Dear Readers It’s been two years since a virus brought the

world down on its knees. It’s about time to go back to a semblance of normalcy. Chennai is known for its resilience and we can see the city getting back on its feet again - the sandy beaches are brimming with kids and lovers; weddings are getting bigger and crazier and with masks removed, we get to see the smiles again! After a brief break, Discover Chennai is back on the shelves too. As always, we have been received with wide open arms by both the industry as well as our contributors. We are humbled and we take this opportunity to thank you for your continued love and support. How we missed these crazy deadlines, the hunt for good stories, the food trails and the secrets that the city spills to those who seek.

This issue, we pay homage to this beautiful soil and its soul. The cover story takes us back in time to beautiful mud homes whilst the culture segment pays a visit to the Guardians of the Soil - the glorious Aiyanar, We also dig up some fossils, take a trip with sons of the soil and more. April 22nd will mark World Earth Day and our issue is a gentle reminder to take care of this abode.

Revisiting the past to build a sustainable future

t the turn of the 19th century, the industrial revolution paved the way to fulfil man’s quest to reach the stars. Rapid industrialization and easy access to construction supplies led to record-breaking skyscrapers, mega industries and mile-long retail malls. This mad race to provide housing and massive expansion of commercial ventures has taken a serious toll on the environment and caused climate change. In fact, the construction sector is one of the largest exploiters of earth’s resources.

COVER STORY According to the World Watch Institute, the industry consumes 40% of the world’s usage in raw stones, gravel and sand and 25% of its virgin wood per year. It is also a carbon-intensive industry. The process for making Portland cement, the most common form used to produce concrete, yields upwards of 1,000 pounds of carbon dioxide per tonne. In our quest to create the perfect abode, are we blindly destroying our planet earth?

However, all hope is not lost. Many socially conscious people in the construction sector have now taken a stand and are making a difference. One such resourceful young civil engi-

neer is Mr. Aravind from Vellakoil, in Kangeyam taluk of Tirupur District, Tamilnadu. He has been passionately documenting and researching India’s forgotten earth building methods which are ecofriendly and also help local artisans. Such efforts have 18

COVER STORY re-energised ancient masonry skills and renewed the interest of many to learn them.

Earth building is nothing new and is an ancient skill. The philosophy behind using olden construction techniques is to use locally available materials while an experienced mason guides family members who pitch in to do the actual labour. No special machinery or opulent supplies were used. Materials like timber were used for functionality and frivolous expenditures were avoided.

The house was built to withstand local weather and house multiple generations under a single roof. During his documentation, Aravind visited close to 50 nearby villages and spoke to several village elders who shared anecdotal details about the materials and the techniques used in their mud houses.

Sourcing local

Most old mud houses were constructed with less than 6 main materials which included lime, mud, black stone from a local quarry, indigenous timber and adobe bricks and tiles. The water source was a neatly dug well and water mixed with mud was used to lay the foundation. These houses were carefully constructed with ample ventilation and sunlight. A courtyard and sloping roofs were key features.

Aravind and his team have been training masons in these old ways e.g converting lime from limestone. He says that in his native town of Vellakoil, Limestone is readily available and most houses use them to plaster walls and the floor. His team has done a thorough investigation of these old houses and now guide a select few in these methods.

They hold regular workshops in association with Earth Building and teach craftsmen to build inexpensive, efficient, and beautiful mud buildings. Most of their projects are client-driven while they share their knowledge.

Aravind explains that they cost less compared to conventional buildings as there is negligible transport and manufacturing cost. They also provide an excellent opportunity to DIY your dream home. Aravind also admits that these rustic structures may not look as polished as modern homes but their beauty and strength slowly grow into admiration.

While speaking about the ecological benefits of indigenous mud houses, Aravind says due to the low transportation and manufacturing costs, the carbon footprint of such a construction is almost negligible. If you consider water consumption, it takes 15 days for curing of cement and 20 days for concrete and water is used abundantly for the entire process. As for lime, we wouldn’t need any water for curing.

Our house is a breathing structure hosting a delicate ecosystem. We are connected to this intricate design and it’s our responsibility to nurture it.

Many first-world countries are now looking into sustainable building and providing clean energy. We are lucky to find ancient gems hidden in our own backyard.

If you are wondering where to head out this summer, how about a pre-historic rendez-vous near Trichy?

Driving in central Tamil Nadu, one can find massive cement factories dotting the landscape.

Have you ever wondered why? It’s due to the large deposits of limestone found here. Limestone is formed in the course of millions of years, from the Calcium Carbonate in shells and bones of ancient marine organisms.

Millions of years ago, Trichy and most of the surrounding areas were under the sea with abundant ancient marine life. In | April 2022 | Discover Chennai 27

the cretaceous period (the last period of the dinosaur era), the sea receded from this area leaving behind a large number of dead marine life, which slowly fossilized. And so, today this area is a treasure house of fossils.

There are plenty of fossils to be found easily in the open- you can find some even in the sides of the roads! There are even exciting rumors of a fossilized

dinosaur egg found close by, but we were unable to find its whereabouts. Fossils of ammonites, belemnoids (ancient squids), megalodons (prehistoric sharks), shellfish, seashells and corals have been found here.

There is also a small museum which explains how fossils are formed and displays some of the fossils found in the area.

Travel tip: National Fossil Wood Park lies around 63kms from Trichy, near Perambalur. Take the NH-45 connecting Trichy to Perambalur, right up to Siruvachur village. From Siruvachur, a small road connects to Sathanur village (nearly 14 km eastward).

The ambiance is striking on account of the varied colours on the walls which lends a vintage appeal. The distressed wooden doors, a part of the decor, depict the rich culture of the bygone era of the county and are remarkable in its appeal. The lightings are warm, muted and the exquisite chandelier is reminiscent of a Bollywood period film adding a touch of nostalgia. Very Jugalbandi indeed!

FOOD TRAILS Their 7 Sisters Jugalbandi theme is a multi-course degustation menu that pays honest homage to the North East cuisine.

Their amuse bouche is a combination of Nori Fritters, Raspberry ‘yolk’ and a Ginger Shot. The fritter’s tartness of wasabi and lemon gel goes well the instant sweet explosion of the raspberry yolk in the mouth and the perfectly balanced acidity in the ginger shot steadily warms up the palate for more things to come.

The soulful Sikkim Thenthuk Soups are presented with a lot of drama. At plating, they inject a syringe filled with cream into the hot soup that instantaneously turns into stringy noodles!! It sustains its form and noodle-like structure until it completely dissolves when scooped into the mouth. Now that’s science!

The Bamboo shoot based Kurul Manchurian is full of North East flavour and flawless crunchy texture!! A special mention to the crispy Singju Rice Paper Rolls that bring out the Mizoram flavours in full force!! The Gudok is very interesting in its combination - served along with rice fritters and a handful of anchovies tossed in delightful sauces.

Just Imagine a NITROGEN Infused Chaat served tableside!

Contrary to the established norms, the flavour and special texture of this chilled chaat goes beyond the anticipated level of expectations.

The Naga Mutton Curry is an absolute relish of a dish with the slow cooked, soft, succulent mutton laden with king chilli and other Nagaland spices!! A perfect accompaniment to the sticky steamed rice!!

The final round of applause is reserved for the Masala Chai Ice Cream. The amazing techniques involved in turning a chai into a crumble base, again with the help of nitrogen, is ONLY meant to be experienced. This too is prepared and plated tableside with a lot of dexterity and showmanship. The closing garnish scene is a sight to behold for the unprepared. An actual rose, frozen in nitrogen, is smacked and shattered into smithereens on top of the ice cream itself. A perfect cherry coloured topping!

On the whole, the chef, his team and the other creators of this degustation menu, deserve to be lauded for their out-of-box thinking!

When you do visit, don’t forget to take your cameras out, as every course has its own element of surprise and theatrics that are MEANT to be captured and revisited.

Aiyanar

The Guardians of the Soil

One can see the large colourful clay idols of Aiyanar dotting the

outskirts of several villages across Tamil Nadu. The folk deity can be seen sitting atop a horse or a raised platform with an aruva ( machete ) in hand. Aiyanar is worshipped as the protector of the villages and its forests. Each open-air shrine of Aiyanar also has a dedicated patch of forest land – known as koil kaadu or sacred grove -- and the villagers are often prohibited from logging its trees. These sacred groves are now on the decline as people have begun to erase the same to build concrete temples.

Aiyanar is often represented with an escort, (including demons). During festivals, terracotta horses are offered to Aiyanar and they can be found outside the temple. These are made by traditional potters and offered in ceremonies with the belief that the Aiyanar would use them as steeds for his night patrols. | April 2022 | Discover Chennai 47

The crowd around us gets closer, we look at the hustling trees. Everything is still as the silver rays of moon make it through the rows of trees. It takes us a minute to realise that it was our guide Manikandan who mimicked the Koel’s call. We could now hear another song nearby and soon enough a pretty little Koel comes to visit our group. Both our guides (from Narikuruva tribe) are true sons of the forest, who know every heartbeat, every song or cry that these forests have ever witnessed. Their talks on the local fauna including Pond Heron, Eurasian Pigeon, Whistling duck, Indian fox, Jungle cats, Mongoose, Civet cat is filled with native knowledge on it’s behaviour, hunting pattern, breeding cycle etc. It was like a magic spell when a bat came to the group in obeisance to his call.

Raman from Indigenous Biodiversity Foundation, Puducherry informs us that this eco-tourism activity has been created to provide alternate livelihoods to former poachers like Manikandan. “We have various tourist packages for tent stays, nocturnal nature walks in forests based in Auroville and cycle trips across local lakes.
