THE STORY OF DONNYBROOK FAIR

Donnybrook Fair had its humble beginnings in butchery, with the founding Doyle family having roots in the trade that go back generations. A passion for craft and quality sparked their transformation into purveyors of exceptional food and wine, with the first Donnybrook Fair opening in 2001 on Morehampton Road.

With a vision to bring extraordinary taste to the rest of Dublin, they went on to open stores across Dublin, from Stillorgan to Malahide. 2024 was a special milestone for the original Donnybrook Fair store opening, which underwent a full revamp — giving a fresh new look to the place where it all began, and creating an even better space for customers to experience great taste.

Today, Donnybrook Fair stands as Dublin’s destination for premium food, chefprepared meals and boutique wines — a place where expertise and quality meet. And what better time to experience it all than at Christmas?

At Donnybrook Fair, everything begins with taste — bold, memorable, and uncompromising. Our Kitchen

The story of our kitchen has small beginnings: a tightly-knit team of chefs in Donnybrook, making meals from scratch using the freshest ingredients on hand. It soon became clear we needed more than a single store kitchen to bring our food to life at scale and without compromise, so in 2012 we opened our state-of-the-art kitchens in South Dublin.

Today, our expert chefs craft hundreds of meals, baked treats and salads daily. It’s the beating heart of Donnybrook Fair, and where our signature Christmas dishes are brought to life with skill, care and creativity.

Tomas’ Christmas Picks

Clare Island Irish Organic Salmon Fillets

Sourced from the roaring waters of the Wild Atlantic Way, this is some of the highest quality fish in the world. If you need a Christmas showstopper, look no further than a side of this salmon. To get the best out of it, roast gently at a low heat until just blushing in the centre – melt-in-the-mouth perfection.

Dublin Bay Prawns

Our little neighbours from the bay, these prawns, or langoustines, are the perfect little way to bring some panache to your Christmas table. All they need is 2–3 minutes in salted boiling water – just enough to turn blush-pink and stay butter-soft.

Fresh Lobster Tails

For something truly indulgent, fresh lobster tails bring luxury to any Christmas table. With sweet, succulent meat and rich flavour, they’re perfect for a festive starter or a lavish main. Brush with butter, grill until just opaque, and serve with a squeeze of lemon.

MAR DE FRADES ALBARIÑO

Tomas’ Christmas Lobster Roll

With Spiced Cranberry & Butter Mayo

Serves: 2

Ingredients

• 2 fresh lobster tails, cooked and chopped

• 2 brioche rolls or split-top buns

• 2 tbsp mayonnaise

• 1 tsp whole cranberry sauce

• 1 tsp lemon juice

• Pinch of ground nutmeg

• Pinch of sea salt

• Small handful of finely chopped celery or fennel (optional, for crunch)

• 2 tbsp butter

• Pinch of ground cloves or allspice

• Chives, finely chopped (to garnish)

Method

Make the cranberry mayo: In a bowl, mix the mayonnaise, cranberry sauce, lemon juice, nutmeg, and a pinch of salt until smooth.

Melt 1 tbsp of butter in a pan. Lightly toast the buns until golden and crisp on the edges.

In the same pan, melt the remaining butter with a pinch of ground cloves or allspice. Gently toss the lobster meat until just warmed through and glossy.

Layer the cranberry mayo on the buns, pile high with warm lobster, and top with chives. Add optional fennel or celery for a bit of crunch

Turkey

Salt early, not just often

Skip the wet brine and dry-brine your turkey instead. Rubbing it with salt a day or two in advance and leaving it uncovered in the fridge gives you beautifully seasoned meat and crisp, golden skin — with less fuss and no buckets of brine.

Ham

Glaze in layers, not all at once

Rather than slathering it all on at the end, brush your glaze on in thin layers as the ham finishes cooking. It builds up a sticky, shiny crust full of flavour — and helps keep the sugars from catching. A quick simmer of the glaze beforehand boosts the richness even more.

Beef

Let the crust do the talking

A good roast beef is all about the crust. Pat it dry, season generously, and sear it in a little beef fat or dripping before roasting. You’ll lock in the juices and get that deep, savoury flavour that makes every slice an experience.

Our favourite Italian chef Marco has joined us from our friends at Italicatessen to give his advice on how best to make your Christmas charcuterie board shine this winter.

Balance flavours – match salty cured meats with sweet fruits or chutneys, and add acidity like cornichons to keep things fresh.

Layer textures – combine soft pâté or rillettes with firm salami or bresaola, plus something crisp like crackers or crostini.

Serve correctly – remove meats from the fridge 20–30 minutes before serving so flavours and aromas can shine.

Please place your Christmas order by Tuesday 16th of December at 3pm and choose from the available collection and home-delivery slots that run 22nd - 24th December.

Please note that we have limited collection and home-delivery slots available therefore we advise you to order online and as early as possible to avoid disappointment.

Collection

You can collect your order from our Donnybrook, Stillorgan, Malahide & Greystones on the 22nd, 23rd and 24th of December. See page 67 for collection times.

To avoid disappointment, please arrive 30 minutes before store closing.

Please note some products will only be available for delivery and collection from the 23rd of December.

We are offering limited Christmas delivery slots between 22nd - 24th of December. You must be at home during your designated slots. Please note that we are not offering our home-delivery service in certain areas including Malahide and Greystones.
