A VERY RICH AND DENSE TART FILLED WITH GOOD FATS FROM AVOCADO, COCONUT OIL, AND NUTS. THIS IS LOVE IN A DISH- THIS ONE IS SO GOOD FOR YOU AND YET FEELS SO DECADENT. I USE A HEART SHAPE TIN FOR VALENTINE’S DAY!

LUSCIOUS AVO-CHOCOLATE TART

Inafoodprocessor,blendthepecansoralmonds.Ifpossible,frstsoak themforaround6hoursandletthemhydrate.Thesoakingreleasesthe enzymeinhibitorsandmakesthemeasiertodigest.

AddthesaltandMedjooldatesandblenduntilyouhavea‘dough’,or untilthemixformsaball.Pressthismixtureintothebottomofa moldwitharemovablebottom.(Iliketouseasiliconemold,theyare freezersafeandit’seasytogetthetartoutonceithasset.)Coveritin clingwrapandleavetohardeninthefreezeruntilyouarereadyto pourintheflling.

Fortheflling,blendeverythingtogetheruntilsmooththenpouronto thebase.Setinthefreezerfor1hour,andthenitshouldbefrmenough toslice.Topwithfreshberries,ediblefowers,adustingofcacaopowder —whateverticklesyourfancyandlookspretty!

Meltthechocolateandbutterinaglassbowlinthem 1/2to2minutesonhigh.Stirwithaspoontomeltthechocolate completely.Placethebeans,1/2cupofthewalnuts,thevanilla extract,andacoupleofspoonfulsofthemeltedchocolatemixture intothebowlofafoodprocessor.Blendabout2minutes,oruntil smooth.Thebattershouldbethickandthebeanssmooth.Setaside. Inalargebowl,mixtogethertheremaining1/2cupwalnuts, remainingmeltedchocolatemixture,coffeesubstitute,andsalt.Mix wellandsetaside.

Inaseparatebowl,withanelectricmixerbeattheeggsuntillight andcreamy,about1minute.Addthemaplesyrupandbeatwell.Set aside.

Addthebean/chocolatemixturetotthecoffee/chocolatemixture.Stir untilblendedwell.

THEY WATCHED ME POUR IN THE AQUAFABA- A LOOK OF DISBELIEF AND SOME SILENCE FOLLOWED. AMAZED THEY WATCHED IT FOAM AND RISE. AS I FOLDED IN THE COCONUT CREAM AND CHOCOLATE THE HOLIDAY CHATTER RETURNED. THEY KNEW IT WAS GOING TO BE GOOD, AND IT WAS! (BONUS:YOU CAN MAKE HUMMUS WITH THE LEFTOVERS!)

CHOCOLATEVEGAN MOUSSE

RECIPEFROMBONAPPETITCHOCOLATE COCONUTCHOCOLATEMOUSSE

1.Openbothcansofcoconutcreamandpokeaholeintocreamwithaskewerorparingknife,goingdowntobottomofeachcan.The coconutcreamwillbeasolidmassattopofcanwithalayerofcoconutwatersuspendedunderneath.Bypokingaholeinthecream,you candrainofftheseparatedcoconutwater.Pouroutanddiscard(ordrink!)allbut2Tbsp.oftheseparatedcoconutliquid.

2.Heatchocolate,2Tbsp.coconutcream,and2Tbsp.separatedcoconutliquidinamediumheatproofbowlsetoverasmallsaucepanof barelysimmeringwater,stirringoccasionally,untilmeltedandsmooth.Chillremainingsolidcoconutcreamuntilreadytoserve.

3.Beataquafaba,creamoftartar,andapinchofsaltinthebowlofastandmixerfittedwiththewhiskattachmentonmedium-highspeed untilstiffpeaksformandmixtureistripledinvolume,7–8minutes.Add3Tbsp.coconutsugar,1Tbsp.atatimeandscrapingdownsidesof bowlifneeded,andbeatuntilnospecksremainandmixtureishomogenous,about3minutesmore.

4.Removebowlfromstandmixer.Usinglargecircularstrokesandgoinginthesamedirection,gentlyfoldaboutone-quarterofwhipped aquafabaintochocolatemixturewithaspatulauntilincorporated.Foldinremainingwhippedaquafabain3moreadditionsuntil incorporatedandnostreaksremain.

5.Dividemousseamongramekinsandchilluntilset,atleast2hours(longerifyou'reusingalargeramekin).

6.Usinganelectricmixeronmedium-highspeed,beatreservedchilledcoconutcream,3Tbsp.coconutsugar,andapinchofsaltinamedium chilledbowluntilsoftpeaksformandnobitsofcoconutcreamremain,3–4minutes.

7.Dollopmoussewithwhippedcoconutcreamandsprinklewithcoconutsugar.

8.DoAhead:Mousseandwhippedcoconutcreamcanbemade6daysahead.Coverandkeepchilled.Youmayneedtobeatthecoconut creamtoreviveit.
