CATERING REQUIREMENTS & GUIDELINES PRICING & GUARANTEES • A 24 percent taxable service charge and California state sales tax will be added to all food and beverage charges. Service charge and tax rate are subject to change.

• Menu prices are subject to change and guaranteed 90 days prior to the actual event date.

• The menu and all other details of your event(s) are to be finalized a minimum of 4 weeks (30 days) prior to the date of your event(s). Delays of specifications to the hotel, beyond this time, may incur additional fees, at a minimum of 15 percent surcharge, for product and labor. The hotel reserves the right to increase guarantee of food if the amount of food ordered is for more than 30 percent less of expected attendance. The additional food will be charged accordingly to “client.”

• Banquet Event Orders must be signed and returned to your Special Events Manager no fewer than 14 days prior to your function date. A guaranteed guest count is required by 12 p.m., three business days prior to your function date. This will be considered a guarantee for which you will be charged even if fewer guests attend, unless your attendance exceeds your guarantee. This guarantee will apply to all aspects of your event, including, but not limited to, food and beverage.

If The Ritz-Carlton, Laguna Niguel is not advised of a guaranteed count, the expected number of guests will become the guaranteed count, and the billing will be for the greater of the following: (i) The number of persons for which the Event was originally booked, or (ii) The number of persons in attendance. Changes in guarantees within 24 hours of event will incur a 25% upcharge on all additional items requested.

FEES Uniformed Chef fee is $150 per hour and Attendant fee is $75 per hour. These fees apply for all items carved/prepared at buffet, station or Tableside when required on menus and will be noted on the Banquet Event Orders.

• Bartender fee is a flat fee of $150 per bar, exclusive of tax.

• Restaurant Style Service Tableside: A four-course plated menu (including desert) is required for a choice of entrée offered Tableside at the time of dinner (maximum two entrées – excluding combination entrées - and Chef’s choice of vegetarian entrée selections). Menu price will be based on the highest priced entrée selected, plus $25 surcharge. Two plated courses prior to the entrée will allow our Culinary Staff to prepare your entrées à la minute. Intermezzo course doesn’t qualify as a full course. All Restaurant-style service entrées will include Chef’s selection of the same starch and vegetable.

• It is our policy that outside food and/or beverage of any kind may not be brought into The Ritz-Carlton, Laguna Niguel by Client or attendees.

DEPOSIT POLICY • A signed credit card authorization form will be required to confirm your event and to guarantee payment of any additional charges incurred during the Event.

Deposits by checks are acceptable and due (14) days prior to initial deposit due dates.

WEDDING COORDINATOR • A resort approved professional wedding coordinator is required to assist you 30 days prior to your wedding day, to conduct the rehearsal and to be on premises the day of the wedding to coordinate your celebration. You are required to notify RCLN of your coordinator choice 60 days prior to your wedding.

OUTSIDE VENDORS • Please ask your Sales or Special Events Manager for our vendor information, as well as our Outside Vendor Code of Conduct, which details policies as well as liability insurance requirements. Please note that you and your vendors will be responsible for any and all damage caused to the property.

Noise Ordinance In accordance with local city ordinances and the respect for our other Hotel and surrounding guests: Noise at the Hotel property line shall be limited to 55db during the following hours: • Sunday – Thursday 10:00 am – 9:00 pm • Friday, Saturday 10:00 am – 10:00 pm Noise at the Hotel property line shall be limited to 45db during the following hours: • Sunday – Thursday 10:00 am – 9:00 pm • Friday, Saturday 10:00 am – 10:00 pm The resort may ask for noise levels for indoor venues to be reduced, at the resort’s discretion.

TIMING AND WEATHER • Breakfast menus are valid 5:30 am – 10:30 am • Lunch menus are valid 11:00 am – 2:30 pm • Reception and dinner menus are valid beginning at 5:00 pm • Buffet and Station pricing is based on a two hour presentation; for longer presentations, additional charges will apply.

• All amplified music at outdoor functions must stop at 9:00 pm, and outdoor functions must conclude by 9:30 pm.

• Indoor functions must conclude either by midnight or 2:00 am (please consult your Special Events Manager).

• For all outdoor functions a weather call will be made according to the following schedule: • Breakfast functions: the evening prior

• Deposits are based on the contracted/estimated number of guests, food and beverage minimum, room rental, current taxable service charge of 24 percent, and California state sales tax. Service charge and tax rate subject to change.

• An initial deposit is required to reserve space for your event. A second deposit is required (180) days prior to your event. A third deposit is required (90) days prior to your event.

• Final deposit, based on your final estimated number of guests and summary of charges plus an additional 10 percent of the food and beverage revenue minimum for any additional costs, per The Ritz-Carlton, Laguna Niguel Credit Policy is due (21) days prior to the actual event date. Credits for overpayment will be issued within three weeks following the event.

• Events booked and scheduled within 90 days of event date will require full prepayment at time of contract.

• All deposits are non-refundable and non-transferable.

YOUR SPECIAL EVENTS MANAGER • Once we receive your signed Catering Agreement, we will assign a Special Events Manager to your event. He or she will assist you with the details of your menu planning, room set-ups, audio visual, signage, transportation and other aspects of your event. You agree to discuss your event arrangements and/or food and beverage functions with the Special Events Manager to determine whether labor and/ or special service charges, if any will apply in addition to those set forth in the Catering Agreement.

All event details should be finalized at least (30) days prior to arrival. All banquet and catering details and charges will be set forth on a separate agreement (Banquet Event Order or BEO), which is available from the Special Events Manager, and once signed will become a part of the original Catering Agreement.

• Lunch functions: 9:00 am • Dinner functions: 2:00 pm • Weather calls will be made by the Client upon the recommendation of the Special Events Manager and Banquet Captain. If the Client is unavailable, the decision will be made on the Client’s behalf. Should the chance of precipitation be higher than 40 percent, the weather call will be made in favor of the indoor location by default.

ALCOHOL / SMOKING •

The Ritz-Carlton, Laguna Niguel’s liquor license requires that beverages only be dispensed by The Ritz-Carlton, Laguna Niguel employees or bartenders. Alcoholic beverage service may be denied to those guests who appear to be intoxicated or are under age. The sale and service of all alcoholic beverages is regulated by the State Division of Alcoholic Beverages and Tobacco. The Ritz-Carlton, Laguna Niguel is responsible for the administration of such regulations. Therefore, it is our policy that no alcoholic beverages may be brought into The Ritz-Carlton, Laguna Niguel for any events. Only food purchased from The Ritz-Carlton, Laguna Niguel may be used during any event function at the resort. Alcoholic beverage service may be denied to those guests who appear to be intoxicated or are under age.

• California law requires that all alcohol sales will conclude at 2:00 a.m. (last call by 1:30 a.m.) in accordance with licensing.

• Due to California law, smoking is not permitted in any area of The Ritz-Carlton, Laguna Niguel.

You do not need to be a Califor nia resident to mar r y in Califor nia.

To mar r y in Califor nia, the two par ties may not be already mar ried to each other or other individuals.

Mar riage by proxy is NOT allowed in Califor nia. Family Code, Section 420(a) requires the two par ties, mar riage officiant and witness if applicable, be physically present together in the same location for the mar riage to be perfor med.

There are no citizenship or residency requirements; nor are blood tests required to obtain a mar riage license in Califor nia.

Both par ties must appear in per son and bring valid picture identification to the County Cler k’s Office to apply for a mar riage license in Califor nia. Valid picture identification is one that contains a photograph, date of bir th, and an issue and expiration date, such as a state issued identification card, driver s license, passpor t, militar y identification, etc. Some counties may also require a copy of your bir th cer tificate.

If you have been mar ried before, you will need to know the specific date your last mar riage ended, and how it ended (Death, Dissolution, Divorce or Nullity). Some counties may require a copy of the final judgment if your previous mar riage ended by dissolution or nullity.

If you divorced within the last 90 days, provide proof of divorce decree or dissolution/ter mination of SRDP. If the spouse is deceased, copy of death cer tificate is required.

Mar riage licenses are valid for 90 days from the date of issuance. If you do not get mar ried within 90 days, the license will no longer be valid. You must purchase a new license.

Walk in applicants are taken on a fir st come fir st ser ved basis. Processing time is approximately 20 to 40 minutes. After noons and Fridays are the busiest times and the processing time is likely to be longer.
