Bread Story by Yann Ledoux
The BreadStory bakery brings French bread and pastries to New York while sharing the historical stories behind them. Each creation Yann bakes is loaded with pieces of French heritage, whether from a recipe from his childhood or one discovered during his travels.
Yann's passion for artisanal craft baking drives him to collaborate with local producers. He is passionate about the flavor and product itself, and he enjoys working with natural raising agents to allow time to bring the flavors into the dough.
Interview with Yann Ledoux
Q: What is your source of inspiration?
A: My wife! [After a laugh, Yann continued], My inspiration comes from many sources. My inspiration for bread and recipes comes from my life and surroundings; my wife, my daughter, travels, my environment, and the chefs I work with Often, my staff will ask, ‘When will we make this?’ or ‘Can we do this?’ and I’ll be like, ‘Sure! Let's find a recipe and do it!’
Lately, though, most of my inspiration has been from my childhood and my time studying.
Q: What is at the heart of the BreadStory mission?
A: After all these years, from country to country, company to company, I have seen the value of growth in life and within a company, witnessed how bread brings people together, and trained many people from experienced bakers to an architect who then became a baker and farmer after training.
I love that our products highlight high-end chefs’ dishes with good bread and bring people together, from kids to adults We work to please others and make them happy with our products
Opening Bread Story, I found that being the owner gave me the ultimate freedom of having the community I serve and my staff truly be a family.
We spend more time there than at home, more time with each other than with family, so we mean to make each day an excitement and a joy.
My true belief is that with simple ingredients and time, you can create very complex and delicate products. Patience, dedication, and love are what make us Bread Story.

by Christopher Varroux-Renaud Makes 4 Servings
Ingredients
Chai Concentrate:
2 cups water
2 black tea bags
2 whole cloves
2 cinnamon sticks
1/2 tsp ginger
1/2 tsp nutmeg
1/2 tsp cardamom
1/2 tsp ground allspice
2 TB maple syrup
To Make the Latte:
1/2 cup chai tea concentrate
3/4 cup whole or dairy-free milk
1 TB maple syrup or honey
1 pinch ground cinnamon
Directions
1.Heat 2 cups of water and the spices in a small saucepan over medium heat for 5 minutes. Turn off the heat and add the 2 tea bags and syrup, letting it steep for 5 minutes. Strain the tea into a bowl.
2 Reserve 1⁄2 cup of this chai tea concentrate to immediately make a latte Store the remaining in the refrigerator for up to two weeks
3 Bring 3⁄4 cup milk, a TB of maple syrup, and a pinch of cinnamon to a slight boil in a small saucepan. Blend with an immersion blender until frothy, just a few seconds.
4.Pour 1⁄2 cup of the hot chai concentrate into a mug and slowly pour in the frothed milk. Sprinkle an extra pinch of cinnamon on top, and enjoy!
