This month we highlight all the winners of our Awards ... it was certainly a night of celebration and what a great atmosphere there was in the room. I was also touched to get an award myself - it left me speechless. I have now got my own trophy! Congrats to one and all. Due to the awards special we have no licensee interview this month (and I took a holiday!) but it will be back with a bang next month.

But we have plenty of news on what’s happening in the trade - there are fresh new bars springing up. Although hospitality is facing lots of challenges there are many entrepreneurs who are still investing and growing their businesses despite the prevailing economic conditions.

This month we take a look at new Malocchio in Glasgow, and the recently refurbished Ubiquitous Chip - a real Glasgow institution. We also highlight the most recent opening in North Berwick - The Law which is the first Star Pubs lease for the Discovery Group.

I can’t quite believe we are in the last quarter of 2025... here’s hoping the next few months don’t fly by just as quickly.

DRIFTWOOD SET TO REOPEN

Glasgow venue Driftwood, on Sauchiehall Street, has been taken over by industry partners Stevie McColm and Adam Coakley, who also run neighbouring venues Box and Nico’s.

The duo have secured the lease from Star Pubs & Bars after the previous operator Dario Marchetti exited the site in July. With a track record on Sauchiehall Street, McColm and Coakley are promising to bring new energy to the long-standing venue. Stevie McColm, pictured told DRAM, “Driftwood has always been part of Glasgow’s nightlife story – it’s an institution. We have a real soft spot for it, and we’re thrilled to bring it back. People will still find the old favourites they loved – from Venoms and drumstick cocktails to Fishbowls and the famous quiz. However, we’re also adding new cocktails, a shooter menu, Mexican tacos and DJs to make sure Driftwood is once again the go-to place for a great night out in the city.”

New General Manager, Kirsty McNeil added, “Driftwood has always been more than just a bar – it’s a rite of passage for students, locals and anyone looking for a great night out in Glasgow. We’re proud to bring it back with the perfect mix of tradition and new energy.”

Sebb’s earns Michelin recognition

Underground bar and restaurant Sebb’s has been added to the Michelin Guide, marking a major milestone for the Scoop Restaurant Group less than a year after opening the venue on Glasgow’s Miller Street.

Scoop’s Managing Director, Jonathan MacDonald, says the recognition is the result of years of planning, delays and determination.

“As soon as Ka Pao opened in 2020, Covid hit and everything else was put on the back burner,” said Jonathan. “Once we made the decision to push forward, it took years to design the place from scratch, making significant structural changes, and working through all of the associated paperwork that comes with it being a listed building.”

“To be honest, there were moments when we thought about selling the space. People told us not to open in the city centre - postpandemic things looked bleak. But we took a leap of faith, and I’m glad we did. The city centre is buzzing again. There is lots of excitement and a few like-minded operators have opened more great venues.”

Jonathan, who launched Scoop in 2012 after time spent working around the world with McLaren’s F1 team, added, “Opening a new venue is something we take very seriously, and it always has to happen organically. Our restaurants run fairly autonomously - each team brings their own flair to menus, cocktails and atmosphere, but with a shared ethos and back room support. Recognition from Michelin is brilliant, and it definitely raises our profile, but it only gives us more reason to keep moving forward. We’d slide backwards if we stood still.”

The Chester Hotel in Aberdeen has opened The Gallery Bar and Restaurant, the result of a six-figure investment into its dining and hospitality spaces by owners Graham and Gillian Wood (pictured). The new venue brings together design, dining and art, with interiors that feature one of the world’s largest private collections of original work by John Byrne.

The launch coincides with a new menu that blends locally sourced produce with international influences. Dishes range from Peterhead crab with chilli and lime and hand-dived Orkney scallops, to venison loin with seasonal vegetables and a shellfish-based lobster pasta. Co-owner Graham Wood said, “The Gallery represents an investment in Aberdeen’s dining scene and in our ongoing commitment to offering something truly original at The Chester Hotel. We’ve created a space that combines the drama of a modern art gallery with the warmth of great hospitality. The new menu brings together the very best of Scotland’s larder with influences from around the world, ensuring every visit offers something different to discover.”

JP McKeown takes over as Operations Director at Buzzworks

Buzzworks, has appointed JP McKeown as its new Operations Director. With more than 25 years of experience in the hospitality industry, JP joins from Stonegate Group, where he was responsible for a £160 million portfolio of 150 pubs and group hotel strategy. JP takes over the role from Alison Blair, who now will move into an advisory role, continuing her long-standing contribution to the business.

The Rusty Seagull has just opened in Portobello on the site of the former Porty Vault. It is the first craft beer bar from the Winton Brewery, but the pub is also serving up other local and not-so-local beers too, as well as a broad range of spirits.

Birk family set to open The Osprey

The family behind Indian restaurant The Malletsheugh in Newton Mearns have taken over the former Carrigan’s site in East Kilbride, where they plan to open a new dining concept called The Osprey.

The Birk family, have established a strong reputation for quality and service since launching The Malletsheugh just two years ago, winning multiple awards. Now the Birks are building on that momentum, with The Osprey set to bring a premium food experience to East Kilbride, combining elements of their original offer with a “fresh new twist”.

Pav Birk, who leads the family business alongside his mother Tina and brothers Aman, Bobby and Rohan, said: “This is a really exciting moment for us, getting the keys to our second restaurant – it feels special.”

The Birks have a three-generation legacy in Indian cuisine, with their grandfather and father both working as chefs in Glasgow. The family also previously operated the Taj Mahal in Gourock. But The Malletsheugh, and now The Osprey, represent a more “contemporary” direction say the family.

The building in East Kilbride is now undergoing a full refurbishment, with the family investing significantly in both the interior and exterior to bring it in line with their signature style.

Heineken research reveals positive news for Glasgow as weekend revellers spend more than UK average

Heineken has unveiled new research showing that Glasgow’s night-time economy is thriving, with customers spending more than the UK average and travelling further for nights out. The insight, launched during the brewer’s recent Trade Trek in the city, is part of a wider study covering six UK locations - Glasgow, London, Manchester, Birmingham, Cardiff and Newcastle - and based on anonymised card data from 3,000 venues. In total, the research tracked 128,000 customers spending £12 million over a weekend.

Glasgow’s figures stand out. Over the same weekend, 29,000 customers made 44,000 venue visits within a one-mile radius of the city centre, generating £1.1 million in spend.

The average transaction value was £35.03, compared to the national average of £34.53 and a third of those visitors had travelled more than 20 miles, with 93% coming from outside the city centre.

The findings introduce Heineken’s new SOCIAL segmentation model, which groups customers by their purpose on a night out. The six segments are Spontaneous, Organised, Celebratory, Intentional, Adventurous and Let’s Move On. Adventurous guests made up 19% of customers but drove 27% of total spend, the highest of any city in the study. Let’s Move On guests were fewer in number but had the highest per-head spend, averaging £84 across several venues.

The study also highlights a shift towards more deliberate planning. Fridays are dominated by one-drink ‘Single Serve’ visits, while Saturdays see higher spend from socially focused guests.

Struan Barclay and former Crystal Palace and Scotland international footballer James McArthur are set to bring a brand-new venue to East Kilbride this November called Ruby’s. The pair have invested £700,000 transforming the former Coppertrees restaurant on St James Way into a new bar and restaurant with more than 100 covers.

Struan has a strong family connection to the trade through Buzzworks Holdings - his mother is Alison Blair, who recently won Inspirational Woman of the Year at the Scottish Bar and Pub Awards and who was the group’s former Operations Director.

Struan Barclay said, “James and I are really excited to be opening in East Kilbride and bringing this fantastic venue to life. Our vision is to create a space that feels welcoming for every occasion - whether it’s breakfast with family, a special celebratory meal, or simply catching up over a drink. Most importantly, we’re committed to supporting our brilliant team here at the venue and creating new local job opportunities as we grow. This is about adding something fresh to the town’s hospitality scene, and building a dining and drinking destination people can enjoy for years to come.” Ruby’s will include a family and dogfriendly heated garden, big screens for live sport, and a mix of spaces for everything from a quiet pint to cocktails with friends. The food and drink offering will focus on locally sourced dishes, alongside a drinks list that includes fresh lager, Guinness, cocktails and a good choice of alcohol-free options.tailored operators can create landmark dining destinations.

he winners of the Scottish Bar & Pub Awards have been crowned, and what an extraordinary night it was. The winners picked up their bespoke trophies to the applause echoing through the DoubleTree in Glasgow, as Scotland’s hospitality stars celebrated the fruition of all their hard work.

It wasn’t just about the winners it was about all the finalists too - and across every category - whisky bars, cocktail havens, dog-friendly pubs, rising entrepreneurs, and moreour guests represented the very best of Scotland’s licensed trade. It’s their innovation, passion and dedication that set the standard so high.

This special feature focuses on the winners - the venues and individuals who impressed customers, judges and mystery shoppers alike. We have also included why they edged ahead of their competitors.

Our Lifetime Achievement Award went to the one and only Michele Pagliocca of Monteleone. It was a priviledge to help spring the surprise with the help of his family.

Special awards also went to Alison Blair who won the Inspirational Woman of the Year award - an award that recognises not just professional success, but the ability to lead with purpose, empower others, and make a lasting difference. And that is eactly what Alison did during her 35 year tenure at Buzzworks.

LIFETIME ACHIEVEMENT AWARD MICHELE PAGLIOCCA MONTELEONE

Congratulations from us all at Italian Aroma Coffee to the winner of the Lifetime Achievement Award!

The 2025 Lifetime Achievement Award was presented to Michele Pagliocca. Michele’s fingerprints are unmistakably all over Glasgow’s modern hospitality scene. Long before artisan brunches were trending or vintage pubs became the norm, he was reimagining how the city dines, drinks, and dances.

He arrived in Scotland at 17, not with a business plan but with curiosity and drive. From humble beginnings working with his wife’s family at the Pot Still and the 39 Steps, he soon met Donald Macleod. Together, they co-founded CPL, one of Scotland’s most successful entertainment groups, launching iconic venues like The Garage, The Cathouse, Cube, and The Tunnel, and bringing large-scale music events like Download Festival to Glasgow Green.

In 2004, following his father’s death, Michele stepped back from large-scale nightlife to focus on smaller, character-rich venues. He retained The Shed in Shawlands and a property behind The Garage, marking a shift that allowed more time for family, travel, and passions like cycling.

But slowing down wasn’t in the cards. He launched The Butterfly and the Pig, a quirky, mismatched bar-restaurant, followed by Singl-end café-bakery with his son Gianni. His daughter Michela later joined the business, which also grew to include the Buff Club and MacGregor Pie & Ale Howff.

Michele didn’t just build beautiful venues - he built safe, inclusive spaces. He supported Nitezone, launched the “CHAT” campaign to promote care in nightlife, and raised funds for The BEN.

After 26 years, he transformed The Shed into The Marlborough, a bold art-deco venue breathing new life into Shawlands. And in 2025, his daughter Michela took the reins of Monteleone Ltd, continuing the family legacy.

Michele remains hands-on, with wife Jo Jo - his long-time partner in both life and business.

Glasgow’s vibrant food scene has just been elevated with the arrival of Malocchio, a contemporary Italian dining concept by Romano Perella - the man behind Amore. But this isn’t just a new restaurant. Malocchio is a carefully crafted sanctuary, with design and detail threaded through every corner, reflecting not just a love for food, but for atmosphere, emotion, and soul.

Nestled in the heart of the city centre on the former Mediterraneo site, Malocchio is a transformation in every sense - and it shows.

The space has been completely reimagined by Severino, whose creative vision brought together a team of expert craftspeople to realise this bold new concept.

The name Malocchio - referring to the Southern Italian superstition of the evil eye - might suggest negativity, but this space is all about

the opposite: positivity, energy, and protection. At the centre of the design is Il Corno, the horn-shaped amulet believed to ward off bad luck. It’s more than a logo - it’s a theme that runs through the space: from architectural shapes to decorative finishes, everything has meaning. Romano explains,“This is the first concept I’ve created entirely from scratch, and it shows. I wanted it to feel like a break from the world – a place where you can breathe, relax, and experience joy. That’s what the design had to embody.”

Rich textures, calming tones, and subtle nods to Italian heritage are everywhere. Even the olive branches built into the decor serve as a nod to tradition and peace - a beautiful metaphor for the spirit of the restaurant.

Executing such a precise, emotionally-led design took the work of a dream team of specialist

trades.

The elegant tiling that runs through the restaurant’s floors and bathrooms, giving a sense of clean geometry and old-world Italian charm, was carried out by DB Tiling. The meticulous craftsmanship here is more than just aesthetic - it’s about grounding the space, providing a tactile connection to the Italian spaces that inspired it. The softness and comfort come courtesy of LECS Upholstery, who reimagined traditional booth seating and banquettes with modern shapes and ultracomfortable cushioning. Think plush finishes in earthy tones, soft leathers and tactile fabrics that invite diners to linger. And let’s not forget the core of it all – the kitchen. The heartbeat of Malocchio is the food, and New Concept Catering delivered a fully bespoke catering setup. The open-plan kitchen lets diners peek into the magic of fresh pasta being made on site –one of the restaurant’s major calling cards.

The spatial layout encourages the social, shared-style dining that Romano is so

passionate about. There are long communal tables, intimate booths, and open, breathable corners designed for date nights, group catchups or even solo diners looking to unwind with a bowl of handmade pasta. Severino ensured that the design wasn’t just beautifulit was practical, intuitive, and aligned with the restaurant’s purpose.

While Malocchio may feel effortlessly modern, every element is anchored in a deep respect for Italian culture and tradition. It’s in the handmade touches, the subtle symbolism, the olive wood finishes, and even the softly curved bar area that reflects the shape of the protective corno itself. Ultimately, the design of Malocchio mirrors its culinary philosophy: heritage reimagined for now. It’s a place built not only on craftsmanship but on care – where every tile, every light fitting, every chair and every horn-shaped motif tells a story of passion, tradition, and the pursuit of good living.

UBIQUITOUS CHIP

12 Ashton Ln, Glasgow G12 8SJ

The Ubiquitous Chip, a cornerstone of Glasgow’s West End dining scene, has reopened its doors following a meticulous and imaginative £1.2 million restoration. Long known for its whimsical charm and culinary excellence, “The Chip” now enters an exciting new chapter - one that carefully preserves its iconic character while embracing contemporary design and comfort.

At the heart of the transformation is a collaboration of highly skilled contractors and creatives, each contributing to the rebirth of this cherished venue.

Design consultancy Surface ID led the creative direction, seamlessly integrating new design features that elevate the dining experience while respecting the venue’s storied past. From the plush orange leather banquettes to the rich green and teal seating, every colour and texture has been purposefully selected to complement The Chip’s warm, organic aesthetic.

The project’s execution was managed by Myriad Contracts, who handled joinery, plumbing, electrical, and roofing work. Their work was crucial in navigating the challenges of a complex refurbishment within a listed building. The integration of modern amenities into a space with so much history was no small task, and Myriad delivered with both precision and sensitivity.

Guests familiar with The Chip will find plenty of nods to the past— while being delighted by fresh surprises. Andy Thornton supplied a new range of internal furniture, enhancing comfort without

compromising on visual appeal, while Inn Gear refurbished key original pieces, ensuring continuity with the venue’s rich history.

Lighting plays a key role in the atmosphere, and Lightiquehas curated a collection of ambient fixtures that cast a soft glow across the venue’s refurbished Brasserie and Restaurant. A standout addition is the bespoke chandelier lighting which serve as both functional elements and artistic statements.

In the Restaurant, diners can look forward to a refined culinary experience with a choice between a seasonal à la carte offering and a carefully curated tasting menu. Fresh fish and seafood are sourced directly from trusted local supplier John Vallance, while premium vegetables come courtesy of Barnhill Farm in Renfrewshire. To complete the menu, a selection of hand-foraged herbs and spices—sourced by Maxime Cour Sauvage—adds a unique, wild dimension to each dish.

Over in the Brasserie, a more relaxed and sociable atmosphere invites guests to explore a vibrant selection of sharing and small plates. Highlights include beef tartare, monkfish cheek kebabs, and indulgent buttermilk fried chicken waffles. A significant addition to The Chip’s offering is the newly introduced pub snacks menu, now available in the Big Pub - a first for the venue, made possible by the fully upgraded kitchen.

The refurbished Wee Whisky Bar, renowned for its impressive collection of over 100 whiskies, now features a newly added

private dining and events space—intimate, stylish, and perfect for special occasions. Across the venue’s other bars, guests will find a thoughtfully curated range of classic cocktails with a modern twist, expertly reimagined by The Chip’s in-house mixologist, alongside a robust wine list featuring 300 hand-picked selections to suit every palate.

The venue’s transformation is more than just aesthetic. Behind the scenes, the kitchen has undergone a full-scale upgrade with bespoke installations by Airedale Catering Equipment, supporting the expanded menu and elevated service. In the Big Pub, new kitchen functionality allows for the introduction of a dedicated pub snack menu - an exciting first for The Chip.

Dining spaces are now acoustically and visually refined, thanks to Scotia Sound’s discreet AV installation and Pointer’s comprehensive CCTV and security upgrades, ensuring comfort and safety for all patrons.

Outside, Eclipse Furniture supplies weatherproof yet stylish tables and chairs, perfectly suited for al fresco dining on cobbled lanes surrounded by hanging vines and leafy canopies.

Curtains from AJ Blinds soften the natural light that pours in from Ashton Lane, while Benholm Group’s lush planting introduces greenery that blurs the lines between indoors and out - especially in the verdant mezzanine and open-air courtyard areas.

Project oversight was managed by EWH Consultingas quantity

surveyors, with structural support from Grossarts Associates, Caledonian Espresso has supplied state-of-the-art machines that ensure the venue’s drinks offering matches the quality of its cuisine, while Ashleigh Signs helped reintroduce The Chip to Ashton Lane with elegant, understated signage that reflects the venue’s renewed identity.

With reimagined menus led by long-standing Head Chef Doug Lindsay and a team of skilled artisans behind its visual rebirth, The Ubiquitous Chip once again stands as a jewel in Glasgow’s culinary crown.

Whether you’re rediscovering the iconic haggis dish, sipping whisky in the upgraded Wee Whisky Bar, or exploring the new tasting menus under the warm glow of bespoke chandeliers, the refreshed Ubiquitous Chip offers an experience that feels both timeless and entirely new.

THE LAW

15-17 High St, North Berwick EH39 4HH

After six long years of closure, a prominent North Berwick landmark has been brought spectacularly back to life. Formerly The County Hotel, the High Street venue has reopened as The Law, following a meticulous £850,000 makeover courtesy of Heineken-owned Star Pubs, The Discovery Group – the team behind local favourite The Ship Inn - and leading Scottish firm Donaldson Construction, who delivered the ambitious refurbishment.

The reimagined space is almost unrecognisable – and that’s entirely the point. Designed to reflect the venue’s new role as a stylish, welcoming hub for locals and visitors alike, The Law blends comfort and class with a clear nod to its East Lothian roots.

Named after North Berwick Law, the extinct volcano that dominates the local skyline, the venue’s new identity threads through the interior. Earthy tones, natural textures, and heritage-inspired materials reflect the surrounding landscape, while retained features – like the exposed stonework in the back bar – give a respectful nod to the building’s history. (Built circa 1815, The Law is a Category C listed property and once served as a post house.)

The layout has been completely reworked. The ground floor now houses two distinctive bars: a stylish front lounge geared for live sport and casual get-togethers, and a more rustic, coastal-inspired space at the rear known as The Beach Hut, complete with its own pizza oven and access to a 100-seat landscaped beer garden.

Upstairs, 11 boutique letting rooms – each named after a Scottish

malt whisky – offer stays with character, while the adjacent restaurant is warm, contemporary and available for private hire. Throughout the venue, Donaldson Construction’s craftsmanship is clear in the detailing – from structural work to the seamless integration of original features with new materials.

Food-wise, it’s all about freshly prepared pub classics, seafood specials and seasonal Scottish produce. Drinks range from cocktails to premium coffees and curated whiskies. Dogs are welcome too, with treats and meals on the menu.

Says The Law’s new general manager Donna McCallum, “I’ve lived in North Berwick for years and never dreamed one day I would run The Law. It’s great news for the town to have it open again and looking so fantastic – it’s a real asset. The whole team is excited to be welcoming people in for the first time in six years.”

Discovery Group director Steven Winton adds “The Law looks sensational, better than we ever dared hope. The local interest has been phenomenal, with people keen to have a peek at the changes. We feel fortunate to have a second site here and want The Law to add to all the town has to offer.”

WSUE SAYS

e certainly celebrated the 30th anniversary of our awards in style - it was, if I may say so, a truly memorable evening. What stood out most for me was the overwhelming generosity of spirit in the room. The warmth, support, and genuine appreciation shown to the winners - and indeed to all the finalists - created an atmosphere unlike any other. That shared celebration of each other’s achievements made the night so special, and I couldn’t be prouder of the Scottish hospitality industry.

One of the evening’s greatest personal highlights was the honour of presenting Michele Pagliocca with the Lifetime Achievement Award. I’ve known Michele for 35 years, and he is every bit as charming today as he was back then. The surprise was made even more meaningful thanks to the help of his wonderful wife Josephine (Jo Jo) and daughter Michela — my heartfelt thanks to them both for helping make the moment truly unforgettable.

We also did a couple of special awards one to Alison Blair for Inspirational Woman of the Year. She has now stepped back from her role at Buzzworks after more than 30 years - but for all of that time she has inspired not only her team but just about everyone she has come into contact with. She also deserves a medal for working for nearly three decades with her brothers! I only managed a couple of years working with mine!

There was also an award to Fiona Joyce of The Solway Lodge. She has been battling terminal cancer, but she does not let that define her. Fiona turns up for work despite undergoing chemotherapy and inspires her colleagues and customers with her good humour and her determination. She is a wonder.

Lorraine Ferguson of Billy Bridges was our Bar Personality of the Year - for obvious reasons - her personality pervades the very fabric of the bar that she has tended for the past 23 years. She is much loved by her colleages and customers.

Donald Macleod was awarded the Scottish Hospitality Group’s gong for his contribution to the industry. He is a force to be reckoned with and has long championed the industry.

I was also presented with an award for being ‘A Legend’, by Colin Beattie. It was a complete surprise and it left me speechless. The standing ovation brought a wee tear to my eye!

I would also like to take this opportunity to say a huge thanks to the team at the Hilton Doubletree. It is a pleasure working with them. GM Andrew Deighan is great and very much hands on, and his Hotel Manager Lorna Reid is an absolute star. Carla Currie looked after us very well too. Executive Chef Stuart Goldie delivered what, some said, was the best food they have had at the hotel. We do work at getting the menu right and each and everyone I have have mentioned plays their part. Last, but not least Billy Bradburn, who has been looking after us for more years than I care to remember in Banqueting - his team are a delight.

But I went from a lovely high to a low... Terri Craig who has been looking after me and doing my hair and make-up for the past 30 years had to call off because she took ill - unfortunately she did not recover and died at Hairmyres on the 26th. She was the life and soul of every party and an all round genuinely lovely person with a real zest for life. I will miss her greatly - but it also was a real wakeup call - best not to waste a minute you just don’t know what is around the corner!

What was around the corner was the quarterly Scottish Hospitality Group lunch at the Spanish Butcher in Edinburgh where we did a Q&A with Louise Mclean of Signature Pubs, Allan Henderson of Mcginty’s in Aberdeen, Stephen Montgomery and Debbie Hepburn of Schweppes who sponsored the lunch. James and Louise Rusk and their team put on an excellent lunch and the Q&A I think most guests found interesting.

Graham Baird left Belhaven earlier this year and I am delighted to hear that he has decided that early retirement is not for him... he has now joined WEST Brewery. Congratulations.

Alison Blair is not the only family member with stamina - her sister-in law Lyndsey Blair, (wife of Kenny) recently made history by becoming the first Scot to complete the Enduroman Arch 2 Arc Challenge, a race known as the “world’s hardest triathlon”. It involved an 87-mile run from London to Dover, a swim across the English Channel, and a 181-mile cycle from Calais to Paris. She did it in 95 hours and 11 minutes! What an achievement and she raised cash for Hospitality Action and Ayrshire Cancer Support.
