And my parents Trishna and Namon Jimmons who made sure I grew up with a positive perspective of fruits and vegetables

Jermaine sat patiently at the dinner table, trying to contain his joy. When he could not hold it in any longer, he announced, “My school is having a fruits and veggies fair!” He explained to them that they are going to meet a dietician, learn about the importance of fruits and vegetables, and went on about how he could not wait to see what surprise the teachers had planned.

On the way to school, Jermaine and Lily imagined what new things the dietician would teach them.

Sitting in front of them, Trish turned around and asked them, “What is a dietician?” “Ooh Ooh” said

Jacob, raising his hand, “My mom said a dietician is a type of doctor who is an expert on food!”

In class the dietician told the kids all about the different nutrients and vitamins in fruits, vegetables, and grains. She said they are all a great snack and can even be a meal on there own!

The next day of the veggie fair, the kids got to dress up as there favorite fruit or vegetable and share to the class why they like them.

It was not long before the kids all began to share…

My name is Carlene and I am a juicy tomato! There are many different tomatoes and are one of the most colorful fruits.

I’m Veronica and I dressed up today as a red pepper.

Vegetables are so flavorful and I like when they are sometimes spicy.

Hi, I’m Nalani and I dressed up as a radish. They are a crunchy pink root that support a happy heart.

I’m Jermaine and I am a refreshing cucumber. They have lots of water in them, making them super hydrating.

After everyone shared, the teachers announced that they were having a party where they could try different kinds of fruits and vegetables. The kids had a blast trying foods from jackfruit to papaya, and bell peppers to yellow squash.

The kids were happy and having fun. But not only was there a party in the classroom, but also a party in all of their tummies!

Plant-based nutrients recipes

Maple Cinnamon Overnight Oats

• 1/2 almond milk (or other plant milk)

• 1/2 cup old fashioned rolled oats

• 1 Tbsp. Maple syrup

• 1/2 tsp. cinnamon

• 1 tsp. Vanilla extract

• fruit for topping

• Mix all ingredients (except fresh fruit topping) in bowl or jar. Cover and place in refrigerator overnight. After 8 hours, remove from refrigerator, top with fruit, and eat. Or heat in microwave 1 minute before eating.

English Muffin Mini Veggie Pizzas

• Whole wheat English muffins

• Marinara sauce

• Veggies of choice (onions, mushrooms, tomatoes, pineapple, spinach, etc.)

• Vegan cheese

• Begin by toasting the muffins. Then spoon marinara sauce on the muffin halves, top with veggies and cheese and bake in the oven at 400 degrees for about 10 minutes.

Crispy Chickpeas

• 15 ounces canned chickpeas (one can)

• drizzle your favorite oil , optional

• Sea salt

• Spices to taste (garlic powder, oregano, dill, parsley, and smoked paprika, etc.

• Drain chickpeas and then rinse with water and dry. Toss with oil, sea salt.

Place on a parchment lined cookie sheet. Bake at 400 degrees for 20-30 minutes or until crispy. Toss with spices of choice and serve.
