MESA

LATINA represents the culmination of decades spent exploring the diverse flavors and culinary trends across various Latin countries during my travels and the culture that is rooted in my heritage.

Upon embarking on this project, I delved into numerous culinary concepts: Asian, Caribbean, Mediterranean, and Latin. Latin cuisine offers an expansive canvas where we can creatively incorporate ingredients from the entire American region. As such, this menu features a diverse array of flavors from North, Central, and South America, with a Caribbean, Asian, and Middle Eastern twist.

This concept also serves as a source of inspiration, evoking fond memories of my childhood meals with family and my experiences living in countries such as Colombia, Puerto Rico, and Cuba.

We are confident that this innovative concept will be a success in Aruba, as it fills a gap in our culinary landscape. Our staff is equally excited about crafting beautiful presentations and incredible new flavors for our guests.

For me, this project represents both immense pride and a thrilling challenge, made even more significant by its association with the esteemed Divi Resorts brand. I hope these dishes delight your palate and bring you memorable new dining experiences here on Aruba.
