabeth Smith was named the 2011 Oklahoma Teacher of the Year. She has taught at Byng Junior High School for nine years and has 17 years of experience in education.

She also is a National Board Certified Teacher.

Smith, teaches reading and is the girls’ assistant basketball coach at Byng Junior High School.

As a teacher and coach, Smith was a busy person before winning the prestigious title and becoming an ambassador of education.

Smith is representing Oklahoma in the National Teacher of the Year competition.

She is the only Teacher of the Year who was hired by the late long-time Byng Superintendent Marvin Stokes.

She was the speaker last fall in the marin Stokes Endowed Lectureship.

Smith earned both her bachelor’s degree in elementary education and her master of education degree from ECU. She played basketball for ECU women’s coach Kent Franz during her senior year.

Stella Robinson (1896 - 1994) In 1915 Stella Robinson moved to Ada to attend East Central State Normal School to become a teacher, and at the age of 19, she earned her teaching certificate.

She began a career of teaching in the Ada area that would last a lifetime. Before earning her bachelor’s degree she taught grades 1-4 and 5-8 and soon became a principal.

In 1926, she returned to East Central State College to earn her bachelor of science degree and earned her lifetime certificate and began teaching English and home economics. Thirty years later she returned to East Central again to begin her master’s degree which she completed in 1958.

Robinson retired in 1965 but never forgot the names and faces of ambitious students who worked under her tutelage to attain an education.

The Great American Conference

Let the Games Begin!

When the East Central University athletic teams take to the field at the beginning of the 2011-12 school year, they will be among the membership of the new Great American Conference.

ECU joins a nine-member league that includes six NCAA Division II universities from Arkansas and three from Oklahoma.

“We are very excited to be part of the new Great American Conference,” said ECU President John R. Hargrave.

“What an appropriate name for a conference that includes universities in Oklahoma and Arkansas.

We look forward to competing again with the Arkansas schools we have played in the past, and keeping our rivalries intact with Southeastern Oklahoma State and Southwestern Oklahoma State Universities.”

The formal announcement of the new conference name was made by the chief executive officers of the nine member institutions – ECU, Southeastern Oklahoma State University and Southwestern Oklahoma State University in Oklahoma and in Arkansas, Arkansas Tech University in Russellville, Harding University in Searcy, Henderson State University in Arkadelphia, Ouachita Baptist University in Arkadelphia, Southern Arkansas University in Magnolia and the University of Arkansas at Monticello.

According to a joint statement from the member institutions’ presidents and chancellors, the name was chosen to “reflect the diversity of the league’s geographic regions, from the Mississippi Delta

of southeast Arkansas to the plains of western Oklahoma.”

The six Arkansas schools are currently members of the Gulf South Conference while the Oklahoma schools hold membership in the Lone Star Conference.

Much of the impetus for the new league, according to the CEO’s, was to bring together institutions with similar athletic and academic profiles as well as those in geographic proximity to lessen travel costs and missed class time for student-athletes. The new conference also recalls part of the athletic history of both states when the three Oklahoma schools were part of the nowdefunct Oklahoma Intercollegiate Conference and the six Arkansas schools were part of the Arkansas Intercollegiate Conference. Teams from the OIC and AIC were frequent opponents in all sports.

“We’re excited about being a founding member of the Great American Conference and feel this name is an excellent reflection of the member institutions and the student athletes that represent them,” said Brian DeAngelis, ECU athletic director.

Will Prewitt, former associate commissioner of the West Virginia Intercollegiate Athletic Conference, was recently named commissioner of the new conference. “This is an incredible opportunity to build a conference from the ground up,” said Prewitt. “When I look at the member institutions and their respective athletic histories, I think we have a chance to build something special.”

It was a turnaround of gigantic and magnificent proportions for the East Central University football program in 2010.

The Tigers, coming off a 0-11 finish in 2009 and predicted to finish in the cellar of the Lone Star Conference North Division, silenced the critics by grabbing a share of the LSC North crown at 5-1 and finishing at 5-6 overall.

Postseason awards were plentiful for ECU as Tim McCarty was voted by his peers as the LSC North Coach of the Year.

Sophomore defensive end Armonty Bryant was selected as LSC North Defensive Lineman of the Year and junior Carlos Savala was picked as LSC North Offensive Lineman of the Year.

Bryant was also joined on the All-LSC North First team by teammate and junior cornerback Dontae Smith.

Bryant also ended up being named to the Daktronics, Inc. AllAmerican Second Team. Bryant and Smith were on the Daktronics Super Region 4 First Team and Savala landed a spot on the regional second

team.

Both Bryant and Smith were also named to the Don Hansen’s Football Gazette All-Region Third Team.

ECU was able to overcome a slow 0-3 start to the 2010 campaign (two of those losses to nationally-ranked teams Texas A&M-Kingsville and Abilene Christian), to snatch its first victory, a 23-0 home shutout of Southwestern Oklahoma State on Sept. 25. The win snapped a 16game losing skid, dating back to the 2008 season.

It was also the Tigers’ first shutout win since the 1993 season.

That shutout set the tone for a solid defensive season by the Tigers, who led the conference in sacks and interceptions.

Bryant ended up third in the nation and topped the LSC in sacks at 13.5 and was tied for ninth in NCAA Division II in tackles for loss with 19. Smith led the conference with seven interceptions.

Defensive Player of the Week awards (he also had a Special Teams Player of the Week award during the season) by recording a team-leading seven tackles, including five solos, to go with 2.5 sacks and a 65-yard interception return for a touchdown late in the game.

The Tigers went on to drop their next two games, but put together a massive five-game winning streak – 22-19 at home over Eastern New Mexico, 20-19 at arch-rival Southeastern Oklahoma State, 48-21 at home over Northeastern State and 36-33 at Texas A&M-Commerce.

The victory over ENMU came as a result of an 8-yard scoring touchdown from junior quarterback Tyler Vanderzee to Chris Espinoza with 2:07 to go. That pair hooked up on three scoring passes in the game and Vanderzee ran for a 2-point conversion after that final TD pass. Sophomore strong safety Norris Wrenn was named LSC North Defensive Player of the Week after picking off a pass, forcing a fumble and recording a team-leading 11 tackles, including eight solo efforts.

In the come-from-behind win over Southeastern, Smith returned an interception 36 yards for the game-winning touchdown early in the fourth quarter and freshman Markell Walker had a 100-yard interception return for a score.

ECU fared well on both sides of the ball against Northeastern State as Vanderzee was

named LSC North Offensive Player of the Week while Bryant was picked as Defensive Player of the Week. Vanderzee was 14-of-26 passing for 250 yards and a pair of scores and also caught a 38-yard TD pass from Jason Stephenson off a reverse. Bryant had a seven-yard fumble recovery and return for a touchdown and posted three sacks and a forced fumble. Smith also had a 74-yard interception and return for a score.

The win streak was then capped by the thriller at Commerce, Texas, as Matt Berrey booted a 37-yard field goal with one second to go. Vanderzee was 28-of-45 passing for a school-record 435 yards and two touchdowns of 8 and 5 yards to Espinoza.

Though ECU closed out the year with a tough 52-21 loss at West Texas A&M, the game didn’t dim the hopes of the Tigers who plan on using the 2010 season as a springboard to future success.

Besides the numerous awards for Bryant and Smith, seven other ECU players garnered LSC North Second Team awards including: Wrenn, senior defensive end Travis Buchanan, sophomore linebacker Tyler McGrew, freshman linebacker Jameel Whitney, junior wide receiver Zack Patteson, junior tailback Charles Opeseyitan and senior punter Ryan Massengale.

Fourteen other Tigers received honorable mention awards.

ECU Athletic Hall of Fame Induction Saturday, Feb. 19, 2011

East Central University inducted three new members into its Athletic Hall of Fame on

Feb. 19 at halftime of the men’s basketball game with the University of Central Oklahoma at the Kerr Activities Center.

Former baseball players Mike Fairchild and Eddie Collins were inducted along with longtime

public address announcer and Professor John Smith.

MIKE FAIRCHILD Fairchild, a 1972 ECU graduate, signed to play both basketball and baseball for the Tigers in 1968.

But that same year, he endured a serious vehicle accident which nearly cost him his life and baseball career.

After recovering from his injuries, Fairchild returned to the baseball team as an off-speed relief pitcher for his senior year.

Though he lost his overpowering speed on his fastball, he still managed to go on and earn all-conference honors.

In 1972, he was also selected as ECU Student of the Year.

Ken Turner, ECU’s head baseball coach at that time, ranked Fairchild as one of the top five pitchers and top 10 baseball players in all of ECU history. Fairchild was also noted for being a loyal teammate with a gentle spirit and a good sport in every situation on and off the field.

Fairchild was an all-state selection in both basketball and baseball for Roff High School.

Upon graduation from ECU, Fairchild began a highly successful business career in Dallas, Texas. He rose quickly through the corporate ranks, becoming senior officer in the National Motor Club, where he worked for most of his career.

He remains a well-known and respected leader in Dallas business and civic circles.

Fairchild enters the ECU Athletic Hall of Fame as a player.

EDDIE COLLINS Collins is the head baseball coach at Latta High School where he has guided the Panthers to 12 state championships (fall and spring) and numerous runner-up finishes since taking over the program in 1981.

He has garnered numerous awards, including All-State Coach and District Coach of the Year, which

is a nationally recognized award for high school coaches.

Collins has also served as a coach on the Sunbelt Classic All-Star Teams.

He is the second all-time winningest coach in Oklahoma history behind fellow ECU Hall of Fame inductee Murl Bowen, who guided Asher High School to 36 state championships and over 1,600 wins.

The baseball field at Latta High School was named after Collins a couple of years ago and he was a 2010 Ferguson Jenkins award winner. That award recognizes a high school baseball coach from the state of Oklahoma each year.

Collins, who played collegiate baseball at ECU under former head coach Ken Turner, was named Oklahoma Intercollegiate Conference Scholar Athlete of the Year from 1976-77 and Co-OIC Player of the Year in 1976. He also earned all-conference accolades in 1976 and 1977 as well

as picking up an NAIA District 9 award in 1976.

Collins enters the ECU Athletic Hall of Fame as a coach/ player.

JOHN SMITH Smith has been the Tigers’ P.A. announcer for 30-plus years and has missed only one game during that span.

His P.A. duties were not limited to Tiger athletics as he also served as announcer for the NAIA Men’s National Basketball Championships from 1990-2009 as well the NAIA District 9 men’s and women’s championships for several years.

Smith taught in ECU’s Health, Physical Education and Recreation Department along with being director of intramural sports from 1979-2000.

He also has experience directing basketball programs after serving as the men’s head basketball coach and director of intramurals at Oklahoma Panhandle State University from 1971-79. He was also an assistant basketball coach and HPER instructor at Adams State University (Colo.) from 1969-71.

Smith has a master’s degree from Adams State after earning his bachelor of science degree from Northern Colorado. He has also done post graduate work at the University of Oklahoma and Oklahoma State University.

Smith is being inducted for meritorious service.

Reggie Whitten, managing partner of the Whitten Burrage law firm in Oklahoma City, was the Commencement speaker for fall semester graduates on Dec. 11, 2010. He founded the Whitten-Newman Foundation in Oklahoma City and the Brandon Whitten Institute for Addiction and Recovery at ECU in honor of his son, Brandon, who died at age 25 as a result of addictions to prescription drugs and alcohol. In conjunction with the Whitten-Newman Foundation, Whitten also founded Pros for Africa and the more recent Pros for Vets.

Elizabeth Smith is the 2011 Oklahoma Teacher of the Year. She teaches reading and is the girls’ assistant basketball coach at Byng Junior High School. Smith earned both her bachelor’s degree in elementary education and her master of education degree from ECU. She played basketball for ECU during her senior year. She also is a National Board Certified Teacher.

Stephanie Canada has been an instructor of kinesiology at ECU since August 2009. She was Oklahoma’s Teacher of the Year in 2007-08. She taught elementary physical education in Shawnee from 2003 to 2008. She was a women’s basketball assistant coach, instructor and senior woman administrator/assistant athletic director at Northeastern State University for two years. Between 1995 and 1998, she was an assistant coach for women’s basketball at the University of South Florida and ECU. Canada received a bachelor’s degree in health, physical education & recreation/ exercise science in 1995 and a master of education degree in secondary education in 1997, both from ECU. Both women have been named Distinguished Alumni for 2011 and each will speak at one of the spring commencement ceremonies on May 7.

ECU Alums with a Mission

ECU GRADUATES USING TALENTS TO BRING CHRISTIANITY TO ISLANDS

Three East Central University graduates are using their medical talents to help ministers and teachers introduce Christianity to a 18 The Columns

remote island off the coast of India where no Christian missionaries had ever gone.

Dr. Creed Stewart, a dermatologist in Sherman, Texas, Dr. Eric Castillo, a dentist in Ardmore, Okla., and Dr. Wayne Lee, a chiropractor in Ada, have made missionary trips before, but now concentrate their efforts on Ghoramara, a small island in the Sundarbans delta complex in India’s Bay of Bengal.

The island is notable because it is sinking into the bay and is projected to disappear in several years from coastal erosion. Several of the islands in the delta have eroded over the last four decades.

Many people have left Ghoramara as their homes or livelihoods have disappeared.

Stewart has traveled twice to Ghoramara with a team assembled by his church, Sherman Bible Church. The trips are more

evangelical based than medical, he pointed out.

“The medical work is an attempt to get people to come and listen,” he said. “We opened a clinic, and while people are waiting in the long lines, ministers went around preaching to the people and teaching the children.”

Of the 45-member group, 25 were pastors and Sunday school teachers, Stewart said.

The rest were medical doctors, dentists, optometrists, three nurse practitioners, a physician’s assistant and nurses.

Stewart said they saw about the same types of diseases they see in the United States, plus exotic diseases such as malaria and cholera. He treated patients with eczema and fungal infections.

“We saw a total of 3,000 patients in three days,”

Castillo said.

The dentists encountered something unique to them.

“We noticed they chew betel nuts and two of their front teeth where they bite were pretty worn down,” Castillo said. They have a dentist that’s not really a dentist that takes their teeth out a couple times a year, but they just break the tooth. We take out the root.”

Castillo made his first trip to Ghoramara last fall. He previously had gone on five medical missionary trips to Mexico with Stewart when Stewart worked in Ardmore. After Stewart moved to Texas, he still went on the trip with the Methodist Church in Ardmore for six years.

Stewart said the Sherman

church started looking for an area to expand the gospel.

“We tried to look for an area of the world that was untouched by Christians,” Stewart said.

They found Ghoramara, a jungle island with 3,000 people, either Hindu or Muslim, and 500 Bengal tigers, the largest group of those tigers in the world.

Stewart said 18 million people – all considered lower class people who aren’t accepted on the mainland – live on the islands.

“In five years this island is going to sink,” Stewart said. “If we spread the gospel and if 30 people accept it and they all go to different islands to live, hopefully they will take the gospel to other islands.”

When the missionaries leave, a church planner stays behind to teach and work with those who accept the Christian faith.

The church has made a 10-year commitment to the area.

Castillo got involved after a visit from Dr. Gerald Williamson, retired ECU vice president for student services who now works in ECU’s Advancement Office. He gave Castillo a copy of “Come and See,” a book about Mother Teresa and her work in India written by Linda Schaefer, an instructor of communication at ECU who teaches photography.

“I read through it. I thought it was cool that she had spent so much time there taking photos,” Castillo said. “I called Dr. Williamson and said I’d like to get a book for Creed. I told Creed to let me know the next time they were going to India.”

Because of the book, Castillo said he was somewhat familiar with what to expect.

“We flew 10 hours to Frankfurt, Germany, had

a two-hour layover and flew 10 hours to Calcutta,” Castillo said.

“By the time we arrived, and with the time change, I was messed up. We drove through the city at 3 a.m. There was still movement, because it’s a big city.

“If you looked to the left, there were people lying on the street. Some were covered up, some were not. There were dogs, pigs and rats, all asleep on the same street. They were all living together. The homelessness is mind-boggling. Yes, that area needs help.”

After Calcutta, the group took a five-hour boat ride up the Ganges River to Ghoramara. They stayed on the ship and a ferry took them from the ship to the island because of the currents in the river. Then they walked a mile to the only brick building, a school where they set up their clinic. There is no electricity on the island.

“They bathe in dirty water and wash their clothes in dirty water,” Castillo said.

Castillo said the trip was exhausting, but he plans to go again next year.

“It’s all church based. We feel like we’re doing God’s work,” he said. “We’re helping people but

what’s more important is we’re being disciples for Christ. That’s where the satisfaction comes in.

We’re doing what God wants us to do.

“This (India) is where I feel God wants me to be.”

Stewart said the aim of the group is not just to treat people, feed the hungry or build houses.

“We’re not doing this just to help people or feel good about ourselves,” Stewart said.

“If that’s all I’m doing, it would be a wasted trip because you never run out of poor people to feed or houses to build. If only 30 people accept the gospel, it would be worth it.”

Stewart graduated from ECU in 1992 with a degree in biology. He graduated from the University of Oklahoma College of Medicine in 1996 and did his dermatology residency at OU, finishing in 2000. He worked in Ardmore two years and moved to Sherman in 2002.

He and his wife Angelica have been married since 2008.

They have an 18-month-old son, Jacob, and are expecting a baby in July.

Castillo worked in Valley View Regional Hospital’s emergency room two or three days a week while completing

a degree in nursing at ECU in 1995. After a couple years he came back to ECU to take prerequisite classes to get into the OU College of Dentistry.

He completed that degree in 2003 and began practicing in Ardmore.

Castillo’s wife, Benita, earned a bachelor’s degree in counseling from ECU in 1995 and a master’s degree in human resources administration in 1999.

The Castillos have two children, Sarah, 9, and Brooke, 7.

Lee attended ECU from 1993-98 and graduated from Parker College of Chiropractic in Dallas in 2000. In 2001 he obtained his Oklahoma chiropractic license and opened a practice in Ada. Lee is currently living in Ada with his wife Melissa. His daughter Brittney is 15 and his step-daughter Clara is 9.

niversity Center Dedication

DR. BILL S. COLE REMEMBERED

ECU’s University Center became known as the Bill S. Cole University Center in a dedication ceremony on Nov. 29.

The Estep Multimedia Center was packed as Dr. Cole was remembered. Speakers at the ceremony included OSRHE Chancellor Glen D. Johnson, RUSO Regent Joanna Hibler, ECU President John Hargrave and two of Cole’s sons who represented Dr. Cole’s family.

Dr. Cole was the sixth president of ECU, serving from 1989 until his retirement in 2006.

He oversaw 21 construction, renovation or expansion projects, 16 endowments of chairs, professorships and lectureships, approximately $100 million in grants, the growth of the ECU Foundation, Inc. from less than $2 million to approximately $20 million in assets, and ECU’s entry into NCAA Division II.

Kathy Johnson Retires From “Perfect Job”

Kathy Hawkins Johnson has worked with so many East Central University students over the years that she’s a bit surprised when she sees students she doesn’t recognize at commencement ceremonies who are about to graduate.

“Oh, I missed them,” she realizes.

That’s because thousands of students have crossed her path since she came to ECU in 1991 as director of student activities, a position which oversees Homecoming, Welcome Week and other activities, three sororities, four fraternities, service programs and approximately 80 student organizations.

Johnson will not be leading the students at Homecoming this fall. She retired Dec. 31, only one semester short of 20 years.

“People would say, ‘I wouldn’t have your job,” she said. “But I had the perfect job.

Students came into my office because they wanted to be there. There was no degree check that said they had to be there. Those students wanted to be there.”

Her job was not just to find activities to entertain students. She implemented several major activities and programs at ECU that helped students develop and gain experience that would be helpful in their future careers.

“Over the years we increased and diversified event programming, chartered Order of Omega, chartered BACCUS, implemented the National Student Exchange, Society of Success and Leadership and, more recently, Tiger Leadership, Service Saturdays and the Student Organization Support Series,” she said.

In 1994 she started ECU’s student activities board, the CREW, then became ECU’s first director of international students.

from seven countries to 74 students from 23 countries.

Then she returned to Student Activities and started developing leadership development and service opportunities for students. That led to her last title, director of campus life and leadership.

She also was interim vice president for student development for the fall 2006 semester after Dr. Gerald Williamson retired.

Before CREW was established, the Student Senate functioned more as a student event board, Johnson said. After she and senate members attended a conference in 1994, they decided to implement a separate activities board, allowing the senate to focus more on governing.

“CREW always has explored new opportunities,” she said. “They did traditional things but became more aggressive in looking for campus entertainment.”

Student activities are called “the education outside the classroom,” Johnson said, whether students are participating in them or actually planning or and pulling off an event.

Christi Green Beaver, charter CREW member said, “One of the things I remember her saying that has stuck with me through the years, which I have found myself repeating several times, is that 2/3 of what you learn in college is learned outside the classroom in extracurricular activities. I still believe that is true and those words inspired me to get involved whenever I could.”

Johnson and her CREW members have made a number of presentations at the National Association of Campus Activities conference. They were always recognized at regional conferences for 100 percent volunteerism.

“I am proud we have had eight CREW members accepted to the University of Arkansas on a full ride for their master’s work and now are working in higher education running their own programs,” she said. Her ninth student should begin next fall.

Beginning the Tiger Leadership Program and Service Saturdays in fall 2007 was one of the most significant changes in her duties, she said.

Tiger Leadership includes research and discussions of how things apply to what the students are trying to do with their future

careers.

Service Saturdays allow students to volunteer to do community service projects at such sites as the Chickasaw National Recreation Area, Ada Boys and Girls Club, Lake of the Arbuckles and ECU’s rock garden.

“I got a lot of pleasure out of the service program,” she said. “People acted like it meant so much to them to participate. It helped students with personal development.”

Johnson probably is recognized mostly for public activities that involve large numbers of students having a good time.

“I always enjoyed Welcome Week. It is fast and furious. I didn’t have time to think about it not going well,” she said with a laugh.

“Homecoming always stands out,” she added. “The majority of people put more emphasis on that. More entities of the campus are up for that because it’s so traditional.”

Probably her favorite memory is planing for the national NAIA football championship in 1993.

“It doesn’t get any more exciting than that,” she said.

ECU hosted dinners for the opposing teams before the playoff and final games.

“Rebecca Kennedy (former director of public information and university relations) and I put all that together,” she recalled. “It was a lot of fun. It was a great experience.

Not everybody gets to experience a national championship.”

While sitting in the stands during the final playoff game, Johnson and Kennedy were so confident ECU was going to win they were already working on what they were going to do the next week before the final game.

“At one point, I remember being in my office at 6 a.m. blowing up balloons,” she said.

“There were students everywhere. Everyone was so excited. We had black and orange all over that campus.”

Johnson holds bachelor’s and master’s of education degrees in health, physical education and recreation from Cameron University and the University of Oklahoma, respectively. She has a varied background that prepared her for working with all kinds of people, putting together events, keeping everything organized and, occasionally, she said, acting as a referee.

She was the high school/college relations coordinator for both Cameron University in Lawton and the University of Central Oklahoma in Edmond before becoming a corporate accounts manager for the Skirvin Plaza Hotel in Oklahoma City in 1985-86.

Today, Johnson, her husband Richy and a partner own the Retail Merchants Association in Lawton. The Johnsons still live in Ada where he also owns Homecheck Inspection Service. They will handle the employee side of the Lawton business such as payroll and commissions.

But she plans to spend more time in her garden, develop an artistic talent and participate in community projects. She walked in the Dallas-Fort Worth area’s Breast Cancer 3-Day in 2007 and 2008, 60 miles each, to benefit Susan G. Komen for the Cure, part of the Susan G. Komen Foundation. Now she plans to get back to the 3.5-mile Race for the Cure.

“I came to East Central never intending to stay,” Johnson said. It’s been an honor to work with so many wonderful people. “I’m lucky. I enjoyed everything I did.

“Although I’m not a graduate of East Central University, I’m proud to say ‘Once a Tiger... Always a Tiger.’”

Calling all Alpha Gamma Delta alumnae -- East Central University’s AGD chapter has just started the Ada Junior Circle and invite you to join!

What’s Junior Circle? Junior Circle is intended for alums under the age of 35. The chapter meets every third Sunday at the AGD Lounge at ECU. According to Junior Circle President Billie Witter Wood, “The purpose of the Junior Circle is to get alumnae members of Alpha Gamma Delta that have not been involved since college again involved in helping the collegiate chapter and to build a new sisterhood.”

The group also plans to help new graduates transition from collegiate life to alumnae life while still remaining active in the fraternity. It allows younger alumnae to provide support to the chapter and make a difference in the chapter.

“The Ada Junior Circle is a perfect opportunity for alumnae members to become more involved with, and make a difference in the chapter, while developing sisterhood throughout the generations of members, and networking for success, all while having a good time,” said Wood.

Alpha Gamma Delta was founded in 1904 at Syracuse University in New York. The fraternity has over 155,000 members at over 185 colleges and universities across North America. The ECU chapter was founded in 1968. The fraternity’s purposes include friendship, community service, honor and the possession of high ideals.

A new look for the Sig Taus During the summer of 2010, the Sigma Tau Gamma Lounge at Pesagi received a much needed facelift. The lounge had been neglected and was screaming for a makeover.

Without a great deal of funds the current members did much of their own renovations. They spent the summer redoing the floors and walls and purchased new furniture and an entertainment center.

Now the Sig Taus can enjoy brotherhood in style – and recruiting new members has certainly become easier. Members want to encourage all Sigma Tau Gamma Alums to stop by and check it out.

Sigma Tau Gamma is a U.S. all-male college social fraternity founded on June 28, 1920 at the University of Central Missouri. The fraternity was born out of the desires and aspirations of 17 men in the belief that all men are social creatures and that friendships of college men are lasting ones. By dedicating themselves to the highest ideals of manhood, brotherhood and citizenship, they would inspire thousands of men from all parts of the country who would follow in their footsteps. Since the fraternity’s beginnings in 1920, it has since spread to more than 140 university campuses across the United States.

ECU Alum Brings Home the Bacon

LEAH LYON WINS $5,000 PRIZE IN NATIONAL COOKING CONTEST

Leah Lyon kept her big secret for two months.

Lyon, an ECU graduate and the project director of two federal grants at East Central University, won another national cookoff last February, the Cacique Go Autentico Recipe Contest.

Cacique Cheese announced the winner through a series of six vignettes about Lyon and the three other finalists on the Cooking Channel on Feb. 5. The actual competition was Dec. 7 and 8.

She probably will take the $5,000 cash prize because of scheduling conflicts with the other option, a week-long trip for two to Napa Valley and a five-day Culinary Institute of America Boot Camp vacation.

Meanwhile, Lyon, who had won her category three times in the biennial Oklahoma Beef Cookoff, took the $1,000 grand prize for the first time on Jan. 22 for her Steak Florentine Orzo with Warm Bacon-Tomato Vinaigrette.

She has been a serious competitor for about nine years and enters between 30 and 40 contests each year.

So far, she’s won about $80,000 in cash, prizes and trips.

With little spare time, she had wavered on whether to enter the Cacique cheese contest. Then she realized she could put together an appetizer using the company’s panela cheese which she frequently uses.

“I had fried some of that cheese (earlier) for a softball dinner for my daughter,” Lyon said. “I realized I could just cut it really thin and enter that. I had made fried cheese with

Shrimp Rajas Al Carbon Panela Tostadito 10 oz. Cacique Panela Cheese 1/3 cup Cacique Crema Mexicana Agria 1 lb. medium-large shrimp, peeled and deveined 1/2 cup bottled mojo criollo 1 bunch green onions, stems only 2 tbsp. light olive oil

1 large poblano chile, roasted, peeled, and seeded 1 large tomato 2 tbsp. fresh cilantro leaves, plus more for garnish if desired 1 large avocado, mashed 1/4 tsp. granulated garlic

1 tsp. fresh lime juice Black pepper to taste 3 tbsp. corn flour 2 tsp. adobo seasoning with black pepper 1/3 cup olive oil 4 strips fully cooked bacon, chopped

Preparation Method Marinate Shrimp in mojo criollo 15-30 minutes. Rub onion stems with oil. Place shrimp & onion stems on grill over medium high heat.

Cook shrimp until just done, 2-3 minutes (they will continue to cook slightly after removing from heat). Onion stems should be wilted & even charred in places. Transfer shrimp & onion stems to a cutting board & chop coarsely.

On same board, cut poblano into matchstick size strips & dice the tomato. Mix shrimp, onion, poblano, diced tomato, & cilantro in a bowl. Add salt to taste, cover & reserve.

Mix crema agria with mashed avocado, garlic, & lime juice. Add a dash of salt & pepper (to taste). Reserve.

Use a very sharp knife to slice the panela cheese into 6 slices (rounds). Mix the corn flour with the adobo seasoning. Heat a very thin layer of olive oil in a heavy skillet to medium high heat. Dredge the panela slices in the seasoned corn flour, coating both sides. Fry in the hot skillet, 2-4 at a time (depending on size of skillet), turning once, until very crispy & golden brown on both sides. Transfer to paper towels & repeat, adding a bit of oil as necessary, until all are fried.

To serve, place fried Panel rounds (Tostaditos) on appetizer plates (1 each). Divide the Shrimp Rajas Al Carbon among the rounds & add a dollop of avocado crema on top. Sprinkle with chopped bacon. Garnish with cilantro if desired. Serves 6 as a hearty appetizer or with a salad for a light lunch.

So on the night of the deadline, she sat down with her laptop while watching TV and, using parts of recipes she had made before, typed up and submitted a recipe for Shrimp Rajas Al Carbon Panela Tostaditos. It wasn’t until late in the day before Thanksgiving that she got the call she was one of four finalists.

“I just started squealing,” she said.

She and her husband Bryan, the director of youth services for the Chickasaw Nation, flew to New York City on Dec. 6. The finalists prepared their dishes at 4 p.m. on Dec. 7 at Chef Aaron Sanchez’s restaurant, Centrico.

Sanchez, a judge on the Food Network show “Chopped,” was one of four judges for this competition.

The finalists weren’t told who won, though. Instead, they had to be back at the restaurant early on Dec. 8 – at 2:30 a.m. – to recreate their dishes for a film crew and tape vignettes and

“After we cooked,” Lyon said, “they told us to go to bed because we had to be at the filming at 2:30 a.m. My husband had bought tickets to the Radio City Music Hall’s Christmas Spectacular. We went to that and ate at Bobby Flay’s restaurant. I slept for an hour, then went to the filming.”

A cooking crew did most of the food preparations for the finalists and a culinary director handled the taping.

They were told who won the contest before they left at 4:30 p.m.

“I had a blast. I really did,” Lyon said. “It’s so interesting to know how things are done (on cooking shows).”

Lyon said she wins contests with desserts, quick-andeasy recipes and other types of dishes. Sometimes her family gets “sick of it” when she’s preparing for a cookoff.

“Maybe my specialty is appetizers,” she said. “I like a little gourmet, international foods, spicy stuff. ‘Spicy’ is my trademark.”

People want more spice in their food and are willing to try more things, she said. She uses a lot of chili peppers in her recipes. In fact, 90 percent of her dishes use poblano chiles, peaches, bacon, basil, avocado or corn.

Lyon is always searching for new things to try. She looks for trends and what high-end restaurants are serving.

Eventually they will trickle down to other restaurants and home cooks.

“It’s a really fun hobby,” Lyon said. “It really is not an easy hobby. It seems easy at face value, but it’s not.

Sometimes the win is not in a prize. It may be a recipe you use forever. You make a lot of really good friends, and it keeps my mind creative. I use a part of my mind I don’t use at work. I get to exercise my mind and stay creative.”

Still, she admits, she sometimes has a problem figuring out what to cook for dinner.

“For me, it’s whatever sounds good,” she said.

“After we cooked they told us to go to bed because we had to be at the filming at 2:30 a.m.”

“Sometimes, nothing sounds good. That may be because I cook all the time.

“My husband would be happy with a hamburger and my daughters with pasta.”

The largest prize she has won, in addition to cash and trips to California, Florida, Tennessee, Disneyworld, Disneyland, San Antonio and trips to New York, was a $25,000 Kitchen-Aid kitchen makeover.

“It’s awesome, if I do say so myself,” Lyon said of her new, larger kitchen. “But it stays dirty a lot because I cook a lot. I have to work really hard for it to look like a kitchen in a magazine for more than a few hours.”

Lyon said she goes to the grocery store more often than she should. She’s always missing some ingredient, but that may be because her daughters also cook. She has four daughters, Desiree, 19, an ECU student majoring in biology/pre-medicine; Devin, 17, a student at Latta; Dominique, 14, a student at Byng; and Dawsyn, 10, a student at Homer.

“I try to have them cook one evening a week,” Lyon said. “The 14-year-old is just starting. I want them to understand what it takes to put a dinner together. I may drop them off at the store to shop for their dinner. I want them to understand how much a meal costs to prepare.”

Her husband likes to smoke ribs, chicken and turkey and they enjoy having people over for dinner.

She credits her parents for her love of cooking and trying new things. Her mother encouraged her daughters to cook, and Lyon helped her from the time she was a small child.

“My mother is from Alabama and I’m the youngest of eight children. We know how to cook southern,” she said.

“Over the years we all developed our own specialties. My dad, a WWII Naval Veteran, used to like really adventurous foods.”

Patsy West (’66, ’75, ’88) retired as elementary superintendent from Pickett-Center School in 2008 after teaching 39 years. She has two daughters, Stacie West Carroll and Stephanie West Coulson, both of whom attended ECU. She is a member of Delta Kappa Gamma Society International (sorority for women educators), Pontotoc County Literacy Coalition and Pontotoc County and Oklahoma Retired Educators organizations.

- 1980s Todd Graham (’86) has been named the head football coach for the University of Pittsburgh.

Graham went to Pitt after a highly successful head coaching tenure at Tulsa, where in four years he had three 10-win campaigns and three bowl victories. He compiled a 36-17 overall record with the Golden Hurricane, including a 10-3 mark this year highlighted by a 28-27 victory at Notre Dame and decisive 62-35 win over 24th-ranked Hawaii in

the Sheraton Hawaii Bowl. Tulsa’s win over Notre Dame was called the biggest upset of the year by ESPN’s Kirk Herbstreit.

Keith Patterson (’86) worked the past eight years at Tulsa, including five as co-defensive coordinator.

He also tutored the linebackers at Tulsa and oversaw the development of Nick Bunting, the 2006 Conference USA Defensive Player of the Year, and Chris Chamberlain, one of the top tacklers in school history and a member of the St. Louis Rams the past three seasons. Tulsa

ranked third in the country in turnovers forced this past season with 36, including a national-best 24 interceptions. Before joining Tulsa in 2003, Patterson was an accomplished coach on the prep level in Oklahoma and Texas. Patterson has now joined Todd Graham at the University of Pittsburgh.

He was a four-year letterman at defensive back for ECU. Darrell Hall (’89) coached Booker T. Washington to a 2010 state championship. Coach Hall led Star Spencer to a 2009 State Championship.

- 1990s -

Steven B. Denson (’91) has been asked to continue to serve as a council member on the U.S. Department of Labor’s Native American Employment and Training Council. The council is an advisory committee to the U.S. secretary of labor. It has approximately 21 members, each appointed for a term designated by the secretary.

The council provides advice on the overall operation and administration of Native American employment and training programs.

Chickasaw Nation Supreme Court Chief Justice Cheri Bellefeuille-Gordon (’91) administers the oath of office to newly appointed Chickasaw Nation District Court Judge Dustin P. Rowe of Tishomingo.

Valley View Regional Hospital announces Todd Essary (’91, ‘97) as Valley View Regional Hospital Foundation executive director. Essary graduated from ECU with a bachelor of science degree in mass communication with a radio/TV concentration and received a master’s degree in human resources administration in May 1997.

For the past four years he was the director and career coach in ECU’s newly formed Career Development Center which grew from 33 clients to more than 1,700. Prior to that he was a director of high school/college relations at Northeastern State University in Tahlequah where he led the recruitment efforts to three all-time freshman record classes.

Essary is married to Tina who works at ECU. He has two stepsons Shane West, 17, and Chase West, 12, who attend Ada City Schools.

Daniel M. Meziere (’93) has been promoted to vice president and treasurer of Atmos Energy Corporation. Meziere will be responsible for all treasury functions including procurement and risk management. He had been the company’s director of accounting services since 2002. Meziere

holds a master of business administration degree in finance from the University of Dallas and a bachelor of science degree in accounting from ECU. He is a member of the Oklahoma Society of Certified Public Accountants.

Stanford Who’s Who welcomes Robin N. Smith (’94) to the ranks of leading professionals as a result of her outstanding work on the internet. As co-founder of WeGoLook.Com, she has routinely demonstrated the vision, dedication and diligence necessary to be successful in the business world.

She is responsible for overseeing the entire operation of the company as well as the marketing of the business. She earned a bachelor’s degree from ECU in 1994. She is a member of the Hugh O’Brien Youth Foundation. In the time away from her busy schedule, she greatly enjoys spending time with her two sons.

Rhonda is a graduate of Jonesboro High School and a graduate of the University of Central Arkansas with a master of science degree in counseling psychology. Tyler is a graduate of Norman High School and a 1995 graduate of ECU. Jeannie (Savage) Forneris (’96) received the 2010 Pre-Paid Legal Services, Inc. Chairman’s Award for Excellence.

Meagan is a graduate of ECU with a degree in English; she graduated in 2004 from the University of Oklahoma College of Law with juris doctorate.

She is employed as an attorney in Ada. Christopher graduated from Ada High School in 1998 and is employed by Ryan Construction.

Matt Lee Sanders, (’02), an ECU history graduate, is teaching middle grades at the NICS school in Seoul, Korea. NICS is a network of 20 international Christian schools located in 16 countries. Its students represent more than 100 countries and are primarily the children of businessmen, military personnel, missionaries, diplomats and embassy staff. The schools are K-12, use American curriculum and English as the instructional language.

Jenny Affentranger (’03), who serves as lower elementary principal for Bethel Schools in Bethel, Okla., has been selected to serve on a 12-person National Board for Professional Teaching Standards committee that will revise the Literacy: Reading-Language Arts Standards. Affentranger, who was selected from more than 500 applicants, will travel to the Washington, D.C., metro area five times between October and February for committee work.

She started her master’s degree at ECU a month after graduating from OBU, and earned a master’s of education degree in elementary school principalship in 2003. She completed the National Board process in December 2006. Now in her 10th year in education, she is starting her second year as Bethel’s lower elementary principal.

She is married to Mike Affentranger, vice president for BancFirst in Shawnee. They have one daughter, Marlee, 4.

Cindy graduated from Ada High School and earned a bachelor’s degree in education from ECU. She is the children’s minister at Center Free Will Baptist Church and works at Pre-Paid Legal, Inc. in Ada. Brent graduated from Vanoss High School and is employed by Wal-Mart in Ada. Cristin Miller (’09) and Kyle Pitman exchanged wedding vows July 31, 2010, at Birdsong Wedding Cottage. Cristin graduated from Velma-Alma High School and earned her special education degree for K-12 at ECU. She is a third-grade special education teacher at Lincoln Elementary School in Ardmore. Kyle graduate from Dickson High School and received an associate in applied science degree in high-voltage electrical construction and maintenance at OSU-Okmulgee. He is a lineman with OG&E in Ardmore.
