Robin Williams once said, “Spring is nature’s way of saying, ‘Let’s party.’” You will find plenty of reasons to party and get outdoors this month! On Sunday, May 12th we celebrate Mother’s Day and have a special opportunity to show our appreciation for the many things these lovely ladies have done for us. They have given us the benefit of the doubt when our actions didn’t warrant it. Tolerated our shenanigans, while believing in our potential, swearing we were the cause of their gray hair. They are our strongest advocate and biggest fan, wanting only the best for us. This Mother’s Day pull out all the stops! Most moms would willingly prepare a meal to give her children an excuse to visit, but don’t make her cook! Instead, bring her flowers, take her out to lunch or dinner, and most of all, let her know how much her love, sacrifice, and encouragement have meant to you. 8

Outdoor Living is a very fitting theme for this issue. We live in such a beautiful state, and North Carolina is at its finest this time of year. We are perfectly situated between the mountains and the beach with access to lakes in every community. The weather is ideal for camping, hiking, biking, boating, scenic motorcycle rides, and enjoying get-togethers with friends for a cookout or pool party. You will find articles in this issue of places to go, things to do, and how to enhance your own backyard for enjoying those evenings at home. If you enjoy live music, you will love May! Many communities offer free outdoor concerts this month. Langtree Live features a free music series in Mooresville on Thursday evenings beginning May 2nd through September. Bands start at 7:00 p.m. Piedmont HealthCare Friday after Five Concert Series start May 10th through the first Friday in September from 5:30 p.m. until 8:30 p.m. on West

Broad Street in front of Mitchell Community College in Statesville. Bring a lounge chair and enjoy the fun! Downtown Mooresville will host the Festival of Food Trucks the first Saturday of each month on Main Street from 5 p.m. until 8:30 p.m. through October. Stroll downtown May 4th for some great cuisine. On May 27th, we will celebrate Memorial Day, a time set aside to honor all Americans who died while serving in the armed forces. Participate in the National Moment of Remembrance by taking a silent moment at 3 p.m. to reflect on those who paid the ultimate sacrifice. Wellness and weight loss sometimes revolve around out of sync components of our thinking: what to eat, how to move, what to do, what am I feeling? We’ll feel better if we eat better, we’ll look better if we move more. We could act better if we knew better…and on and on in our heads until, well, we make a sandwich. With chips. It’s hard to stop the merry-go-round of thinking, re-thinking, doing, undoing, feeling good and feeling bad. To get a handle on this head game, step into 12

What's Cooking?! Spanakopita Puffs

If you want to impress your guests, try serving this puff pastry recipe as an appetizer at your next gathering. This flaky pastry filled with a delicious combination of spinach, onions and feta cheese can keep them coming back for more.

Spanakopita Puffs Recipe adapted from MilkMeansMore.org.

package puff pastry sheets tablespoon unsalted butter small onion, diced ounces of frozen chopped spinach, thawed and drained ounces of light cream cheese, softened eggs, divided teaspoon salt teaspoon black pepper cup crumbled garlic and herb feta cheese tablespoon cold water

Directions Heat oven to 375° F. Thaw folded pastries 15 minutes. Once thawed, unfold sheets to thaw out flat. In a large skillet over medium heat, melt butter. Add onions and saute 3 - 5 minutes, or until tender and translucent. Stir spinach into softened onions. Continue cooking, stirring frequently, until water from spinach evaporates and spinach is mostly dry. Transfer spinach mixture to large bowl.

In small bowl, blend cream cheese with one egg, salt and pepper until smooth. Fold cream cheese mixture into spinach mixture to combine. Stir in feta cheese and set aside. Line baking pans with parchment paper or silicone baking mats. On floured surface, roll one sheet of puff pastry out to 10 by 12 inch rectangle. Cut sheet in half lengthwise, then again widthwise to form four 5 by 6 inch rectangles. Place rectangles on prepared baking sheets. Place spoonful of filling onto center of each cut pastry. Whisk remaining egg with cold water to create egg wash. Lightly brush egg wash

around perimeter edges of each pastry square. Pick up short side of pastry and fold over filling toward other short side. Press edges to seal before crimping with fork. Repeat with remaining pastries. Brush small amount egg wash over top of each pastry. Cut small slits on top of each pastry to allow filling to vent steam while cooking. Bake 25 - 30 minutes, or until pastries are evenly browned on top. Transfer pastries to wire rack. Cool 8 - 10 minutes before serving. The Iredell County Partnership for Young Children (ICPYC) is a 501 (c)(3) organization dedicated to measurably increasing learning and healthy development of children from birth to age five in Iredell County. ICPYC offers multiple programs to accomplish this goal in the areas of early care and education, family support, child health, and early literacy. ICPYC works closely with childcare facilities to support high quality childcare. One of their programs, WAGE$, supports childcare teachers with salary supplements. “Many of our early childhood educators earn $10 an hour with no benefits,” said Lisa Familo, executive director. “The consistency of a teacher 18

IREDELL LIVING • MAY 2019

in the classroom is critically important, but with such low wages, teachers are leaving the field.” ICPYC also provides NC Pre-K to over 300 children. Applications for the 2019-2020 school year are available now. Under the family support umbrella, ICPYC offers Parents as Teachers, a home-visiting program and Together Time Playgroups, a weekly family playgroup and caregiver education program. Another ICPYC program that is saving lives is Iredell Safe Seats. “A first responder came to me after learning of an accident where a child was killed in Iredell County because they were

not properly restrained,” Lisa said. “We knew something had to be done, and we quickly launched this program. We are seeing quite an impact.” The car seat program provides inspections, education, and hands-on assistance to parents and caregivers. More recently, ICPYC has partnered with Leadership Statesville to bring an early literacy program, Reach Out and Read, to Iredell County. Leadership Statesville is a nine-month program sponsored by the Greater Statesville Chamber of Commerce. Each year, community leaders learn more about our city and county and put their talents to use in the community. Lisa is a member of the 2019 Leadership

Left–On November 29th, 2018, the Partnership held a Ribbon Cutting ceremony to showcase the agency’s expansion, reveal the agency’s new logo, and celebrate 20 years of service to the children and families of Iredell County. Statesville class. During the program, participating leaders decide on a class project, and this year’s class chose Reach Out and Read. Once launched by Leadership Statesville, ICPYC will sustain the program. The goal of Reach Out and Read is to foster childhood literacy by providing a book to children up to age five at each doctor’s office well visit. During the visit, the medical provider prescribes each child a new, developmentally appropriate book to take home and keep. The program

also creates a book nook in the office waiting room so children can read while they wait. Lisa and the Leadership Statesville class understand the impact that early childhood literacy can have in our community. Literacy strongly predicts adult health status, according to the Sentell & Halpin’s Importance of Adult Literacy in Understanding Health Disparities. “It’s more powerful than race, education, or income.”

The program will launch in seven pediatrician’s offices in Statesville this spring and early summer. The hope is to expand as more funding is generated. A $20 donation provides seven books to children through the program. Donations can be given on the ICPYC website.

Hardscape to Paradise By Kathy Wheeler On all the design shows we hear a lot about bringing the outdoors in. However, when the days get longer and the weather warmer, we spend more and more of our time outside. In essence, that design concept reverses itself into bringing the indoors outside, and our outdoor living spaces become as important as our home interiors. Landscape design has become much more than a lush green lawn with shrubbery and trees. Intricate stone work on patios, walkways and retaining walls, beautiful, multi-level wooden decks, and other permanent hardscapes help define the spaces. Hardscapes have grown into a very popular trend. 22

With outdoor kitchens and dining areas, we cook, eat, and entertain in our backyards. We relax with the sounds of water features. We shield ourselves from the sun with screenedin porches, gazebos, pergolas, and awnings, and we cool off by taking a dip in swimming pools. On cool evenings, we gather around fireplaces or fire pits to have a glass of wine and hang out with friends. In our area, we are lucky enough to experience four distinct seasons, and many of these outdoor features can help us enjoy and weather the elements of each season – picture relaxing in a hot tub, strategically placed beside a woodburning fireplace, while watching it snow. Amazing! These hardscape projects can be very expensive depending on what you include, and while a smaller renovation could be fine for a do-ityourself project, most are not. All that stonework and deck foundations can 24

be back-breaking work if you tried to tackle it yourself. A professional landscape designer can help you create your space, possibly save you on material costs, and provide crews to get the job done more efficiently. After all, you want to spend your summer enjoying the outdoors instead of slaving over it. Hiking in the Blue Ridge By Kathy Wheeler | Photos by Jeff Barrier

I’m one of the most non-athletic people I know, so I wasn’t sure I was the right person to write an article on hiking. I’ve only been on a few of those excursions. You can’t live so close to the mountains and not venture out once in a while. The last hike I made was into Linville Gorge with my brother-inlaw, which ended with him laughing, because I wanted to be airlifted out. For a week, I took ibuprofen and had muscles that felt like noodles. Even though I am far from being qualified on the topic, it is good to have friends with diverse interests! Jeff Barrier is a photographer and one of the most avid hikers I know. When I asked for his help writing this article, guess where he was? Hiking! I knew he and his wife, Angie, would be more than qualified to educate me and our readers on trails, levels of difficulty, and equipment for ascending to breathtaking views in the Blue Ridge Mountains. While I’m happy to stay at home and admire Jeff’s photos on Facebook, I’ve heard there is nothing like seeing the scenery first-hand, and Jeff was just the person to interview!

Why do you personally like to hike? While hiking is a great way to get some exercise, the exposure to the natural world is the most important aspect for me. Being in nature gives me a mental reset, a break from our modern, technology-intense world that I find to be incredibly beneficial. When you find a place where – in every direction – you see, hear, and smell nothing but


nature, it is the most relaxing thing I can imagine and something I need. What are some of the safety rules to know before starting a hike? Partner or group hiking is the safest approach, and inexperienced hikers should never solo hike. Inexperienced hikers should also team up with a more experienced hiker who is familiar with the area, especially if the hike is above beginner level. Hikers of all levels should practice basic hiking safety, which includes always let someone know where you are going and when you plan to be back (a general itinerary of your hike). Take enough water, which is easy to underestimate. A minimum of a liter of water per person for every two hours of hiking is a good rule of thumb. Take emergency items like a whistle to be use in the event you get lost or injured, items to start a fire, enough clothes to stay warm through the night, and a pocket knife or multi-tool. Cell service can be anywhere from spotty to non-existent on the trail but taking a phone is a good idea in case you need to make that emergency call. Smart phones are also useful for using apps that display trail maps and your location on the trail. What equipment is needed for most hikes? One of the great things about getting into hiking is that it really does not require a lot of specialized equipment. I have ankle issues, so a good pair of mid-ankle hiking boots are important for me. They provide good protection from ankle rolls for anyone walking over the rocky and uneven terrain that hiking always presents;

hikes that require long, steep ascents or descents over rough terrain that are many miles in length. Level of skill takes into consideration things like your navigational skillset and the possibility that use of those navigational skills might be required as well as outdoor survival skills. A short hike on a park maintained trail would be on the low end of difficulty. A hike deep into a wilderness area on a very steep and less maintained trail would be at the higher end of difficulty.

though many people are perfectly comfortable hiking in trail runners or even hiking sandals. Carry a daypack loaded with your emergency equipment and enough food and water to get you through the hike. I take lots of photos so either a small digital camera or a phone with a descent camera is a must for me. A trekking pole is a nice to have item but certainly not a necessity. 28

Can you explain a little about the difficulty levels of trails? I see difficulty levels from two different perspectives: how physically challenging is the hike and what is the level of hiking/outdoor skill required on a given hike? How physically challenging a hike is, of course, is relative to your personal fitness level. In general, challenges range from a relatively flat, groomed trail to

What are some of the trails you have hiked with the best views? We are fortunate to have access to thousands of trails in our area that offer the full spectrum of difficulty levels and stunning views. Beginner level hikes would include High Shoals Falls in South Mountain State Park and Linville Falls from the Linville Falls Visitor Center, off the Blue Ridge Parkway. A couple of our intermediate hikes would include Crabtree Falls, also off the Blue Ridge Parkway or Shortoff Mountain near Morganton, North Carolina. Do you ever camp on the trails that you hike? If so, what gear do you take with you? I often camp on the trails I hike. Any time that I am going to backpack/camp, the basic list of things I take is pretty much the same though it varies a little season to season. I take a tent, sleeping pad, sleeping bag, backpacking stove, water filtration system, something to hold water (dromedary bag), season appropriate clothing, and enough food for the duration of the trip. The season to season variable boils down to adjusting the layers of clothing needed for warmth. To hike any of the trails mentioned or pictured in this article, Jeff says that a quick Google search will provide you with maps and information you will need to get started. I hope you take some time this season to enjoy the beautiful scenery that our area offers us. Happy hiking!

Springtime Camping: The Best Our Area Has to Offer By Aaron Garcia

T

here are few natural joys better than springtime in our corner of the Carolinas. Famously blue skies. Crisp evenings. Sun without sweat. This year, you can either enjoy the season through your windows, or you can experience it the way nature intended—by camping. For those willing to choose the latter, you’ll learn there are plenty of opportunities in our area to give it a try.

Not-so Roughing It The easiest way you’ll find a spot to set up camp is to look for private campsites. Unless otherwise noted, they tend to cater to a mix of tent and RV campers, setting aside blocks of spaces for those who are roughing it. While this isn’t as rustic as setting out into the woods, it can be a fantastic starting point for the uninitiated since private sites typically offer more modern amenities and attractions; many will provide power, water, and bathrooms, as well as Wi-Fi, miniature golf, and game rooms. 30

For example, national franchise KOA’s Statesville location offers a swimming pool, game room, on-site store, basketball court, horseshoe pit, and Wi-Fi. Other campgrounds offer more unique amenities and attractions. Linney’s Mill in Union Grove attracts its campers thanks to creek-side sites and its still-operational water-powered corn meal mill, which has been churning since 1937. Trail Busters Campground in Statesville typically attracts horse riders and enthusiasts. Whether you’re just looking to sleep under the stars or you’re looking for something more specific, chances are you can find what you’re looking for in our neck of the woods.

Into the Wild For those looking for a more traditional camping experience, Lake Norman State Park in Troutman is one of the best options around. The natural park has a designated campground with 33 sites, many of them only 50 to 100 yards from Lake Norman’s shoreline. Each site has a fire ring, lantern hook, picnic table, and a

There are also on-site showers and bathrooms to make sure roughing it doesn’t become too rough. “The park is a great option for outdoor enthusiasts wanting a full weekend adventure,” said Superintendent Greg Schneider. Visitors will find areas to swim, fish, hike, ride bikes, and rent boats, all within the park’s 1900-acre property. “You can get it all over here on Lake Norman,” said Schneider, who added that they hold educational programs and discovery hikes on the weekends. The park also has areas for groups of 10-25 and larger parties to eat and set up camp. The park advertises free Wi-Fi, but you won’t find power or television hookups. It’s the perfect excuse to let your cell phones die and reconnect with the world around you.

There’s a Camp for That If you’re looking for proof that no aspect of modern life is safe from technology’s rapid advancement, even the old-fashion art of camping has been turned into an app. And in this case, it seems like a suitable tool for those looking to pitch their tents somewhere new. Hickory resident Jacob Faltermayer owns Living the Dream Farm in Hickory, a large piece of property with a barn and horseback riding ring. Eventually, Jacob wants to turn the land into a dude ranch. As a way to give the hospitality industry a try, he’s on Hipcamp.com, a property-sharing app that lets landowners rent out campsites. Faltermayer’s listing, called Sunset Hill, typically books for $20 per night, per tent. The concept, said Faltermayer, is the same as staying at a listing on Airbnb, a room-sharing app that he prefers to use over staying at a hotel. “I’ve stayed at other sites on Hipcamp,” he said. “If I’m traveling, I’d prefer to stay at an Airbnb, because I know the care people put into the property where you’re staying.”

What S’more Could you Ask For? While Schneider said most campers come prepared, he has been asked to help when vital items have been left at home. “I’ve had people knock on my door at two in the morning asking me for marshmallows,” Schneider said with a laugh. “More than anything, it’s important to bring the right expectations. You’ll see deer wandering through your campsite and raccoons sniffing around your coolers. Just be well aware that you’re going to see wildlife.”
