N OVEMBER | DECEMBER 2013 The holidays are almost here! Why not make this the year you create winter memories that will last a lifetime?

Whether you celebrate Christmas, Hanukah, or Kwanzaa, holiday traditions will help you build family time that will be cherished for years to come. Here are a few festive ways to make this winter season one to remember.

First, make your home magical. Whether it’s placing your tree or menorah in the same special spot year after year or creating an ornament theme that grows and grows each Christmas, building rituals into your holidays will make them truly unique. A few more decorating ideas to consider: Hang elegant stockings

CINNAMON COCOA RUBBED LAMB SHANK WITH CARAMELIZED APPLES, ROASTED BABY FENNEL & ROOT VEGETABLE HASH LAMB INGREDIENTS: 4 lamb hind shank 1 celery, chopped 1 bottle port wine 1 onion, chopped 1 c rosemary 3 cloves garlic 1 c thyme 5 black peppercorns 1 carrot, chopped LAMB RUB INGREDIENTS: 1 tbsp cocoa powder 1 tbsp ground cinnamon 1/2 tbsp chili powder 1/4 tbsp garlic powder

1/8 tbsp salt 1/8 tbsp black pepper 1/2 tbsp brown sugar

Preheat oven to 375. Rub lamb shanks with lamb rub and set aside. Heat a large saute pan with oil until smoking, then add lamb shanks and sear both sides until browned. Place shanks in a large roasting pot with wine, 3/4 cup rosemary, 3/4 cup thyme, peppercorns, garlic, celery, onion & carrot, cover with foil and bake for 3 1/2 hours.

CARAMELIZED APPLES INGREDIENTS: 3 gala apples, cored and sliced (skin-on) 1/4 c granulated sugar 1/4 c unsalted butter In a sauté pan on low heat, melt butter then add sugar and apples. Keep mixing until apples caramelize. Should take about 20 minutes or so to cook off the liquid from the apples and then caramelize the apples. Reserve for garnish.

ROASTED FENNEL INGREDIENTS: 3 baby fennel 1 tsp kosher salt 1 tbsp olive oil 1/2 tsp freshly cracked black pepper Preheat oven to 425. Cut the tops off of the fennel bulbs and then cut the bulbs in half. In a mixing bowl, toss with the olive oil, salt and pepper and place onto a cookie sheet. Roast in oven for about 25 minutes or until fennel is slightly caramelized.

ROOT VEGETABLE HASH INGREDIENTS: 1 1/2 lb root vegetables 1 tsp garlic, minced (parsnips, turnips, celery root, etc.)

2 tbsp olive oil peeled and diced into 1/2 inch pieces Kosher salt and 1 tbsp rosemary black pepper 1 tbsp thyme In a large stock pot, boil root vegetables for approximately 10 minutes and strain into an ice bath to stop the cooking. In a large sauté pan on high heat, heat oil. Add root vegetables and sauté for about 1 minute. Add garlic and herbs. Season with salt and pepper and reserve for service.

In 2012, consumers spent 3% more on their holiday spending than the previous holiday season which resulted in over $579 billion in seasonal spending. Will the 2013 holiday season see a return of the Grinch or will consumer spending increase again?

US economy. Strong consumer confidence means that consumers feel that their standard of living is increasing. Confident consumers are more likely to spend more and make bigger purchases - such as a speedy car or new dream home.

“Consumer confidence” is an actual economic indicator which measures the degree of optimism that consumers feel about the state of the economy and their own personal financial situation. There are several “indexes” that provide a numeric measure of consumer confidence. The Consumer Confidence Index (CCI) is based on data from a monthly survey of 5,000 US households consisting of five questions addressing current economic conditions. The CCI dipped slightly in September, 2013 to 79.7 but this is a far cry from the 16-year low index of 57.2 in May, 2008. Overall, the CCI indicates that consumers are currently “positive” about the state of the

In their August holiday retailing report, Baynote predicted that 2013 holiday consumer spending could increase by as much as 11% over 2012.
