4 oz. olive oil 2 zucchini, sliced 2 cups mashed potato 1 Tbs. parsley 4 Tbs. butter salt and pepper 4 oz. tequila

Clean and bake the lobster tails.

FILLING Fry the bacon and onion with the chile for 15 seconds.

Cook the mushrooms over low heat, add wine and cream and season making a paste. Fill the baked lobster tails with the mushroom paste.

SAUCE In a frying pan, sauté tomato, onion, garlic, parsley, and chile guajillo. Add chicken broth and strain.

ASSEMBLY Add butter, cream and parsley to the mashed potatoes.

Boil the zucchini slices and use to decorate in circle on the plate. Add the mashed potatoes. Top with the filled lobster tail.
