As the seasons change, so does the landscape at Burr Hall Farm Our charming farm is getting ready for a series of exciting transformations as it gears up for the winter ahead and plans for an even brighter future, preparing to plant its first lavender plants this next year.

The flowering plants give way to coloring leaves, which will soon be replaced with the peacefully barren landscape of nature’s rest and hibernation. The now not-so-baby baby geese, newly introduced to older goose Blueberry, bees, chickens, kittens, and goats will all soon be in their winter homes and routines.

As Burr Hall Farm continues to evolve and adapt, it remains rooted in its deep connection to the land and the community it serves.

Take advantage of the last month that farmer’s markets are open! Farmer’s markets are vibrant hubs that allow communities to support local farmers directly through direct sales. They boost local economies, help ensure access to fresh, seasonal produce, shape and create communities, and empower small farm businesses

Sign Up for a CSA

CSA, community-supported agriculture, programs are wonderful ways to support local farmers and get beautiful fresh produce weekly. By joining a CSA, you become more than a consumer; you become a crucial partner in the success of local farms. With a subscription, or “share,” you receive a diverse array of seasonal produce from the farm, forging a direct, supportive connection with local growers while relishing in fresh, nutrient-packed, and locally sourced fruits and vegetables.

PLAN YOUR MEALS

Meal planning helps avoid buying excess groceries whose fate is to sadly sit in your fridge until death do you part

GET CREATIVE WITH YOUR SCRAPS

Many food scraps that end up in the trash can actually be repurposed! Use veggie peels and trimmings to make a flavorful homemade stock, or boil strawberry tops with some sugar to make a strawberry simple syrup There are so many tips and tricks to make the most out of the food we are so blessed to enjoy! Leftovers save time and money! Invest in quality food storage containers to keep your extra portions fresh, and enjoy a second meal without cooking from scratch!

“Sell by," "use by," "best before;" these dates can be confusing Plus, in many cases, they are conservative and don’t necessarily mean the food is unsafe to eat Use your senses of smell and sight (and common sense) to determine if the food is still good!

If the food can’t be saved - COMPOST! Did you know that if food waste was a country, it would be the third-largest creator of CO2, after the US and China? By keeping food scraps out of landfills, we prevent enormous amounts of greenhouse gases from further contributing to climate change

Finnish Salmon Soup (Lohikeitto)

Ingredients

2 leeks, finely minced

4 potatoes, cut in 1-inch cubes

2 big shallots, finely minced

1 lb skinless wild salmon, cut in 2-inch cubes

1/2 cup smoked salmon, finely minced

4 cups any type of stock

1 cup cream or non-dairy substitute

2 bay leaves

Butter

Fresh dill for garnish

Directions:

1 Heat some butter in a large saucepan and gently sauté the shallots and leeks on low heat until translucent, add the potatoes and cook for an extra 5 minutes stirring

2.Add stock, just enough to cover the vegetables, and add the bay leaves, bringing to a nice simmer Cook for about 20 minutes until the potatoes have softened

3.Season the salmon cubes in a bowl with salt and pepper and add to the soup with the smoked salmon Cook for another 10 minutes until the salmon is cooked and breaks apart

4.Finish the soup, topping with freshly chopped dill, and a few generous cracks of black peppercorn. Serve the soup in bowls with optional toasted rye bread and butter on the side.
