CLASSIC BRUSCHETTA INGREDIENTS: 1 slice Tuscan Boule, ½ inch thick 1.5 oz pesto 4 ripe Roma tomatoes diced 2 bunches fresh basil torn to small pieces 1 oz extra virgin olive oil 2 oz grated parmesan reggiano cheese Fresh cracked pepper Pinch of sea salt DIRECTIONS: Begin by spreading the fresh made pesto over one side of the bread. Next use a hot grill coated with pan spray and grill bread turning 45 degrees to achieve grill marks (keep a close eye on bread because it will toast fast, a little black char is ok on the edges). Flip slice over and lightly toast the non-coated side. Next while the bread is warm off the grill spread the tomatoes evenly across. Next sprinkle with the sea salt, and a grind or two of black pepper. Now spread the basil evenly on the tomatoes and sprinkle parmesan reggiano. Slice into 4 pieces or as many as you like. Place on serving dish and drizzle well with the olive oil.

Chianti is acidic to hold up against the tomatoes, and has enough body to stand up to the strong flavors of the garlic and olive oil. A big plus is that the return is immediate cash in your pocket and the property may still appreciate on top of that return.
