With a distinguished career in marketing, journalism, and community advocacy in Cottonwood, Arizona, coupled with her international background spanning Southern France and the United States, Annabel is uniquely equipped to elevate our mission of celebrating the Phoenix region’s vibrant culture and stories. Her journey of resilience, creativity, and global perspective makes her an inspiring addition to our team.
A Trailblazer in Cottonwood, Arizona
Annabel V. Sclippa has left an indelible mark on Old Town Cottonwood, through her multifaceted contributions to the community. As the marketing director and Vice President of the Cottonwood Old Town Association, she played a pivotal role in the transformation of Old Town Cottonwood into a wine-tasting mecca. Her strategic vision helped encourage winemakers to establish tasting rooms in the district, boosting tourism and local commerce. This initiative helped cement Cottonwood’s reputation as a destination along the Verde Valley Wine Trail.
In 2007, Annabel broke new ground by opening the first legal Bed & Breakfast in Cottonwood, prompting the city to write its first B&B codes. Her establishment, The Annabel Inn, earned regional, state, and area awards for its hospitality and charm. She also authored a cookbook inspired by her B&B, showcasing her ability to blend creativity with entrepreneurship. In 2009, she launched La Belle Social Media & Marketing. Her work extended to social media and marketing for local businesses, including Sedona’s New Day Spa, where she has served as Social Media Director for nearly thirteen years. Annabel’s efforts include writing feature articles, creating social content, website design and builds, managing online analytics, and optimizing marketing strategies, earning praise for her attention to detail and dedication.
As a writer, Annabel contributed regularly to the Verde Independent, The Noise and Sedona.Biz, covering arts, culture, and events in the Verde Valley. Her articles, such as those promoting the Second Saturday Art Walk in Old Town Cottonwood, highlighted local artists, musicians, and wineries, fostering community engagement. As a co-owner of The Muse Gallery, she served as a passionate advocate for the arts, creating the Old Town Food Truck Wine Fest and weekly cultural events. Her involvement in the Arizona wine industry culminated in her contribution to AZ Uncorked: The Arizona Wine Guide, where she wrote about outlier wineries, drawing on her deep knowledge of the region’s viticulture.
An International Life of Adventure
Born in Southern France near Limoux, the birthplace of sparkling wine, Annabel’s early life was shaped by a non-military childhood that spanned multiple countries, including Europe, Africa, China, and the Americas. This global upbringing instilled a sense of adventure and adaptability, qualities that define her career and personal ethos. She describes her approach as “Bravely Go Where Everyone Else Has Gone Before,” a testament to her fearless exploration despite being in a wheelchair since a car accident, at age 17, which left her paralyzed from the waist down. Annabel’s skillset and drive will be a guiding force behind Discover The Phoenix Region Magazine, and we are so excited to welcome her talents, gifts, and drive toward perfection.

With a career spanning from environmental advocacy, to architecture and adventure, Greg has worked with prestigious clients like National Geographic, ESPN, and Greenpeace, documenting everything from Arctic ice floes to world-class athletes. As the operator of Tahoe Drone Ops in Truckee, California, he mastered drone-based cinematography, and now creates breathtaking visuals for real estate, lifestyle, and nature projects with WWDS.

A JOURNEY ROOTED IN THE PHOENIX SPIRIT
When DTPR first went to print in June 2010, the Phoenix metro area was already a burgeoning hub, with a population of over 4 million and a reputation for rapid growth. The city, founded in 1868 and named by Phillip Darrell Duppa for its rebirth from the ancient Hohokam canal systems, was a fitting muse for a publication dedicated to discovery. The Hohokam, who thrived here from 800 A.D. to 1450 A.D., left behind a legacy of ingenuity with their 135 miles of irrigation canals—a testament to the region’s enduring ability to adapt and flourish in the desert.
Inspired by this spirit, we at DTPR set out to capture the essence of the Valley of the Sun, from its indigenous roots to its modern-day vibrancy.
At the time we were printing bi-annually. We have transformed greatly over the past 15 years, we’ve published must know information, weaving together the tactile allure of our print edition with the immediacy and convenience of our digital platform at DiscovertheRegion.com. Our mission has been to authentically highlight the Valley’s heartbeat—its local artists, visionary entrepreneurs, breathtaking photography, and iconic attractions. As Phoenix has evolved into the fifth-largest city in the U.S.A., with a population nearing 5 million in 2022, DTPR has been there to document the transition.

With over 300 days of sunshine annually and a hot desert climate, the region attracts 46.7 million visitors each year, contributing nearly $23 billion to the economy in 2023 alone. DTPR has been a guide for these explorers, spotlighting the best of the Valley’s offerings—from the rugged trails of South Mountain Park, the largest municipal park in the country at 17,000 acres, to the cultural treasures of the Heard Museum, with its 130,000 square feet of gallery space celebrating Native American art.
Our pages have captured the flavors of the Phoenix Region, where dining gems like Arrowhead Grill serve top-tier steaks, and Hash Kitchen redefines brunch with creative flair. We’ve cheered alongside 1.6 million fans at the Cactus League Spring Training games, where 15 MLB teams play across 10 stadiums, and we’ve danced under the stars at events like the Pure Imagination Festival in Prescott. Through it all, we’ve remained committed to showcasing the region’s diversity—42% of Phoenix’s population is Hispanic, and the city boasts one of the largest urban concentrations of Native Americans in the U.S., a legacy of the Akimel O’odham, Maricopa, Yavapai, and Yaqui peoples who followed the Hohokam.
A FRESH CHAPTER WITH A NEW LOOK
On September 5th 2020, DTPR unveiled a brand-new logo, Covid-19 had taken it out of most of us and we needed reinvention as well as a clean look, marking a pivotal moment in our journey. This transformation reflected our commitment to delivering engaging content while staying true to our roots.
As our founder and one of those who inspire me, Jodie Wilson has once told me, our goal is to introduce readers to the “best of the best” the region has to offer—whether it’s a hidden dining spot, a historic landmark like the S’edav Va’aki Museum, or a new friend featured in our profiles of fascinating locals. Readers like Terrie Frankle, a Sedona resident and Doublemint Twin, have called DTPR a “visual delight” and their go-to magazine for discovering the Valley’s treasures.
REFLECTING O N 15 YEARS O F DISCOVERY
Looking back, 2010 was a transformative year for Phoenix, buzzing with change. On June 25, Edwin Jackson threw the Arizona Diamondbacks’ second no-hitter in franchise history, thrilling fans and boosting the city’s sports pride. Meanwhile, Phoenix Sky Harbor International Airport soared, handling over 38 million passengers and cementing its role as a major travel hub. Amid this momentum, Discover The Phoenix Region Magazine (DTPR) launched in June, capturing the stories of a city riding a wave of cultural and economic energy.
Over the years, we’ve celebrated Phoenix’s role as a cultural and economic hub. The region’s GDP reached $362 billion by 2022, driven by industries like electronics, aerospace, and tourism. We’ve covered major events like Super Bowl LVII in 2023 at State Farm Stadium and the WNBA All-Star Game in 2024 at Footprint Center, home to the Phoenix Suns and Mercury. We’ve also explored the quieter moments—sunrise hikes in the Phoenix Mountains Preserve, art installations at the Desert Botanical Garden, and the melodies of the Phoenix Symphony at Symphony Hall.

Coin Heaven Celebrates 40 Years:
A Cottonwood Institution’s Journey Through Time and Precious Metals

As Coin Heaven marked its 40th anniversary in April of this year, owner Kim Wright sat with me to reflect on his life and the shop’s evolution, the changing landscape of precious metals, and their impact on the local community.
Founded on April 16, 1985, Coin Heaven has become a cornerstone of Cottonwood’s business community. The family’s roots in the area date back to the late 1920s when Kim’s grandparents moved up from Buckeye, AZ, along with their children including Kim’s father who came from a family of 13 siblings, 11 of whom lived to adulthood.
“Growing up in this beautiful place,” Wright reflects on the Verde Valley, “I enjoyed the tight-knit community where I knew every kid in school by the back of their head, their parents’ professions, and which churches they attended. It was a great experience.” He recalls fighter planes from Luke Air Force Base flying over Mingus, daily, often breaking the sound barrier at Mach 2.
Things in the Verde Valley were alive and exciting. Thus, Wright only felt the desire to move away once, to attend College in Tucson. “During my first year in 1967, I drove back from Tucson for the winter break to find three feet of snow on the ground. Most of our vacation that year was spent shoveling snow off roofs and out of driveways.” You can imagine it was just what people did - help each other out.
Wright continues that with the offerings of his shop Coin Heaven, supported all of these years by wife Carol. When asked what his favorite memory of his lifetime is, Wright had a sparkle in his eyes remembering. “After four years in Tucson, I moved back to the Valley for good, and shortly thereafter met Carol.” Here he smiled broadly, “So I would say, my favorite memory of living here is meeting Carol and marrying her.”
Over four decades, the shop has witnessed dramatic changes in the value of precious metals. “When we opened, gold was around $200 an ounce. Now it’s approaching $3,000,” Kim noted. “Silver has seen a similar increase, from $3 to nearly $34 an ounce.” Kim emphasized that these price increases are more reflective of the dollar’s decreasing value, than it is of gold and silver becoming more valuable.
“For thousands of years, throughout the entire world, in any country, at any point in time, one ounce of gold can buy a good quality man’s suit of the day, regardless of what the dollar is worth at the time. Gold and silver HOLD and INCREASE their purchasing power, even as the dollar buys you less and less.” In short, he emphasized, “We don’t see gold and silver as investments, but as insurance policies. They’re extremely liquid assets that people can turn to in times of need.”
Coin Heaven has occupied six different locations throughout Cottonwood over the years, finally settling at its current location of 599 S Main St, in 2001. Interestingly, Kim helped build the current location, assisting his father and brother, who were hired contractors for the Sawmill Complex construction.
The shop has expanded from a one-man operation to employing eight people, including family members and passionate numismatists. Among the latest additions is Elijah Davenport, a young man who just graduated from Mingus Union High School, and had been a customer for some time. “He’s so knowledgeable about coins,” Kim said. “As soon as he was the right age, we offered him a job, and he enthusiastically took us up on it. He teaches me something new every day.” The team is excited to produce short instructional videos with Elijah, once their new social media pages are up and running.

Kim’s nephews Caleb and Gabe joined the business in 2009, and now Gabe’s sons Levi and Juda have followed suit. Gabe’s wife Kenna and Kim’s daughter, Willow Wright, joined the crew in 2020. Additionally, long-time family friend Ray Taylor joined in some couple of decades ago and has remained.
Coin Heaven’s inventory has evolved with changing market demands. While bullion remains their primary focus, they also deal in jewelry and collectible coins. The shop briefly expanded into preparedness supplies around the Y2K Bug, but has since returned to its core business of precious metals and coins.
Kim’s favorite coin is the $20 gold Saint-Gaudens Double Eagle, minted before 1933. “It represents an interesting time in our history,” he explained. “From 1866 to 1931, the price of gold was set at $20.67 and sold at $20 a gold piece (or .9675 oz of gold). The government then called in all of the gold and issued paper in place of it. After that, Roosevelt declared the price of gold at $35/oz in 1933.” I imagine people appreciated the lighter weight to carry, and didn’t consider the future implications of the ‘spot price of gold’ and how it might fluctuate in comparison to the day’s dollar.
Kim’s passion for coins started when he was just eight years old. Although he enjoyed helping his dad and brother, Phil, with construction projects enough, it wasn’t his true love. “My dad asked me what really interested me and said he would help me make it happen if I could explain to him how I thought it could.” Within three months of opening in April of 1985, the shop was paying its own bills, and by six months, it was paying him and making a living. However, later that year, on the night of November 23, the shop was robbed and he lost everything. “We had to start over and borrow more money, but we came back quickly.”
To ensure safety, Kim upgraded his security with high-quality safes and an alarm system, which to this day have been continually monitored. This commitment to safety and integrity has proven beneficial to the community; it’s not uncommon for local law enforcement to come in to request footage of crimes in the area from Coin Heaven’s security system. Kim’s daughter, Willow Wright, is sitting by him for the interview and chimes in, “We are always happy to support the people in blue.”
As Coin Heaven celebrates this 40 Year milestone, it stands as a testament to the enduring value of precious metals and the importance of local businesses in building community. For four decades, it has provided a trusted Arizona source for buying, selling, and learning about coins and precious metals, while adapting to changing times and maintaining its core values.

A Celebration of Wine, Art, and Community in Old Town Cottonwood

ere is a sweet tale of a full circle celebration of community in the heart of the Verde Valley, which has culminated in a delectable place for you to visit, sip, view and discover the art of truly sensing. The Eureka Room opens the second week of May, but let’s start at the beginning.
It started 14 years ago, when a man named Sam Pillsbury, movie director turned wine maker, opened the first wine room in Old Town Cottonwood: Pillsbury Wine, located in The (historic) Willard Building. Arizona Stronghold Vineyards opened about a week later, and half a block away. Now there have been many wine tasting rooms that have come and gone, and some that have stayed, but Sam was the Pioneer to stake that street.
Right about that time a young woman from Sugar Land, Texas moved to the area, leaving behind a life that didn’t quite fit her, like a coat the right size, but made from the wrong fabric. Sara Massey sought a more soulful and authentic lifestyle. She found the Pillsbury space, and became enchanted by the idea of slowing down, experiencing the senses, and existing in a more creative, simple life, with a focus on supporting local arts. She inadvertently became the Pillsbury Wine Company North Tasting Room Manager.
Three years later the Verde Valley bug bit another passing tourist, Valerie Fisch, who had come with her husband and daughter to get away from the bustle of Southern CA, and to witness the big crack in the planet known as the Grand Canyon. Stunning as it was, as were also the Vortexes of Sedona, what struck them most was the last campsite they tried, at the Summit of Mingus: the Potato Patch, with its expansive vista of the Valley.
They eventually made their way into Old Town Cottonwood, where the then tasting room manager of Arizona Stronghold Vineyards, Kevin Grubb, spent three hours on a quiet Tuesday afternoon, explaining in-depth to the family about the AZ Wine Industry and the terroir, in a way that brought new meaning and touched their souls. Three months later the family moved from that hustle bustle of SoCal, and nestled into the Verde Valley. This is when Sara Massey hired Val Fisch at Pillsbury.
A Journey of Discovery
Eventually Sara moved on to other wine rooms: Merkin, DA Ranch, Four 8 Wineworks, and worked events for HeartWood Cellars and Oddity Wines, deepening her understanding and craft. Meanwhile, Val became the Pillsbury Tasting Room manager, and learned everything from Sam Pillsbury from growing and harvesting the grapes through the wine making process, to running the room. It was a few years later that Val eventually hired Sara back into Pillsbury, and the two women were together again, sharing their love for wine, art and community. Both Massey and Fisch have been heavily influenced by Sam Pillsbury, whom they collectively describe as, “a fearless leader who demonstrated integrity and creativity,” ~ influences that shaped them both as wine enthusiasts and as advocates for the arts.
Birds of a Feather
“You can go anywhere and get bulk wine and Ikea furnishings,” states Massey, “but we want to curate a space for people who like collecting things that are unique and have a story.” Fisch reflects, “The point that I knew I was in love with this industry, was when I met the people behind the wine and behind the art. Here is not about being uplifted by brand labels. We are nurtured by the people of the Verde Valley.” Together, these birds of a feather knew what they were capable of infusing, but didn’t yet know it would manifest in their own place.
When the Universe is Smiling on You
Sam Pillsbury has moved operations Willcox, is at the Vineyard and selling wine. In one of a string of fortunate and generous events from the community, he gifted his two star tasting room managers the blessing to continue his legacy. This innovative space is the melange of much of the current stock, furniture and art of Ginger‘s VinaZona, plus the gold mine of the remainder of Pillsbury Wine and his legacy, and the brainchild of two passionate women, Val Fisch and Sara Massey, who bring a wealth of experience and a shared vision for a vibrant community gathering place, where each sip and conversation strives to find a unique and deeper meaning.
The Vision for The Eureka Room
The Eureka Room is not just a venue; it’s a mission. Both Fisch and Massey aim to create a space where joy is found through exploration and connection. Fisch hopes that The Eureka Room becomes a destination for joy in discovering new wines and local art, stating, “I want there always to be something new to be discovered.”

In the heart of Sedona, Arizona, where red rock formations glow under the desert sun, Tyler Carson, known as the Fiddler on the Rock, captivates audiences with his violin. His music—a fusion of classical precision, folk fire, and global influences—resonates like the landscape itself: vast, vibrant, and deeply spiritual. From performing for massive audiences at age 11 to reclaiming his voice after a devastating loss, Carson’s story is one of resilience, reinvention, and an unshakable connection to joy. Early Notes in a Musical Family
Born in Calgary, Canada, and later raised in Victoria, Tyler Carson grew up in a household where music was as essential as air. His mother, a guiding force, believed music offered her children a unique advantage. At age 5, Carson picked up the violin, an instrument perfectly scaled for a child’s hands. “It was pragmatic,” he recalls, but his mother’s strict discipline instilled habits that connected effort to joy. Under the Suzuki method with teacher Danuta Ciring, Carson’s early relationship with music took root, blending structure with emotional expression.
By age 8, his talent was undeniable, though one teacher famously called him “very talented but very lazy.” The feedback was a wake-up call, pushing young Tyler to refine his practice and embrace the violin as more than a task—it became his voice. Alongside his sister Kendel, he formed “The Carson Kids,” a duo that performed globally, from intimate venues to massive stages. At 11, Carson played for 60,000 at the Commonwealth Games, an experience that seared itself into his memory. The roar of the crowd and the thrill of the moment cemented his confidence as a performer, proving he could hold his own under pressure.
Blending Worlds, Breaking Barriers
Carson’s formative years were a masterclass in versatility. Trained in classical and folk music simultaneously, he developed a dual identity: the disciplined symphony soloist and the free-spirited fiddler. At 13, he and Kendel performed a Vivaldi duet with the Victoria Symphony, then donned cowboy hats for a fiddle set. “It was the coolest thing ever,” Carson says, likening the orchestra’s power to a surfer catching a wave. The audience’s enthusiastic response showed him music could transcend genres, uniting listeners in shared joy.
His horizons expanded further with the National Youth Orchestra of Canada and a tour with a Riverdance troupe in New Zealand. Collaborations with legends like The Chieftains, Ashley MacIsaac, and The Irish Rovers introduced him to the raw energy of Celtic traditions. Opening for country giants Brooks & Dunn was a surreal leap—Carson marveled at their helicopter arrivals and luxurious trailers, glimpses of the “big leagues” that boosted his confidence. Each experience broadened his musical palette, teaching him to adapt and innovate.
A Voice Lost, A Voice Found
At 20, Carson faced a life-altering crisis: spasmodic dysphonia stole his speaking voice. The sudden loss was a profound emotional blow, threatening his identity as a performer. Rather than opting for Botox injections, Carson turned to energy healing, discovering the programs of Dr. Joaquin Farias and Jim Bostock. The healing process was gradual but transformative, unlocking not just his voice but a deeper understanding of his connection to audiences. “The first time I performed from my heart was an 8-bar fiddle solo at age 8,” he reflects. “Everyone started dancing. It was my white light experience.” This “magical connection” became his lifeline, a way to express what words could not.
Losing his voice forced Carson to channel his emotions through the violin, which became his “true voice.” The instrument took on new dimensions, carrying his joy and pain to create a future he couldn’t have imagined. His music evolved into a vessel for healing, not just for himself but for those who heard it.
Global Inspirations and Artistic Awakening
In 2013, Carson’s solo concert at Pitanga Hall in Auroville, India, marked a turning point. Working with mentors from the Barbara Brennan School of Healing, he became attuned to his energy and the meditative power of heart-centered music. Performing with eyes closed for the first three songs, he embraced fearless creativity, free from self-judgment. When he opened his eyes, he found the audience’s rapt attention, a silent affirmation of his newfound voice. The experience taught him to live in the present, letting music flow without constraints.
Carson’s travels to India, Scotland, and England infused his sound with global textures. “Experiencing the history of these places made the music come alive,” he says. From Chinese meridian to Indian Vedic and North American Indigenous healing traditions, these studies enriched his compositions, blending his spirituality with sound. His experiments with loop pedals allowed him to craft a “one-man symphony,” layering violin tracks to create immersive performances. Comparisons to “Ed Sheeran meets Lindsey Stirling” or “Jean-Luc Ponty meets Jimi Hendrix” feel humbling yet apt, reflecting his pioneering spirit. Influences like Garth Brooks, Shania Twain, and Neil Young, alongside his first fiddle teacher’s cool factor, shaped his eclectic style.
Sedona: The Heart of Fiddler on The Rock
Sedona, Arizona, became Carson’s “idyllic home” after years of global wandering. Family trips from Calgary to Phoenix introduced him to the region, but Sedona’s “living, breathing” energy captivated him. Invited by a life coach and collaborating with Grammy-nominated guitarist Ralf Illenberger, Carson found a spiritual and creative haven. The Fiddler on the Rock concept was born at the Sedona Airport overlook, where he performed against the backdrop of red rocks. The landscape amplified his music, its vastness mirroring the depth of his sound.
In 2019, Carson’s debut season at Posse Grounds Pavilion solidified his vision. The venue’s intimate setting and enthusiastic audiences shaped his concert series, blending original works like “Giant’s Two Step” from his 2018 album with covers of Led Zeppelin, Hendrix, and Taylor Swift. His use of a Stroh violin, with its distinctive, piercing tone, added a unique edge to his performances. The 2024 CBS Mornings feature with Natalie Morales brought national attention, a surreal milestone that amplified his reach and reaffirmed his mission.
A Shared Journey of Joy
Carson’s creative process is as dynamic as his performances. Composing albums like “Time and Tide” involves tapping into emotions and landscapes, while live improvisations, like his 2023 Sedona Dance Project set with “Pirates of the Caribbean,” invite audiences into the “heartspace.” “It feels like everyone just became a kid,” he says of getting crowds to sing along. His multi-award-winning documentary, LivingMusic , chronicles this journey, weaving his story into his shows to deepen the audience’s connection.
The Southwest’s frontier spirit resonates deeply with Carson, who sees his work as part of its legacy of innovation. From Calgary’s rugged roots to Phoenix’s tough explorers, he feels at home among dreamers. His music speaks to their resilience, offering “exactly what their heart and soul was longing for,” as fans have told him. Whether performing for 250,000 as a child or intimate Sedona crowds, Carson’s relationship with audiences has evolved into a unifying, visceral experience.
Looking Ahead: Legacy of Inspiration
At 36 years as a performer, Carson, who started at age 6, remains driven by the “spirit of joy” that fills him onstage. His Patreon platform offers exclusive content, fostering closer fan connections, while three albums inspired by his airport gigs are in progress, themed around LivingMusicand reaching audiences on multiple levels. His vision for Fiddler on the Rock includes Bonefire, a project celebrating “Like a Phoenix reborn [from the ashes at the core of inspiration], it’s music you feel in your bones.” Plans to bring his show to Phoenix’s Valley are in the works, promising vibrant performances tailored to the region’s adventurous spirit.
Carson’s proudest moment is his ongoing connection to audiences, letting them “conduct” the music to create intimacy. His biggest challenge—overcoming voice loss—has become his greatest triumph, proving music’s healing power. He hopes to inspire the next generation, especially in Phoenix, to see themselves as authors of their own music, feeling it in their bodies and imaginations.
For his legacy, Carson dreams of a world where music unifies and heals. “I want people to discover how important they are to music,” he says. If he could play one song to represent his journey, it would be a melody that captures his “white light experience”—a moment of pure, shared joy.

INGREDIENTS
For the Beef and Marinade:
1.5 lbs (680g) beef ribeye or sirloin, thinly sliced (1/8-inch thick, ideally partially frozen for easier slicing)
1 small Asian pear (or Bosc pear), peeled, cored, and grated (about ½ cup)
¼ cup soy sauce
2 tbsp brown sugar
2 tbsp toasted sesame oil
1 tbsp gochujang (+ 1 tsp. red chili paste for kick)
3 garlic cloves, minced
1 tsp fresh ginger, grated
2 tbsp rice wine (dry sherry as a substitute)
1 tbsp honey
2 green onions, chopped (separate white and green)
1 tsp ground black pepper
1 tbsp sesame seeds, toasted
For Cooking and Serving:
1 medium yellow onion, thinly sliced
1 small carrot, julienned
4-5 shiitake mushrooms, sliced
2 tbsp avocado oil
Cooked jasmine rice
Lettuce leaves (red leaf or perilla) for wraps
Ssamjang (dipping sauce):
2 tbsp doenjang (Korean fermented soybean paste)
1 tbsp gochujang
1 tsp sesame oil
1 tsp minced garlic
1 tsp sesame seeds
1 tsp honey
Banchan (side dishes like kimchi, pickled radish, or seasoned spinach) for a complete meal
INSTRUCTIONS
Prepare the Beef: If not pre-sliced, place the beef in the freezer for 20-30 minutes to firm up, making it easier to slice thinly (1/8 inch thick) against the grain. Trim excess fat, but retain some for flavor during cooking. Make the Marinade: In a large bowl, combine the grated Asian pear, soy sauce, brown sugar, sesame oil, gochujang, minced garlic, grated ginger, rice wine, honey, white parts of the green onions, black pe pper, & half the sesame seeds. Whisk until dissolved. The pear acts as a natural tenderizer, breaking down the meat’s fibers for a melt-in-the-mouth texture. Marinate the Beef: Add the sliced beef to the marinade, ensuring each piece is well-coated. Massage the marinade into the meat gently.
Cover and refrigerate for at least 1 hour, ideally 2-4 hours, for optimal flavor. Avoid marinating overnight, as the pear can over-tenderize the beef. Prepare Ssamjang (Dipping Sauce): In a small bowl, mix doenjang, gochujang, sesame oil, minced garlic, sesame seeds, and honey until smooth. Set aside for serving.
Cook the Bulgogi: Heat 1 tbsp neutral oil in a large cast-iron skillet or nonstick pan over medium to high heat.
Add sliced onion, carrot, and shiitake mushrooms (if using) to the pan, cooking for 2-3 minutes until softened. Remove and set aside.
Add another 1 tbsp oil, then lay beef slices in a single layer. Cook for 1-2 minutes per side until browned and caramelized. Work in batches, adding vegetables back to the pan with the final batch to warm through.
Finish and Serve: Transfer the cooked bulgogi and vegetables to a serving platter. Sprinkle with the green parts of the green onions and remaining sesame seeds. Serve hot with steamed rice, or lettuce leaves for wrapping, and ssamjang for dipping. Add banchan like kimchi or pickled radish for an authentic Korean spread.

1 medium tomato, diced
½ medium white onion, finely diced
½ cup fresh cilantro, chopped

For Cooking:
2 tbsp olive oil, tallow, or butter
INSTRUCTIONS
Prepare the Marinade: Rehydrate Chiles: Place the dried ancho chiles in a bowl and cover with 1 cup of boiling water. Let soak for 10-15 minutes until softened. Drain, reserving ¼ cup of the soaking liquid.
Blend Marinade: In a blender, combine the rehydrated chiles, reserved soaking liquid, tomato paste, smoked paprika, chili powder, cumin, garlic, chopped onion, orange juice, lime juice, olive oil, salt, black pepper, and oregano. Blend until smooth, about 1 minute. Taste and adjust salt if needed.
Marinate the Chicken: Place the chicken thighs in a large bowl or zip-top bag. Pour the marinade over the chicken, ensuring all pieces are coated. Massage the marinade into the chicken. Cover and refrigerate for 1-2 hours (up to 4 hours max). Don’t marinate overnight, as the citrus can over-tenderize the chicken. Cook the Chicken: Heat 2 tbsp avacado oil in a large skillet (preferably cast-iron) over medium-high heat. Remove chicken from the marinade, shaking off excess, and place in the skillet in a single layer. Cook for 5-6 minutes per side until browned and cooked through (internal temp 165°F/74°C). Work in batches if needed. Transfer chicken to a cutting board and let rest for 5 minutes. Shred with two forks or chop into bite-sized pieces. Toss the shredded chicken back into the skillet with any remaining marinade and cook for 1-2 minutes to coat in the sauce.
Prepare Toppings: While the chicken cooks, dice the avocado, tomato, and onion. Chop the cilantro and cut the limes into wedges. Set aside in small bowls for easy assembly.
Warm the Tortillas: Heat the tortillas on a skillet or directly over a gas flame for 10-15 seconds per side until soft and slightly charred. Stack them in a clean kitchen towel to keep warm.
Assemble the Tacos: Place a small portion of shredded chicken in the center of each tortilla.
• Top with diced avocado, tomato, onion, and a sprinkle of cilantro.
• Serve with lime wedges on the side to squeeze over the tacos.
