What is carob?

Italy is the second-largest producer in the world with cultivations in Sicily, Puglia and Sardinia. The carob tree thrives in arid and semi-arid climates, making it suitable for regions with limited water availability.

90% of carob is unused: this makes it a forgotten and highly sustainable ingredient.

Carob, being naturally sweet, offers the great advantage of not needing added sugars.
