It’s 6:42 on a Saturday night in Door County . The thick summer heat finally begins to wane as evening softens the sun and lake breezes drift in, offering cool relief .
Inside, the kitchen pulses with a different kind of heat—the rush is just beginning . Stainless steel gleams under fluorescent lights . The clatter of pans and the steady hiss of the grill rise above the staff’s shouts and the distant hum of the dining room . Orders fly in like urgent whispers . Hands move with practiced precision—chopping, seasoning, plating . The pace never slows .
This is life behind the kitchen door: a ballet of controlled chaos, powered by muscle memory and sheer will .
This photo essay shines a light on the scenes behind the service—the ones diners rarely see It’s a portrait of labor, both bruising and
beautiful . The hands that feed, pour, scrub, and lift . The double shifts, the untipped hours, the burns no one posts about . Sister Bay stalwart Al Johnson’s has been a beacon of Door County hospitality since 1949 . “For us, we have the added responsibility of nostalgia, to give people the same great experience that they remember,” shares owner Lars Johnson . “It’s consistency; it’s continuity; the Swedish pancakes better taste like the Swedish pancakes from their youth,” he adds . Teamwork makes it happen behind the scenes at Al’s . “No one really has a job title, because we all
jump in to help,” he says . “If the dishwasher is struggling, let’s go get them caught up . If the line is slowing down, how can we assist,” Johnson continues . The front of house and back of house are in it, battling every day to deliver and exceed customer expectations “That common struggle is really what brings you together Trying to do the best you can, we pull together There’s a common bond this way, a different type of work relationship You’re on a line, there are flames everywhere, there’s food you’re preparing, it’s a lot,” he explains Think of how many puzzle pieces need to fit together for a steak dinner to be perfectly executed Behind every perfectly plated steak is a team moving as one “The grill cook tends to a dozen sizzling orders, each at a different stage At the same time, the sauté station prepares delicate pan sauces and vegetables, juggling multiple
pans with practiced hands . As each component reaches its peak, the expo brings it all together - arranging the plate, adding the final touches, and making the dish beautiful . What seems simple to the guests is, in truth, a carefully timed dance of skill, focus, and communication,” says Johnson
Another Door County landmark with deep roots is the White Gull Inn in Fish Creek, a historic inn that has welcomed guests since 1896 . It’s also home to the county’s longest-running fish boil—a Scandinavian tradition that’s been part of the White Gull’s identity since the late 1950s . Meredith Coulson, the inn’s co-owner and innkeeper, shares more about the ritual, the history, and the fire-fueled spectacle that still draws crowds today .
“May through October is our main season,” she says, “with

fish boils on Wednesdays, Fridays, Saturdays, and Sundays .” In the quieter months of winter, the tradition continues—typically on Fridays and Sundays—keeping the fire burning in all seasons . The fish itself is as fresh as it gets Local whitefish, caught that same afternoon, arrives straight from the water in a fisherman’s rumbling old truck and is dropped off at the kitchen door From there, the White Gull team springs into motion The assistant fish boiler preps everything: counting and cleaning the fish, slicing potatoes, mixing from-scratch coleslaw The baker turns out loaves of fresh bread, while the pastry chef fills the kitchen with the scent of house-made cherry pie The master boiler serves a dual role: chef and storyteller As flames leap skyward and steam rises from the kettle, they juggle timers, answer questions, and pose
for photos—part cook, part showman, always with one eye on the boil .
But the White Gull team doesn’t just put on the spectacle of the fish boil . They also run a full-service restaurant—open year-round, seven days a week—serving breakfast, lunch, and dinner to both locals and visitors . “We are probably best known for our breakfasts,” says Coulson . “Our cherry-stuffed French toast was named the best breakfast in the country by Good Morning America,” she adds . The dish features locally grown Door County cherries—a nod to the region’s agricultural heritage and its most iconic fruit . Still, Coulson is quick to highlight the quieter side of the operation—the effort guests don’t see . “The most challenging part is that the kitchen works so hard, but
they almost never get to see the outcome of their work,” she says . “The servers and front of house staff hear the compliments and see the smiles, but the kitchen doesn’t get that same feedback . And yet, they keep coming in—day after day—doing hard, physical work in a hot kitchen ”
Further up the peninsula, and a ferry ride away on Washington Island, the Albatross Drive-In has been serving gourmet fast food with a family touch since 1977 . Co-owner Laura Sawosko continues the restaurant tradition her parents started . Everything is made to order—burgers from freshly ground chuck, never frozen, and formed by hand… toasted buns piled high with crisp, fresh, local produce . “We don’t take shortcuts,” she explains . “We’re not fast . We’re good . We’re cheerful and courteous, but we’re not fast That’s what makes us
stand out,” she says . (A sign in the window, dating back to the original opening day, echoes that sentiment .)
Inside, the kitchen hums like a well-oiled machine, divided into a hot side and a cold side . One half of the team handles the food and burgers; the other takes orders and crafts ice cream treats—60 flavors of shakes, sundaes, and flurries, each cone topped with candy eyeballs for a playful touch . At any given moment, 10 to 15 burgers sizzle on the grill .
“People are amazed at how small the space is inside, and how much we get done in it,” Sawosko says . “It takes a really special team to make it happen . ”
A newer tiki bar addition adds a bit of island flair—and even more behind-the-scenes coordination—but the heart of the
Albatross remains the same: a commitment to high-quality food served in an approachable, welcoming way . Open from late May through early fall, this family-run spot is a beloved part of the island community—a place where tradition, teamwork, and a little bit of magic come together with every order
In Door County, this kind of unseen work isn’t just seasonal—it’s generational . A traditional fish boil, a Swedish pancake breakfast, the perfect burger made to order: each carries a lineage of labor, a legacy of care . And as one back of house shift ends and another begins, the kitchens stay warm, the knives stay sharp, and the quiet beauty of showing up—again and again—endures .

History of the Rogers Family in Rowleys Bay with Myron Rogers
Liberty Grove Historical Society, 11831 Hwy 42, Ellison Bay Samuel Ashbel (S.A.) Rogers (1841-1921) arrived in Rowleys Bay in 1876 and eventually purchased 4,000 acres of land around the Mink River. Myron will recall the deep connection his ancestors have to Rowleys Bay and the enduring legacy of the Rogers Family.
Savory Spoon Cooking School Site Tour
Tour the original Ellison Bay schoolhouse, built in 1879. The school operated for nearly 50 years. Michael and Janice Thomas purchased the building in 2004 and spent two years restoring it to its original look. Please use the town parking lot next to the Door County North Kiosk.

Fish boils are Door County’s only indigenous dish, brought to the Peninsula by Scandinavian immigrants.
Our Masterboiler slices fresh fish into chunks, then boils it with baby red potatoes, sweet potatoes, corn on the cob and sweet onions.
The fish boil kettle is brought to a boil over an open fire… when the fish is cooked to perfection, a small amount of kerosene is poured into the base of the fire. The result? A spectacular burst of flames and the famous boil-over that leaves the food ready to be immediately served at your table inside the restaurant.

Every evening beginning at 4:30 pm we specialize in serving the most famous native dish of the Door Peninsula, the feast that is known as the “Door County Fish Boil” is a tradition unique to the area. The settlers of past centuries came to this wilderness to seek their fortunes in the heavily timbered forests and bountiful waters of the Penin sula.
Out of their resourcefulness and spirit of cooperation the “Fish Boil” evolved, the fisherman and farmers provided sustenance for groups of hungry lumbermen and settlers. In preparing the meal, technology has found no way to improve upon the equipment and methods of centuries ago. The authenticity of our “Door County Fish Boil” is assured, as the techique has been preserved and passed down through generations from Matthew’s grandfather, to his father, and him.
Our “Door County Fish Boil” consists of fresh, locally caught whitefish cut into steaks, baby red potatoes and Texas sweet boiling onions. The ingredients are boiled to perfection outdoors in large stainless steel kettles over a wood fire. Salt is the only seasoning used, although it’s primary function is to increase the boiling temperature of the water. During the cooking process, the fish oils naturally rise to the surface of the water. Immediately before removing the fish, potatoes and onions from the kettle, the “Master Boiler” will throw #1 fuel oil directly into the fire beneath the kettle resulting in a tremendous burst of flames that force the water and fish oils to “Boil Over” the rim. This signals the end of the cooking process and the beginning of a wonderful dining experience.

The famous White Gull Fish Boil is a Door County tradition. It features locally caught Lake Michigan whitefish cooked outside over an open fire and is served in our dining room with baby red potatoes, melted butter, our garden-fresh coleslaw, homemade breads, and our own Door County cherry pie for dessert. Roasted chicken or a quinoa salad are available for non-fish eaters. Fish boils are served Wednesday, Friday, Saturday, and Sunday nights in summer, and on Friday nights in winter.
On those evenings we do not have a fish boil, try our Candlelight Dinner, offering a variety of entrees and nightly specials. Our menu features the finest meats, fowl, and fish, prepared from regional recipes handed down by generations of cooks. Relax in our candlelit dining room, or on the patio in summer, as your dinner is thoughtfully prepared to order. See our separate menu for the Candlelight Dinner.
